« Perdre l'appétit » pendant ou juste après avoir cuisiné vient d'un faisceau de mécanismes sensoriels, hormonaux et cognitifs qui se renforcent entre eux.Habituation sensorielle et “satiation spécifique”À force d'être exposé aux mêmes odeurs et vapeurs pendant 20–60 minutes, le cerveau s'y habitue. L'odorat “baisse le volume” (habituation), la salivation diminue, l'envie pour ce plat précis décroît : c'est la “satiation spécifique aux propriétés sensorielles”. Résultat : le même plat excite moins que s'il arrivait soudain sous votre nez. Parfois, on n'a plus envie que d'un goût radicalement différent (frais/acide si on a cuisiné gras et chaud).“Satiété par procuration” via les sensLes sens déclenchent une phase céphalique digestive (avant même de manger) : petites sécrétions d'insuline, de sucs gastriques, activation vagale. La question « la malbouffe est-elle un danger pour la mémoire ? » a longtemps été posée, mais une étude récente apporte des preuves solides. Le 11 septembre 2025, des chercheurs de l'Université de Caroline du Nord à Chapel Hill ont publié dans la revue Neuron des résultats inquiétants : une alimentation riche en graisses saturées, typique de la « junk food », pourrait altérer la mémoire en quelques jours seulement.L'équipe de Juan Song et Taylor Landry a travaillé sur des souris pour comprendre comment un tel régime influence le cerveau. Leur attention s'est portée sur l'hippocampe, une région clé pour la mémoire. Ils ont découvert qu'un type particulier de neurones, appelés interneurones CCK (pour cholecystokinine), devenait anormalement actif après une exposition à la malbouffe. Cette hyperactivité dérègle le circuit neuronal responsable de l'encodage et du rappel des souvenirs.Le mécanisme en jeu est directement lié au métabolisme énergétique du cerveau. Normalement, les neurones utilisent le glucose comme carburant. Mais sous l'effet d'un régime trop gras, cette utilisation est perturbée. Les chercheurs ont identifié une protéine, la PKM2 (pyruvate kinase M2), comme pivot de cette altération. Quand la PKM2 ne fonctionne pas correctement, les interneurones CCK s'emballent, ce qui provoque un déclin de la mémoire.Le plus frappant est la rapidité des effets : les souris montraient déjà des déficits cognitifs après seulement quatre jours de régime gras. Et cela avant même d'avoir pris du poids ou de développer des signes de diabète. Autrement dit, les conséquences sur le cerveau précèdent les effets métaboliques visibles.Heureusement, l'étude montre aussi que ces dommages sont réversibles. En restaurant les niveaux de glucose cérébral, l'activité des interneurones redevient normale et la mémoire s'améliore. Les chercheurs ont même testé le jeûne intermittent : après une période de malbouffe, cette pratique suffisait à rétablir l'équilibre neuronal et les capacités mnésiques.Ces résultats sont un avertissement fort. La malbouffe ne menace pas seulement notre silhouette ou notre santé cardiovasculaire, mais aussi notre mémoire, et cela très rapidement. Certes, l'expérience a été menée sur des souris, et il faudra des études complémentaires chez l'humain pour confirmer ces effets. Mais le signal est clair : notre cerveau est sensible à ce que nous mangeons, parfois plus vite qu'on ne l'imagine.En conclusion, l'étude de l'Université de Caroline du Nord publiée dans Neuron démontre que la malbouffe est bel et bien un danger pour la mémoire. S&P Futures are displaying some weakness this morning as market await a catalyst. Tariffs, Trade and Earnings remain hot topics for the markets. President Trum is scheduled to meet with the president of the Philippines today. Discussions are expected to focus on trade negotiation and security cooperation in the Indo-Pacific region. Markets are caution on a potential U.S. EU trade agreement as the EU is said to be preparing a list of possible retaliatory measures. The lack of movement in the U.S. India trade agreement has markets questioning if a deal will actually occur. On the earnings front, CCK, KO, MEDP & NOC are higher after their releases. NXPIT is moving lower after their announcement last night as tech expectations are elevated. After the bell today, earnings releases are expected from CB, SAP & TI.

As we eat, our gastrointestinal (GI) system releases a host of both local and distant regulators to control the process of digestion. We will begin with the primary hormones, then cover some of the secondary hormones, and lastly discuss how our body senses its intraluminal contents and then subsequently integrates all of the various stimuli it receives. In the In Conversation With series, a part of the free DDW podcast, DDW speaks with members of the drug discovery industry about their work and how it helps turn science into business.    In this episode, Megan Thomas is in conversation with Tien Lee, CEO of Aardvark Therapeutics, a San Diego-based biotech company in Phase II studies of its drug, ARD-101, a type 2 bitter taste receptor (TAS2R) which is taken orally and remains in the human gut unlike GLP-1 which is systemic. The drug targets receptors in the gut where it triggers cholecystokinin (CCK), a GI system peptide hormone responsible for stimulating the digestion of fat and protein. CCK stimulates pancreatic secretion and gallbladder contraction, regulation of gastric emptying, and sends a signal to the brain that one has had enough to eat.
