Trish chats with Pizzana chef and incredibly joyful Daniele Uditi. He grew up in culinary family : mom was a chef, his aunt was a bread maker, and his grandfather was a pastry chef. He moved to America in 2010, lived in a van in Venice Beach and not quite sure what he would do, although he knew it would involved being in the kitchen. Word spread quickly about his pizzas and his talent, and before he knew it, he was invited over to the house of actor Chris O'Donnell to cook for him and his friends. Those Sunday suppers eventually led to the introduction of his future business partners and Pizzana was born. Daniele talks about the importance of ingredients, paying respect to the food, and his love of making pizza (and carbs).

Daniele Uditi arrived in Los Angeles from his native Italy in 2010. It was only supposed to be a 6-month stay for a consulting gig, but nine years later he’s very much still here and gaining a deep, devoted following as the chef-pizzaiolo for the popular Pizzana restaurants. We catch up with Steve Sladkowski, guitarist for Toronto punk band PUP. Steve called into the show during a stop on the band’s current tour to talk about jerk chicken, collard greens, Del Taco and of course, Hawaiian red fruit punch. She continues to generate ideas and chase new opportunities -- just because that's who she is. In addition to Sprinkles, Candace recently launched her newest culinary venture, Pizzana, a critically-acclaimed pizza restaurant with a location in Brentwood and a second location that just opened in West Hollywood.Candace's entrepreneurial talents aren't just limited to what she can bake in an oven. She just launched a men's athleisure brand with her husband called Willy, and she’s also built a massive media career. She is the executive producer and judge of a new Netflix baking competition show, Sugar Rush, after being a longtime judge on Food Network's Cupcake Wars. She’s also launching a podcast with Dear Media called Live to Eat. And if that weren't enough, she and her husband make early stage investments in innovative retail and consumer brands through Cm2 Holdings. Candace's career spans brick and mortar retail, e-commerce, media and investing. Her philosophy is that if something is well-made, people will want to pay for it and indulge, and all of her ventures have proved this to be true.

Changing things up a little this week to share the first episode of Steve Dolinsky’s new podcast, Pizza City.
Steve travels to Los Angeles to talk with Daniele Uditi, the Pizzaiolo at Pizzana, in Brentwood. Uditi comes from a small, Italian village, where he first learned how to bake with his “auntie” but later, came to America and worked at various restaurants, before settling on his own style of pizza – a kind of artisan-meets-Neapolitan, with a slightly lower oven temperature than traditional Neapolitans, that results in a slightly longer baking time. A chance meeting with actor Chris O’Donnell (and a series of pizza parties at his home for friends and colleagues) led to a partnership with both the O’Donnells and the owners of Sprinkles Cupcakes. They eventually opened Pizzana in Brentwood. The late L.A. Times critic Jonathan Gold was a huge fan of the pizzas, and a glowing review led to even more success. The partners have also opened a second location on Robertson Boulevard in West Hollywood.
