In 2006, Del joined Wellness Forum Foods as Executive Chef, where he continued the tradition of delivering great tasting plant-based meals to clients locally and throughout the continental United States. Del further expanded his culinary skills by exploring whole food, plant-based recipes made with healthy ingredients and without oil, a controversial cooking style at the time. Del also taught cooking classes and spoke at venues around Columbus, and around the country, telling his personal health story, and sharing what he has learned about cooking in a whole food kitchen.

GRAIN FREE GLUTEN FREE PIZZA EVEN YOUR MEAT EATING FRIENDS WILL LOVE THIS RECIPE! Ingredients: Crust: 1 1/4 cups almond flour 3/4 cup arrowroot 1 tsp. baking powder 1 tsp salt 1 tsp dried oregano 1 tsp dried basil 1 tsp dried parsely 1/2 tsp garlic granules 1/4 tsp crushed red pepper flakes 1/4 tsp ground black pepper 2 Tbsp of chia seeds soaked in 2/3 cup water & let sit for 15 mins 1/4 cup coconut or almond milk Directions: Preheat the oven to 425 F. Grease a round pizza pan or baking stone-use parchment paper. Combine wet ingredients (chia seeds & milk) mix all dry ingredients together in a separate bowl. Add dry and wet ingredients together and mix the batter, It will be a bit runny and this is normal. Spread onto pizza pan and bake for 20-25 mins depending on how crispy you like your pizza crust. Top pizza with sauce and toppings of your choice and return to the oven and bake for 5-10 mins until the cheese is melted or put on a broil to lightly brown top and melt cheese. Don't walk away...leave the oven door ajar a bit. Toppings of your choice: (this is what I like) Miyokos vegan Mozz or your fave vegan mozzarella shreds. Saute mushrooms with fresh crushed garlic and sliced red onion. MEET OUR GUEST: Pleese is a plant based cheese developed by New Yorkers specifically to melt on pizza. Pleese is all natural, made from bean and potato proteins and crafted using traditional methods. Pleese is so good that people can't tell the difference and is approved by the world's harshest food critics - kids from NYC. They were supposed to run a test launch with their products in cafeterias last April, and needless to say the pandemic / lockdown completely changed those plans. They had just produced the first commercial batch and when these venues closed they didn't know what to do. So, they turned to Facebook and asked people if they knew any restaurants that wanted to try vegan cheese for pizza. The response was overwhelming and they went from zero prospects to 45 in two weeks. They finally launched in September to an overwhelming response. We LOVE pizza!!   Mark Sutton is the author of the 1st ever Vegan Pizza Cookbook, "Heart Healthy Pizza," with a forward written by one of our previous guests, Howard Lyman, The Mad Cowboy.  Mark has been employed as the Visualizations Coordinator for two NASA Earth Satellite Missions, a freelance interactive multimedia computer consultant, an organic farmer, and head photographer.  Mark has produced work for two Nobel Prize winners (on global climate change) and helped create UN Peace Medal Award-winning high school curriculum.  He's currently the editor of the Mad Cowboy e-newsletter. Mark Sutton will join us to talk about his book, which contains over 100 plant-based recipes for making pizza. Through the imaginative use of grains (oats, quinoa, millet, and others) as well as legumes (such as chickpeas, black eyed peas, white beans, dal), sometimes nuts, and various vegetables (artichokes, carrots, corn, etc.), Mark has created 60 unique "cheese-like" sauce recipes that range in taste texture from a delicate velvety to a custard firmness. Most are gluten-free!  With recipes for pizza crusts (including gluten-free versions), "bottom sauces" & total pizza concepts, this book will help anyone create the most healthy pizza possible.  Yum!!   We'll be joined in the studio by Ben Gibson, founder of YOUvolution whose "mission is to bring hope to the hopeless and empower the hopeful!"  We'll talk about following your dreams.  And we'll be talking with Lisa Marshall and the muisc that she has been making in the Austin scned the last few months.
