Jens Ibsen is a dynamic young composer putting his spin on classical music, infusing it with prog rock, heavy metal and Japanese video game music. Isben's bold and non-traditional style is getting a lot of attention from major institutions like the San Francisco Symphony. But it hasn't been easy. He has had to confront racism as he found his unique place in classical music. He's a lot of different things at once, and you can see that reflected not just in his music but also in who he is as a person. For our series Hidden Gems, KQED's Daniel Eduardo Hernandez takes a trip back to his hometown to meet the owner and creator of the Tio's Tacos wonderland. And we head South to Santa Cruz. The city has played a big role in surfing history – it's where Hawaiian princes first introduced the sport to California back in 1885, and where surfers began using wetsuits in the 1950s. Since then, the city has been on the cutting edge of a lot of modern surf technology. A new company there is hoping to build on that history and help the sport become more environmentally friendly – by using a 3D printer to create surfboards made from recycled hospital trays. Just like every person has a story, every recipe has a memory. For famous chef Rick Martínez, those memories often come from his time in Mexico, where he traveled through the country's 32 states stepping into kitchens, houses, and markets learning from locals how to make true, authentic Mexican food. Zocalo Mexican Bar & Grill is the third area location of the family-owned Old Mexico, and it was the first sit-down restaurant at the mall since Friendly's closed several years ago. It's also the first eatery serving alcoholic beverages at the mall in decades. I really can't say this enough but this week has been one helluva week! Yep, it exploded. We had the floor drains back up into our dishwashing area after Tuesday's class. And, what we thought would be a simple “snaking” of the pipes turned into an all Wednesday afternoon, $$$$ investment. Could have been worse. Could have been a broken pipe requiring jack-hammering of our concrete floor. As people arrived for Wednesday's class, we had to turn them away but Thursday's class went off without a hitch…so there's that. We made it. Then, we had to re-record this final episode due to extreme technical issues. That's why you were listening to an archived show last week (still a really good episode, btw). So, this is the final episode of Season 9. It's all about the next online class installment – Authentic Mexican. You get to hear about all the video shenanigans and more, of course. We made it. Last but not least, Rat In The Kitchen. Remember, that's the TBS Network show I taped last summer. My episode is finally scheduled for Thursday, May 26th. In episode 42 of the Primal Pioneer, I want to dive into the topic of Mexican food. Most people think of Mexican food as fried tortillas smothered in cheese and oil. I am going to teach you in this episode five hacks to eating Mexican food so that you can appreciate the flavors in a healthy way. Some topics we touch on include: Hack 1: Lard over vegetable oil. Hack 2: Organic corn. Hack 3: Homemade sauces. Hack 4: Wild-caught seafood. Hack 5: Stop with the raw cabbage. You have to realize that there are much healthier ways to eat your favorite foods.
