Today we recorded a follow up Q & A Episode with the brilliant Dr. Elizabeth Bright After my long rambling intro as these are HUGE topics near and dear to my personal journey... here is the big list of our questions we dive into today: 1. What to do is test with high cortisol vs. low cortisol + low thyroid? 2. Who needs iodine? Why? How much? 3. Butter… what are the benefits 4. Do we need to do fasting for cell autophagy? 5. Do we need to be in nutritional ketosis? How long? 6. I have amenorrhea. How much fat should I eat? I can't eat butter because I have a leaky gut and butter gives me indigestion and my stomach bloats. What fat is best for me? 7. Why in carnivore can triglycerides rise? 8. I have been doing high fat carnivores for a year now. My hormones have gotten so much better. I am sleeping great, and sex isn't painful anymore. I am still having trouble building muscle and my skin is a little creepy. Lost skin and muscle tone after a few years is chronic stress. a. Is it possible to tighten the skin and what do you suggest I do to build muscle? b. I lift weights 2-3 x week and no more cardio: just movement. 9. What are the clearest tests for checking hormones if weight loss is a challenge? a. How long on carnivore should one give to start experience changes in hormone balance? b. What role does cortisol play in hormone balance particularly when weight loss is an issue? c. What is the ideal balance of high fat/low carb eating, fasting or not fasting, weight training act for women in their 40s? 10. Zero carb for too long spiking cortisol… some people have suggested tactical carb intake before and during cycle as well as Sally Norton suggestion the combination of oxalate dumping along with zero carb might trigger a cortisol issue and suggesting similar. 11. In today's conversation, I speak with Sally Norton,  a nutritionist with a unique specialty— warning us that “healthy” eating, and so-called superfoods, can make us sick.  Like most of us, I grew up with, and have an ingrained belief, that fruits and vegetables are good and essential to a healthy diet. In this interview with Sally Norton, we discussed how a certain chemical compound called Oxalates can be extremely damaging to your health and cause neurotoxicity, anxiety, arthritis and chronic pain. Oxalates cause inflammation Oxalates are naturally occurring compounds found in plants, including wheat and beans. They can cause inflammation, pain and kidney stones by forming crystals in the kidneys. The only way to eliminate oxalates is to follow a low oxalate diet, or even better a Carnivore Diet. As you remove all these chemicals and nasties from your diet, your body can heal. Why Carnivore cures pain The carnivore diet is a zero-carb high-fat diet that has been used to cure autoimmune diseases. The carnivore diet can also cure inflammation, as well as pain and other symptoms of autoimmune disease. Carnivores are people who eat only animal products such as meat, eggs and dairy products. They don't eat any plant matter at all. Plants contain anti-nutrients that can be toxic to the body over time, that's why as we age we start to suffer from chronic illness and fatigue. The carnivore diet is an effective way to treat chronic pain caused by inflammation because it eliminates all sources of carbohydrate intake that would otherwise contribute to systemic inflammation in your body. Therefore removing them from your diet will help reduce inflammation caused by autoimmunity or injury because there won't be any excess glucose floating around in your bloodstream causing distress signals on demand. How to cure inflammation & pain Stop eating gluten-containing grains and foods like bread, pasta, and cereal. Stop eating sugar in any form (honey, agave nectar, etc.). Eat lots of meat and eggs (preferably from organic sources). Cook with butter instead of vegetable oils; this has been shown to have anti-inflammatory properties as well because it's high in saturated fat, vitamin E and CLA. We're back today with internationally-known archaeologist, primitive technologist, and chef, Bill Schindler. Bill's been on the show once before to discuss his book, Eat Like A Human, and he's back today to talk about the human diet, through the lens of his professional focus of ancestral human foods, food acquisition, and the traditional processing techniques we once used to make our food edible or more nutritious. After our recent episode with Sally Norton, which was episode #142 “Are Oxalates Destroying Your Health” — where we discuss oxalic acid and other oxalates in our food supply — Daniel wanted to get another opinion. We didn't tell Bill beforehand that we wanted to discuss this, as we wanted his honest and unbiased take on the subject. But, as it turns out he's been keenly interested in this topic for some time and has been actively cutting oxalates out of his own diet — with some pretty profound results. So, while Bill and Daniel discuss fad diets in general today, they really take their time exploring the issue of dietary oxalates, since — if they are as deleterious to our health as some allege — the ramifications are significant and affect most of us. So this is a continuation of a conversation we began with Sally Norton, and it's something Daniel would like to continue exploring over time, at least until he feels like he's gotten a pretty good handle on it. For now, he remains undecided. Not a total skeptic, but he's not drinking the kool-aid either. That said, he's been experimenting with his own diet a bit, by gently but consistently removing some of the highest oxalate foods he's been eating, which you'll also hear him discuss here today. He's not going all in, since he still has some doubts, and because he's grown progressively more allergic to dietary restrictions as he's matured, but he has noticed some anecdotal improvements in his own subjective experience. So for now, he'll keep pursuing it. In closing, Daniel got interested in wild foods — and in particular — hunting, fishing, and foraging — because he's interested in human diet and nutrition. Sometimes in the world of wild foods we get more focused on what we can eat rather than what we should eat. We don't mean that ideologically, but rather nutritionally. So, from time to time, we think conversations like this are helpful, because they remind us of why and how we got here: wanting to be our best and healthiest selves. Today's show is a bit of a departure from our typical conversation here on the podcast, but it's one we've been wanting to have for quite some time. Our guest is Sally Norton, and she's become really well known for talks she's given on Oxalic Acid and Oxalates — compounds and even crystalline structures frequently found in plant foods, and often present in some of our most cherished wild plants and commercially available superfoods. We've been aware of oxalates and oxalic acid for a long time, since it's present in plants like sheep and wood sorrel — sour plants that are often one of the first that new foragers learn. But we've also experienced the damage that oxalate crystal macrostructures can do when they are present in plants like jack-in-the-pulpit, which burn the delicate mucous membranes of our mouth and throat if you are daring enough to try ingesting them. We were surprised when we started hearing from some folks, usually those associated with the ancestral health community, and in particular, the carnivore diet proponents, that oxalates might be a hidden culprit undermining human health in many profound ways. Now, to be fair, we've seen this kind of thing before. Compounds in foods — and by that we mean compounds that have always been in our foods, like cholesterol for example, or saturated fat — being touted as incredibly dangerous for your health in one decade, only to see a reversal, where they are considered healthy in the next. So, when we first heard about the supposed dangers of oxalates, we were pretty dismissive, since these compounds and associated structures are common and were most certainly part of our diet for a very long time, being present in traditional and wild foods. Add to that the way carnivore diet proponents sometimes cherry-pick data to confirm their preexisting bias against plants — the very same way vegans do about animal foods — let's just say, we were skeptical. But, in the spirit of keeping an open mind, and because we knew that oxalates can be damaging and dangerous in strong concentration, we thought we'd give this idea its day, and hear the argument. We present it here today, not as an endorsement of the idea, but rather to let you hear it too, if you haven't already. As plant eaters and foragers, we remain skeptical, but we're going to sit with it for a while. If it is in fact true, it would mean, for us at least, a bit of a dietary redesign would be necessary. Who knows, maybe in a decade it'll be common household knowledge, with oxalate content being — as Sally hopes — labeled on packaged foods. Or, maybe, like saturated fats — something we've always eaten, but by the 80s were being blamed for heart disease and heart attacks, only to reverse course a few decades later — we'll decide that no, oxalates are not the culprit we thought they were. Whatever the case, oxalates are real and they probably deserve our attention. Whether we should be cutting them out of our diet to the extent that we can is up to you. It's a fun interview, and we learned a lot. It's certainly got Daniel reassessing the chia seed, cacao nib, and nut butter in his smoothie each day… That said, he drank one this morning. Full Transcript on Oxalates and Thyroid Health Dr. Hedberg: Well, welcome everyone to "Functional Medicine Research." I'm Dr. Hedberg, and I'm really looking forward to my conversation today with Sally Norton. Sally is a consultant writer, educator, and speaker with over 30 years in the health promotion and wellness field. Sally specializes in helping people improve their health with an oxalate-avoiding diet. Sally holds a nutrition degree from Cornell University and a Master's of Public Health degree from the University of North Carolina at Chapel Hill. She worked in the field of medical education at UNC Medical Schools Program on Integrative Medicine and as a research grant writer and research administrator at the Virginia Commonwealth University School of Medicine. Despite a healthy lifestyle, she struggled for over 30 years with seemingly unanswerable health challenges, including chronic pain and fatigue. When she finally discovered the cause and turned her health around, she committed to teaching and reaching out to others stuck in similar frustrating situations. Sally, welcome to the show. Sally: Thank you. It's great to be here. Dr. Hedberg: Yeah, I'm looking forward to this and we were kind of discussing this early on. Oxalates is something that I've always kept my eye on for the last 17 years and I was really looking forward to this conversation. So why don't we lay a little bit of bedrock for the listeners? And if you could just talk about what are oxalates, and do we know why plants actually have oxalates? Sally: Yes. Plants are a major producer of oxalate and obviously, it's also ubiquitous in nature itself. Soil is loaded with it. Even apparently sea spray produces some oxalate and polluted air produces oxalates, so, in really heavily polluted cities, the air has got oxalate in it too. So oxalate is this really minuscule molecule that its parent compound is called oxalic acid. And acids ionize and become charged particles because they drop off the acidic protein and so they become these negatively charged ions that attract positively charged things and oxalates can have a one negative or two negative. It is a tiny, tiny little compound. It has four oxygens, which is a heavy load of oxygen on just two little carbon molecules. So it's very oxygen-heavy, which is probably partly why it's such a pro-oxidant molecule, you know. Oxidation is very bad for tissues, membranes, mitochondria, and it is a great mitochondrial poison, membrane destroyer, and troublemaker. And it's not just the oxygen, though. It's much more about this reactivity that the charge creates where it bonds with minerals and becomes salts. And so, salt is a chemical term for things that can dissolve, but when it...because it can have two negative charges, it will also hook up with minerals that won't dissolve well. So calcium, for example, is a two positive charge mineral. With that double-positive and double-negative marriage between the two, you create an insoluble oxalate, which is the backbone of oxalate you see in nature because calcium is everywhere in soils and in nature, and plants are having to manage their calcium. And one of the ways they do that...because too much calcium can be toxic to the plant. So one of the ways they do that is they make oxalic acid. Often they make vitamin C first, very similar compounds, and vitamin C naturally degrades just hanging around into oxalic acid and oxalates. So plants will create vitamin C and they'll cre...

Low Carb & Sleep [16:18] Angel says: Hi Robb, Thanks for answering our questions! When I eat low carb, I tend to wake up at 3am and have a hard time falling back asleep. However, if I have some carbs (i.e. a small bowl of rice or a sweet potato) during dinner, I generally sleep through the night and wake up naturally a little after 6am. I usually go to bed around 10pm, and eat dinner around 6pm. The problem is, when I eat carbs during dinner, I gain weight overtime. Eating low carb helps me lose weight. Is there a reason for the interrupted sleep eating low carb? I searched online and some people say it’s due to noradrenaline. Sally Norton has a degree in nutrition from Cornell University and a Masters of Public Health from the UNiversity of North Carolina. She managed a five-year, National Institute of Health-funded program at the UNC Medical School. She’s a nutrition consultant, speaker, and an all around oxalate expert. This is a sad story with a happy ending. Sally’s life goal from age 5 was to study nutrition and help people be healthy. She followed all the traditional advice and ate a very plant-heavy vegetarian and even vegan diet only to have 30 years of health problems because of that diet. At first all this oxalate stuff is hard to believe. It’s talked about so little and there’s not a lot of mainstream knowledge on it in the medical community. We talk some real science a little ways into the episode, so know it’s coming. Preorder the film: http://indiegogo.com/projects/food-lies-post   SHOW NOTES Sally had a lifelong quest to be in the nutrition and wellness space Despite eating plant-based diets all her life and focusing on what she thought was good nutrition, she had major health problems Some books convinced her to vegan and soon she could barely walk up and down stairs and got pneumonia multiple times per year She finally figured out it was the build up of oxalated from all the plants foods she was eating She published a great paper “Lost Seasonality and Overconsumption of Plants: Risking Oxalate Toxicity” https://jevohealth.com/journal/vol2/iss3/4/ How come she has all this training and she didn't know a thing about oxalates? We actually knew about oxalates in the 1700s and 1800s Populations like the Irish drank a lot of tea, ate a lot of potatoes, had greens in season, and rhubarb in the spring - all of these have high oxalate Spinach and whole grains have a lot of oxalate They did tests on rats to see calcium absorption of and we saw that spinach wasn't delivering calcium - same for iron and folate The nutrients also degrade quickly unless the spinach is kept very cold the entire time after harvest (which is basically impossible) All USDA data on nutrition in plant foods are wrong and don’t account for bioavailability Nutrients drop significantly in spinach after harvest, especially when not refrigerated to a very cold 4 degrees celsius More and more people are heading towards mostly animal foods as they learn about bioavailability and antinutrients and listen to their body The carnivore movement has been great to just let people know it’s ok to eat only animal foods World War 1 is when we started relying on fallback plant foods she thinks. We invented the idea of the victory garden I was out with a girl from Peru who was laughing at Americans for eating green vegetables - the mainly eat meat, fish, and starches. Recent reports say that as many as 2 million people in England could be eligible for bariatric surgery. Dr Mark Porter investigates if a new gastric balloon swallowed in a capsule could be a valuable new tool for weight loss.
