Today, we're joined by Tennessee Music Legend Ed Snodderly at his live music venue The Down Home, in Johnson City, Tennessee. Ed describes himself as a songwriter with a strong Appalachian sense of place. His songs ring in the old, the odd and in a non-sentimental way Ed calls it American Southern, “cause that sounds really cool.” In 2020, he was awarded the lifetime achievement award from the Southern Region of Folk Alliance, and the third verse of his song “The Diamond Stream”, which he performs here, is permanently displayed at the Wall of Honor in the Country Music Hall of Fame in Nashville, Tennessee. But today's not just a music performance. We sat on the stage with him, and as he played, we talked about life, music, and everything in between. It was one of those moments, when something amazing happens on the road that is completely unexpected but ends up being one of the highlights of the whole trip. "Salvation: A Gospel Oratorio" tells the unknown story of the Rev. David George & the origins of the Black Baptists Church in North America. Alabama native Scott Peacock is a James Beard Award-winning chef and one of the foremost authorities on American Southern cuisine. He might be best known for his work at Watershed restaurant in Decatur, Georgia, and his partnership with culinary icon Edna Lewis, but his recipes and writing have appeared in numerous publications as well, including The New York Times, Better Homes & Gardens, Gourmet, Food & Wine, and Bon Appetit. Although I was very aware of his reputation, it was through one of those recipes that I first personally encountered Scott, since I believe recipes well-written by one and well-executed by another become a sort of strange collaborative alchemy. Soon we connected further over the familiarities of food, common friends, and special Southern locales, and one such place for Scott is Marion, Alabama—the heart of Alabama's Black Belt region — where he has opened the historic kitchens of Reverie mansion for the Black Belt Biscuit Experience. These intimate, small-group workshops on the fine art of traditional Southern biscuit-making are built on his celebrated biscuits that have been on the covers of Gourmet and Food & Wine, and which Food & Wine named one of their 40 best recipes ever published, but the class is as much meditation as it is method. I could think of no better baking and conversation partner to end this year's Southern Fork Summer Tour, and here he invites us deep beyond ingredients and techniques into the art of presence, the commitment to a creative path, and the power of passionate attention to detail.

An upbringing in the mountains of East Tennessee lends to the ideas of his twists and turns with his lyrics. The songs are familiar but cross-pollinated with mountains and radio stations. You could say some of his songs are a giving back to the culture, and in the same breath recognize a creative way that they bring the modern into view. Ed was awarded in 2020 for a lifetime achievement award presented to him from SERFA (Southern Region of Folk Alliance) for his contributions to southern folk music. It was under the training of Seth Barrish (Mike Birbiglia's The New One) that she developed a solo play entitled ‘To Free a Mockingbird.' As a comedian, she hosts the comedy show “SWEET MEAT.” She is the host of the storytelling podcast ‘Tell me on a Sunday', and a daily Broadway News correspondent for Broadway Radio. After several years of construction at the Tianjin Xingang shipyard in northern China, the final test, the official sea trial, has now been completed with good results. The shipyard will present the ship for delivery this summer and the vessel will then sail to Antwerp in Belgium on its maiden voyage, where some members of the crew will board and the medical equipment supplemented. This will be followed by a visit to Rotterdam, and after this the Global Mercy™ will be ready for its first important mission in West Africa.Stena RoRo is building the Global Mercy on behalf of the international charity organization Mercy Ships, which provides free life-changing healthcare to people in some of the world's poorest countries. The project began in 2013 and Stena RoRo is responsible for design, contracting and execution. The construction project is unique in its kind and places major and specific demands on both design and layout, dependent on the special needs that hospital operations entail. On board are operating theatres and hospital wards, and everything needed for both patients and those working on board, including schools and preschools for the children of the volunteers. Sea trialThe sea trial, which the Global Mercy has just completed, means that the ship's systems and functions – such as engine performance and fuel consumption, navigation and radio equipment, maneuverability and safety systems – are tested for several days at sea.The Global Mercy will have six operating theatres, 200 hospital beds, a laboratory, a patient clinic and an eye and dental clinic. In total, she will be able to accommodate 950 people, of which 641 are crew.This summer the Global Mercy will be delivered from the shipyard. The maiden voyage will be to Antwerp in Belgium where some members of the crew will board and the last medical equipment installed, which will take a few months. After that, there will be two weeks in Rotterdam in the Netherlands, where festivities will be held in presenting the ship to sponsors, potential volunteers and other interested parties.Big difference for many peopleThe first mission will be during 2022, when the Global Mercy is expected to call at Dakar in Senegal. There will then be more than six hundred volunteers aboard from all over the world and from a variety of professional categories, who will make it all possible through their contributions of skills and time.More than 93 percent of the population in sub-Saharan Africa do not have access to safe surgical care *. The already very fragile medical care systems are at risk of being further degraded by the corona pandemic, and the need for basic but vital care is greater than ever in many poor countries. When you sit down for a meat and three in Montgomery, Alabama, say at the Davis Café, you choose from the menu and you get one plate all for you, but at a Korean table in Montgomery – or anywhere – your plates are all shared. And there are many of them. Meat and six or seven, you might say. Since the Hyundai plant opened in Montgomery in 2005, Koreans have been moving there, some for work at the plant, but others because they see the growing community of Koreans and Korean businesses in this small capital city in Alabama. So, a small southern K-Town is cropping up in the strip malls along the Eastern Boulevard. Reporter and producer, Sarah Reynolds travels to Montgomery to eat at several Korean tables. And Chef Edward Lee joins her – a Korean–American chef who made his name in Louisville, Kentucky. He borrows from Korean and American Southern cuisines to make collards and kimchi, grits and galbi. What’s happening in Montgomery reveals a shared hospitality and love of food between these two cultures.

In his second book on the subject, Reed offers 51 recipes that, for him, exemplify American Southern barbecue. In this interview, Reed offers his take on "chefs" who cook barbecue, why North Carolina sauce is the most authentic, and how a poli-sci major from MIT turned sociologist at UNC came to the topic of barbecue in the first place.
