River and Terran begin with their goat, Toffee, who is kind enough to supply the goat milk for the Greenfield family, since the birth of her baby goats – Lancelot and Brulee. Making Goat Cheese After milking Toffee, the twins head to the kitchen to demonstrate how goat cheese is made. For this process, you will need: Goat Milk Mesophilic Culture. It is ideal for making a variety of hard cheeses such as Monterey, Cheddar, Jack, Edam, and Gouda. Mesophilic is also the most common of two cultures, as it is used to produce the majority of cheeses that cannot be heated up to high temperatures. You must use a non-metallic bowl (we prefer ceramic). Animal Rennet. This is an enzyme used to form curds in the milk. Hot chocolate crème brulee (serves 6)400ml cream4 tbsp caster sugar100g good quality dark chocolate1 vanilla pod, split and seeds scraped5 egg yolks1 whole egg6 tbsp caster sugar (for the caramel top)Preheat oven to 140*C (NOT fan-forced). Place cream, sugar, chocolate and vanilla in a saucepan over medium heat. Cook, stirring constantly, for 5 minutes or until hot (do not allow to boil). Remove saucepan from heat. Whisk egg yolks, and whole egg in a heatproof bowl until well combined. Remove vanilla beans from milk mixture. Pour hot milk mixture over egg yolk mixture, stirring constantly. Rest the custard mix for 20 minutes to rest. After 20 minutes, skim all bubbles off the surface then pour into 6 small ovenproof bowls.Place bowls in a deep roasting dish, then pour boiling water into the bottom of the dish until it reaches halfway up the bowls. Very carefully place the roasting dish in the oven and cook for 35 minutes.Remove the crème brulee form the oven and allow to cool before placing into your fridge to chill.Once cold, evenly pour 1 tbsp of sugar over each brulee and using a blowtorch, burn the top of the custard until you have reached a dark burnt colour before serving.Don't have a blowtorch?Turn your oven up to maximum heat on grill function. Wait till it's cranking before sliding in your freshly sugared crème brulee, under the closest point to the grill.Toast until the sugar becomes golden brown.

I've had an interesting experience with Dunbarton Tobacco and Trust's cigars. While I've found them generally good, I've also found them unnecessarily expensive.However, over the past few months, I've had several friends recommend that I give the Dunbarton Tobacco and Trust Sobremesa Brulee a try. And, given my new found love of lighter cigars, I thought I'd smoke the Brulee today.The Sobremesa Brulee toro is an interesting cigar. It's got an oddly smooth but textured wrapper, that looks like it has tiny crystals on it. After torching the end and cutting the tip, I can immediately taste very sweet flavors that lead me to think this cigar has a sugar tip on it. Feijoa crème brulee (serves 4-6)2 cups cream (or 1 cup cream and 1 cup milk) 
1 tsp vanilla paste4 egg yolks 
¼ cup sugar + 4 tsp sugar8-10 ripe feijoa's1 Tbsp HoneyPinch of saltCut the feijoa's in half and scoop out the flesh, place into an oven tray and drizzle with the honey over and sprinkle with salt. Roast under the grill for 10 minutes or until golden brown.Spoon roasted feijoa flesh into each of the ramekins and allow to cool.Heat the cream and vanilla gently until it just boils. Whilst the cream is heating whisk the egg yolks and first measure of sugar in another bowl until well mixed.Pour the hot cream over the egg yolk mixture. Then carefully pour the mixture into the ramekins, leaving a few mm at the top of each.Arrange the ramekins in a roasting pan and carefully pour in enough hot water to fill to about halfway up the sides of the ramekins.Bake at 150 degrees for 25 to 30 minutes or until the custard has just set (it will still appear a little wobbly, but not runny), then remove them from the oven.Just before serving, sprinkle the top of each ramekin evenly with the remaining caster sugar. Arrange the ramekins on a tray and place under a very hot grill (3cm to 5cm from the heat) for 2 to 3 minutes until the sugar melts and browns. (Alternatively, you can do this with a blowtorch if you have one.)

The intoxicating aroma of jasmine in the air only complimented the fine cuisine. Host Robin Milling chats with Sales & Marketing director Bud St. Pierre about what The King & Prince has to offer. Food & beverage director Vinny D'Agostino, aka the macerating mixologist shares his signature cocktails from Thirteenth Colony Distillery, accompanied by Artisan Cheeses from Sweet Grass Dairy, Thomasville, GA drizzled with sweet honeycomb. Chef Jeff Kaplan, only 11 days on the job whips up a dazzling display of Southern's finest with Apalachicola Oysters on the half shell, sweet corn, asparagus, tomato and cilantro vinaigrette, Wild Georgia Low Country Shrimp and Grits prepared with Chef Dwayne and the help of Wake & Wander's Will McGough; finished with Candied Peach Crème Brulee.
