John shares with us how his family is transitioning to a gluten-free (gf) diet due to his young daughter's Celiac disease diagnosis. John and his family of five have been learning how challenging it can be to transition to a gluten-free diet, from grocery shopping and finding gf versions of their favourite foods, to being vigilant about cross contamination and asking the right questions when eating out. And no matter what, they're a family unit and if one has to eat gluten-free, they all will. It's not an easy adjustment for everyone.  Since pizza is one thing John said he especially wants to make at home with a gf recipe, Erin accepted the challenge and tested a recipe for gf crust made with cassava flour and potato. We enjoyed the texture and were happy to find a slice can be eaten by hand. We think it's a good option for anyone needing to eat gluten-free.    John and his business partner, Gillian Seguin, co-host a video podcast called A Bearable Conversation in which they discuss personal financial planning and related topics with a healthy dose of good-natured banter. Coeliac disease is an auto-immune disorder triggered by the consumption of gluten; a protein found in wheat, rye and barley, to give products such as bread their elasticity and texture. When people with coeliac disease eat gluten, they damage their small intestine and can't absorb nutrients from food. They end up with unpleasant side effects such as itchy skin, heartburn, diarrhoea, bloating and constipation. Despite the increase in gluten-free products in shops and people avoiding it, the disease only affects 1 per cent of the population. Gluten is unsafe for those with coeliac disease BUT is it an issue for the rest of the population? Is going gluten-free a good idea? So I have probably heard this hundreds of times, and the problem is that gluten is the number-one trigger for autoimmune thyroid disease. In fact, it's not an allergen. It's not a sensitivity. You can have a sensitivity or an allergen to it and have Hashimoto's, but it's something called molecular mimicry, where there's metabolites on the gluten protein that unfortunately look exactly like metabolites in your thyroid tissue. So once you've developed Hashimoto's and your immune system starts to attack your thyroid, you eat gluten, it's going to flare up in an inflammatory response and create an attack on your thyroid every time you eat it. So it's got to go. And gluten's in everything. Gluten's in all the good stuff. I'm half Italian, so gluten's in the pasta. Gluten's in the pizza. I used to like to have a beer now and then, or more than now and then, and it was in the beer. It's in a lot of the alcohol. I mean, it's everywhere. It's in the sauces. Gluten, it's everywhere. It's in all the good stuff. It's in all the stuff we love. So on a semi-regular basis, I get a person go, "Well, I already tried off gluten, and it didn't do anything for me." Meaning, "I'm not going to give up all the good stuff if I got off of it." Now, here's the problem with that. The problem is Hashimoto's. So gluten's one of, now, I think it's 41 triggers that we know of, that are potentially also affecting your thyroid. Nobody's got all 41 triggers, but a lot of people have 12, 13, 14 of them. So that's one trigger. So let's say you don't even know what the other 13 triggers are, and most of them don't, and some of them are, mind-blowingly, things that you do every day or that you may ingest every day or things of that nature. So when we first started this and we had people, this being treating Hashimoto's and taking people off the gluten, I was very early on in the groups that were taking people off of gluten for Hashimoto's. And you would get a miracle case, and you'd go like, "Yeah, we're bad. We know. These guys, these medical doctors, they don't know anything. We're so cool, because we took them off of gluten and they felt better." And then you'd get a couple of those, and life was good. And then you got the guy. You took him off of gluten, or gal and lady, and nothing happened. Or they felt worse or the gluten made them feel worse, because gluten is not just a trigger for autoimmune thyroid disease, but it is a big fat trashy carb. http://powerhealthtalk.com http://drmartinrutherford.com Martin P. Change is hard. Sometimes it is easier to just continue with the status quo--that which is familiar and comfortable. But when God reveals to me an attitude or something in my character or ways that need changing, then I need to allow Him to do His work in my life. My stubbornness can get in the way. Allowing Him to transform me into who He wants me to be requires not only discipline but humility as well. Hebrews 12:11 tells us: "For the moment all discipline seems painful rather than pleasant, but later it yields the peaceful fruit of righteousness to those who have been trained by it." Welcome to a bonus episode all about making the switch to gluten-free. We met Moy on Wednesday's episode as she spoke about the traumatic experience leading up to her diagnosis. She was ill, hospitalized, and ignored until tests finally proved her research and instinct correct: Moy has Celiac's disease. Moy also spoke in Wednesday's episode about the science behind the conjecture that gluten intolerance is “an American thing”. In addition to all this talk about gluten, we also discussed the history and culture of Trinidad & Tobago, food memories from Moy's childhood, and the classic Trinidadian street food with Indian roots: Doubles. So, by the time we got to this important conversation about making the switch to gluten, I just couldn't fit any more into the episode. At the same time, Moy's information adopting a gluten-free diet was too helpful, too important- to edit down and cram into an already long episode.
