Virginia Folklife Director Katy Clune digs in and asks: What are the cultural values of the region today? Scientists and policy makers talk about climate resilience. What about cultural resilience? Later in the show: Jessica Taylor has been recording oral histories in Eastern Virginia for nearly two decades. She says the people she's spoken to paint a picture of migration in the area. How do some families manage to keep their land and their roots while others are pushed out? And: Tangier Island is the last inhabited island in Virginia that's only reachable by boat. And because of rapid environmental changes, it's becoming an increasingly difficult place to live. Lincoln Lewis first visited Tangier Island to study the crab houses used by fishermen there, but has since moved to the island. He's studying how locals consider long-term planning for the island.

I've been starting to index my records on Discogs recently, and it's been a good exercise to go back through a lot of albums I haven't listened to in a minute and decide whether I still want to keep them. When I first started digging in the mid-90s, Jimmy Smith albums (except for the elusive Root Down) seemed to be in dollar bins everywhere. I eagerly scooped them up since it was still Blue Note (many first presses) and you never knew what cool sounds you'd find on there. But admittedly as the years have passed, I've realized I can only handle so much b3 organ playing, especially in the more straight-ahead style of many of Smith's albums. So it's not often I've gone back to these records. But this week as I categorized them all and put a few on, I figured it was a good time to do a short tribute to the legend, and play a few non-Beastie Boy-sampled cuts I enjoy. A little crunchy at times but still some funky stuff! Dig it.

In this podcast we will explore chefs and artisans from around the world diving into their story and passion. In this episode of Chef AF, I chat with Justin Cucci, Chef and Owner of Edible Beats Restaurant Group about being born into the industry, farm-to-table dining and opening a restaurant in an abandoned mid-century gas station. Cucci was introduced to the restaurant industry through his family's restaurant Waverly Inn in New York City. Cucci says, “I was lucky enough to be born into the industry in a way. My grandparents owned a restaurant in New York for about 35 years and my parents worked there, so I really got to be there from the time I could walk.”There was a point in Cucci's culinary career that he felt like he wanted something more, he headed West to Denver and discovered a building while driving through a neighborhood. Cucci shares, it was a mid-century gas station. It had been abandoned for a number of years, but it was just a beautiful core building. And so I approached the landlord, the building owner, and pitched them on the idea. I was literally like a month into town, so nobody knew who I was and he took a risk on me and it became the first restaurant.” Root Down was the first restaurant Cucci opened in Denver. Cucci went on to make his mark in Denver with his local, seasonal and sustainable vegetable-forward menus, opening another five restaurants after Root Down including Linger, El Five, Vital Root, Root Down DIA, and Ophelia's Electric Soapbox all under the Edible Beats Restaurant Group umbrella. Operating a sustainable business is something Cucci is extremely passionate about. In the back of Vital Root restaurant they've installed a shipping container that is a self-sustaining hydroponic farm called the FarmBox. He says, “we're going to be growing food about ten feet behind the restaurant, which to me there's nothing more local and more sustainable than growing food in your backyard.”In February 2022 Cucci implemented a self funded, 100% Employee Stock Ownership Plan (ESOP) for his staff, which gives Edible Beats employees an ownership stake in the business. New York City native Justin Cucci has spent the past couple of decades in Denver, where he operates four restaurants — Root Down, Linger, Vital Root and El Five — and also has licensed a Root Down to the operators of Denver International Airport. He’s about to reopen his fifth restaurant, Ophelia’s Electric Soapbox, an entertainment venue that shut down at the start of the pandemic. Cucci and his team have dubbed Ophelia’s a “gastro-brothel,” which of course it’s not really (many things in Denver are legal, but prostitution is not) because it’s in a historic building that once was a brothel and later a sex shop. Cucci likes to honor the heritage of the buildings where he opens restaurants — Root Down was a gas station and Linger was a mortuary — so at Ophelia’s he is creating a “sex-positive” vibe with early, almost G-rated pornography posters from decades ago. It’s all very tasteful, though, said Cucci, who himself has two daughters and doesn’t want to make anyone feel uncomfortable. He’s currently booking musicians to perform at the venue while rejiggering the menu to fit the current times, with simpler dishes that are easier to execute. Cucci discussed that process with Restaurant Hospitality, as well as his approach to reworking the menus at his other restaurants. A musician himself — he plays the guitar and harmonica — Cucci has curated the music that’s played at all of his restaurants, and he discussed that process, too.

Debut Album Fly Away was recorded and released in 2003. Sunrise to Sunset was in 2005, Diego's Diary was released in 2008 independent. Paul has also been on albums with Christian Artist Toby Mac. Paul had another band called, Rootdown and you can hear about new music coming from them. Living is a privilege but we made Mother Earth a bit angry! We neglect her gifts. Got lazy, thoughtless. We’ve pushed a button and the earth is on fire. It’s time to listen! It’s a wake-up call, an awareness practice. This pandemic is horrible - don’t get me wrong, but the dis-ease and dis-comfort in the universe right now is palatable - it is also breaking open human generosity and empathy and reducing our planetary impact. It is super hard for humans to live through big times of change, but we have the tools and we have the ability to be resilient and thrive. In this meditation I want to have you choose optimism and compassion. Let’s set the intention today, together to: ‘Root Down to Rise Up’ a meditation to the earth and our root chakras/earth elements so that we can create balance and stay as steady, grounded and flexible as a tree during this unique time. Justin Cucci sits down with The Shift List. A mainstay of the Denver food scene with an ever-growing list of both homegrown and high concept restaurants, including Root Down, Linger, Ophelia's, El Five, and more. A New York city native, Justin grew up revering the chefs and culture at the Waverly Inn - a west village dining institution that was owned and operated by his grandparents as a kid. About the same time, Justin started playing in bands, and continues to do so to this day. He opened Root Down, his first restaurant in Denver, over a decade ago, transforming the building from a gas station to a neighborhood restaurant with a cult following that serves globally-influenced seasonal cuisine, with a focus on organic, natural and locally-sourced ingredients. Root Down features two onsite gardens, which not only provides seasonal vegetables for the restaurant, but for it's sister restaurants, Linger and Ophelia's. There's even a Root Down at Denver International Airport, one of the main reasons to book a long layover in the city. Justin has infused music into the culture and business of all of his restaurants - each one of their business entities is named after a Steely Dan song, for example, and you'll find out what each of them are soon. There is plenty of Steely Dan in this episode, so yacht rockers rejoice.
