Nuestros colaboradores, Marco y Ana, se desplazan este fin de semana a las Islas Canarias para asistir a la séptima edición del "Encuentro de los Mares", un congreso multidisciplinar de relevancia internacional que, un año más, fusiona ciencia, pesca sostenible y gastronomía. La edición de este año, bajo el lema "Sal, ciencia y vida", pone el foco en la sal como elemento esencial de los océanos, ingrediente culinario y nexo cultural entre el ser humano y el entorno marino. Organizado por Vocento Gastronomía y el Cabildo de Tenerife, con la activa implicación del Ayuntamiento de Arona –donde se celebrará la jornada popular del domingo 29–, el evento convierte a la isla en un epicentro de reflexión sobre el valor integral de la sal. Más allá de su uso como condimento, el congreso explorará su papel como regulador biológico, fuente de biodiversidad, expresión paisajística y motor económico sostenible. Los debates y ponencias abordarán desde la influencia de la sal en la dieta humana hasta el impacto del "spray marino" en el cambio climático, pasando por la obtención de sal para alimentación a partir de organismos marinos como las algas, o sus propiedades de conservación en la industria alimentaria. El programa contará con un elenco de figuras de primer nivel. En el ámbito gastronómico, destaca la presencia del "chef del mar" Ángel León (Aponiente*, Cádiz), quien desvelará el futuro de su ambicioso proyecto de marisma como ecosistema comestible. A él se suman otros grandes nombres de la cocina internacional como el italiano Moreno Cedroni (La Madonnina del Pescatore), el noruego Christopher Haatuft (Lysverket), el japonés Hideki Matsuhisa (Koy Shunka) y el portugués Gil Fernandes (Fortaleza do Guincho), experto en algas marinas. La representación española incluye a reconocidos chefs biestrellados como Luis Valls (El Poblet)* y Juanlu Fernández (LÚ Cocina y Alma)**, entre otros. La vertiente científica y pesquera estará igualmente representada por eminencias como el oceanógrafo Carlos Duarte (Universidad Rey Abdalá, Arabia Saudí), recientemente galardonado con el prestigioso Japan Prize; Aránzazu Aparicio Vizuete (profesora de Nutrición de la Universidad Complutense de Madrid); y Enrique Lozano (investigador de la Universidad de La Laguna). La voz de los pescadores, con Marcos Ymia (Pescadería Dos Nudos, Tenerife) y Roberto Rodríguez (Artesans da Pesca, Santa Uxía de Ribeira, A Coruña), complementará la visión sobre la pesca sostenible. La máxima responsable del sector pesquero en el Ministerio, Isabel Artime, también participará en el congreso. Además, el arquitecto Alberto Luengo compartirá su experiencia en la recuperación de salinas tradicionales canarias, y Xabier Agote (astillero Albaola) presentará un proyecto único: la réplica del ballenero del siglo XVI "San Juan", un ambicioso trabajo de historia naval que pronto navegará. Con este completo programa, el "Encuentro de los Mares" reafirma su papel como plataforma internacional para el pensamiento y la acción en torno al mar, consolidando a Tenerife como un referente en el desarrollo de la economía azul y el turismo responsable.
