La trufa negra (Tuber melanosporum) ha ganado un protagonismo creciente en la provincia de Zaragoza, consolidándose como un motor económico y gastronómico clave en la Aragón. Aunque Teruel lidera el volumen mundial, Zaragoza cuenta con unas 2.100 hectáreas dedicadas a este cultivo. Con motivo de las Jornadas de la Trufa Negra de la Comarca del Campo de Daroca hemos querido conocer la trazabilidad de la trufa negra de la provincia de Zaragoza junto a Pedro Marco, investigador del Departamento de Ciencia Vegetal del Centro de Investigación y Tecnología Agroalimentaria del Gobierno de Aragón

Esta medida responde a la situación de riesgo fitosanitario que afrontan los cultivos de manzano y peral, especialmente en Calatayud. El Departamento de Agricultura, Ganadería y Alimentación del Gobierno de Aragón ha recibido hoy la autorización por parte del Ministerio de Agricultura para el uso de productos fitosanitarios formulados a base de bacteriófagos destinados al control del Erwinia amylovora, bacteria responsable del fuego bacteriano, una de las enfermedades más dañinas para los cultivos de fruta de pepita y que afecta de manera considerable entre otras, a la Comarca Comunidad de Calatayud. La Unió Llauradora ha exigido un cambio en la normativa para impedir que se etiquete como trufa negra (Tuber melanosporum) a todos aquellos productos que no la contienen y que simplemente emplean aromas sustitutivos o sucedáneos. Hoy nos acompañará Carles Peris, secretario general de la Unió. El ministro de Agricultura, Pesca y Alimentación, Luis Planas, ha destacado que la apertura de nuevos mercados internacionales ofrece un gran potencial para el sector vitivinícola español. Así se lo ha trasladado el ministro a los integrantes de la Conferencia Española de Consejos Reguladores Vitivinícolas (CECRV), que en la actualidad integra a 58 denominaciones de origen protegida, durante la reunión mantenida hoy, centrada en las oportunidades de promoción internacional del sector vitivinícola. Nos lo contará Jesús Mora, su coordinador general.

Belchite (13 de diciembre) y Zuera (14 diciembre) son las localidades elegidas para las jornadas de inmersión en el territorio, que incluirán mercado de trufa fresca, charlas y degustación.. El 20 y 21 de diciembre se celebrará en el Mercado de Puerta Cinegia la V Muestra de la Trufa Negra de la Provincia de Zaragoza, una cita especializada sobre Tuber melanosporum que contará con diferentes actividades en torno a este ingrediente.
