A family's shared love of anime has grown in three restaurants serving up ramen, pho and other pan-Asian delicacies. Soupa Saiyan first opened its doors in 2016 at 5689 Vineland Road, near Universal Studios in Orlando. “It all started with my (brother-in-law),” Jimmy Chhun, the manager at Soupa Saiyan, said.”He loves food. He's always wanting to create it. One day (he was) trying to figure out ‘What's a good way to have like a soup-themed restaurant.' So when they were just watching anime, he sees Goku eating soup noodles (and said) ‘You know what, that's what I'm gonna call it.'” Soupa Saiyan is themed on the wildly popular Dragon Ball anime. The name Soupa Saiyan is a reference to the show in which several of the main characters come from an alien race called Saiyans who can power up and become Super Saiyans. The restaurants stand out, as they are heavily decorated with Dragon Ball-themed toys, statues and art. However, they didn't start out that way. “Everybody coming in here loving it. Even when we started, we started off with very small figures and artwork and then everybody started donating art,” Chhun said. The menu came from a blending of cultures. Chhun said his brother-in-law's family is Lao while his wife, Chhun's sister, is Vietnamese. “So we put that together — combined it,” he said. Chhun said the Dragon Ball theming helps to bring people in, but added that it is the food that keeps people coming back. “It's just what's in our broth,” he said. “Our soup cooks for about 12 to 15 hours — savor the flavor. Everybody loves it and you can build it the way you want it here.” Despite the growth of Soupa Saiyan, success did not come overnight. “(My brother-in-law) was just doubting (himself),” Chhun said. “I'm like, ‘No, you give it a shot.' Then after like a couple of months later he's like, ‘We just started blooming.'” Chhun was living in Utah when Soupa Saiyan first opened. He was invited to come to Florida to help out with the business about five years ago. Since then, two additional locations opened — Soupa Saiyan 2 in Jacksonville and Soupa Saiyan 3 near the University of Central Florida, which is the location Chhun manages. “The college kids there love it. The artwork and everything,” Chhun said. On the latest episode of Florida Foodie, Chhun shares more about how Soupa Saiyan has grown over the years. Anyone can be a writer – even an accomplished chef! The first step is deciding what you'll write about. It could be something you're passionate about or particularly skilled in... Or could it simply be the book (or cookbook) you think is missing from the world! Dennis Chan grew up in Jacksonville, where his family has owned twelve restaurants in the past eight decades. His earliest memories of food include standing on a little stool next to his grandfather's restaurant stove while watching him cook. Somehow, Dennis always knew that he would end up in the restaurant business. He opened Blue Bamboo in his hometown in 2005, after graduating from the prestigious Culinary Institute of America and working with the Disney Company, and celebrity chef Ming Tsai. Chef Dennis is an adjunct professor at Florida State College at Jacksonville and teaches personal enrichment cooking classes at Blue Bamboo. Chan's first cookbook, Hip Asian Comfort Food, was published in 2009. He also served as president of the Florida Restaurant and Lodging Association North East chapter. Dennis won the 2018 Neighborhood to Nation recipe contest by General Mills and was chosen as one of 16 chefs to participate in Hormel Foods' Culinary Enrichment and Innovation Program. Chef Chan lives in Jacksonville, Florida with his wife Elizabeth, and seven-year-old sons Bennett and Michael. He says, “After working around the country, I am so happy to have found my way back home.” A supporter of many local organizations, Dennis believes that there is a place in everyone's heart and schedule for worthwhile organizations. Officially known as the Boss of Food in her family, interviewer Lauren Titus is a long-time Northeast Florida resident who brings over 30 years experience in our area's local food movement to the magazine, along with a passion and expertise in baking and front-yard farming. Southern Goodness from Celestia Mobley is my favorite local cookbook. Music inspirations: My favorite songs are cooking show theme songs. Atlantic Beach Urban Farms, Be Well Greens, and Bacon Farms are all great places to get fresh produce. The North Florida School has a good program teaching special needs children how to grow and maintain produce, and how to work in kitchens. Nothing beats Azar Sausage Company for locally made sausage. Cline's Custom Meats is the best place locally to get a steak to cook at home. We also have a cool "u-pick" persimmon farm here called Willie's Sweet Persimmons. “The Bare Minimum,” producer Sarah Holtz follows Florida's Fight for 15, a labor campaign aimed at raising the minimum wage to $15 per hour. Though there are countless labor issues associated with restaurant work, from wage theft to sexual harassment, the minimum wage is a concrete area to affect change, because it improves material conditions for hourly workers in every industry. Historically, it's also a difficult thing to change. To understand why, Holtz interviews experts to explore the history of the minimum wage. She speaks with Alex Harris, a fast food worker and leader in Florida's Fight for 15 campaign. He tells of the health risks he endured while working during the pandemic, participating in a walk-out, and what's at stake in the Fight for 15. Holtz also interviews Matthew Simmons, a labor historian at Emmanuel College in Franklin Springs, Georgia, who has studied the unique challenges among low-wage workers in Florida. Finally, Samantha Padgett, general counsel for the Florida Restaurant and Lodging Association, provides a counter-argument, asserting that minimum wage hikes threaten businesses that bolster tourism in Florida. In her reporting, Holtz examines both the economic and moral factors that motivate the Fight for 15.

As FRLA’s President & CEO, Dover works to protect, educate, and promote the diverse interests of Florida’s $111.7 billion hospitality industry. Comprised of 1.5 million employees, hospitality is the Sunshine State’s largest industry and represents individuals from every walk of life. She also serves as a member of the Board of Directors for the National Restaurant Association, Council of State Restaurant Associations, International Society of Hotel Association Executives, VISIT FLORIDA, Florida State University College of Business Board of Governors, Florida TaxWatch and the Florida Agriculture Center and Horse Park. What was surprising, however, was how that particular management team reacted. We'll discuss what they did and what the potential implications could be. Dover is a professional association manager, a lobbyist, a former government executive, and a Florida State University Dedman School of Hospitality graduate with a degree in Hotel and Restaurant Management.After graduating from Florida State University in 1978, Dover accepted the position of Assistant Director of the Beer Industry of Florida. This position familiarized her with the rules, regulations and tax laws associated with the beverage industry – information which has been beneficial in her role with FRLA.In 1989, Dover moved inside the halls of the Florida Capitol and was appointed Deputy Chief of Staff, Executive Office of the Governor, serving in the Martinez administration. As Bob Martinez’s Deputy Chief of Staff, Dover was responsible for the Governor’s many executive appointments, served as his spokesperson, and represented his administration before the Florida Legislature.Dover’s other professional accomplishments include positions at the Department of Business and Professional Regulation as the Director of the Division of Hotels and Restaurants, the first woman to serve as Chief of the Bureau of Fire Prevention in the State Fire Marshall’s Office, and President/CEO of the Florida Outdoor Advertising Association.As FRLA’s President &CEO, Dover works to protect, educate, and promote the diverse interests of Florida’s $111.7 billion hospitality industry. Comprised of 1.5 million employees, hospitality is the Sunshine State’s largest industry and represents individuals from every walk of life.She also serves as a member of the Board of Directors for the National Restaurant Association, Council of State Restaurant Associations, International Society of Hotel Association Executives, VISIT FLORIDA, Florida State University College of Business Board of Governors, Florida TaxWatch and the Florida Agriculture Center and Horse Park.On opening day of the 2003 Legislative Session, Dover was diagnosed with breast cancer and courageously fought to beat the cancer. Dover, a native of Orlando, is married and has three children and three grandchildren. In her spare time, she enjoys outdoor activities including dressage riding and running.
Peter Schorsch hunkers down with Carol Dover, president and CEO of Florida Restaurant and Lodging Association. Before that, she served as assistant director of the Beer Industry of Florida and was Deputy Chief of Staff for Gov. Bob Martinez. Dover describes an industry that is broken and hurting, but recovering. There is some hope, she explains, for normalcy now that Gov. Ron DeSantis has announced plans for the economy to begin to start getting back to normal. Dover describes the new look for restaurants — staff wearing masks and gloves, hand sanitizer on the table, a more spread out environment — that blends hospitality with hospital, without looking like a hospital. Peter describes his efforts to support local restaurants, grabbing takeout and cocktails to-go, and being inspired by the rule-following he observes as people line up, with distance, to do the same. Dover talks about the importance of following the rules. If restaurants follow them, recovery will be much easier, she said. Dover also explains how the lodging industry will slowly plan to reopen, with an emphasis on outdoor seating and rethinking amenities. On employment, Dover said the industry is encouraging people to come back to work regardless of unemployment benefits that may look enticing. Gov. Ron DeSantis is presiding over what might best be described as “show and tell” about how the state education establishment is dealing with coronavirus. One thing they did NOT say is when schools will reopen. Also, on today’s Sunrise: — There is another flood of applications at the state unemployment office, but officials say they’re doing a better job getting names into the system. — Florida set a new logistical record: shipping more masks, gowns, gloves and booties than any other time during the pandemic. — DeSantis signs a bill reviving VISIT FLORIDA, giving it three more years to prove itself to skeptical lawmakers. — Florida Restaurant and Lodging Association President and CEO Carol Dover talks about her industry — which is pretty much closed due to coronavirus (unless you’re doing take out). — The state’s Public Service Commission is scheduling a special meeting at the end of the month to vote on plans submitted by Florida’s Big 4 energy utilities to refund excessive fuel charges to customers. — The USDA releases new estimates on the Florida Citrus crop. Fewer (but larger) oranges are expected. — Checking in with Florida Man, who could get five years in prison for spitting on a cop.

In this episode, Charles Musgrove and guest Drew McLeod, restaurant owner, discuss the unintended consequences of what is likely to happen if this Amendment passes in Florida. Drew has spent over 40 years in the restaurant industry and has owned and managed several successful restaurants in and around the Tallahassee, Florida area. Drew talks about the financial challenges that already exist in the industry and the thin profit margins. The direct impact to his business will be immediate. The long-term impact will likely force the independent, full-service restaurants to change their business model or go out of business. The unintended consequences of this legislation will ripple through each business and the industry. Other pay grades will be impacted, workers' compensation insurance, payroll taxes as well as other employment costs will go up along with the minimum wage increase. When the nationwide minimum goes up, how do the states where it applies fare in comparison?Start with data on one million loans, averaging around $100,000, made through the Small Business Administration. For each $1 increase in the minimum wage, the authors estimate that loan amounts dropped 9% more in the affected states. The risk of default was 12% higher. The average credit score for small companies in those states showed “a sharp decline.” Business entries fell 4% in the year the minimum wage went up. A year later, business exits rose 5%.These results, the authors say, hold throughout various statistical analyses, such as while controlling for local economic conditions. The effects are stronger in businesses like restaurants and retail, which rely on low-skilled labor. Smaller and younger companies are more severely affected as well. In short, the authors conclude: “We find that increases in the federal minimum wage worsen the financial health of small businesses in the affected states.”By now some readers are probably thinking: Well, duh. It does not take a University of Chicago Ph.D. to suspect that raising the price of labor will make it harder to sustain a small, labor-intensive business. Don’t forget that there’s no cost-of-living adjustment: A $15-an-hour federal minimum wage would apply equally to a French bistro in Manhattan and a pizza joint outside Manhattan, Kan.Many progressives still insist this is a free lunch, and most of the Democratic presidential candidates support raising the federal minimum wage to $15. That includes the so-called moderates, like Amy Klobuchar and Mike Bloomberg. They ignore the millions of small businesses that are trying to make payroll and grow.The churn of companies with fewer than 10 employees, this study says, accounts for “more than 70% of job gains and losses in 2018.” No matter what politicians say, inhibiting that dynamism hurts the smallest businesses and the least-skilled workers the most. A significant increase, say to $15 per hour, might lead to more profound effects, such as job losses, in smaller cities and rural areas. But large, bustling cities like Seattle may absorb it with relative ease.In all, an improvement to the minimum wage may not do much to change the grim reality that living in expensive cities can be challenging even for some people making six figures. As Vigdor puts it, “Good luck living here on an $18-an-hour job.”
