Pollak Vineyards is a small family-owned winery founded in 2003 when Margo and David Pollak bought a farm west of Charlottesville, Virginia. David's experience in wine was pretty extensive – he worked in the 1970s in Sonoma's Russian River Valley and was a founding partner and investor in one of Napa Valley's first Carneros wineries, Bouchaine Vineyards. In this Season 4 premiere of Speaking of Mol Bio, host Steve Lewis speaks with Dr. Nina Pollak from the University of the Sunshine Coast about the development of a single-dose vaccine aimed at protecting endangered koalas from Chlamydia pecorum. The disease is a major threat to koala populations across eastern Australia, contributing to infertility, blindness, and increased mortality. Pollak's work focuses on optimizing the production and quality control of vaccine antigens while supporting regulatory approval and field trials that ultimately led to a conditional minor-use permit from Australia's veterinary regulatory authority. The vaccine relies on recombinant versions of the major outer membrane protein (MOMP) from three dominant chlamydial genotypes. Using standard molecular biology techniques, including gene cloning in E. coli, His-tag purification, SDS-PAGE verification, western blotting, and mass spectrometry, Pollak's team produces and verifies these vaccine antigens before combining them with adjuvants to stimulate protective immune responses. Beyond the science, the episode explores the challenges of conservation-focused vaccinology: field vaccination of wild animals, limited commercial incentives, and the importance of methods for monitoring disease prevalence. Pollak also reflects on the collaborative nature of the decade-long project and offers advice to young scientists pursuing difficult but meaningful research challenges. Ana's work evokes a strong sense of place, combining close observation with an intimate emotional connection to her surroundings. Her drawings and paintings capture shifting light on water, the textures of flora and foliage, and the subtle human gestures that weave themselves into the landscape. We explore Ana's creative journey, tracing her path from early influences to the development of her distinctive style, one that combines expressive mark-making with a keen awareness of environmental and social themes. The conversation also touches on her animation projects, which incorporate water and raindrops, and are further inspired by music. We also explore Ana's involvement in Six Artists Seven Days On at Defiance Gallery, where she joined five other artists for an intensive week of creation. She reflects on the collaborative energy, the challenges of producing work in such a short timeframe, and how the process influenced the direction of her art. The exhibition is on view until 23 August 2025.The project began in July 2024, when six artists embarked on what they described as a life-defining experience. The invited residency artists—Sophie Cape, Nicolette Eisdell, Pamela Honeyfield, Michelle Hungerford, Charmaine Pike, and Ana Pollak—were accompanied by filmmakers Kathryn Milliss ACS and Anna Howard ACS, along with arts writer John McDonald. This exhibition is the culmination of that residency, marking the final expedition in a ten-year initiative to connect artists with country and foster environmental awareness in a unique and powerful way.Over the past twelve years, with the support of the Ferris Family Foundation, Defiance Gallery has coordinated four residencies, raising an extraordinary $750,000 through exhibition sales. With this fifth and final exhibition, the goal is to reach a total of $1,000,000 in donations to support the vital conservation work of the Australian Wildlife Conservancy.This conversation offers a glimpse into Ana Pollak's practice, her connection to place, and her ongoing fascination with her environment. Jesse Pollak grew up in Washington, DC, attending a Quaker school through graduating in high school. He played competitive soccer, which was a huge part of his life. Eventually, he moved to SoCal to attend school at Berkley. He got the bug to start a company, and only lasted 2 years at school - before he ventured out on his own. Eventually, his company got acquired by Coinbase, which opened up a whole new world for him. Outside of tech, he is married with a 4 month old boy. When he was five years old, Max Pollak had a moment. Sitting in front of a black-and-white television in suburban Vienna, he saw Fred Astaire tap dancing for the first time. “I was so spellbound by his elegance and his effortless swinging persona that I immediately decided I have to learn how to do that,” he remembers. He didn't understand the cultural context or the language, but he knew that whatever was happening on that screen — the rhythm, the movement, the magic — was something he had to pursue. That moment sparked a lifelong journey that would take him from Austria to Harlem to Havana and back again. Here, Max Pollak tells the remarkable story of how he taught himself to dance in a place where no formal tap training existed. Early on, improvisation wasn't just part of his style — it was the only way forward. That instinctive relationship with rhythm would become the foundation of his unique voice as an artist. At 14, Pollak met his first mentor: Carnell Lyons, a master tap dancer from Kansas City who had relocated to Europe during the civil rights era. Lyons had grown up alongside Charlie Parker and had performed with jazz legends. He passed on not only the technical language of tap, but a deep awareness of the art form's Black American roots. That relationship shaped the way Max approached dance — not just as choreography, but as culture. After moving to New York, Max began studying drums and enrolled in Bobby Sanabria's Afro-Cuban ensemble at The New School. It was there that he was asked the question that would redefine his artistic path: Do you want to tap dance to Cuban music — or do you want to tap dance Cuban music? Inspired by that challenge, Pollak dove into Afro-Cuban music, learning the language of clave and fusing it with tap, body percussion, and voice. The result was RumbaTap — a groundbreaking synthesis of traditions that bridges continents and cultures. When members of the legendary Los Muñequitos de Matanzas saw Max perform, they asked him to teach them. That moment affirmed the authenticity of his approach and led to collaborations in Cuba that brought him closer to the source of the music he had been drawn to for so long. Today, Max Pollak is widely recognized as one of the most innovative tap dancers in the world. His contributions to the language of tap, particularly in blending it with Afro-Cuban music and body percussion, have earned him international recognition — including the rare honor of having his image featured on a United States postage stamp. He's also a vocalist, drummer, composer, and storyteller. This week, he celebrates the 25th anniversary of RumbaTap with a special performance at 92NY, featuring members of Los Muñequitos. This episode came together unexpectedly, sparked by a tip from bassist and composer Alexis Cuadrado, who sent me the press release for the 92NY concert. I reached out to Max for a short interview — and the conversation turned out to be so rich and wide-ranging that I decided to share it in full.
