La niña, bien vestida, contemplaba con gran entusiasmo las muñecas que había en la tienda. En una de sus manitas tenía un rollo de billetes. Al ver una muñeca que le gustaba, se daba vuelta y le preguntaba a su padre si tenía suficiente dinero para comprarla. A pesar de que él le contestaba que sí, ella seguía buscando hasta encontrar otra que le llamaba la atención, y volvía a preguntarle: —Papi, ¿tengo suficiente dinero para comprar ésta? Mientras la niña se entretenía buscando la muñeca perfecta, un niño entró en la tienda y comenzó a observar los juguetes que había al otro lado del pasillo. Su ropa estaba bien cuidada pero gastada, y su abriguito le quedaba muy apretado. Al igual que la niña, él llevaba dinero en la mano, pero no pasaba de unos cinco dólares. A él también lo acompañaba su padre. Cada vez que lo cautivaba uno de los juegos de video, su padre meneaba la cabeza, dándole a entender que no le convenía eso. Al fin la niña escogió la muñeca que más le gustó, una que se veía tan elegante que seguramente sería la envidia de todas las niñas de la cuadra. En eso se dio cuenta de la conversación que sostenían el otro padre y su hijo. El niño, cabizbajo y desilusionado porque no podía comprar ninguno de los juegos de video, había escogido un álbum de colección de postales. Luego se encaminó con su padre a otro pasillo, alejándose así de la niña, que había visto lo ocurrido. La niña volvió a poner la muñeca selecta en el estante y corrió adonde estaban los juegos de video. Con renovado entusiasmo escogió uno que estaba encima de los demás, le dijo algo a su padre y se dirigió a toda prisa hacia la caja registradora para hacer su compra. Cuando el niño y su padre hicieron cola detrás de ella, la niña no pudo disimular el placer que sentía. Tan pronto como la cajera le entregó el paquete de la compra, la niña se lo devolvió y le dijo algo al oído. La cajera sonrió y colocó el paquete debajo del mostrador. Luego atendió al niño y le dijo: —¡Felicitaciones! ¡Eres mi cliente número cien y te has ganado un premio! Dicho esto, le entregó el juego de video al niño, quien no pudo hacer más que mirarlo incrédulo. —¡Es precisamente lo que quería! —exclamó. La niña y su padre fueron testigos de esta emocionante escena desde la puerta de la tienda. En el rostro de la pequeña se dibujaba una sonrisa de oreja a oreja. We have so many people on this show that are passionate about helping others. But, nobody can say they have more experience with serving people than Parker Palmer. One of his core beliefs is that everyone, no matter the industry, or position should think more and more like community organizers. In this episode, we talked about privilege, educational challenges, mental health and living an undivided life. At 83 years old, Parker has a ton of wisdom to share with us about our own mortality and how to live our best life. We get into some challenging discussions on depression and the importance of finding a support system to lean on in tough times.Parker is the author of ten books. Even though his big book writing career is winding down he still hosts an author page with a huge audience. His audience tunes in daily to read his short form stories, poetry and commentary. It's clear that Parker knows how to bring people together to make life more enjoyable and impactful. One of the most interesting things that connects Parker to the Just Keep Learning audience is his lifelong passion for staying curious. He calls it staying “baffled” and it is the foundation of all of his writing and workshops. Instead of seeking conclusions, how can we seek more questions?He has been a speaker, activist and retreat leader since he started his entrepreneurial journey. The leadership project named him one of the Top 30 Most Influential Leaders In Higher Education, based on his learning and teachings about social change. Social Impact Starts WithinParker explains how social impact really is an inside job. If we take care of ourselves first, then we will be able to help others. Reinforcing our own mindset and crafting and building our own values must come first. If we do this right, then naturally we will want to have an impact on others. We will be more motivated and capable of creating meaningful change in society. This is why it is not selfish to help yourself first.Oftentimes we think of social justice and reform as massive acts of courage. But, Parker reminds us that change truthfully happens with small, regular, meaningful acts of bravery. One such example is getting better and better at being anti-racist. As two white males a very important thing we can do is have conversations about things such as white supremacy and privilege. Having conversations and dialogue about our differences should be the main goal. Instead of always arguing over who is right and wrong, we should do the difficult internal work to be accepting of others. To embrace diversity. Parker shares a great comparison between mono culture amongst humans and crops. It is vital that we strive to be diverse, instead of the same. But, without control over our own, internal pride and emotions we can't begin to have this conversation.Having studied societal leaders, he knows a great deal about people who choose to live a life of integrity and identity. Parker shares the term “undivided life” meaning you are fully focused on your mission.An example he gives of someone focused on their missions, is Rosa Parks. Parker realized that people who learned to pursue their main focus have recalibrated punishment and threats. They have begun to realize that the risks and pain of not pursuing their calling are greater than the possible punishment of pursuing it.Ways That We Could Improve EducationEducation is facing the time for the biggest reform in the last one hundred years. As someone who is passionate about education, Parker has seen a lot of different things come and go in the industry. Here are a few great points he makes about what would be good to see in education today.The flipped classroom. Searching for knowledge and information seeking can be done on your own time. But, when able to have time together, focus on applying the learning in ways that require collaboration, individualization and feedback.Create more cloud based schools. How can we create learning opportunities that span beyond geography. The technology exists that we can have the absolute best teachers on a subject educating from anywhere in the world. By connecting students to experts they are most interested in learning from, you have a natural, intrinsic connection to commitment and engagement.Using apprenticeships, mentorships and internships as an increasingly valid way of teaching. They shouldn't just be add ons to the things we learn. Instead, for those who learn well in this environment, we should use it as a primary educational tool.Understanding the difference between the mind and the brain. We all have a brain, but we all have very different minds. How can we as educators, parents and coaches learn to provide opportunities for all types of minds. Intelligence comes in many forms and for some reason we put an emphasis on being academically intelligent. In reality all of the other intelligences should be equally represented in our educational institutions.Collaborate instead of compete. People may be in denial. But, we are far better off at working together instead of alone. There is no denying that competition can be healthy. But, for the most part we should aim to work together. We should create partnerships and joint ventures based on abundance, as opposed to battling with a scarcity mindset.Becoming A WriterBeing an author can seem like a tough industry to succeed in, but it doesn't need to be. It is all about having perspective, a plan and being consistent. Parker has created ten books that served his audience over the last fifty years. When it comes to writing, there are three main things that he wanted to remind us about.Don't wait for any gatekeepers. There are tons of blogging and newsletter creation platforms. And you need not have a publisher, attorney, or marketer if you don't want to. There is no barrier to getting started. Create a blog, newsletter, author page, portfolio, or even something like medium, or twitter and get writing! As you continue to write and share through short form, you will start to craft a framework for a larger book if that is an interest of yours. Don't wait for some perfect time either. If you have a busy lifestyle, you can have a huge impact in just a couple of minutes per day.If you do love writing, then give it away. When you are starting out, make sure your work is free. Don't start out as a first time writer waiting for a book deal, or trying out different ways to monetize your audience. The main goal is to have an impact on others. You want to understand your target audience, build a community and get feedback. The money will come if you are having an impact and building this community.Build multiple streams of income. As you create your writing practice, you will have to find ways to make money beyond book sales. Being an author is a great way to network, or build an audience. But, for most writers the writing itself is not enough to be your only revenue source. Find other ways to monetize. Such as speaking, guest posting, advertising, brand deals, sponsorships, memberships, or other products and services. A lack of certainty is what makes great creative writers. When it comes to crafting a story and deciding what to write about, focus on questions. We often give a lot of credit to writing about what we do know. But the more valuable, emotional, interesting conversations often come from questions. What really interests you? Write about the questions you have. As you dig deep into those questions you will develop more and more questions. Be increasingly baffled and curious. If there was ever a year to learn more about how certain herbs can reduce stress, it has to be 2020, right? In today’s episode, my guest — Vicki Shanta Retelny — explains how certain herbs known as “adaptogens” help your body adapt to stress by acting on the neuroendocrine system to thwart our stress response. Vicki*, a fellow registered dietitian nutritionist who started studying adaptogens in recent years, explains that as stress causes our sympathetic nervous system (our “fight or flight” response) to kick in, adaptogens dampen that response and allow for our para-sympathetic (the more calming side of our nervous system) to take over. She also discusses how adaptogens reduce the amount of cortisol that is released in response to stress. For the sake of our health, the planet and animal welfare, it's about time we take control.  To explain more about why we should take action towards sustainability of plant-based nutrition, Sharon Palmer is back on the show for the second time around. I also strongly recommend listeners to check out my episode with Sharon Palmer on episode 197. She revealed a lot of things you need to know about a plant-based diet. General Perceptions My husband and I have been trying a plant-based diet for almost three months now. I eat chicken sometimes, but other than that, I make a conscious effort to eat organic produce most of the time. Sharon Palmer says a lot of people don't realize that there are a lot of delicious ways to eat a plant-based diet. But most of the time, people think they're going to be missing out on something. "Primates are vegans. We are similar to them. Eating a plant-based diet makes cholesterol and glucose drop," explains Sharon Palmer. "Whole plant food is so satisfying and delicious. Plus, your body will be flooded with nutrients that benefit in so many ways." Sharon Palmer also assures that experiencing hunger, in the beginning, is normal. Because a plant-based diet is so dense in nutrients but low in energy or calories. It is also low in fat naturally. Usually, it takes time easing into the diet, but people eventually get used to it. I was initially worried where I would get my protein requirement in a plant-based diet. But apparently, 18 grams of protein equals one cup of legumes. I was then more than willing to dive into the diet because I love legumes! Major Problems Some of the significant problems we have on sustainability are waste management, air pollution, water pollution and soil pollution due to extensive farming and modern animal agriculture. According to Sharon Palmer, all these are detrimental to the environment. "From an environmental standpoint, they concentrate all the manure. In effect, the manure accumulates in lagoons and storage tanks," said Sharon Palmer. In a past episode, Dr. Mark Hyman said, when farmers pay more attention to the health of the soil, that is when we get healthy crops. And that will ultimately sustain our health. Soil plays a big factor in all this.  Part of the equation is the state of biodynamic farming, allowing the animals to walk on the fields during offseason and enable their manure to be stomped into the ground naturally. Studies have shown that biodynamic farms have a higher yield of produce than those produced with a bunch of chemicals. "A lot of times we think the soil is just dirt. But soil is living and breathing. We are so interested in our gut microbiome now, but the soil has a microbiome," Sharon Palmer explains. "It is enriched with all of these organisms that help decay the organic matter and contribute nutrients to the soil. Modern agriculture treats soil as an inert substance."  She adds, "But at the same time, this compost has all the things like manure and compost. Part of our natural environment has all the things needed regarding nutrients in the soil, and it breaks down slowly, adding organic materials to the soil." Present Focus Sharon Palmer's primary focus on sustainability is looking at the food system rather than focusing on micro-agriculture. She is also currently learning about biodynamics and regenerative agriculture to restore the soil and looking into food policies, food systems, and security. "Sustainability goes beyond just the environment. A lot of people think of the environment as the only aspect of sustainability," said Sharon Palmer. "Sustainability means we want the food system to move beyond and be available for future generations. That means healthful, affordable food that everybody has access to."  She adds, "Just because people who can afford it can go to the farmers market and buy organic produce, that doesn't mean it's available to everyone. It involves things like economics, society, and community." How We Grow Our Food Sharon Palmer also shares that her plant-based nutrition matches her work as a journalist and speaker for nutrition. According to her, the healthcare professional world has a lack of understanding of the food system. "We're so focused on nutrients. Sometimes, we don't take it all the way back to the soil and how we're growing our food," Sharon Palmer said. "It is intriguing that crops we are eating today have zero nutrients than crops grown 50 years ago." Sharon Palmer says we change our varieties so much, that when we buy our orange carrots, supermarkets and nature apparently produces many other types. Often, the crop varieties we have now have much lower nutrients than their ancient relatives. Apparently, this is because we bred the nutrients out of these vegetables. Secondly, Sharon Palmer says it takes two weeks after harvest for us to get our produce at the supermarket. And we know produce loses nutrients daily after being picked. Lastly, evidence shows that climate change is changing the nutrient value of our vegetables. And because temperatures are rising, it changes the actual composition of our crops. This is why Sharon Palmer recommends eating freshly harvested produce as much as possible. It also helps if we could grow our food and eat more varieties. Impact Of Pesticides Sharon Palmer says that research has shown farming communities have the highest risk of adverse effects of pesticides because farmers breathe the air and live on the farm. This is one of the reasons why Sharon Palmer supports organic agriculture. Personally, my interview with Dr. Stephanie Seneff on episode 89 was such an eye-opener. In the episode, she revealed the link between glyphosate and autism. Glyphosate is a chelator. It binds to heavy metals, but it also releases heavy metals once the agent changes pH.  The pH changes when fluids in our body change. "Everybody knew that glyphosate wouldn't work anymore. Nature has a way of evolving," said Sharon Palmer. "We have to look at the next herbicide that they are using, to see what the implications are. California has been aggressive in seeing the risks of glyphosate." What We Can Do Sharon Palmer says the United States has one of the cheapest food supplies in the world. Because when you look at the percentage of our income, it goes to food. But then we're so used to buying cheap food. And it's hard to get people to pay more to for food that has a higher quality.  "Americans eat a lot of food. There's an opportunity to eat more of what we need every day and not waste so much. We waste 40% of our food so must learn to put more value in food," Sharon Palmer said. "A lot of people don't realize that we have a lot of programs in farmers markets to connect people and make them eat more healthy produce." I'm planning to grow my vegetables in my garden and share it with friends and family as well as donate to my community's local food bank. It is essential to create a sense of unity in the community by having every family pitch in to do their part and start their garden, too. Extra lands on church grounds and schools can also be converted into vegetable gardens for the benefit of the community. Sharon Palmer shares that there are already a lot of schools around the country trying to educate students through growing vegetables on school grounds.  "The movement is already happening. We have to expose it to people before we lose connection with our soil. I also think that if you grow your food, you also value it more because you spend a lot of time nourishing it," said Sharon Palmer. Changing Our Diet Sharon Palmer reveals that Americans are the top meat eaters in the world. Overeating meat is not suitable for health, and it is advisable to cut your meat consumption in half. Just think of what it can do for animal welfare, your health and also the planet. To ease into the transition to a plant-based diet, try avoiding meat once a week. Start thinking about your plate differently. In fact, my past guest, Dr. Mark Hyman recommended to make meat a condiment. There's a vegan burger recipe I have which I make with quinoa, chickpeas, rice cauliflower and avocado. Then I wrap in uncooked purple cabbage and add a little taco seasoning. My family loves it, and I suggest you should try this easy recipe, too. The taste takes a little getting used to, but it's delicious! On the other hand, Sharon Palmer's favorite breakfast is oatmeal porridge with whatever fruits in season, flax seeds and walnuts with no sugar. It's an easy recipe and very healthy for the body. "Research shows that you can train your taste buds and gradually reduce preference level for sweet and salty," Sharon Palmer said. Sharon Palmer's Books There's so much to learn about the plant-based diet. According to Sharon Palmer, her book, Plant-Powered Diet is the bible of plant-based eating. There are a lot of tips on how to choose food like whole grains and how many vegetables to eat every day. Her other book, Plant-Powered For Life, is a straightforward approach to anything from the plant-based diet.  The book also contains a lot of recipes that's so easy to do and delicious so check it out. People are initially skeptical about whether a plant-based diet fulfills our daily nutritional requirement. However, experts like my guest today assures us that it does. In this episode, Nutrition expert Sharon Palmer will explain how shifting to a plant-based diet is one of the best decisions you will ever make.    Growing up  Sharon Palmer grew up in a very natural environment for as long as she can remember. Her mom grew up on a farm in Arkansas, and her father lived the farm life in Minnesota. Both her parents met when they became neighbors in Idaho.    Her family believes that wellness begins in the soil, and a plant-based diet and nutrition has always been their lifestyle. So even if Sharon Palmer was born in the suburbs in the Northwest, she grew up in a house with a large vegetable garden. Hence, she was very connected to the concept of growing food and eating real food through a plant-based diet.   Given her family background, it was not surprising that Sharon Palmer decided to pursue a career in Nutrition when she moved to California. She was likewise able to hone her journalistic skills writing and talking about the world of Nutrition.    “I’m a huge advocate of growing your food. When we are connected with our food, there are rewards. We feel better,” said Sharon Palmer. “There are more benefits to eating a plant-based diet because it is filled with anti-oxidants and anti-inflammatory compounds. You’re never too old to eat better.” Her Philosophy   Sharon Palmer stresses that her philosophy is all about making more people realize that they can benefit from eating more whole plants foods through a plant-based diet. She does this by encouraging people to get on that spectrum of consuming whole plant foods and fewer animal foods.    You’ve heard that fast food is bad, right? Reaching out for those French Fries indeed is tempting! Some may argue that potatoes are considered vegetables but when it is deep fried in unhealthy oil, it’s not considered a healthy diet at all.   Sharon Palmer affirms this by saying that generally speaking, what most people eat today can be junk foods. Yes, things like French Fries and colas are made from plants, but an excellent plant-based diet is about consuming less processed foods. Real food is whole plant foods, grown close to Mother Earth and minimally processed.    “A lot of people who eat a plant-based just think that it’s all about eliminating meat. However, the benefit of a plant-based diet comes mostly from what you are eating. That would be all these whole foods like beans and lentils, whole grains like oats and quinoa, barley, fruits, veggies, spices, herbs, nuts, and seeds.” Sharon Palmer explained. Eating According To Your Blood Type   There’s a particular type of diet that called blood type diet. The concept of this diet plan revolves around the belief that because blood types have different characteristics, it is best that people embrace a diet by their blood type.    However, Sharon Palmer doesn’t think there’s enough evidence to link our blood type to what diet we should be on. She says research points that a healthy diet would fit everybody’s genetic profile.    “By healthy diet, I mean a healthy plant-based diet. Although we are learning more about personal nutrition or nutrigenomics where we recognize that certain genetic profiles might benefit from slightly tweaking their diet. But at this point, I think we can safely say that these overall diet patterns are healthy for most of us,” said Sharon Palmer.   Obesity and Diabetes   Sharon Palmer singles out obesity and diabetes because she said there are epidemics of these health conditions in certain countries with a significant ethnic population. This is because people from those countries are following a Western diet which unfortunately has been linked to many diseases.   Studies show that obesity has numerous physical and mental risks.  Aside from heart diseases and sleep issues, it can also prove fatal by developing into some types of cancer and reduce life expectancy.    Diabetes, on the other hand, is just as severe.  Initially, symptoms like headaches and itchy skin may seem minor, but if left undiagnosed, it could escalate into something more severe.     Studies have shown that a considerable percentage of people who have diabetes die of coronary artery disease. Sharon Palmer says a severe complication of obesity and diabetes are caused by having a processed food diet. Hence, it is therefore vital that we alter our eating habits while it is not too late.  Importance of Vitamin C and Vitamin B-12   Anemia indicates that a person suffering from this condition has an iron deficiency. That is why Sharon Palmer firmly advises people to make sure to get good sources of plant-based iron in their diet.   “Another thing is by taking Vitamin C. It can increase the absorption of iron significantly,” said Sharon Palmer. “There is iron in red meat, poultry, and fish. I think when it comes to a plant-based diet, the diet preference is an individual choice.” On the other hand, Vitamin B- 12 is essential for cognition and many other issues. However, Sharon Palmer says that apparently, Vitamin B-12 can’t be found in a plant-based diet. Hence, you have to take supplements to fulfill your daily nutritional requirement, and it is also essential that you choose a good brand of supplements.   The Truth About Carbohydrates   Sharon Palmer shares the fact that people on a plant-based diet usually remove a lot of carbs.  However, she says carbohydrates are not all bad. Apparently, people have an unjustified fear of carbohydrates.   “When you look at healthy diet patterns of people who live longer, they tend to consume a high ratio of carbohydrates. So you can’t just assume that carbohydrates are bad,” said Sharon Palmer. “However, pay attention to the quality of carbohydrates. Instead of refined flour, eat whole grains especially in their intact form.” Sharon Palmer also recommends that consuming quinoa and brown rice is the best response to the body. On the other hand, beans, nuts, seeds, lentil, and tofu are fantastic sources of protein that can take the place of animal foods.    Colon Cancer    There is a specific relationship between colon cancer and diet. According to Sharon Palmer, a high red meat diet has a significant colon cancer risk. Hence, it is essential to include a substantial amount of fiber in your diet because apparently, fiber reduces toxins that can come in contact with the colon.    However, eating a plant-based diet does not only reduce the risk of colon cancer but instead prevents many types of cancer as well. Sharon Palmer explains that generally speaking, cancer is an inflammatory disease. So when we eat foods high in anti-inflammatory compounds and reduce red meat in our diet, we are suppressing that chronic inflammation.   “Make sure you are also getting good sources of carbohydrates, protein, and fats. Americans eat so much meat. Eating whole foods would help our environment, as well as animal welfare and our health. Because the Western diet has been linked to many health risks,” explained Sharon Palmer. How To Transition To A Plant-Based Diet   So, you’re ready to start a plant-based diet? Great! Once you commit yourself, Sharon Palmer advises starting with plants rather than animal food. Eat salads using whole fruits and vegetables. This is because the fruits and vegetables lose nutritional value once they are processed. According to Sharon Palmer, Vitamin C-rich fruits and vegetables are better eaten fresh. The same goes for bell peppers, broccoli, berries, and tomatoes.     However, let’s face it.  We’re human. And like Sharon Palmer earlier said, we are born omnivores. Hence, it is natural to have meat cravings. But that doesn’t mean following a plant-based diet is hopeless because it’s all about understanding the underlying cause of your cravings.   “If your diet is not balanced, you will crave it. If you are short on fat or calories, you will feel hungry.  Usually, people who quit eating meat cold turkey experience cravings,” Sharon Palmer said. “This is because the plant-based diet has a different composition. Humans evolved to eat animal food and plants. That’s why a plant-based diet is a personal choice.” Plan-Powered Diet Book   Sharon Palmer has two excellent books that are good references for explaining the whole concept behind a plant-based diet. Sharon has a lot of advice for people who are tempted to make the change but don't know where to start. All the myths surrounding plant based eating can scare people off and make it more difficult to make the change so Sharon addresses these stories. Diane and Sharon examine the best foods to fulfill your protein requirements and the quickest way to create a "go-to" meal from scratch. Sharon is a Registered Dietician with other 25 years experience, she has also written two books about plant based living and writes a daily blog on her website. Sharon is a plant based expert and even went to a meat-free campus college. What you will learn: Moving to a plant based lifestyle can be done in small easy steps Blue zones are places on Earth where people live the longest. Cutting out meat doesn't need to be difficult. Keep a small larder of canned pulses, herbs, nuts and seeds which can be used as a meal base. You don't have to have a recipe for every meal Food prep won't take longer and you can create a meal in less time than getting a takeaway. You will need to plan ahead. Beans, lentils and soy foods are all high in protein. Start by planning a meal around a plant protein, eg lentils Aim for two servings of vegetables per meal. Breakfast can be porridge, peanut butter on toast or wholegrain cereal. Make a week's worth of porridge and reheat small portions. Make sure you get your whole grains in your diet to keep you full.
