Neues Jahr, neues Glück - wir starten ins Jahr 2025 mit Schwung, Sauerbier und Wintertomaten. Zu Gast ist Naturweinlegende, Ex-Surferboy und Weinrevoluzzer Claus Preisinger. Das, was bei Hipstern und Fine-Wine-Begeisterten in den letzten Jahren passiert ist, nämlich der Umschwung von fetten, überextrahierten Weinen hin zu säurebetonten Frischmachern, hat der Burgenländer in seinem Betrieb als einer der ersten komplett durchgespielt. Dabei produziert er seine verrückten und innovativen Weine in allem, was ihm in die Finger kommt: Amphoren, Betoneier, Holzfässer mit dünnen Dauben, Holzfässer mit dicken Dauben, dies, das, jenes. In der Folge gibts entsprechend wildes Zeug zu trinken: Furmint, der vorher mal Merlot war, Pinot, der früher mal fett war, Blaufränkisch, der high macht. Also so richtig high, wie Curly. Ihr versteht. Aber nicht weitersagen, könnte irgendwie illegal sein. Heidi Schröck, sympathische Winzerin vom Neusiedlersee, ist in der Bronx von Rust aufgewachsen. Sagt sie. Damit meint sie nicht den Autoscooter im Europapark, sondern natürlich ist die Rede von der Freistadt Rust am Neusiedlersee in Österreich. Hier kreischen zwar keine Teenies auf der Achterbahn, dafür aber Störche in ihren Nestern. Heidi ist Spezialistin für eine Rebsorte, die aktuell in aller Munde ist (also da, wo Rebsorten eh sein sollten): Furmint. Was Furmint kann und was nicht, warum sie ihn in süß und trocken macht, all das und noch viel mehr - Heidi erklärt es sehr anschaulich. Curly erklärt auch was, nämlich warum er Fan von Pizza Hawaii ist (aber nicht so wie ihr denkt). Apropos Ananas-Schweinereien, wer nach dieser Folge immer noch keinen Bock auf Süßwein hat, dem ist nicht zu helfen. Nicht mal mit einem Ruster Ausbruch. Was das ist? Hört selber.

In recent years, there has been a lot of buzz around “volcanic wines.” The term makes it sound as if these are wines that are spawned from a volcano, but in reality these are wines that many people believe have special qualities because they grow on volcanic soils. In this show, I define the types of volcanoes before discussing the ecosystems they form. I then talk about the specific regions known to have volcanic wines, but I also point out that these areas have other factors that may create similarities in the wine – proximity to oceans, old vines (unaffected by phylloxera), and high elevations and cooling breezes. Jay Blades, MBE is a furniture restoration expert and TV presenter from Hackney, East London. Jay struggled with dyslexia growing up and found solace using his hands. He got by in school, but never learned to read and has since shared his journey to help break the stigma for others in his position. Jay is the much-loved presenter of The Repair Shop on BBC One, which won a BAFTA for Best Daytime Programme in 2023. He released a memoir in 2022, Making It: How Love, Kindness and Community Helped Me Repair My Life. His new show, David and Jay's Touring Tool Shed, is available on BBC iPlayer now. Jay is a big fish fan and arrives hungry (which he mentions once or twice!). Luckily for him, Angela has prepared a whole sea bream, with brown butter champ and charred salad onions. One of the confusing things about wine is that often we can identify a wine and the basic facts about it -- we may have even tasted it -- but because it's not obvious, we don't know the grapes behind the wine. Although I bet you've heard of Tokaji, the great sweet wine of Hungary, you may not be familiar with Furmint, the main white grape that makes the wine sing and that usually makes up 85-90% of the blend of Tokaji.   What you also may not know is that this grape is not just for sweet wines. Happy National Wine Day! Tonight we are tasting the 2018 Chateau Dereszla Dry Tokaj from Hungary. Tokaj is a blend of 85% Furmint, 11% Harshlevelu, and 4% Muscat. While Tokaj Aszu is a world-renowned sweet wine, this particular Tokaj is dry and made without the addition of the aszu paste, made from the Botrysized aszu grapes, where all of the sugar is concentrated to make Tokaj Aszu.  While you would usually find the Puttnayos levels (a measure of sweetness) on the labels of Tokaj Aszu, there are no levels on this label because this wine is bone dry, with jaw numbing acidity and a full body.  Tokaj is a medium-bodied, dry, white wine that boast hints of honey, apple, and almond on the nose, and minerals and luscious apples on the palate. Weinkenner Michael Kutej, Riesling-Liebhaber Lars Haider und Apfelsaftschorlentrinker Axel Leonhard haben sich mit Michael Gross einen Winzer eingeladen, der vor wenigen Jahren von Österreich nach Slowenien „rübergemacht“ hat und dort rund 20 Minuten von Maribor und eine Dreiviertelstunde von Graz entfernt Weine anbaut. In this episode, we explore Furmint a noble grape of Hungary, with Caroline Gilby Master of Wine. Furmint is undoubtedly one of Hungary most valuable white grape variety. Is unique, distinctive with a flavour profile quite unlike any other grape variety I have ever tasted. With Caroline Gilby MW, who has been visiting Hungary since the 90s, we discussed one of favourite variety. Gouais Blanc is the parent of Furmint, making it half-sibling to Chardonnay and Riesling and it is no surprise when one start to look at the styles that are produced today one can see the similitudes with those varieties. Until relatively recently, the traditional style of Hungarian Furmint has been sweet, more often than not blended with Hárslevelű, most notably in the blend for tokay.Furmint ripens late, is prone to botrytis, retains high acidity and builds lots of sugars – everything that one needs to produce sweet wines.But around the turn of this century, dry, varietal Furmints started appearing and gaining traction, the hot and dry 2003 vintage is the pivotal vintage for dry wines says Caroline in the podcast. Producers quickly saw the potential. Caroline explains what styles are can be found today, Furmint is a grape that not only makes a high-quality wine at all sweetness levels but can be used to make good sparkling wine too. It responds to Chardonnay-like winemaking techniques such as lees ageing, bâtonnage, malolactic conversion and ageing in barrel. We also talked about viticulture used to train Furmint and where in-country is grown successfully aside Tokaji. I commented how Furmint is one of the few grape varieties in the world that can produce such an array of style, a tasting idea is to have a journey through the styles produced by Furmint. I’ll definitely try it at some point soon. Since the dry styles of Furmint are becoming more common among producers, so is the growing interest in the grape around the world and is definitely now a good time to learn everything that you need to know about it Furmint! Zoltán Heimann of Heimann & Fiai Winery helps present the wines of Hungary.   He keeps me on task with the proper pronunciations (very hard and the reason it’s taken me so long to cover this country, honestly!), and gives us an overview of what we can expect from Hungary and its wines, before focusing in more on his beloved region of Szekszárd (sex-ARD), known mostly for its famous Kadarka red wine. The Heimanns have a long history of farming in Hungary, and Zoltán has a global view from his education at Geisenheim in the Rheingau Region of Germany (one of the best wine schools in the world). He has a lot to teach us about Hungarian wine – its history, its geography, its grapes, its wines, and its future, which he is helping drive.   A few things for clarification: When Zoltán refers to small winemakers, he refers to them as a Hobby Industry. Because of the recording, it’s a bit hard to understand. Just remember that as you listen! Please don’t make fun of me for having no clue how to pronounce anything right. I told Zoltán before I started that it was going to be rough and he was patient as anything!   These show notes are more about pronunciation and help with the regional names than anything else. If you listen to the show, you’ll need to refer to these (maybe often!).   After a conversation about history, Zoltán talks about how Hungary is in the Carpathian Mountain basin with the Danube River dividing the country and the Tisza River near Tokaj in the east. The hills (some quite high, others undulating) make a crescent from the northeast around the north to the southwest A large plain, the Hungarian Plain, is in the middle of the country and is where bulk wine, paprika, and lots of food production takes place A smaller plain, near Austria is in the northwest of the country The climate is continental, with cold winters, hot summers Image: Topographical map of Hungary We talk about the main grapes of Hungary: Whites: Furmint (FOOR-mint): The main grape in Tokaj, now winemakers are using it for dry wine. It can be like limes and oranges, smoky, even spicy, and quite acidic – the challenge is to tame the acidity through good vineyard practices and proper winemaking that doesn’t cover the essence of the grape (i.e., no oak) Hárslevelű (HARSH-levalew): The name means “linden leaf”, a plant that smells like honey, smoke, and pears. Zoltán explains that Hárslevelű is like a smoother, softer version of Furmint  Juhfark (YOU-fark): A novelty that is made mainly in Somlo (Showm-LO), in the northwestern (ish – kind of central northwestern) area of the country, we’ll see more in export markets than they will in Hungary. The volcanic soil here makes the wines smoky, ash-like, and minerally…with just a little moodiness that only a volcanic soil can express Olaszrizling (said how it’s spelled): Also known as Welshriesling, the grape has traditionally been a neutral, workhorse grape for bulk whites. Zoltán says there are more and more producers getting great flavors from this grape, so it’s one to watch. Sauvignon Blanc, Chardonnay and other international varieties are also cultivated Reds: Kékfrankos (cake-FRAHN-kosh): Blaufränkish in Austria, this is the main component in Bull’s Blood of Eger and the grape that Heimann is concentrating on as a uniquely Hungarian expression of the grape – spicy, intense and interesting Kadarka (said how it’s spelled): Zoltán explains that this is a very difficult grape to grow. Two in 10 years the harvest will go badly. The grape has big bunches and is prone to rot. It takes so much to grow that most vintners have no use for it. Heimann is one of the premier producers of Kadarka and aim to make an international reputation for this Pinot Noir-like grape We move to the major wine regions In the northeast/Upper Hungary: Tokaj, Eger Tokaji: The dry and sweet (Tokaji aszú, Tokaji eszencia) of Furmint, Hárslevelű Eger: Basalt/volcanic soil with loess can create excellent wines. The red blends are called Egri Bikavér or Bull’s Blood, the newer white blends (dreamed up in recent years as a marketing idea in the region) made of muscat and native grapes called Egri Csillag (EGG-ree chee-laug), known as “the Star of Eger” Near Lake Balaton: Somló, Badacsony  Image: Balaton, the largest lake in Europe Somló (showm-LOW): Made of the smoky white Juhfark and other native whites Badacsony: Known for fuller bodied, minerally whites with good acidity. A combination of Olaszrizling and native grapes. Volcanic soils make these wines unique Sopron Sopron (SHOW-pron): Located adjacent to Neusiedl (noy-ASEED-el) in Austria and the Burgenland region, these wines are mainly Kékfrankos (Blaufränkisch) and are similar to those of Austria Pannon: Villány, Szekszárd Villány (ville-AHN-ee): With excellent marketing, a strategic and unified vision, and excellent Cab Franc, this region has succeeded in getting its wines to market Szekszárd (sex-ARD): Kardarka, Kékfrankos, and other reds thrive here. Lilla gives reasons why the Olaszrizling has become their flagship variety, and how diverse it can become. She also gives a deep introduction into another autochthonous variety: Kéknyelű, which always calls for a romantic love story with Budai Zöld (another native grape here) in order to propagate. I went back to the Saint George Mountain to visit Róbert Gilvesy, the founder and leader of the Gilvesy Winery, in Hegymagas. As the winery itself is turning more and more towards indigenous Hungarian varieties, Róbert is eager to turn the Gilvesy label into an international ambassador of the Saint George Mountain’s unique volcanic terroir. IWSA - International Wine & Spirits Academy

Kuzeydoğu Macaristan’daki şarap bölgesinin adı Tokaji’dir. Bu bölgede hem sek şaraplar hem de tatlı şaraplar üretilmektedir. Üretilen tatlı şaraplar ağırlıklı olarak asil küften yani Botrytis cinerea’dan etkilenmiş olan tatlı şaraplardır. Bu şaraplar etiketlerinde tatlılık derecelerini belirten, 3’ten 6’ya kadar sıralayan puttonyos numaralarına göre sıralandırılırlar. 3 Puttonyos olanlar daha az tatlı, 6 Puttonyos olanlar daha çok tatlı olan şaraplardır. Tokaji şarapları meşede uzun süre olgunlaştıkları için sarı renklidir, daha koyu, altınımsı, kehribarımsı renklere sahiptirler. Dolgun gövde, yüksek şeker ve yüksek asiditeye sahip olan şaraplardır dolayısıyla inanılmaz dengeli ve kompleks şaraplardır diyebiliriz. Yoğun kuru meyve ve tatlı baharat aromaları vardır diyebiliriz. Fındık, kahve, karamel, bal, kuru kayısı, portakal reçeli ve çavdar ekmeği en sevdiği tipik kokulardır Tokaji’lerin. Everyone come quick! It's your favorite grape!  Furmint!  Welllll, maybe it's not your favorite grape. Maybe you haven't even tried this wine before, or, heard of it, or, will even listen to this podcast.  But...this podcast is quick and snappy and is a nice little snapshot into the life of a Hungarian (No, not the Hungarian who promised us he'd be BACK) but rather, the grape that makes a killer, dry white wine and a famous, Botrytised dessert wine.  Hopefully we did Hugh Johnson proud, if not...well, then, we apologize Mr. Johnson, maybe if you'd been around more when we were growing up we wouldn't have turned out like this.
