Spring brings a lot of menu activity, and the most recent launches show a focus on upgraded ingredients and formats. Menu Talk hosts Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, and Pat Cobe, senior menu editor of Restaurant Business, noted Maggiano's updates, which include Wagyu meatballs and Chicken Parmesan topped with freshly grated cheese. Bret also cited Tender Greens' menu upgrades, which include the artisan Laura Chenel goat cheese as an ingredient, along with heirloom cherry tomatoes and Great Northern beans. The pair also observed more fresh vegetables on menus, with carrots—an everyday veggie—getting treated to some fancy preparations at restaurants. Another trend that's gaining steam is happening at Italian concepts. Your Pie is doing pizza shop sandwiches, filling their proprietary pizza dough with various ingredients and baking them into portable, handheld items. All have sauces based on ranch, America's favorite sauce flavor, it seems.The duo also shared an interview with Scott Davis, chief concept officer for Noodles & Company, the fast casual that just experienced a major menu upgrade two years in the making. Davis talks about how he and his culinary team responded to customers' cravings for more generous portions of sauce, more mac ‘n cheese variations, more protein and more bold, global flavors. Bret was invited by Via Carota, a gem of an Italian restaurant in Greenwich Village, to try their new bottled cocktails. But the event was held at a perfume shop that crafted personal scents for the attendees while they sipped on espresso martinis, spritzes and white negronis. Bret left with samples of both bottled cocktails and his custom scent. Pat visited Jones Wood Foundry, a British-style pub with an impressive draft beer selection. Between the Scotch eggs, Yorkshire pudding with blue cheese lemon dip, curried chicken pot pie and toffee pudding, she could have been in London rather than a few blocks from her Manhattan apartment. We shared an interview with Anthony Amoroso, the new VP of innovation and growth at Maggiano's Little Italy. Amoroso has helmed the kitchen in several famous independents and Michelin-starred restaurants, and now welcomes this opportunity to return to his Italian-American roots and work with the chefs across Maggiano's 50 locations. He talks about how he is elevating the dining experience with top-quality ingredients and presentations while retaining the menu's well-loved favorites and Maggiano's tradition. Amoroso also works closely with the beverage director and sommelier, and new cocktails and wine selections now complement the food. And he describes what's next in terms of the Dallas-based chain's menu, restaurant design and growth.

Saturday, September 7th - On Saturday morning the group participated in a Cycle To End Father Absence (C2EFA) ride at Cyclebar River North. The morning session included playing 21CD/SFN Trivia and talking about the importance of Self-Care. SFN Mentor Father Wayne Messmer made a terrific presentation over lunch. The afternoon session included discussions about the importance of Respite & Marriage. From there the group enjoyed a performance by Dennis Watkins at the Magic Parlour, Chicago's #1 Show (as per TripAdvisor). The evening was capped off with a sumptuous dinner at Maggiano's Little Italy Grand, including birthday wishes for SFN Mentor Father Nathan Woerner. "Find a great need in a near edge and act upon it to make a difference" as my father always encouraged. This has proven to be a powerful recipe for action, especially for Nancy Brinker, a three-time Ambassador and New York Times best-selling author, and Presidential Medal of Freedom recipient. She launched two impactful charitable organizations from her kitchen table. Nancy is regarded as the leader of the global breast cancer movement. Her journey began with promise to her dying sister, Susan G. Komen that she would do everything possible to end the shame, fear and hopelessness caused by this disease. Since 1982, Susan G Komen Foundation has invested nearly $1.1 billion in breast cancer research. The second charity that Nancy recently founded is the Promise Fund of Florida, which helps ensure that every woman, regardless of her circumstances has access to life-saving cancer resources. She was shocked to discover that 80,000 women ages 18-65 in Palm Beach County do not have health insurance coverage, and 30% of breast cancers are at an advanced stage when diagnosed. Kitchen Chat was honored to sit with Nancy at this very kitchen table where she started The Promise Fund of Florida to discuss an issue that is important to both of us. Nancy and I are breast cancer survivors. Nancy Brinker and I met at Women's Entrepreneurship Day Organization (WEDO) event at the United Nations where she was being honored by Wendy Diamond, the founder of the WEDO. During our Kitchen Chat, Nancy and I of course bonded over our love and appreciation of food. She shared highlights from her favorite meals as U.S. Ambassador to Hungary along with her appreciation of her late husband's accomplishments as a pioneer within the restaurant industry. Norman Brinker was the founder of Steak and Ale and CEO of Brinker International which owns Chili's Grill and Bar, Romano's Macaroni Grill and Maggiano's Little Italy. He is credited for revolutionizing the casual-dining restaurants in the United States. In a full circle, "hugs from heaven" moment, Nancy invited me to join her for the Women of Distinction awards luncheon in Palm Beach which is hosted by Palm Beach Atlantic University. She of course is a past honoree. What she didn't realize is that when my father was president of Palm Beach Atlantic University over thirty years ago, he actually helped create this concept of honoring women in the community. Imagine that you're the head of the second largest restaurant company in the business, overseeing the likes of Burger King, Godfather's, Steak and Ale and Bennigan's, making a huge salary, though you've already made millions upon millions. But you decide to pack it in to buy an upstart concept no one had ever heard of, to start all over in building a restaurant brand. As this week's episode of Restaurant Rewind recounts, that was exactly what Norman Brinker did while heading the enormous restaurant group of The Pillsbury Co. He could have worked that job for the rest of his life, and made a fortune doing it. Instead, he resigned to buy an upstart concept that few had even heard of, a full-service brand in a segment called gourmet burgers, which would all but disappear within a few years. Chili's would not. It would become the foundation of a multi-brand restaurant company whose brands would include Maggiano's, Romano's Macaroni Grill, Bay Street, Cozy Mel's, On the Border, Wildfire Grill and Corner Market, to name just a few. In the process, Brinker changed the trajectory of the restaurant business. It's proof that he was one of the smartest and most successful leaders the industry has ever seen. Ask outsiders to name the visionaries who built the restaurant industry into the social fixture it is today and chances are you'll hear names like Ray Kroc, Dave Thomas and Howard Schultz. Odds are the list won't include a force who midwifed a whole category of the business, even though he was active in the field far more recently than those dynasty builders. And that's not even considering his storybook life outside of the business. His bio is the stuff of movies. Indeed, he figured into two, portrayed in one by Mark Harmon. Ray Kroc only had one film made about him. Yet, almost exactly 14 years after his death, Norman Brinker may well be fading from the industry's collective memory. There aren't that many of us still in the trade who were privileged to witness Norman's brilliance firsthand. Those of a more tender vintage might recognize that his name is used by Brinker International, the parent company of the Chili's and Maggiano's chains, but may not be aware of the why. It would be a colossal loss if such an influential and inspirational figure was forgotten by the business he did so much to build. That's why we're devoting the next two issues of our Restaurant Rewind podcast to a personalized recount of Norman Brinker's extraordinary life and career. Saturday, we hit some secondhand stores before going back over to Mom's for dinner with my parents, my brother and nieces Riley and Millie. The next day we visited Dan's friend Perry who was recently hospitalized and then to see his youngest brother Dave & our niece Gabriella and nephew Zachary. Mom & I each got a haircut (real hair for me, wig for Mom). On Thursday 2/9, we had dinner at Maggiano's for Mom & Hattie's birthdays before going to see Hamilton at the Boston Opera House. Brinker International a leader in casual dining restaurant companies whose brands include Chili's Bar & Grill, Maggiano's Little Italy as well as virtual brands. Allen says, “Let me start with if you don't know Brinker you probably don't know casual dining because over the course of the last forty-five plus years we've owned 30 different brands. But today our core brands are Chili's, Maggiano's Little Italy and then we launched a virtual brand called, It's Just Wings about two years ago.”Allen's role with the company is SVP and chief digital officer and his focus is on the on 1.2 billion dollars off-premise business. Over the last ten years Allen has had four different positions inside of the company, today he is running all of off-premise. In 2022 Kevin Hochman became the new President and CEO and his leadership is driving the team to be hyper focused on the things that reality matter. They talk about how Brinker is bringing the kitchen of the future to life today with kitchen automation. Allen shares that they have two new pieces of equipment including a grill that cooks proteins to perfection with a touch of a button. The second is an oven that Allen says cooks foods really fast and their steaks in 3 - 4 minutes, cooked perfectly. Brinker focuses on bringing their own innovation solutions as well as working with companies to integrate good technology. Allen gets to throw a question to Frischling and Schatzy during their talking back segment and he asks, how much technology is too much technology in the restaurant world? Is there a limit or is all technology great technology? Schatzy's says, “I think the key is it's the integrations and the workflow and how does it work with everything you already have and your business so coming up with a solution for a problem is great, but every restaurant group is a little bit different. Coming up in December, Dr. Bricker and I will host a smallish virtual chat to discuss the topics covered in this episode. I'm thinking it will be very cool to get a chance for the great people who support our show enough to actually get a weekly email to talk amongst ourselves! In this healthcare podcast, I'm speaking with Eric Bricker, MD, about how so many entities in healthcare are getting up in other people's business and swimming in other people's traditional lanes. We kick off the conversation talking about the payer, PBM, and hospital system horizontal consolidation that has transpired over the past decades (that's plural). Horizontal consolidation is pretty much the easiest way to decimate all competition in your own swim lane so that you can charge more and not worry so much about patient/customer/member experience because the patients/customers/members have no better alternative. They effectively have nowhere, or few other places at best, to go if they leave you. So, what's the impact of horizontal consolidation? Commercial insurance costs have gone up 4x the rate of other benchmark goods and services. Let's spend a moment, shall we, on the human impact of all this extreme consolidation. The impact is your sister, your neighbor, your son, your friend. So many feel so much pressure financially in our country today because of healthcare costs. Even families earning significantly more than median household income are forgoing care because of costs. This was in a recent paper. (The authors are Alyce S. Adams, Raymond Kluender, Neale Mahoney, Jinglin Wang, Francis Wong, and Wesley Yin.) But the direct observable financial toxicity resulting from high healthcare patient costs is really only the tip of the iceberg here. As Dave Chase from Health Rosetta has said a million times already, high healthcare costs have a multitude of effects on employers, big and small. One big one is, if healthcare costs more, then there's less money for salaries. Dave, citing lots of evidence, has long attributed wage stagnation in this country to accelerating healthcare costs, which became even more rampant during periods of industry consolidation. Dave Chase leads Health Rosetta, by the way. Here's another human toxicity: Listen to episode 337 with Oliva Webb on the impact on her life as a result of the undeniably and unquestionably common non-excellent treatment by the PBMs and SPPs that she has to deal with. Because, as Dr. Bricker also says, no competition means basically not a whole lot of concern about patient experience. Why should a for-profit business spend money to improve something when there's nothing really to be gained for them financially to do so? I mean, the best a patient can do most of the time is hop from the frying pan into the fire. That's what happens when there's no competition or no real competition. Also consider the burned-out clinicians who have to get stuck in the middle of this nobody-really-cares-at-the-monopoly customer service paperwork quagmire. By the way, here's a sidebar that might come as a surprise to some people, but please take this in the spirit with which it's intended. All of us innovators and lifelong learners, we want to update our beliefs when the facts show us an updated conclusion. So, I have learned that all of this consolidation was going on long before the ACA (Affordable Care Act). My point here is to please look into this well-documented trend line before reflexively tweeting that the ACA drove consolidation. Dr. Bricker and others like Dr. Mai Pham have told me that, in their opinion, low interest rates, cheap debt, and a desire to eliminate competition are wildly powerful drivers of consolidation. Anyway, about eight minutes into the interview with Dr. Bricker, if you're one of the ones who knows all you care to know about horizontal consolidation, we get into vertical integration, vertical consolidation—and this is where things get interesting. And when I say interesting, I mean it in a “we live in interesting times” kind of way. The vertical consolidation conversation segues into whose swim lane that the digital health and other innovators or, dare I say, disrupters are diving into and whose lunch they are aiming to eat. As we seek the best answers to those questions, we can analyze the answers that different philosophies and/or religions offer by using two tests. 1. The correspondence test. Does the answer suggested correspond to the world as I can experience/observe it? 2. The coherence test. Do the collective answers given form a coherent whole across all four questions?
