Why do we enjoy foods that crunch? Listener Sheila Harris contacted The Food Chain with that question and asked us to find out if the food texture has any benefits. Ruth Alexander speaks to Danielle Reed, Chief Science Officer at the Monell Chemical Senses Center in Philadelphia, US, who says that crunchy foods signal freshness and help our brains decide if a food is safe to eat. Paediatric dentist Ashley Lerman in New York, US says crunchy fruit and vegetables can act as a natural tooth cleaner. Anthropologist Professor Noreen von Cramon-Taubadel at the University at Buffalo in New York, US says that the texture of our diets can impact the shape of our faces. Her work has studied how jaw shape has changed as humans switched from hunter gatherer to farming diets. Ciarán Forde, Professor of Sensory Science and Eating Behaviour at Wageningen University in the Netherlands explains how crunchy and other hard textures could help us to eat more slowly and consume fewer calories. And could crunch make foods more palatable? Chef Dulsie Fadzai Mudekwa in Zimbabwe says the texture is key to convincing people to try edible insects. Though it certainly wouldn't go down as the biggest acquisition, totally overlooking last week's PROMIX Nutrition deal will prove detrimental for any founder building within the supplement industry. In 2011, Albert Matheny founded PROMIX after being unable to find products that matched his standards for ingredient quality, science-backed performance, and product safety. PROMIX lives by the simple mantra “no artificial anything.” To control the product (and ingredient) quality, PROMIX develops its formulas in-house, controls its own supply chain (with 94% of ingredients sourced from North America), and independent lab testing on finished products is available transparently online. Moreover, PROMIX made a packaging update several years ago that eliminated 97% of the plastic…becoming one of the earliest supplement brands to pioneer paperboard packaging. And that bold strategic narrative of “simplicity is the ultimate form of sophistication” was a fundamental reason why PROMIX was just acquired. But if you haven't noticed over the last probably year, there have been A LOT of Big CPG portfolio architecture shifts. And these actions have mostly centered around deploying a “growth by subtraction” M&A strategic approach that seeks to create a more streamlined, focused company. But for those Big CPG portfolios that already had clarity on “competitive strengths,” you are seeing prioritization of acquisitions that can (1) fit focused parameters but (2) move the needle from a revenue perspective. And if we're talking Big CPG…that means “deal size” preference recently have been billion dollars (or more). So, with Big CPG currently M&A “whale hunting,” why would Paine Schwartz (the largest private equity firm dedicated to sustainable food chain investing) acquire a “smaller supplement brand?” Over the last decade, the performance nutrition segment of the supplement industry has undergone an enormous shift in marketplace dynamics. Imagine this huge pot that's melding together macro shifts in demand drivers and trending supplement industry dimensions like format/occasion expansion, brand strategy, consumer segmentation, and/or ingredients/benefits. The result has been this overall mainstreaming effect that disseminated the supplement subcategories across the entire retail landscape. Yet, it's that intense market expansion that has caused chaos...and opportunities for those that can put together this new puzzle. After Big CPG streamlines (and focuses) their portfolios around competitive strengths, the next logical step should be towards investing in smaller growth brands that have strategic alignment. Though this won't happen overnight, even if mega nutrition trends like “Age of Ozempic,” the protein-ification of grocery, “Make America Healthy Again,” and gut wellness…are driving Big CPG crazy modeling out every strategic if/then gameplan right now. But that's fine if you're Paine Schwartz…because selecting PROMIX means the private equity firm already built conviction around “what/who they believe will win” within that shifting marketplace. Paine Schwartz sees PROMIX as that important puzzle piece. And now it must prioritize deliberate depth over breadth actions that create an even more distinct strategic narrative to fully take advantage of this opportunity…which is a lesson any founder building within the supplement industry should apply to their own business. This research was completed during her time as a post-doctoral associate at Iowa State University with support from the USDA National Institute of Food and Agriculture, Agricultural and Food Research Initiative Competitive Program, Mitigating Antimicrobial Resistance Across the Food Chain, Grant/Award Number: 2021-69015-33501. Dr. Buckley is currently an Assistant Professor of Clinical Practice at Texas Tech University: https://www.depts.ttu.edu/vetschool/about/meet-our-team/faculty/michelle-buckley/In this episode we discuss two drugs that can be used in an extra-label manner to address subclinical mastitis in dairy goats during the dry period: Orbenin DC (cloxacillin benzathine) and ToMORROW (cephapirin benzathine). Dr. Buckley's work evaluated how long it took for both drugs to leave the goats' bodies after administration in both meat and milk as well as how effective they were at curing subclinical mastitis due to non-aureus Staph. She also evaluated antimicrobial resistance development due to treatment with these long-acting intramammary products. The published work that we discuss is titled "Pharmacokinetics of long acting cephapirin and cloxacillin after intramammary administration in dairy goats" and it can be found in the Journal of Veterinary Pharmacology and Therapeutics here: https://onlinelibrary.wiley.com/doi/10.1111/jvp.13445Additional publications will be added to the episode notes as they become available. On Tuesday, Oct. 29 at 3 p.m. a QTBIPOC Healing and Wellness Workshop will be held in PH1-230 to discuss the importance of wellness and healing as a QTBIPOC individual. From Oct. 28 through Oct. 31, Veterans Services will be hosting Halloween Movie Week from 8 a.m. to 5 p.m. in the Veterans Services Office. Veterans Services will also be hosting Spooky Bowling on Oct. 29 from 4 p.m. to 6 p.m. Last Friday, Oct. 18 the Department of Cinematic Arts Chair, Adam Moore, stepped down. David Waldman, the department's associate chair, will step in as the interim chair in Moore's absence. On Halloween day starting at 4 p.m. is trick-or-treat on 2nd Street, a local event for families and locals to take part in innocent Halloween activity.   Get in the Halloween spirit at The Queen Mary's Dark Harbor experience and enjoy the last week of the attraction from Oct. 29 to Nov. 2. Tickets range from $50-$70 on varying days and the event includes rides, mazes, food and drinks.  The city of Long Beach is set to receive more than $6.8 million in federal funding from the Department of Homeland Security's Federal Emergency Management's Port Security Grant Program. This funding will be used to upgrade the port's infrastructure and make advancements in its security. As of Friday, Oct. 25, an E. Coli outbreak in McDonald's Quarter Pounders has caused at least 49 people to get sick and killed one person across 10 different states. The Centers for Disease Control and Prevention released a food safety alert on Tuesday after they established a common thread between those affected was the Quarter Pounder. All who got sick tested positive for E. Coli. Last month, Kentucky Senator Johnnie Turner was mowing his lawn when he fell into an empty swimming pool while riding the mower. The senator sustained undisclosed injuries and passed away last Tuesday. U.S. Defense Secretary Lloyd Austin confirmed in a conference last Wednesday that North Korea has sent 3,000 troops to Russia to aid in their war effort. The government of South Korea also stated that North Korea has promised to deliver 10,000 troops to Russia in the coming months.  Off the southern coast of Mexico, Hurricane Kristy has formed but has no current trajectory to hit land. The tropical storm upgraded to a Category 3 storm on Wednesday. As of Friday, Oct. 25, there have been no weather warnings in places as the hurricane continues to travel east into the Pacific Ocean. California's leftist-driven wage hikes have been heavily criticized by conservatives, and Hart's restaurant appears to be another casualty of this economic environment. The closure is emblematic of broader issues in California, where high costs, overregulation, and unsustainable wage increases are driving small businesses out. Kevin Hart may have learned the hard way that celebrity status doesn't guarantee success in the restaurant industry, especially with a vegan concept in a high-cost state like California.
