The Rising Tide Against Deep Sea Mining The ocean's seabed is filled with minerals like copper, nickel, and cobalt—the very raw materials that tech companies use to make electronics and batteries. When Kendra Regas' son Andon was 5 years old, he had already been dealing with several allergies, including a peanut allergy. That in itself would be plenty for any parent to worry about. Shortly after having his tonsils removed, Andon started wetting the bed. Soon afterward, Kendra booked an appointment to meet with the doctor. After describing the symptoms, the doctor said, “I think I know what it is, but I just hope it's not.” This led to many more tests, including spending 3 days in the hospital until it was confirmed that Kendra's son Andon had Type 1 Diabetes. And with Type 1, this meant that Andon would need insulin for the rest of his life. You'll hear Kendra talk about how managing Type 1 Diabetes with a child and their siblings is like a family disease because it impacts the entire family. Any parent will tell you that kids love to have snacks. But with a child with Type 1 Diabetes, even the type of snack matters. Meals need to be structured at set times, and being aware of who is having a snack and when they're having a snack has its own set of challenges. But you'll also hear how much her family, including Andon's siblings, have embraced the diagnosis. She talks about how they have become advocates for other Type 1 Diabetic kiddos and how much they enjoy teaching others about what a day in their life is all about, which is just heartwarming. Kendra and her family have a beautiful story to share, and I hope you enjoy hearing it as much as I did. When I recorded a show last season, I spoke candidly about being burnt out at work and feeling underappreciated. I was guilty of perpetually people pleasing and not setting appropriate boundaries for myself. It wasn't until I took control of my situation and reframed what my job meant to me that I was able to truly move forward in a productive and positive manner. Everyday people go to work and wonder if this will be the day that their final boundary is pushed back or the final straw is removed. Burnout is still a subject that employees and employers don't talk about often enough. According to a recent survey, 75% of workers have experienced burnout, with 40% saying they've experienced burnout specifically during the pandemic. Thoughts on the Origins of Pizzerias in America and Chicago with Peter Regas PizzaHistoryBook.com In the past, the historical consensus was the first licensed pizzeria in America was opened in 1905 at 53 Spring St. in New York City by a young Italian immigrant named Gennaro Lombardi. However, in 2019 at the U.S. Pizza Museum in Chicago, Peter Regas challenged that consensus with a talk titled “Filippo Milone and the Forgotten Pizza Makers of New York City.” Based on more than ten years of archival research, Regas makes the following claims. There’s no primary source evidence a then eighteen-year-old Gennaro Lombardi owned a pizzeria in 1905. Instead, sources show Lombardi briefly owned the 53 Spring St. pizzeria in 1908, re-purchased it from a relative in 1918, and continued to own it until his death in 1958. More significantly, when Lombardi bought the pizzeria in 1908 it had already been a pizzeria for several years. The now-famous pizzeria was probably established in 1898 by a previously forgotten but extremely significant pizza maker named Filippo Milone. It turns out, the Spring Street pizzeria was probably just one of at least six different New York City pizzerias established by Milone between the years 1894-1922. Born in Piano di Sorrento in 1862, Milone is one of several previously unknown New York City pizza makers of an earlier generation who decided to emigrate around the turn of the century from Italy’s Campania region. Which pizza maker of that earlier generation opened up the first pizzeria in America? Regas discovered Giovanni Albano, a former pizzeria owner from Naples, established the first currently verified pizzeria in 1894 at 59 ½ Mulberry St. in New York City. While there is evidence of earlier pizzerias the farther back in time one searches the more circumstantial the evidence becomes and the more one is forced to confront the distinction between a peddler, a bakery, and a dedicated pizzeria. In the upcoming presentation, Regas will also be presenting evidence of the first known pizzerias in Chicago. Tom Granato’s Pizzeria Napolitana established in 1924 at 907 W. Taylor St will be discussed along with many never-before-published Granato pizzeria photos. Long forgotten Chicago pizzerias in the 1930s and early 1940s will also be presented. Questions naturally flow when the historical record is revealed. Was there anyone before Granato? When did pizza become popular in Chicago? How and why was Chicago’s pizza history different than New York’s? Why were the taverns so dominant in Chicago’s pizza history? And finally what’s the deal with the tavern cut? Note, Regas will not be presenting his discoveries on the origins of Pizzeria Uno and Chicago deep-dish pizza in this talk. That subject is complicated enough to need a presentation dedicated exclusively to deep-dish pizza which is currently scheduled with the Chicago Foodways Roundtable for Thursday, May 13, 2021. Welcome back to part 2 of Ed Levine's Special Sauce conversation about pizza in the wake of the revelation by pizza historian Peter Regas about the true origins of New York City pizza. If you recall from last week, Regas has demonstrated that Lombardi's, which was long thought to have been the first pizzeria in New York, was in fact not the first. This week, Regas shares a little bit of what he's discovered about the origins of Chicago's iconic deep dish pizza. As is par for the course with any discussion about deep dish among pizza-heads, this bit of history is accompanied by a lot of talk about whether deep dish is or isn't a casserole. (It's a casserole, folks!) Ed then gets Regas and Sasha to talk about their favorite pizza joints in Chicago and New York and beyond, which they do with only a little bit of reluctance. A few of the names you might recognize, as either a local or a pizza enthusiast: Coalfire, Spacca Napoli, Mama's Too, Speedy Romeo's...did I hear someone say the Illuminati? In the second half of the episode, Ed has on J. Kenji Lopez-Alt, who needs no introduction, and they talk about Regas's revelations and the nature of history. Kenji also gives us a preview of some new menu items on the menu at Wursthall, his restaurant in San Mateo, Calif, where he's planning on doing flammkuchen, which is a kind of-not really German pizza, and he shares a little bit of why he enjoys making pizza and pizza-type things so much. "Because you're interacting with a live thing," Kenji says, "that certainly takes a lot more skill than working with something like sous vide...There's nothing precise at all in the pizza oven. So, when you get it right, it's pretty nice." We rarely deal with breaking news on Special Sauce, but when said news concerns pizza's US origins, exceptions must be made. As soon as I learned that Peter Regas, a Chicago-based statistician by day and pizza obsessive by night, had discovered that there were pizzerias operating in Brooklyn and Manhattan years before Gennaro Lombardi opened what has long been thought to be the country's first pizzeria in 1905, I knew we had to have him on the podcast for an extended interview. I even brought in reinforcements: New York Times restaurant critic Pete Wells, and Serious Eats senior editor and veteran pizzaiolo, Sasha Marx. Here's a taste of what Regas shared with us: “What we know there is a man named Filippo Milone who had probably come, it's not clear, but he'd probably come around 1892 to America from Italy...The first indication that we have hard evidence of him owning a business is at 47 Union Street, again in Red Hook…That would be then in the early part of 1898....Then what we have at Spring Street, 53 Spring Street [the site of Lombardi's original location], we have a permit that's applied for in the summer of 1898. That's for a bake oven. The man that appears in the next directory cycle, which would be the early part of 1899, is...Phil Malone, Filippo Milone, it's the same man.” Pete Wells told Regas that when he heard the news, he tweeted that "it was like if we found out some other dude wrote The Federalist Papers and The Declaration of Independence and then, like, gave them to Madison and Jefferson and we never knew it. It was some guy named Tony all along.” Wells urged Regas to continue his research, telling him, “Follow the mozzarella, Peter.” Pizza nerds (and even plain old pizza enthusiasts) will rejoice in the conversation that ensued.
