The sad cooler with the compressor that can't get going has been left empty. Other stock in the store is in good shape; whatever minor thing we've come in here to get, week after week, has typically been here. Ours is out of nasal decongestant though, although they have some allergy products and multi-symptom cold medicines; many of the latter contain acetaminophen, a liver toxin, so are never on our list. Home Depot was next. There is still no tag on the rack of 2x4x8 studs, but a check online shows it is still $3.25. The cordless tool area in the front that is rather prominently featured just before Christmas has been almost entirely cleared out, and there is a lot of empty space there now; I'll keep an eye on this on future trips. Aldi was last. Stock levels are good. Produce isn't mounded up, but there are no empty spaces. They've had plenty of canned cat food lately. We found everything we wanted. Staple prices were: eggs: $1.65; whole milk: $2.98; heavy cream: $4.69; OJ: $3.29; butter: $3.69; bacon: $4.25; potatoes: $3.99; sugar: $3.09; flour: $1.99; 80% lean ground beef: $4.49 (+). Despite the growing escalation of the Islam vs. Civilization conflict in the Middle East, untainted regular gasoline remains at $3.699/gallon. I went out again later to Food City for dry cat food and another case of seafood Friskies cans, and there was plenty of pet food in stock there. What is impacting the economy and culture High Inflation (look up inflation for the past two years and come up with a cumulative number of 11% conservatively and 21% by some estimates) - has your income also grown by 11- 21% Real Estate, In migration, Out migration, and interest rates Current rate Selling now and buying the same cost home costs more Where people are going and impacts on those markets Housing scarcity Long term population expectations Boomers moving out of the workforce, into retirement facilities Move toward subscription society AKA renting your house not owning it War in Ukraine, War in Israel, War war war Election Year Technological advancement, AI, unprepared workforce, unrealistic expectations Number of government employees versus private sector employees - 17% and rising - by one single measure Medical industrial complex Obesity, diabetes, overall physical and mental health of the population - weakening citizens Aging and undermaintained infrastructure and infrastructure spending that doest address them problem I could go on and on, but without worrying about any conspiracy, there are many things in play that can, and probably will, have a negative impact on our economy at a rather large scale. Any one of these things is painful, yet navigable, but all of them together paint a picture that has been causing either panic or denial among our community and beyond So why haven't we talked much about it? (Making decisions from a place of fear is a bad idea) What could the negative look like? (Setting aside an alien or nuclear or pathogenic attack, because, really, how do you even wrap your mind around being ready for such things, we are mimicking Japan in the 80s, and can learn from that as well as the rebasing of our monetary system and high inflationary period in the 70s and 80s). Costs of things outpace income increases (This is already happening) (PANTRY CHALLENGE, FINANCE AUDIT) Jobs could become scarce (Currently, we are in a bizarre world where it is hard to find employees that are good AND hard to find a job that is good. Let's talk about why.) Consequences of unemployment, return to a gig environment without any decent way to navigate it from a regulatory standpoint. In other words, the current environment of overregulation and overtaxation of every little thing does not play well with non-w-2 employees, but people are finding they must engage with the gig economy as a non w-2 employee to survive in a growing number of cases (GROW YOUR INCOME STABILITY). Gaining stability through home ownership or land ownership is increasingly difficult, though not impossible. Keeping hold of property in a world where it is taxed based on current market value will also be increasingly difficult. (THE WINDOW) Tangible assets and their value versus holding cash (RIGHT NOW YOU CANNOT SELL MANY TANGIBLE THINGS - THIS MAY CHANGE) Technological advancements leading to job loss, getting left behind (LEARN THE THINGS YOU ARE SCARED OF, INCLUDING AI) Necessary monetary rebasement - we've seen it before, it is a favorite tool of leaders, we expect to see it again. (IT IS AN ELECTION YEAR - MAY STAVE THIS OFF A BIT, OR EXPECTED PROSPERITY FROM TRANSITION MAY SPEED IT - ARE YOU READY? CRYPTO AND FROZEN ACCOUNTS STORY) Election year and division, violence, hijinks (SITUATIONAL AWARENESS) Health of our population, the medical industrial complex, and more (BE HEALTHY) Underrmaintained infrastructure and failures - electrical grid, etc (DECENTRALIZE AS IT MAKES SENSE All in all, it looks scary but we've gotten through worse and will again. Building the life you choose with an eye toward community, diversification and LONG TERM success is so important.Stockpiling will only get you so far, skills, health, resilience and underground networks are the strength in struggle.This is why we do SRF, LFTN and all the other events and meetups that seem so prevalent. This is why I am going to Lenoir City on a day when I could just use a stay at home break. You are going to love today's guest—my friend and a true Midwesterner, Leah Brink has lived in Iowa, Kansas, Minnesota, and for nearly 20 years, she's called Brookings, South Dakota home. She's the kind of person who brings the fun to a party. It was her idea to start our show making strawberry daiquiris in my kitchen, and I certainly didn't argue with that! She speaks frankly about the influence her mom had on her philosophy regarding food, and how her short-lived rebellion led to her own goal of fitting more fruits and vegetables into her and her family's lifestyle, in more of a lifelong, enthusiastic way. But don't worry. Along with the nutrient-packed smoothies Leah starts her day with, and the salsa, soup, Caesar dressing, bean dip, and hummus she makes in her Vitamix blender, we still talk about Cajun cream sauce, chicken alfredo, decadent fudge, and Taco John's. Leah is a second-generation South Dakota State University alum, with her daughter, Maddie, a junior SDSU Political Science major with a goal to attend law school. Her son, David, will graduate Brookings High School in 2024, so she has one year left of being a busy baseball and hockey mom. Leah has spent her professional life in a variety of careers, from property management and owning and operating a restaurant, to international services which gave her the opportunity to travel to London 15 times, to corporate recruiting, and most recently, a marketing and training executive. But she doesn't limit herself to whatever her current job role is. Leah commits to understanding her community and using her skills to play a part in it, like serving on countless boards and commissions, performing as her church's pianist and organist for 14 years, plus, she served three years as an elected city councilor. She's one of the smartest, polished, and energetic people I know, yet, she humbly champions for her family, friends, and community of entrepreneurs. Leah loves being a South Dakotan, and she cherishes her childhood memories of picking potatoes, and tending to the raspberries and strawberries at her grandma's farm in rural Trent. Ryan Pettis is a Hare Scrambler at heart, but he enjoys all forms of off-road riding, including Enduro, in District 23 ARMCA. The whole story began with Ryan's two older brothers. They had dirt bikes, and of course, Ryan wanted one too. His dad said “yes,” but with one condition: he had to be able to ride a bicycle first. Ryan vividly remembers learning how to bicycle, especially the first time he rode on his own. Once he realized he was meeting his dad's requirement, he turned his bike around and got back to his dad to ask, “can I get a dirt bike now?” Ryan was soon cruising around on his PW50 and has been racing ever since.Ryan just finished his successful 2021 season in 250 C Hare Scrambles, where he won the class and the C overall for the season. Over the winter, he will be training to improve his speed and his overall fitness. In 2022, he will be competing in the 250 B class, where he has goals of being in the top 3. Ryan continues to race in District 23 ARMCA because of the amazing community where everyone has your back.Ryan attributes a lot of his success to his friend and mentor, Logan Kittock. Inspired by his speed, humbleness, and dedication, Ryan loves learning from him and even has him on speed dial to ask him for advice. Though Logan has given Ryan many words of advice, the tips on riding technique have stuck with him, in addition to his advice to “ride with faster people.” Ryan would like to pass these words on to other District 23 ARMCA members, as well as advice to truly listen to those that inspire you.In addition to riding and racing, Ryan loves to snowmobile, snowboard, work at his interior painting business, and spend time with his family and girlfriend. He even enjoys a bowl of Chicken Alfredo before his races. Though Ryan enjoys the sweeter things in life, motorcycling has had the biggest impact. It has taught him some of the most important lessons about building strong character, like how to be kind, how to be a good role model for kids, and how to be persistent when life knocks you down. Today on cooking with Chenelle the visually impaired way. I share a recipe that I found on YouTube on how to make red lobsters knock off Cajun chicken Alfredo recipe. I hope everyone enjoys it as much as I enjoy making it. The ingredients are: one can of chicken, one can of diced tomatoes, 1/2 stick of butter unsalted, 1 cup of heavy whipping cream, 3 tablespoons of all purpose flour, 1 teaspoon garlic powder, 1 teaspoon black pepper, 1 teaspoon Cajun seasoning and 1 teaspoon salt and 1 teaspoon basil. One package of linguine noodles. Place noodles into boiling pot let it boil for 7 to 10 minutes until al dente. Place in the strainer rinse until drained. Place aside. Place chicken, tomatoes, butter, and all seasonings into pan with 2 tablespoons of avocado oil into skillet on medium high mix well until all spices are incorporated place butter, flour and whipping cream into skillet stir until completely second place noodles into skillet put stove on simmer until liquid has evaporated into noodles. This will take 30 to 45 minutes to make if you have to prep your ingredients while cooking. This will feed up to four people. Please follow, share, review and write the podcast episode. Each person has a favorite go-to meal they like to either eat or cook. And as a mom, you get really excited when that go-to meal is more than one person's favorite. Chicken Alfredo is not only a go-to meal, but the entire family loves it!! They request Alfredo for birthdays when we have company; you name it. I can never go wrong by putting this meal on the menu. As some people are more visual learners, I always include tons of pictures to go along with the step-by-step instructions. Ready? Let's start! Items Needed: A large pot to cook your noodles inLarge skillet for the sauceSteamer for the broccoli. My pasta pot has a built-in strainer and a steamer that goes on the top.Measuring cupsMeasuring spoonsStirring spoon Ingredients for a double batch: 16 oz. Pkg. linguine2 cups fresh or frozen broccoli flowerets2 lbs. Skinless, boneless chicken breast or leftover baked chicken diced into bite-sized pieces.4 Tablespoons butter2 cans (10 3/4 oz.) cream of chicken soup1 cup 2% or whole milk1 cup grated Parmesan cheese1/2 teaspoon ground black pepper Directions: Heat water in your large saucepan on high heat and add a touch of olive oil. This helps the noodles not to stick. Next, wait for the water to come to a boil and add the noodles. Add your broccoli to the water during the last four minutes of cooking time or steam them in a separate pan on top of the noodles. Add the butter to your large skillet and heat on medium-high.Once the butter has melted, add your chicken and cook until golden brown, stirring often. Next, add your milk... Parmesan cheese... Soup... And black pepper to the skillet. Stir until the mixture is hot and bubbly. Add your broccoli flowerets. At this point, you can add your noodles directly to the Alfredo sauce or leave it in a bowl, and each person can dish up individually. Serve and enjoy! If you have leftovers, they keep well in the refrigerator and will last about seven days. This is a simple dinner but delicious and very filling. You can make the process go a bit faster by having your chicken already cooked and ready to pull out of the freezer when Alfredo is on the menu. To change the recipe up a bit, substitute 2 lbs. fresh extra-large shrimp shelled and deveined. Cook until the shrimp turns pink. Chicken Alfredo Cauliflower Casserole 1 head of cauliflower 2 medium crowns of broccoli 4 strips of bacon 3/4 lbs. boneless, skinless chicken breast 2 T extra virgin olive oil 1 t salt 1 t black pepper 1 t Italian seasoning 3 T butter 2 T olive oil 6-10 cloves minced garlic 1 T ground black pepper 8 oz heavy whipping cream 8 oz sour cream 2 cups shredded mozzarella cheese 3/4 cups shredded Italian cheese, Parmesan, Romano, etc. Cut broccoli and cauliflower into bite sized pieces, put into a deep pot and set aside. Dice bacon into tiny bits and set aside. Put olive oil in skillet. Dice chicken into bite sized pieces and sauté on medium heat. Add salt, pepper and seasoning after chicken is halfway cooked. Cook chicken thoroughly, but not too much. Drain fat and set aside. Clean out skillet and melt butter over medium head. Add olive oil, garlic and black pepper. Sauté for about 1 minute. Add whipping cream and sour cream. Once mixture is warm, add cheese and begin to slowly melt. Don’t let the mixture bubble. Let it melt gently over the next five minutes, stirring slowly. Toss chicken and bacon into the deep pot along with the broccoli and the cauliflower. Dump hot cheese sauce over the top and mix thoroughly. Dump mixture into casserole dish. Sprinkle top with Italian seasoning. Put into 350º oven and bake for 45 minutes or so. If desired, cover the top with mozzarella cheese and broil for about 3 to 5 minutes to create a crunchy cheese crust on top. Watch closely! Don’t burn! Do the dishes. Make some almond flour keto garlic toast. Keto Garlic Toast 1 1/2 T butter 1 egg 2 T almond flour 1 T coconut flour 1/2 t baking powder 1/2 t garlic salt 1/4 t Italian seasoning pinch salt 4 garlic cloves, minced More butter Parmesan cheese Melt butter in a coffee mug, preferably a uniform cylinder. Whisk egg, almond flour, coconut flour, baking powder, garlic, seasoning and salt until fairly smooth. About a minute of whisking. Put mixture back into the mug you melted the butter in. Swirl around and pat the mug until the mixture sits uniformly getting rid of all the air pockets. Microwave for 90 seconds. Dump loaf out onto cutting board. Slice into four pieces. Spread butter on top, put a little bit of minced garlic on the butter, sprinkle Parmesan cheese on top of that. Broil until golden brown. Careful!
