Because on this edition of the show, Saint and Jim are discussing food fads — those equal parts trendy and tasty goodies that are just as fresh imagination-wise as they are fresh out of the oven. We're talking innovative ingestibles like Sliders. Cronuts. Edible foams, creative cookies and crazy concoctions. Some took off, and made the great American plate. Others were literal flashes in the pan. But they all stretched the boundaries of the menu, and reminded us that food can be fun as well as fandom. So dig in.
Today we're talking all about Food Trends, with a special focus on desserts! I invited on professional baker, marshmallow maven, and fellow podcaster, Katherine Sprung, to talk all about how certain foods become trendy, if it's worth it to participate in the trends, and how the food trend cycle affects the seller as well as the consumer. This was a really interesting look at the hype machine that made the whole world obsessed with Cronuts, Crookies, Dubai Chocolate, and the monstrosity that is Crumbl. We also get nostalgic and revisit food trends that we participated in, and others that left us very confused. We also answer the age old question - is anything truly worth waiting in line to try? Today's guest is award-winning pastry chef Dominique Ansel, the founder of Dominique Ansel Bakeries in New York City and Las Vegas. When the French chef came to the U.S. in 2006, he worked at Daniel Boulud's restaurant for five years before opening his namesake bakery in SoHo. Dominique is one of the most inventive pastry chefs out there and is also the author of three cookbooks. The Lexington Candy Shop in New York City has served burgers, fries and shakes to hungry patrons for decades. Last remodeled in 1948, the diner is the definition of old-fashioned. But that hasn't stopped it from getting a wave of new fans. In August 2022, this old-school business met the new world when Nicolas Heller, a TikToker and Instagrammer with 1.2 million followers known as New York Nico, popped in for a traditional Coke float – Coke syrup, soda water and ice cream. Naturally, he made a video. It went viral, garnering 4.8 million likes. “The next day (after the video was posted), the lines started forming at 8 in the morning,” John Philis, the diner's third-generation owner, recalls with amazement. “And it was like, huh!” When a smaller restaurant unexpectedly goes viral on TikTok or other social media, the sudden demand can be overwhelming. Owners have to adapt on the fly, revamping operations to quickly serve a crush of people. But savvy business owners who are able to adapt can parlay newfound fame into lasting changes that boost their business for years. But going viral doesn't lead to expansion for everyone. Some are just happy to enjoy the boost in their existing establishment. One person who knows about going viral is Dominique Ansel. In 2013, before most people knew the term “going viral,” the French pastry chef created the “Cronut,” a cross between a croissant and a donut, at his newly opened New York bakery. The Cronut created a craze the old-fashioned way, through newspaper and TV news reports. Ansel remembers the frantic early days when the bakery had to hire security to control the line. “It was very overwhelming. I have to say, it's not a feeling of like joy and happiness, the feeling of stress and pressure,” Ansel recalled. “When we first launched the Cronut, we only had like four employees in the bakery, two in the kitchen and two barista. That's it. So we were a very lean team,” he remembered. “It changed everything because we had to like, produce more. We had to hire more people.” This article was provided by The Associated Press.

Une enseigne qui revisite les donuts de façon originale et plus gastronomique. Ça cartonne. Elle lance très vite après "Crème" le lieu branché de Bruxelles pour déguster des brunchs à l'Australienne. Puis elle rachète cette année (2023) le célèbre glacier, "le Framboisier Doré" une véritable institution pour les bruxellois. Son nouvel établissement voit le jour "Bisou" avec un nouveau concept signature, le Ice Cream Sandwich. Comme vous le savez sur Muffin Game on n'interview pas seulement nos invitées. On se déplace, on prend le temps de les découvrir, on va jusqu'à chez elles et dans leurs entreprises. C'est une véritable immersion. Je vous embarque avec moi dans l'univers de Chloé. Nous nous sommes d'abord rendu chez "Crème" au 30 rue de Rollebeek pour déguster l'essentiel du matin l'Avocado toast saumon, œuf poché, tomate, poivrons avec un Latte Macchiatto au lait d'avoine bien chaud. Sans oublier les pancake natures avec quelques myrtilles fraîches, un peu de sucre glace et du sirop d'érable. A tomber par terre. Le lieu est intimiste, très fleurie, les petites tables rondes sont trop cute, ils servent à partir de 9h et le personnel vous tutoie. La carte est entièrement en anglais, bon ok un peu galère pour moi qui n'aligne pas un mot d'anglais mais je m'en suis sortie. Le wifi est gratuit et vous voyagez vraiment, autour de moi aucun parlait français, c'est très dépaysant. On s'est offert un goûter gourmand en allant à quelques mètres seulement, au 36 rue Joseph Stevens chez "CocoDonuts". On s'est laissé tenter par le Cronuts, un mélange de pâte à croissant et pâte à donuts cuit au four avec un glaçage au chocolat blanc et une crème praliné parsemé de noisettes caramélisées. Le tout accompagné d'un café frappé au caramel, un délice. Voilà pour mon expérience. Ah oui et "Bisou" n'était pas encore ouvert quand je me suis rendue chez elle, c'est une bonne occasion pour revenir tester. Ce que j'aime avec Chloé c'est qu'elle dort, elle mange et elle respire la food. Elle se considère comme une obsédée de la nourriture saine et gourmande et elle le transmet. Quel est son parcours ? Comment a-t-elle vécu ce voyage en Australie qui a changé sa vie ? Qu'est- ce qui à déclenché la volonté de se lancer dans la création d'un donuts luxe ? Quelle est sa façon bien à elle de lancer des projets de façon intuitive et trouver des financements même quand les banques refusent de lui prêter de l'argent ? Et puis comment fait-elle pour prendre soin d'elle avec ce rythme effréné enceinte de 6 mois d'un petit garçon ? Chloé se livre à coeur ouvert. Happy 2017! Welcome to our first podcast of the year! Before we chat about that – can you believe we’ve been doing this for almost a year? We were excited to chat with Steve Chaves of Malasada World in Cambridge, Ontario, Canada for our first podcast of the year. Angela nicknamed Steve the Willy Wonka of Malasada World, which is located about an hour west of Toronto in Cambridge, Ontario, on the 401. Check out this article on malasadas from Eater. Yes, the one ‘s’ in the spelling of ‘malasada’ is intentional – Steve says it’s easier for English speakers to pronounce since the word comes from two words: ‘mal’ and ‘assada’. Before opening the shop about seven months ago – on Dia de Portugal weekend 2016, no less! – Steve worked as a classically-trained French chef all over Canada for over 25 years, spending time in Alberta & British Columbia, too. Steve took note of the specialty dessert and donut craze – Cronuts and gourmet cupcakes, anyone? – and thought “Why can’t we do that with malassadas?” He was also inspired by the malasadas of Hawaii, which have been popular for decades, thanks to bakeries like Leonard’s. Did you know that the Portuguese, primarily from Madeira & the Azores, brought them to the Aloha State in the 19th century, working on the sugar plantations? In Madeira, malasadas (similar to Bolas de Berlim) were enjoyed on Shrove Tuesday (Terça-Feira Gorda), the Tuesday before Lent. The tradition continues to this day – Mardi Gras is known as Malasada Day in Hawaii! Which recipe does Steve use to make his traditional malasadas? Many! – Steve combined his Avó’s recipes as well as those of other family members and friends – to create the perfect malasada! Some of their specialty flavors include: Passion Fruit Meringue, Dulce de Leche, Chocolate Hazelnut, Apple Crumble, and the Doughnata – yes, a nata and malasada hybrid.
