We began with Chef Anthony Bonett from @Moshulu, who's about to enter into his new role as the Chef at Triple Crown, located in the Radnor Hotel in Wayne, PA.  Chef Bonett has been working inside restaurants in Philadelphia for most of his career, landing a job with Fearless Restaurant's Marty Grims 15 years ago, and has worked for the family-owned business ever since. His career has long since focused on seafood-heavy cuisines where he offers creative meals to entice everyone's palates.  Today, he joined us while getting ready for the FR Restaurant Week, Easter Brunches, and his interesting twists on foods that we all love for the new Spring menu at Moshulu!  https://www.fearlessrestaurants.comhttps://www.fearlessrestaurants.com/moshuluhttps://www.triplecrownradnor.comNext, our host was joined by Keith Wallace who's name is synonymous with all things wine, including Founding a top-tier school for budding sommeliers and wine makers.  His career stemmed from working inside kitchens to wine making, from penning the book, "Corked & Forked" to contributing to different publications. As a person who looks for new and exciting ways to expand his career...he started a  program for sommeliers and winemakers at 31 years old which offers a wider accessibility for everyone to learn the industry.  His expertise and craft is finely-tuned so that he can ascertain what your taste in wine might be, and judge so accurately that his choices end up obtaining 90+ ratings from Wine Advocate and Wine Spectator.Wine School: https://www.vinology.comPodcast: https://podcasts.apple.com/us/podcast/after-wine-school/id1787586745Book: https://www.barnesandnoble.com/w/corked-forked-keith-wallace/1102622248Our final guest set her sights on business ownership within the culinary community early on, first trying her hand with interesting twists as a baker, then as a caterer, she started a ghost kitchen as well, and finally landed on her brand: Chubby Chicks.  Shakiera Turner, aka Chef Kiera has been turning up the levels on comfort food in the heart of Philadelphia. We started this podcast well over 300 episodes ago. When we started the title was Mulligan Stew Podcast (Music. Film. Food. Wine) Over the months the Pod became more music and film than anything else. Just the way the road leads us. Tasting Room Radio has worked its way back into the mix because of critical dynamics taking place. Cold damaged vineyards,  An agreement between BC Wine Growers and the BC Government to allow the 2024 wines to be grown and harvested in Washinton, Oregon and California. BC wine battles with political neighbours in Alberta, Tariffs from the USA and more.   All of these subjects were discussed over and over again by the wine trade and fans in attendance.   Tasting Room Radio set up the same home base they always have. Up to 6 chairs in a circle on the convention centre floor ..leaving room for the invited and the walk-ins.   We couldn't fit everyone in, so we decided to build the show around the most interesting storylines and storytellers.   With apologies to those we couldn't fit in, the podcast guests are     Co-Hosts - Jenna Brisco, Maude Renaud-Brisson & Kelcie Jones. Educators and Somms at This is Wine School.   Richard Kanazawa - winemaker at Bench 1775 (Naramata) Tracey Horneman - winemaker at Blue Grouse (Cowichan) Kailee Frasch - Winemaker Quails Gate  (West Kelowna)   Harry Hertscheg - Executive Director Van Wine Fest Evan Goldstein - Master Sommelier (SF) Tony Holler - Owner Poplar Grove (Naramata)   Wine School Team  Taylor Butterfield - White Wine  Winemaker  Chateau Ste. Björn Ingi Knútsson is one of the major reasons that Matt and his friends had such a positive experience in Iceland. He was the group's tour guide and was instrumental in either setting up or influencing many of the “Lessons from Iceland” Matt talked about in Episode 340. Bjorn is a native Icelander and has tremendous experience within the business and hospitality sectors, both in Iceland and around the world. He became a tour guide later in life when he was looking for something fun to do. He is also a certified wine expert and runs an attraction of his own, Vínskólinn Við Vatnið, which translates to “Wine School by the Lake”. In this episode, Bjorn talks about Icelandic tourism, conquering yourself and managing logistics.   Icelandic Tourism “We have way more tourism in the Southwest of Iceland.” Compared to the US, Icelandic tourism is in its infancy. In fact, the majority of tourists who come to visit Iceland stay in the Southwestern corner of the country, which is where you find the major airport, the capital city of Reykjavík and destinations like the Golden Circle and the Blue Lagoon Spa. But if you venture out to the East and North, you will encounter unparalleled (and undisturbed) beauty.  Icelandic tourism has gotten major boosts from a few things over the years. First, a volcano that erupted that drew people to the area, and second, a marketing campaign that highlighted Iceland as a convenient stop-over between New York and Europe. Of course, not every Icelander is keen on turning their home into a tourist destination. Bjorn told us of two farmers who owned the property on either side of a canyon. One embraced tourism, the other did not. It's unfortunate, Bjorn said, because the farmer with the better view is the one who is against the influx of tourists.    Conquering yourself “I have a mindset that I need to go outside of my comfort zone and tackle things.” Bjorn has accomplished a lot in his life, both personally and professionally. From beating cancer to starting a new career late in life, Bjorn knows what it's like to either be pushed out of his comfort zone, or to push himself beyond his current limits.  When Bjorn decided to test for his wine certification, he felt it was like going back to school. But, he said, in those situations you just have to read, research and learn in order to be ready for the next challenge. In many ways, Bjorn was inferring that we have to conquer our present self to grow into our future self.    Managing logistics “Instead of calling Ops to do things, you take matters into your own hands.” Whether directing the operations of Iceland's largest airport or executing a tour for 18 people, Bjorn emphasizes the importance of personally managing the logistics that matter to the end user's experience. For example, in Iceland, the weather can be unpredictable, so it's imperative to look ahead, use your resources and make contingency plans.  Even on Matt's tour, there were sights and experiences that they had to miss because of closed roads. Luckily, Bjorn looked ahead, knew of some alternative options and made a plan. The result was a seamless, and extremely enjoyable, experience.    To learn more about Bjorn and his wine school, check out Vínskólinn Við Vatnið. In 1988, Paul K Sr. featured a Romanian wine in the Original Wine of the Month Club. The wine was Premiat Sauvignon Blanc and was $2.50/bottle on reorder. It was a very nice wine.  Turns out, according to Marinela, that wine was purchased from Romania during the USSR rule. Long before the value and complexity of freedom was real. It is so interesting that the Original Wine of the Month Club was ahead of its time in 1988...finding a Soviet block wine worthy of the American palate. Now, as she explains, the wine trade is dynamic and changing to a European model. This is a slow and complicated transition.  Despite the headwinds to brand building, exportation, and world wine recognition, Marinela is confident that Romanian wines will find their way to the world wide wine stage. This is a tall order and if you listen carefully, you will here her passion to get it done. Here her here.

Wine Talks believes in the story of wine. There is a colloquialism in the wine trade "Every bottle tells a story" which on the surface is correct....but sometime seems too trite. What is in the bottle is not just an expression of terroir (soil, weather, environment) but also an an expression of the accumulation of the winemkars experiences, passions, lifestyle and what he or she thinks the proper melange of all these elements should be. Stephanie learned this the hard way (but the proper way). The school of hard knocks is just that...take you lumps, learn from the expereince and move to the next adventure and she has had plenty. There can only be one explanation (maybe two) for someone to want, study, test and pass both the Master of Wine curriculm and the Master Sommelier curriculm. So rare it is that there are only 3 people in the world that have done it. One reason could be the pure academia of them; the study, the knowledge, the challenge to learn more. And another reason is the passion for wine. For David, it is a lot of both. He is clear, articulate and funny...and maybe a little crazy; after all this study and understanding of the wine industry, he goes off and starts a winery in Walla Walla Washington. Who does this? But you will here the commitment and passion it takes to do this very thing. Wine Talks is proud to have tracked him down in Washington as they are preparing for harvest. The Master of Wine Diploma out of London is probably the most rigorous of certifications to acquire. It took Nova 8 years of study, frustration and tasting to get it done; and that was only after she failed out the first time around. Yes, you can spend 6 years going through the program and if you don't hit certain milestones during the final testing, it is like the kids board game Shoots and Ladders...back to the beginning.  An MW that saw the potential in Noca Cadamarte, pulled her aside to inspire and console her at the same time. This time she passed. There are fewer that 250 female MW's and fewer than 10 that actually make wine....but Nova is the only MW who makes wine in Napa, the Fingerlakes and Ohio (that is correct, Ohio). When one stumbles across a strong will in the wine industry, one has to take notice. A strong will will necessarily show through in the resulting wines. It takes an opinion, it takes a will to create the finest example of wine a vineyard can produce.  If one is "laissez faire" about what is in the bottle, one will cut a corner or shortcut a process or leave out a process that would not necessarily create a poor wine, but will certainly keep a nuance or a character out of a wine.  For Elizabeth, it is about expressing the terroir she is, as she says it, priveldged from where she is to create wine. This is important; as a steward of the land for the Cornell family (from whence the name of the winery is drawn), she has a reponsibility to protect and enhance.  The 2020 fires ripped through area and the rebuild is under way. Elizabeth is inspired to coax the vines back to their expressive selves. Have a listen to this inspiring and driven winemaker.

The path to being intoxicated with wine (I do not mean with alcohol) comes in many fashions. Virtually everyone that is consumed with wine has a story to tell. Some left the family wine business to become lawyers or even doctors but the allure brought them back to their roots (full of puns today).  There are not many careers that would align themselves for a switch to wine as does Katarinas first love of history; maybe food, hospitality and a few others would be synergistic but history would be my vote for natural progression to wine. Wine is history. Wine is about the story. All of history has wine. Katarina was taken by wine during her studies and quickly became an academic in the world of wine. Settling in Florence, 100's of kilometers from her native Sweden, Katarina has become an expert in the regions and ways of Italian wine. Heading into "the city" is something I enjoy. Often, I stay the night.   Since I've taken advantage of the San Francisco Wine School I thought you might find it an appealing option as well. They offer so many workshops, programs and events there's bound to be one that appeals to you. So I sat down with co-owner, Master Sommelier and Certified Wine Educator David Glancy a couple of weeks ago for this interview, and it gave me the chance to ask...what led him to opening the school.

MJ's guest today is a living legend in the world of wine and wine educators, Kevin Zraly. Kevin Zraly is best known from his time as the wine director for the Windows on the World restaurant and founder of the Windows on the World Wine School on the 106th and 107th floors of NYC's World Trade Center. After the loss of the restaurant in 2001, Zraly continued the wine school for another 15 years at the Marriott Marquis in Manhattan, ultimately educating more than 20,000 wine lovers over the course of 40 years. In addition, he has written eight books about wine and food, including his annually updated Windows on the World Complete Wine Course, which has sold more than four million copies - making it the number one wine book in the United States. Kevin's a storyteller at heart and this episode is packed with gems. MJ and he discuss his early days growing up as an altar boy to his transition as a young Woodstock Music Festival attendee. Kevin describes his incredible first restaurant job in college which started his wine journey. His determination to learn much more about wine began with a hitchhiking adventure from New York to California wine country when he was barely old enough to drink. His retelling of landing the Windows on the World job is as iconic as the man himself. And if the discussions weren't wonderful enough Kevin brings in a very special bottle - from 1968 the year MJ was born.
