In dieser Foodtalker-Episode spricht Host Boris Rogosch mit Anton Gschwendtner, dem Küchenchef des 2-Sterne-Restaurants Atelier im Bayerischen Hof in München. Seine Verbindung zu diesem Haus reicht weit zurück: Bereits von 2006 bis 2014 kochte er hier, erst im Garden, später im Atelier – Jahre, die für ihn prägend waren und ihm das Haus vertraut machten. Nach seiner Ausbildung im Forsthaus am See führte ihn der Weg direkt in die Spitzenküche: ins Bareiss, zu Johann Lafer, nach Wien und schließlich ins Olivo nach Stuttgart, wo er seine Handschrift schärfte. 2021 kehrte er nach München zurück und übernahm die Leitung des Ateliers – und damit auch die Nachfolge von Jan Hartwig. Für Anton war das weniger ein Neuanfang als ein Wiederanknüpfen an einen Ort, der sich für ihn wie ein Stück Heimat anfühlt. Im Gespräch gehen wir sein aktuelles Menü durch. Anton beschreibt, wie Gerichte bei ihm entstehen: über Wochen hinweg, mit viel Feinarbeit, bis ein Teller die Klarheit besitzt, die er sucht. Er erzählt, dass seine Küche „bayerischer geworden“ ist – nicht als Konzept, sondern als logische Folge der sehr guten Produkte aus dem nahen Umland und der eigenen Herkunft. Eine Zutat aus dem Münchner Umland kann für ihn mehr Kraft haben als etwas Exotisches, solange sie Charakter besitzt und zur Idee passt. Wir sprechen auch darüber, wie er München kulinarisch erlebt. Anton Gschwendtner beschreibt eine Stadt, die in den vergangenen Jahren enorm gewachsen ist: eine lebendige Szene mit starken Kollegen, mehr Spitzenrestaurants als früher und Gästen, die heute sehr genau wissen, was sie wollen. Dazu kommt ein spannender Mix aus internationalen Besuchern und Münchner Stammgästen – beides Gruppen, die für das Atelier wichtig sind und den Austausch prägen. Danach geht es um Raum und Atmosphäre: um Akustik, Licht, die Wahl der Teller und die Ruhe, die das Atelier ausstrahlen soll. Für Anton gehören diese Elemente genauso zum Erlebnis wie die Küche selbst. Er erzählt, warum er am Tisch präsent ist, Fragen beantwortet und spürt, wie ein Menü aufgenommen wird – nicht als Inszenierung, sondern als Teil seines Verständnisses von Gastlichkeit. Diese Folge zeigt einen Koch, dessen Stil aus Herkunft, Erfahrung und einer ruhigen, konzentrierten Art wächst – und eine Küche die über Klarheit, Haltung und Geschmack wirkt.
