This week I take a fresh look at European Classification Systems, going into detail on the history of how and why they evolved, what the current EU scheme is based on, and what the major wine nations' systems are structured (and how they differ from what the EU would like them to look like!).    I discuss: How Europe classified its wines to protect the names of specific products and link them to their place of origin, to the benefit of consumers and producers. A history of wine classifications from the monks in medieval Burgundy to the winemakers of Tokaj in the 1600s to Chianti, Port, and Bordeaux in the 1700s and 1800s. A detailed look at the evolution of the French classification system. I go through the steps that the French took to prevent fraud, protect the origin of their wines, and ultimately create the system off which the EU system is based. I address the EU system with its two main categories: -Wine without a geographic origin (table wine) -Wine with a geographic origin: Protected Geographical Indication (PGI): At least 85% of the grapes used have to come exclusively from the geographical area where the wine is actually made. These wines cover large areas, and a lot of grapes and winemaking methods are permitted. There is only a minor influence of place of origin Protected Designation of Origin (PDO): Every part of the production, processing and preparation process must take place in the specific region. Grapes have to come exclusively from the geographical area where the wine is made. Origin and terroir are essential to the identity of the wine. Then I review the major countries' classification categories   France: Vin de France=Table wine IGP, indication géographique protégée (PGI) AOP=appellation d'origine protégée, often called AOC (contrôlée) (PDO)   Italy: Vino=Table Wine IGP=indicazione geografica protetta, producers frequently use the old IGT = indicazione geografica tipica (PGI) DOC = denominazione di origine controllata (PDO) DOCG = denominazione di origine controllata e garantita (PDO) DOP = denominazione di origine protetta, the new name, conforming to the EU standard that includes DOC and DOCG. DOP is rarely used (PDO)   Spain: Vino de España=Table wine IGP / VT = indicación geográfica protegida, usually called vino de la tierra (VT) (PGI) VC = vino de calidad con indicación geográfica (PDO) DO (DOP) = denominación de origen, sometimes called DOP (PDO) DOCa = denominación de origen calificada (PDO) VP = vino de pago (PDO)   Germany Deutscher Wein =Table wine Landwein =PGI Qualitätswein (also called Qba from the 13 regions, PDO) Prädikatswein – Prädikat means special attribute and refers to the ripeness of the grapes and the type of harvest. Pradikat levels: Dry or sweet: Kabinett, Spätlese, Auslese Sweet (expensive and rare): Beerenauslese, Trockenbeerenauslese, Eiswein   Other terms: Trocken is dry, Halbtrocken is “Half Dry” or “Off-Dry, “Feinherb” is an unofficial term for off-dry wine   The VDP is a German marketing organization that includes many of the country's top producers. Producers can use the VDP eagle and the VDP classifications WITH “Qualitätswein” or “Prädikatswein” ·       Gutswein: First wines of a wine year to be bottled and sold, Estate-grown grapes ·       Ortsweine:  Village wines ·       Erste Lage:  Premier Cru wine from first-class vineyards ·       Grosse Lage:  Grand cru  or highest quality German vineyards. Our guest this month is Hungary's first Master Sommelier, Tamás Czinki, from Budapest, who is the wine director of the Felix restaurant and consults for Culinaris Wholesale, where he is developing an extensive portfolio of fine wines. Previously, Tamás spent a decade in the UK, where he was the head sommelier for the Northcote hotel in Lancashire and regularly competed in sommelier competitions, placing second in the 2018 Best Sommelier of the United Kingdom event.  Thanks for listening. As part of the series on the The Greats (the great wines of the world), I cover the complex world of Hungarian Tokaji. As with all dives into “The Greats,” I spend the first half of the show delving into the history of Tokaj and then discuss winemaking, the grapes, and the complex way in which this wine is made.   Some notes that may be hard to understand (since I obviously know no Hungarian!):     The main grapes in the wine are: Furmint (Foor-mint) 60-70% of Tokaj plantings Hárslevelű (Harsh-level-loo) -- 19% of plantings Sárgamuskotály (Sharga-moose-kah-tie) - 9% of plantings (Muscat Lunel, Muscat Blanc à Petits Grains)   Secondary grapes are: Zéta (Oremus), Kabar and Kövérszőlő (Koo-ver-sue-loo)     And just a few words on the wines: Tokaji Szamorodni (sam-or-od-nee) can be dry or sweet. It is made from bunches of grapes with a high proportion of botrytized grapes. These are bunches, not individual berries.     Tokaji Aszú is the world-famous sweet wine. Aszu contains exclusively all botrytized grapes, individually hand picked, trampled, and then turned into a paste/dough. The wine is then macerated in must, wine, or partly fermented must, still fermenting must or wine from the same vintage. Aszú ranges from 3 to 6 puttonyos, which indicates sweetness levels     Tokaji Eszencia: Is one of the most exclusive wines there is. Eszencia means nectar. It is the free run juice of botrytized aszú berries. Chủ tịch Trung Quốc Tập Cận Bình đang có chuyến công du Hungary 3 ngày, từ ngày 08-10/05/2024, được đôi bên gọi là"chuyến thăm lịch sử". Chương trình nghị sự và các thông tin về chuyến công du được giữ kín đến phút cuối, an ninh Budapest được thắt chặt cao độ, xuất hiện một lực lượng người Hoa đông đảo trên đường phố thủ đô... là những nét có thể quan sát được. Bắc Kinh tính gì khi chọn quốc gia Đông Trung Âu là điểm đến trong chuyến công du châu Âu đầu tiên từ năm 2019, đặc biệt trong bối cảnh quan hệ giữa Trung Quốc với Hoa Kỳ và Liên Hiệp Châu Âu đang trở nên căng thẳng trong nhiều lĩnh vực thương mại, công nghệ cũng như là trong nhiều hồ sơ quốc tế lớn?Về phần Budapest, mối quan hệ giữa chính quyền Hungary với Liên Hiệp Châu Âu cũng đã trở nên lạnh nhạt. Điều tra có thể kết thúc bằng việc áp dụng thuế bảo hộ vào mùa hè này. Một số biện pháp đã được EU đề xuất tiến hành nhằm:- Chống lại việc các nhà sản xuất tấm pin năng lượng mặt trời và tua-bin gió của Trung Quốc khởi đầu với mức giá thấp đáng ngờ trong các cuộc đấu thầu ở châu Âu,- Chống lại các nhà sản xuất thiết bị y tế, các công ty đường sắt có liên quan trong việc xây dựng tuyến đường sắt Budapest-Beograd, "công trình thế kỷ" đầy bê bối tại Hungary và Serbia,Ủy Ban Châu Âu đang xem xét tăng thuế đối với xe điện nhập khẩu từ Trung Quốc từ mức 10% hiện tại để bảo vệ thị trường sản xuất ô tô châu Âu mà Đức, nền kinh tế lớn nhất trong khối 27 thành viên, là trụ cột. Tháng 12/2023, Hungary đã thông báo Trung Quốc sẽ mở nhà máy sản xuất ô tô điện châu Âu đầu tiên ở miền Nam nước này.Theo tuyên bố, đó sẽ là dự án của một trong những nhà sản xuất xe điện lớn nhất thế giới của Trung Quốc, có thể làm đảo lộn khả năng cạnh tranh về ô tô của Lục Địa Già. Sự trỗi dậy của ngành công nghiệp xe hơi Trung Quốc ở Hungary cũng có thể góp phần làm gia tăng những chỉ trích chính trị của Berlin đối với Budapest trong thời gian gần đây.Khi chọn Hungary và Serbia để đến thăm, hai nước này có những lợi điểm gì cho chiến lược đối phó Liên Âu của Trung Quốc?TTV Hoàng Nguyễn : Trước hết, dễ thấy Serbia là quốc gia châu Âu thân Trung Quốc nhất, và Hungary là thành viên Liên Âu gần gũi nhất với Trung Quốc về nhiều mặt với chính sách "Hướng Đông" được nội các cánh hữu của thủ tướng Orbán Viktor theo đuổi gần 15 năm nay. Cả hai nước đều là địa điểm của nhiều dự án của Trung Quốc, được thực hiện bằng nguồn tín dụng Trung Quốc.Xét về tỷ trọng tương đối của các khoản đầu tư của Trung Quốc, Serbia và Hungary đã trở thành những quốc gia nổi bật ở châu Âu, đặc biệt là ở Serbia, vai trò của Trung Quốc ngày càng quan trọng trong lĩnh vực đầu tư cơ sở hạ tầng. Hai nước đồng minh này còn mang tính chiến lược trong nỗ lực đối phó Liên Âu của Trung Nam Hải.Chuyến công du của ông Tập Cận Bình tới Serbia nhằm đúng kỷ niệm 25 năm cuộc chiến do khối NATO phát động đối với Nam Tư (cũ) để ngăn chặn cuộc chiến tranh Kosovo của chế độ Slobodan Milošević và sự tiêu diệt người Albania ở Kosovo. Còn nhớ, trong khuôn khổ đó, vào ngày 7/5/1999, đại sứ quán Trung Quốc cũng bị đánh bom khiến 3 người tử vong.Chủ tịch Trung Quốc đã tham gia lễ kỷ niệm 25 năm vụ đánh bom này cùng tổng thống Serbia Aleksandar Vučić ở Beograd, với phát biểu rằng đây là một sự kiện mà Bắc Kinh "không bao giờ quên". Đây cũng là sự kiện khiến Trung Quốc và Serbia "xích lại gần nhau" hơn bao giờ hết, và tới giờ, Trung Quốc trở thành nhà đầu tư nước ngoài (FDI) lớn nhất của Serbia.Bên cạnh đó, vai trò của Hungary gần như không cần phải giải thích. Do cơ sở công nghiệp và công nghệ tại Hungary ở mức khá thấp, đối với chính phủ Hungary, vốn của Trung Quốc hay Đức đều được, miễn là có lợi và nước này không mấy quan tâm đến cái gọi là "đoàn kết chính trị của Liên Âu", thậm chí có lúc còn phản đối dữ dội.Với quan điểm "một Châu Âu của các quốc gia dân tộc", nội các Orbán Viktor rất có lợi cho những lợi ích của Trung Quốc. Chưa nói đến chuyện hiện tại các nguồn tài trợ của EU cho Hungary bị đình chỉ bởi những cáo buộc về tình trạng tham nhũng và vi phạm nhà nước pháp quyền, Trung Quốc sẵn sàng lấp đầy những khoảng trống trong ngân sách Hungary.Thủ tướng Orbán Viktor không giấu giếm lý do khiến ông ưu tiên đầu tư Trung Quốc: ông tin rằng kinh tế phương Tây đang suy thoái, trong khi Trung Quốc đang trên đà phát triển. Trong phát biểu gần đây tại một hội nghị ở Budapest, ông đã vạch ra tầm nhìn về một "nền kinh tế toàn cầu tổ chức trên cơ sở nguyên tắc cùng có lợi, không mang màu sắc ý thức hệ".Đổi lại, thủ tướng Orbán Viktor có ý đồ gì và được gì khi trải thảm đỏ đón Tập Cận Bình? Ông muốn thách thức Liên Âu và NATO vào lúc Budapest căng thẳng quan hệ với hai định chế này?TTV Hoàng Nguyễn : Cho dù sau 20 năm mới có một vị nguyên thủ quốc gia Trung Quốc công du Hungary, nhưng đây là gần gặp gỡ thứ 7 của ông Orbán Viktor với lãnh đạo họ Tập. Những biểu hiện phản đối Trung Quốc trong các hồ sơ nhân quyền bị bóp nghẹt từ trứng nước, sự hiện diện đông đảo của các tình nguyện viên tòa đại sứ Trung Quốc cho thấy ảnh hưởng của nước này tại Hungary.Truyền thông và các nhà bình luận Hungary cho rằng, nếu trước nay đã có nhiều ý kiến phàn nàn về sự hiện diện "quá mức" của Trung Quốc tại Hungary, thì thực ra mọi thứ mới là khởi đầu, và bây giờ mới là thực sự! "Chúng ta đã ngồi lên toa tàu hỏa Trung Quốc", theo cách nói của truyền thông Hungary về mối quan hệ mật thiết nhiều mặt của hai đồng minh này.Trước hết là về kinh tế và thương mại, dễ thấy là thủ tướng Orbán Viktor chờ đợi gì khi "trải thảm đỏ" đón lãnh đạo họ Tập. Trong nỗ lực tái cấu trúc nền kinh tế vài năm gần đây, Hungary đã tập trung chính sách vào việc hỗ trợ sản xuất ô tô điện và công nghệ bình điện, trên thực tế là đặt hy vọng vào các nhà máy xe hơi và pin điện chủ yếu của Trung Quốc, Đức và Hàn Quốc.Theo nội các Orbán Viktor, đây là điều tốt cho Hungary, vì nước này giữ được những việc làm trong lĩnh vực ô tô khi chuyển đổi sang điện, và có thể đóng vai trò là cầu nối giữa phương Tây và phương Đông, và cũng tốt cho Trung Quốc khi một quốc gia EU cởi mở đón nhận đầu tư Trung Quốc, khi quan hệ thương mại của nước này với Mỹ và EU ngày càng trở nên băng giá.Mặt khác, nếu các doanh nghiệp xuất khẩu lớn của Trung Quốc có nhà máy ở EU, thì việc ngăn chặn sự mở rộng của các sản phẩm Trung Quốc sang Châu Âu trong bối cảnh cuộc chiến thuế quan sẽ khó khăn hơn nhiều, vì chúng đã được sản xuất "trong nội địa". Thị trường Châu Âu sẽ rộng mở với Trung Quốc, ít nhất là trong lĩnh vực phát triển xe điện và bình điện.Đó là chưa kể đến việc Trung Quốc sẵn sàng phát triển hệ thống cơ sở hạ tầng của Hungary bằng nguồn tín dụng của mình trong khuôn khổ chương trình "Nhất đới - Nhất lộ" ("Một vành đai - Một con đường"). Cần nhắc đến "dự án thế kỷ" - tuyến đường sắt Budapest - Beograd được quyết định từ 2015 - mà phải mất vài trăm năm Hungary mới có thể hoàn vốn.Viễn cảnh những nhà máy được thực hiện với vốn đầu tư Trung Quốc lớn chưa từng có tại Hungary đang được vạch ra, và dường như chính quyền Budapest không lo ngại sự lệ thuộc, trở thành "thuộc địa" của Trung Quốc. Ngoại trưởng Szijjártó Péter không ngần ngại tuyên bố, "hợp tác với Trung Quốc về cơ bản quyết định nền kinh tế của các nước Châu Âu”.Chiến lược này của thủ tướng Orbán Viktor có làm hại gì đến chính sách "giảm rủi ro" của Liên Âu đối với Trung Quốc?TTV Hoàng Nguyễn : Không có những quan hệ mật thiết này đi nữa, thì từ nhiều năm nay Hungary vốn dĩ đã bị coi là "con ngựa gỗ thành Troy" với chính sách thân Trung Quốc và Nga. Trong hầu hết các hồ sơ, dường như nội các Orbán Viktor đều tìm được cách đi ngược lại với số đông các thành viên Liên Âu. Nước này có vẻ không ngần ngại những khi "còn lại một mình" ở EU.Tuy nhiên, Liên Âu có thể làm gì trước hiểm họa Trung Quốc, trước hết là trên địa hạt thương mại, là nơi mà dù có những xung khắc, đôi bên vẫn "không thể thiếu nhau"? Cùng lắm, nếu chiến tranh thương mại trở nên tồi tệ hoặc nếu EU coi chúng là một rủi ro an ninh, Liên Âu có thể đưa ra một số biện pháp trừng phạt đối với các nhà máy Trung Quốc và sản phẩm tại đó.Tất nhiên về lâu dài không thể loại trừ những điều này, nhưng ở thời điểm hiệ nay, có vẻ như EU và Trung Quốc đang quá phụ thuộc vào nhau (cả hai đều là thị trường xuất khẩu và là nguồn nhập khẩu rất lớn của bên kia), nên khó đi vào cuộc chiến kinh tế kiểu "ăn miếng trả miếng". Quan hệ Hung - Trung có lẽ không gặp phải mạo hiểm đáng kể từ Liên Âu xét từ góc độ này.Mặc cho những quan ngại về rủi ro trong mối quan hệ với Trung Quốc, ngay trước khi đặt chân tới Budapest, lãnh đạo họ Tập đã tuyên bố gia hạn việc miễn thị thực nhập cảnh cho công dân 10 nước Liên Âu - trong đó có Hungary - cho đến cuối năm 2025. Đổi lại, Hungary xét đơn xin visa kinh doanh của Trung Quốc vào nước này trong vòng 48h, thay vì 15 ngày theo thông lệ.Những động thái trên diễn ra "trên tinh thần hợp tác tốt đẹp, trên cơ sở tôn trọng lẫn nhau" theo cách diễn đạt của đôi bên. In recent years, there has been a lot of buzz around “volcanic wines.” The term makes it sound as if these are wines that are spawned from a volcano, but in reality these are wines that many people believe have special qualities because they grow on volcanic soils.    In this show, I define the types of volcanoes before discussing the ecosystems they form.Here is the list of wines/places I discuss in the show:   Italy   Mount Etna, Sicily: Reds (Rosso of the Nerello Mascalese, Nerello Cappuccio grapes), whites (Bianco, mainly of the Carricante grape)   Soave, Veneto: Whites grown on specific hillsides (Garganega, Trebbiano di Soave grapes) Photo: Mount Etna. Kumulacja wyborów z referendum rodzi liczne obawy – mówi w programie „Rzecz o Prawie” mecenas Beata Tokaj, była szefowa Krajowego Biura Wyborczego. Obawiają się szczególnie wyborcy z zagranicy, których głosy mogą się zmarnować, jeśli komisje wyborcze nie zdążą przesłać ich do Warszawy w 24 godziny.- Komisje wyborcze przez referendum będą miały dwa razy więcej pracy – za którą zresztą nikt im więcej nie zapłaci. Dlatego – aby głosy Polaków z zagranicy nie przepadły - rekomendujemy aby komisje w pierwszej kolejności przeliczały głosy oddane w wyborach parlamentarnych, a w drugiej – te z referendum – mówiła mec. Tokaj.Zwraca ona też uwagę, że przepisy o referendum – w odróżnieniu od tych o wyborach parlamentarnych - nie zawierają limitu wydatków na kampanię, więc jest ryzyko – i to widać - że partie będą wykorzystywać tę sytuację do pozakodeksowego dofinansowania swoich zabiegów kampanijnych. – Państwowa Komisja Wyborcza może w tej sprawie tylko apelować i publikować wyjaśnienia – mówi gość programu. One of the confusing things about wine is that often we can identify a wine and the basic facts about it -- we may have even tasted it -- but because it's not obvious, we don't know the grapes behind the wine. Although I bet you've heard of Tokaji, the great sweet wine of Hungary, you may not be familiar with Furmint, the main white grape that makes the wine sing and that usually makes up 85-90% of the blend of Tokaji.   What you also may not know is that this grape is not just for sweet wines. Starting around the year 2000, ambitious, creative producers began a quest to make quality dry wine from the grape and have had a quite a lot of success over the last 20+ years.   In this show we discuss Furmint, the white grape native to Tokaj-Hegyalia wine region of northeastern Hungary, that makes everything from simple bone-dry wine to complex oak-aged versions, to sparkling wine, to the classic botrytized sweet wines, Tokaji.   Full show notes are now exclusively available on Patreon! Become a member today! Happy New Year everyone! So a few days ago, I was super psyched to learn that my jazz ensemble was booked for the 2022 Boston Food and Wine Festival jazz brunches, to be held at one of my favorite locations, The Boston Harbor Hotel. With wine on my mind, I thought I’d do a post on it, especially since a lot of folks are curious.  As it so happens, I’m married to a wine and whisky aficionado, Jeff Hunter.Now this isn’t a proper interview at all.  We were about to settle down for the season finale of Mandalorian when it occurred to me I should see if Jeff was up for an impromptu interview, something he is more predisposed to do with a glass in hand.  He was.  So while he prepared for us to sample 2018 vintage Cabernet Sauvignon from two very different locales, one from Alexander Valley Vineyards California, the other from Penley Estate Phoenix Australia , I grabbed a mic. I know wine events can be daunting.  There’s the odd swish and sniff of glasses; the confident gargle, and the spit.  And what about the knowing look you get when you opt to swallow your sip ‘coz goodness knows you’ve paid good money for this!   And then there’s the jargon—  “structured,” “hint of oak,”  “tannic,” that defines moments of deliberation.It’s easy to forget that a wine palate is cultivated.  Unless vinification is a family business or inherent in your culture, there’s a big chance your first sip of wine was disappointing and far from how you imagined it to be.  My parents let us have a sip or two when we were kids and I did not understand what the big to-do was.  Even in my college days it wasn’t something I enjoyed though I learned to tolerate it because I badly wanted to travel to Europe and I thought wine was something everyone had with their meals.  In the 70’s and 80’s in Manila, I remember drinking Blue Nun Riesling and Cold Duck champagne in our family events. Paul Masson Chablis was the main wine served at my 18th birthday party debut, an important milestone in Filipino society.   At the time, and in a nation of beer and whisky drinkers, any wine at a party was impressive, even if they all tasted like tart juice or downright vinegary. In a hot tropical country like the Philippines where houses don’t have basements, cellars, cool pantries,  nor any concept of proper storage, it’s highly likely we’d been blissfully toasting with turned wines and thinking that was cool.So we all start somewhere and my first point is, wherever you are in your wine journey is okay.  Second, over time and as you explore a breadth of varieties, your palate will evolve.  What you find pleasant today may not be so tomorrow, and the opposite could also be true. Third, what is considered “good,” even by experts, need not be expensive.  Though price point can be indicative of quality, it is also affected by supply (limited production usually is pricier), brand name, popularity and other factors that have nothing to do with quality.  Wine regions like Bordeaux (France) or Napa Valley (US) have more cachet with some people than Australian or Argentinian wines, hence my earlier example of two 2018 Cabernet Sauvignon wines we were comparing, both very good and under $20, with the Penley Estate Phoenix Australia rated #69 in the Wine Enthusiast top 100 wines.Learning about wines is fun and a lifetime activity. While I can barely remember vineyard names, I know what I like, am confident about food pairing , and am more articulate about my descriptions, which means, I can pretty much fake my way in an event.  I’m fortunate to have learned from others and most especially Jeff, who often cooks dishes with particular libations in mind, such as this evening’s Seafood Cioppino paired with 2006 Constanti Brunello di Montalcino, which means, a lot of our dinners are mini wine tasting events.  Since I have a resident (literally) wine expert on board, and he now has the mic, let’s see what he has to say.  Bear in mind, we’ve had a few glasses at this point.Marlene:  So I’m here with Jeff, an avid wine and whisky collector, purveyor in auctions and former wine consultant.  So Jeff, tell us a bit more about your passion for wine.Jeff: Oh, good evening. Thanks, Marlene. Thanks for the nice introduction. My name is Jeff, Jeff Hunter, and I've enjoyed wine for many years.  I can recall the first case I got of an older Bordeaux that I kept in my parents’ basement. And that was kind of the beginning to my desire to collect. I just love the smell of the case of wine, the wood, the ability to taste that wine over the course of many dinners, as it evolved, and how long it would age and trying to correctly predict when I would drink it.Marlene:  What kind of wines should we be looking at?Jeff: Okay, we're gonna talk about popular wines or those that are less discovered at Wine Festivals. So if you're a curious person, and you would be interested in trying different regions, Lebanon, has some interesting things that are coming out. Israel as well has some fabulous Cabs. So explore. I'm not too familiar with Greece and Italy was always a mystery to me. But the more I've tried and the more I've looked at the maps of the different landscapes and wine producing regions of the various countries, the more I've gotten to appreciate all the things that make up the different wines of Italy, let's say,  France, as well, obviously, with many different wine producing regions, so great to be an explorer. And there's a lot of great wines being produced today around the world.Marlene: Any favorites?Jeff: Personally, I've been really enjoying something that's not as popular as it used to be. That's the Australian Cabernets and Shiraz. I just love those big, jammy, bomb-y types of wines and the concentration and the freshness of fruit that I find in some of them. So it's been kind of fun enjoying those, otherwise I go to, for sure, vintage Bordeaux.  Always buy the good years, sit on them, give them time, 5-10 years to come around. So get them early and be patient. Marlene: What about unusual wines? Jeff: I think that as esoteric wines go, the Tokaj of Hungary can be quite fascinating. And I was able to purchase six bottles of the Essencia of Pajzos from Tokaj, and that's the best of the best. It's a 1993 Vintage Robert Parker who's the wine critic gave it an O M G 100 points. Said it tasted like heaven. Amazing wine. Residual sugar is sky high but yet there's still some crisp snap through all the apricot flavor. Amazing wine.  I think I paid $125 a bottle with a discount should be about $300 to 500 at this point in 2022.Marlene:   Lots of people are curious about wine events.  For those who’ve never been to one, can you perhaps give an idea on what they can expect?Jeff: Going to wine festivals has always been a fun thing. I've always enjoyed the opportunity to taste many wines and a big gathering. And my favorite way of doing this is to have a friend who works in the wine industry and then have him get you in for free as his roadie; you can help him bring his wines in, and then maybe even help pour some of his wines, and then get to go in and check everything out for free. That's my favorite way to go into wine festivals.Marlene: Ok, ok, let’s be serious.  If it was for like, you know, just a regular Joe, how would it be?Jeff:  Of course yeah. You know I do love wine festivals and my approach to attending a wine festival based on the limited amount of time I have with so much to taste. And so I would recommend getting in doing your research. Look at the listing, see who's attending, see who's pouring, see who's pouring what. Stay away from the pedestrian wines, focus on your whites first. So you don't ruin your palate. Get around, it doesn't matter if the table has red or white just stay with the whites. You can always come back for the Reds later. And then just keep moving through the festival. Don't get bogged down. And as the more you taste and don't forget to spit because the more you taste, the more you can become a little bit more friendly with all the participants and lose valuable time-- tasting time. Focus on the big boys at the end, the big reds, and make sure you get them before they run out because the popular ones do go fast. Marlene: Thank you, Jeff.  So let me clarify. Jeff’s point is to maximize time at a wine event, and he’s just outlined an efficient way to go about it, if that’s your goal. 1.     Do a bit of homework so you can home in on what you really want to try, to avoid palate fatigue and being too inebriated to appreciate what you’re consuming.2.     Spit.  You can’t taste a whole lot of wines and be sober otherwise.  In other words, though ruthless: Not spitting = inebriation= friendliness=waste of tasting time3.     Start with whites and end with reds.  The reverse will ruin your palate for whites.Now most of us don’t approach wine events with Jeff’s single-minded efficiency, nor should you, unless you are a collector.  For everyone else, I’d say, go where you will, listen to the wine curators, ask questions (they love this) and meet people.  Have fun. And if you’re worried about looking gauche, here are a few tips:1.     Hold wine glasses by the stem, not the glass, so you don’t warm the wine (or get fingerprints on glass)2.     Swish the wine in the glass to aerate and release the bouquet; sniff to appreciate.  Note what you’re smelling—apricots, raspberries, etc.3.     Sip together with a slight breath in, and swish around the back of your mouth for aeration.  It looks and sounds a bit like a gargle, but isn’t. It’s not a pretentious action.  Retronasal olfaction is smelling and tasting from the back of your mouth, and better perceived when wine is aerated.4.     Spit.  In bucket.5.     Describe what you smell and taste with fellow participants and wine curators so you can build your wine vocabulary.6.     And finally, if like my sister, Manischewitz is your favorite wine, never admit it. Peter began his adventures in wine as a teenager, suckering and tying vines and driving irrigation tractors during summers in the vineyard where his father grew grapes for Napa Valley wineries. He moved to Budapest, Hungary in 1990, working in the World Bank and USAID programs to privatize the country's wine industry after the fall of communism. In the four years before returning home to manage the family vineyard in 1994, Peter helped build a winery, started a négociant company, and began collaborating with Kádár Hungary, a cooperage located in the renowned Tokaj region, that the Molnars now own, in partnership with the de Pracomtal family of Taransaud Cooperage, in Cognac. In 1995, the Molnars teamed up with winemaker Michael Terrien to vinify their first Pinot Noir from Poseidon Vineyard, aged in Kádár barrels. They discovered an abandoned walnut orchard on the volcanic slopes of the high Mayacamas Mountains of Lake County, California in 1998; an ideal site, they believed, to grow mountain fruit. After planting in 1999 and 2000, they debuted their first Obsidian Ridge Cabernet Sauvignon in 2002 and their first Poseidon Vineyard Chardonnay the following year.When not in the vineyards or at the cooperage, Peter travels to winemaking regions around the world to collaborate with barrel customers. A lifelong sailor and open water swimmer, Peter is also a licensed Merchant Marine Captain and Master who applies his skills and experience to support and fund marine conservation, working with San Francisco Baykeeper, Point Blue's Farallon Patrol, and the University of Florida Whitney Laboratory for Marine Bioscience.
