Emulsifiers are among the most common food additives found in ultra-processed foods (UPFs), a much-discussed category of foods commonly defined as those made using manufactured ingredients. They are often packaged and have a long shelf life. Research examining the impact of diets high in UPFs suggests higher rates of obesity and diseases such as type 2 diabetes, heart disease, and cancer.However, discussions about labeling these foods as "ultra-processed" have also sparked debates about whether their negative effects are primarily due to their high fat, sugar, and salt content, or whether they stem from the effects of processing itself, particularly the additives they contain.In this episode, Jaega Wise explores one of the most commonly used additives in UPFs—emulsifiers. In New Orleans we pride ourselves on our extensive array of live entertainment. According to music media company, Off Beat, and tourist authority New Orleans & Company, on any given night we have, on average, 100 places to hear live music. If New York City had the same per capita number of live music venues, they'd have 800. In fact, they have 1,100. Ok, so we're not beating New York, but we're in the same ballpark, and that's impressive for a medium-size city. How about live theater? If, per capita, we had as many options to go see a play in New Orleans as they do in New York, we'd have 142 live theater stages. In fact, we have fewer than 20. So, what's up with that? In a city whose Mardi Gras parades are among the biggest live street theater events in the world, why do we have so little traditional theater? Rob DeViney might be able to shed some light on that question. Rob is Executive Director of Jefferson Performing Arts. In New Orleans there's a long-running intersection of theater and business – in the person of larger-than-life characters who own or represent businesses. Folks like, Al Scramuzza from Seafood City. The Special Man from Frankie & Johnnie's Furniture. Restaurateurs Paul Prudhomme and Emeril Lagasse. Ronnie Lamarque the crooning car salesman. Al Copeland. Chris Owens. Morris Bart. The list goes on. The newest addition to it, is Bougie Man Bourgeois. The Bougie Man is an import from Cajun country where he developed his meat product, Bougie Bologna. Unlike other bologna, which is apparently made from the cuts of meat discarded from traditional butchering, Bougie Bologna is made from 100% pork shoulder. The slogan summarizing this differentiation was originally, “Butthole free.” Apparently, the USDA frowned on that, so now Bougie Bologna is described somewhat more prosaically as, “no mystery meat or byproducts.” The Bougie Man is the alter ego of Ross Brown, who is also the creator of Bougie Bologna. In New Orleans business, like the rest of New Orleans, we're no strangers to contradiction. The same local companies will sponsor the health-driven Crescent City Classic road race, and the Red Dress Run, an athletic event that's also an alcohol-fueled celebration of cross-dressing. We don't think it's unusual for a CEO of a serious business to also be an active member of a seriously fun-centric Mardi Gras krewe. A great deal of our city's revenue comes from tourists who come here to party. But we're also on reputable entrepreneurial lists as one of the best cities to start a business. In this New Orleans tradition of occupational antithesis, Rob and Ross are great representatives of both the business of theater, and the theater of business. For as long as humans and pre-human ancestors have been on the planet -- roughly 2.6 million years or so, we have been eating meat. In fact, recent studies have suggested that had it not been for our carnivorous consumption, humans would not have evolved the way that we did. Over the millennia our tastes have changed but not our love of meat. These days consumers - who spent more than $122B in 2023 on meat - are seeking out high quality, artisanal, organic and sustainable meats. Which is good news for local entrepreneurs cashing in on the craze.   Ross Brown's company, Bougie Bologna, specializes in making an all natural bologna using smoked pork shoulder – and if like a lot of Ross's customers you grew up thinking of bologna as a luncheon meat from Oscar Mayer think again. Ross describes his meat product as Cajun smoked sausage in sandwich form. Ross founded the company in 2022, after nearly two decades in the oil business, because he believed in the product and wanted to be his own boss. Bougie Bologna has proven to be a hit. There are currently three varieties sold in grocery stores from Lafayette to New Orleans, including a deal with Rouses Supermarkets that will put the products in 70 locations across south Louisiana. Ross, aka The Bougie Man, is a native of Lafayette, who is still getting used to running a demanding business that is growing faster than he could have imagined.  Derek Stuart is co-owner of The Meatatory, as in meat and laboratory, a craft butcher in Prairieville that specializes in craft burgers and sausage recipes, high end Wagyu and specialty beef cuts, as well as local staples like Boudin balls and barbecue. Derek and his wife, Laura, opened the Meatatory in 2022. It is both a retail storefront and a catering business with a menu that includes charcuterie boards, sides and desserts. If you're gonna be first, you're gonna take a risk. All the more so if you're going to market with a foreign concept.  People are creatures of habit. We look to the world we know to understand new concepts. And if something we're trying is unlike anything we've tried before…that can be a recipe for failure. Think of it this way: People who are remembered for being ahead of their time aren't usually remembered for being wildly successful. It's a contradiction in terms.  To illustrate: Imagine trying to explain yoga to a bunch of Cajuns in the 1980s.  Movement Yoga is so commonplace now, it's hard to fathom. But that's pretty much the story of Jerry Smith-Guidry, who was one of the very first people to teach yoga in Lafayette. A self-described “type A” personality, she discovered wellness and yoga in 1989 and fell in love. She went on to create the yoga program at Red Lerille's Health Club here in Lafayette.  Today, Jerry runs Acadiana Yoga & Wellness studio, which she founded in 2009. Acadiana Yoga offers a range of wellness services, including yoga classes, massage, reiki, pilates and more. It's also the only Yoga and Pilates mat certification in Lafayette.  Meat It's one thing when you're introducing something new, and another thing entirely to introduce something misunderstood. Like bologna. Yes, bologna. And if you're eating a slice of cajun smoked bologna made by Ross Brown, go ahead and get rid of any preconceived notion of how that sausage is made. This is Bougie Bologna — High grade stuff made from pork shoulder. 100% free of byproducts, mechanically separated meats, and the unmentionables you usually find in bologna with the first name O-S-C-A-R. Ross Brown, senior vice president of North America Cloud Ecosystem Partners at Oracle, talks to Larry Walsh about what it means to make money in cloud computing. The cloud is now mainstream. Vendors and partners make more money on cloud and other automated services sold through subscriptions than they do through traditional hardware and software products. A large part of cloud computing's appeal is the recurring revenue — steady, predictable income with a consistent expense correlation. Unlike fluctuating, seasonal sales cycles, recurring revenue brings certainty.  Recurring revenue sounds simple in explaining the cloud computing model, but accounting for cloud revenue is much different and more difficult. Cloud computing is sold on extended contracts with pricing consideration based on consumption expectations over the lifetime of the engagement. Bookings don't equal revenue. Revenue isn't immediately recognized. There are revenue and costs associated with interconnected services. And customers can use “credits” to retire their purchasing commitments, but vendors must pay partners for those sales.  Pricing and accounting in cloud computing are complicated and confusing. Planning for growth, calculating profitability, measuring performance, and defining value to partners and customers are all a matter of how a vendor interprets GAAP (generally accepted accounting principles) and calculates cloud numbers.  Given the pervasiveness of cloud computing in the channel, Changing Channels asked a true expert in cloud services and business models — as well as the channel — to talk about cloud pricing, revenue recognition, and accounting practices. My grandfather Joe is serving in the U.S. Navy during World War II. He isn't married... yet. But he is head over heels for someone who's there waiting for him in Seattle every single time his ship comes into port. That someone is my grandmother Beverly, who's just as in love with him too. She moves from Hollywood to the Pacific Northwest to be there as he comes back from his deployments. Whenever he's away, they write letters back and forth to each other constantly. Over 100 letters (and a marriage and a family) later, I inherit these letters and start reading them. Going through them, I discover incredible accounts of events happening in the war and feelings between my grandparents. I'm getting to know them better than when they were still alive. As I begin reading this one letter from my grandfather, I'm captivated by the details of being aboard the ship, his concern for the war, and his love for Beverly. However, there's something unusual about this letter. Someone has, quite literally, cut out a paragraph! This paper has a hole in it. Sure, censorship during wartime happens, but my mind can't help but race with curiosity. Why was it cut? What was in that missing paragraph? And did he ever tell my grandmother what it was? You know you have good writing when you want to know what's missing, and you start imagining things and filling in the blanks for yourself. And that's why I'm so excited for this week's special guest! Ross Brown is an award-winning writer, producer, and professor. In this episode, he talks about comedic writing, shares stories from his sitcom writing days (including the writing process), and answers questions such as: How can you turn a dark situation into a comedic writing opportunity? What two things make a story a story, regardless of its format? And where can unpredictability cross the line and cause a negative reaction in your audience? What you will learn in this episode: Why the story still matters most, even in comedic writing What it takes to create good comedic stories without forcing the funny Why unpredictability makes for better comedy and stories Who is Ross? Ross Brown has created and produced comedies for The WB, CBS, and ABC. After beginning his career on The Cosby Show, he went on to work on the feature film National Lampoon's Vacation as an assistant director. Next, he served as a tenured Assistant Professor of TV Writing & Production at Chapman University. Then from 2016 until June 2022, he was the founding director of the MFA in Writing & Contemporary Media at Santa Barbara's Antioch University. In addition to his television and film work, Ross has had his short plays performed in theaters in Chicago, Los Angeles, and Minnesota, as well as readings of his full-length plays staged at The Pasadena Playhouse in California and The Barter Theater in Virginia. And up he went, as a 2nd assistant director and then 1st assistant director on such hits as films Private Benjamin and National Lampoon’s Vacation, as well as TV series Knots Landing.But Ross wanted to write… and write he did. A spec Webster episode led a staff gig on The Cosby Show, followed by The Facts of Life, Who’s The Boss, Step by Step, and many other popular sitcoms. He also created prime time series for ABC, CBS and the WB, such as Living Dolls, in which he helped cast young model Halle Berry in her first acting role.Ross then began teaching and expanding his writing horizons. His play Hindsight received two staged readings at the Pasadena Playhouse (Pasadena, California) in July of 2007. They clearly show a steady increase in maximum temperatures over that time of about 1 degree. It might seem like a relatively small change but the impact has been dramatic. And from further in the article: "Thirty-four years ago we used to pick in the middle of March," he said. "We're now picking in the middle of February." End Quote. Grapes have always been a marker of world climatic conditions. During the Medieval Warm Period when Vikings were able to navigate a relatively ice free north Atlantic ocean, reaching Newfoundland as well as colonising Iceland and Greenland, grape vines were growing in England. Because grapes are a perennial crop, they are in the ground for many years. Planting requires a commitment to the future. Changes, rapid changes in climate can have catastrophic effects on the grower. David Bruer’s quote above shows rapid change in a relatively short period. Clearly n=1 is not a reason to raise concerns but the article and the TV program goes onto to talk with a wine making company with weather records going back much further. Quote: About 800 kilometres to the east of Temple Bruer, Ross Brown from Brown Brothers Wines has an even longer weather record on file. His family has been making wine in Milawa, Victoria, for almost 130 years. Mr Brown says he used to be a climate change sceptic but his vintage charts are indicating things have changed. In Milawa, Brown Brothers is also picking earlier and their records show temperatures are rising. Some of the cool climate varieties his family always used to grow here — like pinot noir and sparkling whites — have now become too unreliable so the company has moved some of its operation to cooler country in Tasmania. End Quote. If this is effecting wine growers it will be effecting orchardists, soft fruit growers and pretty much anyone in agriculture. The perennial growers have movement issues, that is vines and trees are pretty much going to stay where they are. Cereal growers and graziers have a little more flexibility but not as much as they’d like. The real punch from the article and the program came at the end. Farmers in Australia don’t receive the subsidies that US and EU farmers do. They are, as a result of Australia being part of the Cairns Group, free traders, even if they’d happily receive subsidies. However all the other regulatory requirements for businesses do apply to the agricultural sector and things are changing. Quote: Brown Brothers is a big operation. Their winemaking is on an industrial scale and the decision to adapt to the changing weather was driven by the company's board. It's a shift being seen in boardrooms around the country. Corporate Australia has been warned. The changing climate is something they can no longer ignore. Last November, Geoff Summerhayes, an executive member of the Australian Prudential Regulation Authority (APRA), told businesses climate change posed a material risk to the entire financial system. His message was that boards and directors had a fiduciary duty to their shareholders to take it into account. He cited legal opinion that found company directors who failed to consider and disclose climate risk could be in breach of the Corporations Act. End Quote Let that sink in. If companies ignore climate change in their risk assessments and shareholders suffer losses as a result, the boards of those companies are, probably, subject to legal action. While our federal government is controlled by a rump coalition party with ties to coal, gas and oil production whose allies have complained about the “ugliness” of wind turbines and the beauty of coal mines, I kid you not, legal opinion based upon science is taking reality into concern. For grape growers at the big end of town who have nowhere to go after Tasmania become too hot, those corporate entities who ignore climate change effects on their businesses will find themselves sued. Meanwhile the National Party whose supporters are on the frontline of agriculture keep pushing the world’s biggest coal mine development in Central Queensland with the likelihood of it destroying aquifers, causing air pollution in the local area and running the risk of shipping accidents on the Great Barrier Reef, an ecosystem suffering 50% coral bleaching from the last two summers. The dichotomy of political nonsense and the feet on the ground food producers is not helping anyone. As the agricultural sector is a free trading one as a result of government decisions, perhaps it’s time to remove corporate subsidies from the energy sector, both fossil and renewables. The price of renewables is now less than fossil fuels, without subsidies and falling as economies of scale, research efforts and price signals drive demand. In another article from the ABC Solar power: What happens when we start producing more electricity than we can consume? Quote: While Australia leads the world in the use of rooftop solar power, some experts say there could soon be too much power coming online — and governments will have little choice but to cut subsidies. Government figures show 3.5 million solar panels were installed on Australian rooftops last year, an average of almost 10,000 every day. That is a 41 per cent increase on the previous year, driven by the twin incentives of cheaper solar panels from China and rising power bills. End Quote The obvious answer when too much power is being produced is to save the excess not punish the producers. I don’t know, maybe some sort of battery could help. I’ve discussed pumped storage in earlier episodes and that’s a safe, proven, relatively inexpensive form of storage. What all this comes down to is: The climate is changing, the evidence from the agricultural sector is overwhelming, the federal government in Australia is, if not in the pockets of fossil fuel producers, at least inclined to accept their arguments. What’s happening to science based policy in the US doesn’t bare thinking about but I will have an episode on that soon. While all that’s going on individual households are following the obvious price signals and throwing PV cells on their roofs. The odd one out in this story is government. If only there was some way we could change governments and some way we could have an actual real choice between alternatives. The conservitive Coalition in power now bows to fossil fuel types, the Labor opposition does so through the mining unions, so the same thing, where is a rational , evidence based party that could step into the breach before Paris COP looks like  fine ideal but not a reality?
