Those of you who follow my discussions that started with the Wheat Belly series of books already know that there is a long list of reasons why humans made an enormous blunder when we first resorted to the consumption of the seeds of grasses, meaning wheat and related grains. We know this from the anthropological record of human disease, we know this from modern science that has exposed the many problems that arise with their consumption from tooth decay to arthritis. But in my many conversations with people, I find that, because we are all bombarded with the opposite message from TV commercials, media reports, even doctors and dietitians, much of the rationale and science that tells us that wheat consumption is awful for health becomes diluted, or discounted, or ignored. My Wheat Belly arguments, for instance, have been dismissed as just another “gluten-free” message that has no bearing outside of celiac disease. Or that there are bad health consequences of banishing an entire category of food. Or that, if the U.S. Dietary Guidelines for Americans tell us that grains must be a part of the human diet, it must therefore be true. Of course, this is all not true: misinterpretations, misrepresentations, sometimes outright lies, all to prop up continued consumption of a class of “foods” that accelerate disease, aging, and should have no place in the diet of humans. How do wheats, grains, and sugars affect cholesterol levels? How is the wheat we eat today different from what it was just 60–70 years ago? After 25 years as a cardiologist, Dr. William Davis's attention switched sharply to gut health when he saw the dramatic results that simple dietary changes brought to his heart patients. Cutting out foods that specifically spark the creation of small low-density lipoprotein (LDL) cholesterol particles is pivotal, he says. Small LDL particles are “much more prone to oxidation, glycation; much more adherent to walls of arteries; much more likely to instigate inflammation.” “Small LDL is the driving cause of heart disease,” he says. “If a food is free from something, then it must be healthy, right?” Dr. Brett Carver, a wheat breeder and researcher at Oklahoma State University for nearly 40 years, has found himself spending more time defending the plant to which he's devoted his career in recent years. “A huge chunk of our population, based on easy-to-find survey data, makes dietary choices AWAY from gluten (wheat). That's about 9-12% of us, and millennials and Gen Z's lead the way. About 1 in 5 persons will reduce or eliminate gluten from their diet because they believe this to be a healthier option,” says Carver. But is this trend warranted? For those who are diagnosed with Celiac disease, avoidance of gluten, the protein found in wheat, is a non-negotiable. But for those of us without Celiac or non-Celiac wheat sensitivities, following a gluten-free (and therefore wheat-free) diet is likely unnecessary. Getting to the “heart of the kernel,” Dr. Carver shares insights on why what doesn't easily undergo genetic engineering (reminde: there are no GMO wheat varieties), how wheat has and hasn't changed over the last century, and the role of FODMAPS in his work. According to Dr. Brett Carver, one of the major misconceptions around wheat is related to its origin. Many people make assumptions about the healthiness or unhealthiness of wheat based on where they think it comes from. Another misconception revolves around the changes that have occurred in wheat over the last century. Dr. Carver mentions that wheat breeding has been ongoing since the 1920s, and there is a need to understand the advancements and improvements that have been made in wheat varieties. There is no GMO wheat in the U.S. market. Carver mentioned that wheat does not easily undergo genetic modification (GMO) due to its biology. However, he mentioned that the science of gene editing is highly developed and may become a prominent technique in wheat breeding. Brett also outlined how DNA sequencing has revolutionized wheat breeding. With the ability to select based on DNA sequence, breeders can now make more accurate and efficient selections for desired traits, such as disease resistance or gluten quality. This advancement allows breeders to bypass the need for certain traits to be physically present and instead select based on the DNA sequence itself. This has greatly accelerated breeding progress and has the potential to improve wheat varieties in terms of both quality and disease resistance. There is a misconception that gluten in wheat has changed over the last century. He mentioned that the composition and protein of wheat have not significantly changed. Claims made in books like "Wheat Belly" about the varieties being produced and the food derived from them are not accurate. Dr. Carver conducted his own research to counter these claims and found that the perception of wheat has changed, but the reality is that wheat breeding programs have been focused on developing varieties that meet consumer demands. The exact cause of non-celiac wheat sensitivity is still being researched and is not fully understood. However, Dr. Brett Carver mentioned a few factors that could potentially contribute to this sensitivity. One possibility is sensitivity to gluten itself, specifically the gluten that naturally occurs in wheat varieties. Another factor that Carver mentioned is the presence of certain carbohydrates called FODMAPs (fermentable oligosaccharides, disaccharides, monosaccharides, and polyols) in wheat, which can trigger symptoms of irritable bowel syndrome (IBS) in some individuals. Additionally, there are proteins called amylase trypsin inhibitors (ATIs) found in wheat that have been associated with sensitivity. Further research is needed to fully understand the causes and mechanisms behind non-celiac wheat sensitivity. He wants dietitians to know he's working on a variety of those projects. We are further exploring the role that our microbiome plays in skin radiance and optimal thyroid function. The Microbiome: Our Internal Powerhouse Our conversation was quite in-depth but the first thing you need to understand is that your gut is bustling with trillions of microbes. These diverse inhabitants aren't just passive bystanders; they actively influence our well-being in numerous ways, including digestion, immunity, and, as Dr. Davis highlights, our skin and thyroid health. Recent research sheds light on this fascinating connection, revealing how specific bacterial strains within our gut microbiome can significantly impact the health and appearance of our skin and the function of our thyroid gland. Dr. Davis explains that there is a good chance it's a result of SIBO (Small Intestinal Bacterial Overgrowth) which is estimated to affect at least half the population, and it's particularly common in individuals with autoimmune conditions like Hashimoto's. The presence of these "bad" bacteria in the small intestine, where nutrient absorption occurs, can lead to inflammation, dryness, redness, and even rashes. Conditions like seborrheic dermatitis, rosacea, and psoriasis can all be linked to imbalanced gut flora.Restoring Balance: The Power of Lactobacillus ReuteriSo, what can we do to address this gut-skin connection and have the radiant skin we want? Dr. Davis emphasizes the importance of restoring a specific microbe we've all lost – Lactobacillus Reuteri. This unique probiotic strain (almost impossible to find in most people today) has the remarkable ability to colonize the entire GI tract, including the small intestine.Unlike other probiotics that mainly reach the colon, Reuteri takes up residence throughout the gut, producing natural antibiotics called bacteriocins that fight off the harmful fecal microbes. This reduction in "bad" bacteria lowers the toxic burden in the bloodstream, leading to noticeable improvements in skin health.But the benefits of Reuteri go even further. It communicates with the brain via the vagus nerve, triggering the release of oxytocin, the "love hormone" known for its positive effects on skin health, body shape, and overall well-being. Oxytocin stimulates the production of dermal collagen, leading to plumper, smoother skin.Is SIBO Causing Dry, Wrinkly Skin?Dr. Davis highlights the complex interplay between various lifestyle choices and underlying health conditions. While the exact cause of SIBO remains unclear, Dr. Davis suggests some potential causes.Potential Culprits Behind SIBO:Stomach Acid Blockers: These medications, often used for heartburn, can weaken the barrier against harmful microbes, allowing them to migrate from the colon and mouth into the small intestine.Antibiotic and Glyphosate Exposure: Excessive use of antibiotics and exposure to herbicides like glyphosate can disrupt the delicate balance of gut bacteria, favoring the growth of "bad" microbes.Hypothyroidism: Reduced thyroid function (low T3) can lead to sluggish gut motility, creating an environment conducive to SIBO overgrowth.Food Additives: Certain preservatives and emulsifiers commonly found in processed foods can have antibacterial properties, further disrupting the gut microbiome.Recognizing the Signs of SIBOIf these potential culprits are ringing a few bells for you and you're feeling like you might be susceptible to SIBO, Dr. Davis shares some signs that you may have SIBO.Potential signs of SIBO:Fat Malabsorption: Oily stools or floating poops indicate undigested fat, a potential sign of SIBO interfering with fat digestion.Food Intolerances: Sensitivities to nightshades, legumes, FODMAPs, or histamine-containing foods can be linked to SIBO's disruption of the digestive process.Associated Conditions: Fibromyalgia, IBS, inflammatory bowel disease, autoimmune conditions, neurodegenerative disorders, and even obesity are highly associated with SIBO and endotoxemia.Dr. Davis paints a startling picture, suggesting that SIBO and its associated endotoxemia might be the underlying cause of many modern chronic diseases. He cites studies showing a significant portion of individuals with conditions like obesity, IBS, and autoimmune diseases testing positive for SIBO. These numbers paint a grim picture, highlighting the potential vastness of this largely unrecognized epidemic.The Systemic Impact of EndotoxemiaIt's important that we also talk about endotoxemia because it impacts so much more than just the gut. Endotoxemia happens when microbes in the small intestine die, releasing toxins called lipopolysaccharides (LPS) into the bloodstream. These toxins have a domino effect, impacting various organs and systems throughout the body.Dr. Davis paints a stark picture, emphasizing that no organ is immune to the effects of endotoxemia. From skin health and brain function to thyroid regulation and heart health, this systemic inflammation can contribute to a myriad of chronic conditions. While conventional medications might address symptoms, they often fail to address the underlying root cause – SIBO and its associated endotoxemia.
