In this episode I spoke with stand-up and sketch comedian Claire Haus, who talked about not opening a dog shelter, finding the middle ground and rambling as a German. Claire was described by Time Out London as "one of the smartest, funniest sketch comedians" recommending her as one of four comedians to watch in 2022, and her online videos have attracted millions of views. In the last few years I've seen Claire perform live and online, and she's been a delight. Her character comedy videos are always very funny and she says the word "mindfulness" in as funny a way as I'll probably ever hear, but I also enjoy seeing Claire performing straight stand-up, because she radiates a warmth and a joy in the performance that is as endearing as some of her characters are disturbing. We have a special treat, Slushies!! In today's episode, you'll get a duet from Nancy T and Rachael Philipps. Starting with the accents of Long Island, T's poem makes Alex think of Nassau and Suffolk County while Marion recalls Billy Joel's music. The language also leaves the crew thinking about Tracey J Smith's, “Solstice.” The tables turn when the crew reads, Philipp's “After you left us,” going from jargon about the sounds of the world to the description of human remains. With cremation on the rise, the crew ponders the process being described in this not-so-sentimental poem. Alex mentioned that he is able to do a full SNL Skit, which one do you think it is? This episode is brought to you by one of our sponsors, Wilbur Records, who kindly introduced us to the artist A.M.Mills, whose song “Spaghetti with Loretta” now opens our show. Nancy T is a high school teacher, poet, artist from NY, currently living down south. Rachael Philipps is a poet, journalist, and a properly misanthropic Welsh woman with an unhealthy dependency on caffeine and marmalade. She is constantly chastened by her iPhone's audio settings for playing LCD Soundsystem too loud whilst out on her regular jogs around the mean streets of Westchester. Rachael's poem “Perfect Little Houseguests” was published by Swwim Every Day in August 2022, she was awarded a Bethany Arts Poetry Residency in 2021 and was the recipient of an AWP Writer to Writer mentorship for poetry in 2020. Her journalism spans broadcasting for the BBC plus writing and editorial work for print titles including Time Out London, The New York Times and Food and Wine magazine. She is currently at work on her first chapbook. Nancy T Long Island Sound The chop on the sound nearly drowns the clubbing you deal bluefish on deck. Red slicks beneath one bold bastard flipping you silvered curses, straining for water or flesh, some end. Then wind surprises, cracks you a backhand, a cleat bruise begins darkening your rose tattoo. They suspend at depth, hit and hit until sated and free, or iced under gray. The bow begs a turning back we know you'll refuse. Tired, still for a time not long, never long, you swear when the inboard coughs taunts and seizes, and the rain, the rain dares spit on your back in the hold under gulls striking near, the siren water sounds gone unlovely, steady long gone, just the sound of metal striking struck metal, like metal resisting your forge hard and hot and bent and The gulls cry over diesel on waves sheening a sad iridescence, like soap on tongue.   Rachael Philipps After you left us After you left us, I got the call Her cremains are ready, she said. The what? I said The cremains...cremated remains. She explained, testily. Like... duh. Oh, I say Her ashes. What I wanted to say – She, should never be called cremains. Of course I angry-Googled it – industry term, euphemism, first found in a newspaper obituary in 1947. Discovered that her body, once incinerated, was swept from the furnace with a metal broom and looked nothing like ashes (or cremains) but like sand and bleached sticks. A desiccated high-tide at the beach. I found myself admiring our stubborn big bones which apparently always refuse to yield to 1800 degrees. Yet even they must submit to process, get pulverized in a Cremulator to a uniform grind to fit the urn. to make the gone, and their place inside us, take up the least space possible.   Nancy T Rachel Phillipps

We talk about how the memoir began life as an article she wrote for VICE on how Chinese takeaways are disappearing and the dual identities of her childhood - going from yearning to fit in to coming to love and appreciate both her Chinese and Welsh heritage. We also talk about just how important food is in Chinese culture, what it was like to put her formidable mother down on the page and how food has followed her from a childhood behind the counter, to her career as the food writer for Time Out London. There are a few hot and spicy flavor companies out there certainly. But Althea Potter's company combines crunchy, hot, spicy and tasty like no one else. Her love for spicy flavors began early. As a mere baby, her parents gave her pepperoncini peppers as snacks and Althea never lost her craving. Whether you call the taste chili oil or chili crisp, it's all those things and more with a crunch. Taking from the world's table from China, Mexico, Central America, Japan and Thailand, Althea has created a flavor base to go in just about any dish to make it more special. Or, as many of her customers write on her website, eat it from the jar! During her career as a chef in Portland, Oregon she received accolades from Portland Monthly, Eater Portland, the Portland Mercury, Willamette Weekly, Imbibe, Time Out London, USA. That 10-year stint was cut short by the COVID lockdown, as the restaurant went the way of so many during that period. And entrepreneurs are borne of that necessity/desperation; Althea decided to pursue her passion in a way to make her own living via a food brand of her own. Like many of our guests, a huge help in getting launched was reaching out to the Food Innovation Center, headed by our host, Sarah Masoni. At the time, the class was offered by teleconference and the lessons learned by Althea saved her much time, heartache and money in getting launched. The instructors were awesome and inspired Althea with confidence. In 2018, with her local press as credentials, she was contacted by The Food Network to apply for Guy's Grocery Games while working in the restaurant. Althea applied, got on the show, filmed it in California and won! That prize money bootstrapped her new venture, The Flavor Society. She is doing it right; packaging is in jars with art-deco like labels that are supremely designed. The jars are clear, so you see the ingredients that are hand crafted in Portland. The Flavor Society website sells Bagel Crunchy Sauce and Pizza Crunchy Sauce jars in combinations online. London has plenty of incredible food. Italian, Greek, Middle Eastern.. And the bakeries are something to behold too. So it makes sense when you're in town to try some of its best offerings and Beigel Bake should certainly be at the top of your list!Which brings me to today's guest: Daniel Cohen, Managing Director of Beigel Bake Limited - one of London's most iconic Jewish beigel shops, located along Brick Lane (also an iconic location in the City).Beigel (or bagel, depending on where you're from) is a second-generation family Jewish bakery that Daniel's father began with two uncles back in 1974. Serving 7,000 dense and chewy Jewish beigels daily, 24/7, it has since been rated 3 stars by Time Out London in 2010 (4 stars by its online users) and featured by the photographic pictorial Life in the East End by London-based cabaret duo, EastEnd Cabaret. In this episode, Daniel shares how Beigel Bake first came to be, what his father was like, how he got involved in the family business, the story behind its “rivalry” with a neighbouring Jewish beigel shop, how it fared during the pandemic and so much more.If you're ever in London, I'd recommend a visit to Beigel Bake!Highlights:4:10 Growing up with Beigel Bake as a prominent part of his life5:01 The Jewish history of beigels (or bagels)7:02 Brick Lane history8:57 How Beigel Bake began & its ongoing “rivalry” with a neighbouring Jewish beigel shop10:34 How Beigel Bake went from being a wholesaler to serving the public12:37 Growing by word of mouth (no advertising!)14:24 Most popular fillings14:43 The story behind the salt beef/pastrami filling served at Beigel Bake16:26 What was Daniel's dad like?20:28 Did Daniel feel obliged to join the family business?21:55 Why Beigel Bake started serving sandwiches 24/724:14 Realities of running a family business 25:54 Becoming managing director28:58 Why Daniel released the recipe for their Jewish beigel29:49 Will Beigel Bake ever open a branch?30:53 Impact of the COVID-19 Pandemic34:34 Launching their own delivery app (and some mishaps!)38:38 Working with charities 40:12 Having the Duke & Duchess of Cambridge come to visit42:23 How the business is currently faring

"Mary Berry ate my tart and it didn't have a soggy bottom!" The joyous and colourful Anne Faber talks about her delectation for food, food journalism, her Advent Instagram supporting local business, and what she'll be cooking for Christmas. Plus, we want to hear YOUR recipes for the holidays! From camembert wedges with cranberry sauce whilst camping, food has always brought joy to Anne's life. Now, as the most famous (and only?) TV Chef in Luxembourg, her books and shows share that passion. Anne's down-to-earth charm and creativity is beguiling. But this energy also shows a deep commitment to hard-work and her innate intelligence. Anne works very hard, London hard, where she spent 12 years. Firstly as a student, doing the 'safe' studies of English Literature at UCL (University College London), followed by a postgraduate degree in Journalism at City University, London, specialising in food and drink writing. As a producer at Associated Press (AP) she was beginning to feel rather burnt out when serendipity played a part in her literally walking into the then editor for Time Out London's Food and Drinks section. And so, after a short internship, she got the job as restaurant critic, where she "ate her way around London". In parallel, Anne continued to work as a TV producer for ZDF and RTL Germany (from London), and in 2010 started her food blog Anne's Kitchen, which was awarded a Digital Food Award by Food & Wine magazine in the US in 2013. During her time in London, Anne applied for the first series of The Bake Off and got down to the final 20! And happily adds, "Mary Berry ate my tart and it didn't have a soggy bottom" Back home, Anne's Kitchen has flourished. Anne has many culinary strands but the main ones remain TV and writing books. She takes inspiration from her travels, and when that's not possible, can travel the world in food through instagram! In her library of cookbooks, Nigella's prose is the type she most respects for its literary finesse. Having trained under Alain Ducasse in Paris in 2015, Anne's knowledge is solid, but when constructing her own recipes, she is conscious of how much effort her readers are likely to put in, plus what ingredients are available to us here. And more recently, Anne has been ever more thoughtful about how to use up leftovers so that there are none. We want your recipes for Christmas and the holidays! I know that many of you who listen are from lots of different places around the world. We would love to hear from you! What are your favourite Christmas or holiday recipes? How do you celebrate. What are your traditions? Send us some recipes and photos and I'll make sure Anne sees them too! Anne's details: www.anneskitchen.lu Facebook http://www.facebook.com/anneskitchentv/ Instagram https://www.instagram.com/anneskitchen/ Twitter https://twitter.com/anneskitchentv Anne's TV Show http://anneskitchen.co.uk/tv-show/ Anne's books 'Flavours of Home' 'Tastes of Luxembourg' 'Home Sweet Home - My Luxembourg' 'Barcelona, Istanbul, Berlin' (winner of the Luxembourg Book Prize 2015) 'Anne's Kitchen - British food with a twist' (winner of the Luxembourg Book Prize 2014) Anne's Wine: Anne has her own wine, Anne's Pinot Gris, created in collaboration with Domaine Caves Desom. Her Luxembourg-shaped cookie cutter keeps inspiring people to bake little Luxembourg cookies at home. Subscribe to the podcast! He has recorded and performed all over Europe and North America. As well as several film scores to his credit, James has also had his music featured in US, Polish, Spanish, Danish and Czech film and tv productions. He has had three # 1 singles on the Europa2 music charts. Had radio play on BBC Radio2, BBC6 Radio, KCRW in the US as well as national and regional TV & radio stations across Europe. A natural improviser, no two shows are ever the same but they are always raw, charismatic, intense, relaxed and often very amusing.” (Heaven magazine) “….Like Ryan Adams on steroids.” (Time Out London) “ a natural born minstrel” (Uncut magazine) “Raw, primal, exquisite” (Observer Music Monthly) “One of the best singer-songwriters in Europe” (Uni Culture Magazine) James explains how his relationship with the Czech Republic started, first as a 16 year-old in a school orchestra and then returning every year after, until his early twenties when he made the move permanent. We also talk about how he's managed to get a grasp of the language and why really wanting to speak it has made all the difference. although, you could say he had more of an unconventional training in it. James had just released his latest album ‘Superstition' just before the lockdown started in early 2020. James details the ups and downs of releasing and promoting a new album in such unique circumstances. There's talk of working with a writing partner for the first time, doing voiceovers for computer games, and being offered strange jobs during the lockdown. We chat about cover versions being featured on Spanish TV shows, his musical influences (of which there are many), playing in folk clubs, as a busker, and the complexities and intricacies of performing solo and with a band. We try to gauge what this year will be like for musicians and audiences alike and when we can get back to “normal”? In this episode, I talk about Nicolas Philibert's 2002 documentary, "To Be and To Have." It focuses on a small school in rural France where the kind and patient teacher, Georges Lopez, instills a sense of worth in all of his students and connects with them one-on-one. The film shows the dynamics between the students who range in age, from kindergartners to teenagers and also looks at some of their struggles. I talk about childhood, separation, nostalgia, the importance of school in my own life, and the impact that various teachers had on me. Salma is a multi-award winning writer and journalist whose work focuses on contemporary faith, food, women’s health and social issues. She writes for national magazines and newspapers including i-D, Vice, Broadly, Cosmopolitan, Stylist, and Time Out London among others. Last year she was awarded ‘Young Journalist of the Year’ at the GG2 Leadership Awards and was the youngest winner of the ‘Best Feature’ award at the End Violence Against Women Media Awards for her work investigating so-called honour killings on British soil. This episode was recorded during the Islamic holy month of Ramadan and, as a practicing Muslim, Salma describes what it means to her and how a month of fasting affects her relationship with food and her faith. Along the way we also discuss the 'rediscovery' of traditionally ethnic foods as part of the wellness movement and how, as a result, she is reclaiming dates as part of her heritage. At times this conversation may feel a bit challenging for some listeners. I hope you can stick with it because a) I think it is important for us to have our opinions challenged and b) we can only grow by making room for the experiences of others.
