In the latest episode of Hospitality Hangout, Michael Schatzberg “The Restaurant Guy” and Jimmy Frischling “The Finance Guy” chat with Jacob Jaber, Co-Founder of Philz Coffee and Consumer Investor. In 1978 Phil Jaber purchased a convenience store and in his off hours, he blended and tested coffee, looking to make the perfect cup. Philz Coffee was born and has gone from starting from one store to seventy-five. Jaber says, “I love people, I've been in business since I was nine years old. I started in a convenience store in my dad's convenience store in the Mission District in San Francisco standing on top of milk crates ringing up people at the register. I hated school because I felt like I was forced to learn stuff I wasn't interested in from people who weren't interesting. So I kind of put all of my energy into working with my dad and I learned a ton about business and people there and I fell in love with it and I've been doing that mostly ever since.”Jaber talks about how he and his dad built Philz Coffee. He said that he knew how to treat people, how to make a personal cup of coffee, and how to work the business. They worked with people that knew how to create systems, processes, and organizational structures to help them open locations. In terms of investing and advising Jaber says that he's helped hundreds of entrepreneurs strategize, find product market fit, and build a team. He says this brings him the most joy. Jaber currently has almost twenty companies in his portfolio and they are out there looking for businesses. Frischling asks Jaber what it takes to build a restaurant or venue today. Jaber says, “I think the most important thing is you got to love what you're doing, you got to love the product that you're selling, I see a lot of technology-first companies that sell food and it's very difficult to succeed because you have to love food if you're in the food business. Human beings are social animals and it's easier to build better trust by meeting in person than remotely — this is the value physical spaces may have over a remote working model. Philipp got a taste of the office environment when he started working at a Swiss private bank. When he got into consulting, he started working remotely. It became apparent to him how different office life is versus remote working: in terms of culture, habits and lifestyle. The serendipity of running into someone at the office who ends up being instrumental to your success is something that is hard to replicate in a remote space. Even though working in an office has its social advantages, some of the drawbacks of the physical space are the additional expenses in time and money that come with commuting. Despite this, going to the office versus working remotely was not something many companies thought about until the onset of COVID, which changed the work culture completely. It forced us to become more intentional about travel and taught us how to be more efficient with time. The appeal to a remote working environment grew as physical spaces, especially for startups, became an unnecessary additional expense. Furthermore, the distance became less of a factor when putting together a team, and more companies were able to hire talents from all over the world. Remote working became the ideal fix post-covid. However, as it became the norm, its challenges became more apparent. With these challenges came innovations that made the remote working experience less complicated and more profitable. The idea for SAVE was originally hatched at an autonomous vehicle conference in late 2017 and further formulated during a coffee meeting at Philz Coffee in San Mateo, CA between Matthew and Bert.Both Nuro and Zoox had and still have a unique point of view on autonomy. Both companies along with Local Motors decided not to retrofit a vehicle for autonomy and instead choose to build purpose-built vehicles from the ground up.We got a unique point of view because we made the deliberate decision to not retrofit. – Bert KaufmanWhen companies choose to build a bespoke vehicle, it creates new opportunities but also unique policy challenges such as updating the Federal Motor Vehicle Safety Standards (FMVSS).If you are rethinking the car then you are not going to be building an internal combustion engine. You are not going to be building a vehicle that is designed just for protecting that those inside. It is also going to be thinking about those outside of the vehicle. There are a lot of opportunities this creates both in the robotaxi as well in the delivery space. – Matthew LipkaAs companies such as Zoox prepare to commercialize their robotaxi services, they are working to properly set expectations.The first to know is that it is going to be a very shallow ramp into society for these fully autonomous vehicles to start driving around on public roads. – Bert KaufmanTrust is the other key component to ensuring the safe deployment of autonomous vehicles. First responders have to trust that they can safely engage with the vehicle. The public has to trust that the vehicle will get them to and from their destination safely. Once trust is developed and the public's expectations are set, robotaxis and autonomous vehicle delivery services can scale.One of the most effective ways to build trust is through education. SAVE is working to educate policymakers and the public about the benefits of bespoke electric autonomous vehicles. One of the best ways to educate the public and to build trust is through interactive autonomous vehicle demo days where individuals can experience the technology first-hand.People who have interacted with an autonomous vehicle, more than 75% of them say they trust autonomous vehicles, I would use it again. But people who haven't, the number is much lower. – Matthew LipkaAutonomy and electrification are enabling designers and engineers to completely reimagine what is possible. This is exactly what Nuro and Zoox are accomplishing through design.There are all sorts of new designs that may be necessary or possible created by autonomy. We are just at the beginning of learning that. – Matthew LipkaIn order for this to happen, policies and regulations have to be updated. Candice Madison has worked in specialty coffee for over a decade, as an accomplished barista, roaster, and trainer. She is a Q Arabica Instructor for the Coffee Quality Institute, an Authorized Specialty Coffee Association (SCA) Trainer, teaching on SCA certified campuses, as well as at the annual SCA Event, World of Coffee and Coffee Roasters Guild Retreat. A past World Coffee Events Head Judge, Candice is currently the Director of Roasting at The Crown: Royal Coffee Lab and Tasting Room. She oversees production roasting for the Tasting Room, as well as contributing to the Crown Jewel program, and hosting original and SCA roasting education. She is also a published writer on a range of topics concerning specialty coffee. Additionally, Candice was a member of several SCA committees, including the Equity Diversity and Inclusion Task Force, Candice is the Vice President of the Coffee Coalition for Racial Equity (CCRE).
