Hanna ist zurück aus dem Urlaub in Frankreich, aber noch immer klingt die gute Zeit dort nach. Ihr Kater am Morgen nach Hannis Geburtstag klang auch den ganzen Tag noch nach, wie sie berichtet. Dann wurde aber noch kräftigst abgeschlemmt. Was, erzählt sie natürlich brüh-warm, bzw. – bezogen auf die Platte mit rohen Muscheln *würg* – meer-kalt als warm. Lecki, lecki, lecki war jedoch Zoras Rinderbraten-Praline. Obwohl sie sonst kein Fangirl#1 von Fingerfood ist, hat sie hier nur Gutes zu erzählen. Hanna wird häufig nach den Basics ihrer Rezepte gefragt. Erkenntnis: Was für sie (und Zora) selbstverständlich ist und keiner Erklärung bedarf, ist für Foodies und Hobbyköch:innen sehr interessant. Oder, Cream-Team? Es entsteht die Idee für einen YouTube-Channel. Hanna erzählt von ihrem Secret-Spot für Steinpilze und Zora vom Catering für den Renteneinstands-Lunch ihrer Mutter. Dabei sind Hanna und Zora gleichermaßen fasziniert von der Vorstellung, die nächsten gut 20-30 Jahre nicht mehr arbeiten zu müssen und schmieden bereits Pläne… Im Service werden wieder Fragen vom Pop-Up-Dinner beantwortet. Es geht heute darum, wie man eine Hobbyküche auf das nächste Level hebt. Zora und Hanna sind sich einig: Es startet mit dem richtigen Schneidebrett… warum? Tja, das müsst ihr schon selbst hören. Die weiteren Fragen drehen sich um die Pissoirs im Blattgold und Essentials im Vorratsschrank, um am Sonntag schnell was kochen zu können. Außerdem verraten Zora und Hanna ihr Rezept für die Schokoladenmousse, die es beim Pop-Up gab und wie ihre Traum-Lokale aussähen, wenn Geld und Umstände keine Rolle spielten. Darüber hinaus sprechen sie aber vor allem über ihre besten Ideen für Pop-Up-Restaurants und Cafés sowie ihre liebsten Koch-TV-Formate. Passend zum Herbst servieren Hanna und Zora in dieser Woche ein Dreierlei vom Pilz. Hier zeigen die beiden nicht nur Fachkunde, sondern werden auch leidenschaftlich beim Thema Pilze „abschneiden oder rausdrehen“. She was recently honored by The James Beard Foundation Awards as a semi-finalist for best chef in the southeast. On today's show you'll find out how this former marketer made the jump into the pop-up restaurant world.In 2016, after hosting a number of traditional Sri Lankan brunches at her place, Sam decided it was time to move these gatherings from her dining room. Nicht jedem fällt es leicht, im Alter sein Lebenswerk aufzugeben. Schon gar nicht, wenn es ein mit Leidenschaft geführtes Restaurant ist. So erging es auch den Eltern von Hai Nguyen in ihrem Restaurant in Nürnberg. Durch den emotionalen Stress wurde Hais Mutter sogar krank und musste ihre Lebensqualität einschränken, also entschloss sich Hai, die eigentlich Yoga-Lehrerin ist, mit einem Pop-Up Restaurant ihrer Mom wieder etwas Lebensfreude zurückzugeben und siehe da, es ging ihr wieder besser. Das Pop-Up gibt es heute immer noch und irgendwo zwischen Phở, Yogakursen und veganer Fischsoße ist hier ein kleines ganz besonderes vietnamesisches Restaurant entstanden, was man wohl nicht oft auf der Welt findet. Die Geschichte von der kulinarischen Wüste Berlin, die sich binnen kurze Zeit zu einem internationalen Gourmet-Dorado entwickelt habe, ist von Gastrokritikern tausendfach erzählt worden – interessanterweise auch schon vor einhundert Jahren. Der Autor Franz Carl Mack bemüht in seiner Bestandsaufnahme der „Berliner Kochkünste“ in der Deutschen Allgemeinen Zeitung vom 19. August 1922 das wohlvertraute Narrativ. Verwechslungsgefahr mit aktuellen Restaurantführern besteht dennoch nicht, denn zu offensichtlich unterscheidet sich seine Speiseliste von den heutigen Trends der Großstadtküche. Manches, was hier an Gerichten genannt wird, riecht arg nach alter biederer Hausmannskost; vieles klingt in unseren Ohren aber auch so überraschend fremd und abgefahren, dass der Artikel nachgerade nach Pop-Up-Restaurants im Retrostil der 20er Jahre als neuem heißen Scheiß am Berliner Gastrohimmel schreien. Folge von „Verkocht und Abgedreht“ geht es aber auch um schöne Dinge: Recky und Daniel starten einen Bewerbungsaufruf, um Karl Lauterbachs Einsamkeit endlich ein Ende zu setzen, in Form einer Frau. Zudem erfreuen sich die beiden an dem Jugendwort des Jahres 2021 und fragen sich, wieso ein Teil der Jugend fließend Hochdeutsch spricht, der andere aber jedes zweite Wort durch Anglizismen ersetzt. Der Fernsehmann schießt (mit Worten, nicht scharf wie Alec Baldwin!) fünf Speed-Fragen auf den Koch ab und sieht im GegenZUG (verbal, nicht aus dem Halfter gezogen!) drei „Frag den Fernsehmann“-Fragen ins Auge. Originally from Kobe, Japan, Masako’s family has owned and operated a bar and restaurant there for 90 years, and food has always been a part of her life, though she never worked as a cook. Growing up, she was interested in dancing and cheerleading, and in 2013 she moved to Washington D.C. to be a NFL cheerleader for the Washington Football Team (formerly, the Redskins), and was even a captain in her fifth year.She has always enjoyed cooking at home, and would regularly cook for her friends. Not able to find the food she grew up eating, in 2019 she decided to start Otabe, a pop-up in Washington D.C. that focuses on Japanese comfort food, which she hopes to turn into a more permanent endeavor. My Celebrity Life-Two popular Atlanta restaurants are joining forces after a nasty fire burned one of them down. R&B singer and former “Love and Hip Hop Atlanta” star K. Michelle has been running Puff & Petals on Edgewood for three years while veteran restaurateur Shema Fulton has run Pearl Restaurant and Lounge for 14 years. But last September, Pearl went up in flames after a fire spread into her location from a neighboring tapas restaurant. “Pearl was such a staple in the community,” K. Michelle said at a recent interview at the AJC. “It was like losing a child,” Fulton added. “I walked in and you didn’t even know where you were. Everything was just scorched.”Fulton, who consulted with K. Michelle on Puff & Petals, said she decided it was better to relocate than rebuild. 12/17/2019 -- Atlanta -- "Love and Hip Hop" alum K. And I thought, gee, maybe there is something here, something more valuable than just being an employee. - Arthur Rock, venture capitalistOn a hot summer morning in San Francisco in 1957, eight of the most talented young scientists in America convened for a clandestine meeting at the Clift Hotel. They gathered over breakfast in the famed Redwood Room, a bastion of the city's old guard. A nervous energy consumed the table, fueled by uncertainty, possibility, and fresh-brewed coffee. The eight worked on developing silicon semiconductors—a groundbreaking new technology—at Shockley Semiconductor outside of Palo Alto. The company's founder, Nobel Prize–winning scientist William Shockley, was a brilliant but difficult manager: erratic, mistrustful, and impatient. He had even gone so far as to hire detectives to give his employees lie-detector tests, and these employees, experts in a field in which there were few, were frustrated and angry.After considering numerous options, the men decided they must defect. They planned to establish their own company under the leadership of MIT graduate Robert Noyce, a charming, personable twenty-nine-year-old electrical engineer from smalltown Iowa. Er surft seit den Anfängen ganz vorne mit auf der Street Food Welle und kann sich heute als der größte Veranstalter von Street Food Festivals bezeichnen. Zusätzlich betreibt er in Köln das erste stationäre Pop-Up-Restaurant, in dem alle zwei Wochen ein komplett neues Konzept angeboten wird. Till Riekenbrauk ist einer der ausprobiert statt Ideen tot zu planen, einer der etwas wagt und schon sehr viel Gewonnen hat: "Wenn es sonst keiner macht, dann mache ich es eben!" Mit der Veranstaltung von Street Food Festivals bietet er Köchen und Hobby-Köchen die Möglichkeit, ihre Produkte auch ohne Restaurant und großes finanzielles Risiko verkaufen zu können, z.B. für Anbieter mit nur einem Produkt oder einem Nischenprodukt. Außerdem können so neue Produkte getestet werden, bevor ein Restaurant eröffnet wird. Aus der Nachfrage vieler Food Truck besitzer, ein eigenes Restaurant zu eröffnen und der Einseitigkeit des Speisenangebots in Till´s Nachbarschaft hat es sich ergeben, dass er 2015 das Laden Ein eröffnet hat. Dort wechselt nach 2 Wochen das Komplette Restaurant-Team: neues Konzept, neue Köche, neue Speisen.  So können Gastro-Neulinge, die ihr eigenes Restaurant eröffnen wollen erstmal ihr Konzept auf die Probe stellen. Aber auch Besitzer eines etablierten Restaurants können so Neues ausprobieren und testen, wie es auf dem Markt ankommt. Wichtig ist für Till, dass die Speisen nach guter Handwerkskunst produziert und keine Convenience-Produkte verwendet werden. Für die Verfeinerung und Umsetzung des Konzepts steht ein Koch zur Verfügung, der alle Gastgeber auf dem Weg zur Eröffnung begleitet. Mitbringen sollte man als Gastgeber auf jeden Fall Leidenschaft, eine gute Idee für ein Konzept und zumindest schon mal als Aushilfe in der Gastro gearbeitet haben. With his new book being released next week, Ludo Bites: Recipes and Stories from the Pop-Up Restaurants of Ludo Lefebvre, we were able to visit with him, and eat some favorite dishes from his many pop-ups at a recent event at Quiksilver in Fashion Island, Newport Beach. We also were given a chance to screen a new short film that Ludo appeared in for Quiksilver titled "Chef and The Sea" which was filmed several months ago when Ludo and Krissy hosted their pop-up in the Big Island of Hawaii.
