Today, I am blessed to have here with me Dr. Steven Gundry. He is a cum laude graduate of Yale University with special honors in Human Biological and Social Evolution. After graduating Alpha Omega Alpha from the Medical College of Georgia School of Medicine, Dr. Steven Gundry completed residencies in General Surgery and Thoracic Surgery at the University of Michigan and served as a Clinical Associate at the National Institutes of Health for years. There, he invented devices that reverse the cell death seen in acute heart attacks; variations of these devices subsequently became the Gundry™ Retrograde Cardioplegia Cannula. Ketone bodies are short-chain fats that are water-soluble.  Ketones have a distinct benefit in getting to the brain, which free fatty acids can't because they're too big to get through the blood-brain barrier. Ketosis should happen every night after about eight hours of not eating if you are metabolically flexible.  50% of ordinary people are not metabolically flexible.  [03:50] Uncoupling To Survive: How The Mitochondria Release Pressure  Dr. Gundry recommends reading Uncoupling To Survive: https://pubmed.ncbi.nlm.nih.gov/11053672/ When you're starving to death, mitochondria have to save themselves at all costs.  If mitochondria die, then it's all over.  Making energy is hard work; it's very damaging to mitochondria.  Mitochondria have to have ways of protecting themselves, and one of the ways they protect themselves is to release pressure.  There are five pressure release valves for the mitochondria.  We couple oxygen and protons to make ATP. If we uncouple the burning of oxygen from making ATP, that's how we release pressure.  [21:05] The Reason, Most People, Cannot Get Into Ketosis Right Away  Most people can not get into ketosis by following a high-fat diet because they lack metabolic flexibility.  Many people are insulin resistant. Their cells no longer listen to insulin, so insulin keeps rising and rising.  It can take three to four weeks to liberate fat from fat cells on a ketogenic diet because insulin levels stay high for so long.  The ketogenic diet came about to treat childhood epilepsy.   If you put kids on an MCT oil-based diet, with only about 50% of their calories coming from fat, they would get the same benefit as the full-blown ketogenic diet. [32:25] The “Mito Club” - How Your Body Is Just Like A Nightclub  The mito club has one entrance, and there is only one exit.  If everything works out okay, a proton and electron will couple and exit the mito club.  However, there are a lot more electrons than there are protons.  Electrons will also couple with oxygen; it's a bad match.  The mito club needs to be cleaned up every night after closing.  [38:40] Calorie Restriction Is A Non-Starter, and It Doesn't Work  The best way to expand lifespan and healthspan is calorie restriction.  However, calorie restriction is a non-starter, and it doesn't work.  Calorie-restricted animals are profoundly hungry.  A study found that the animals with time-restricted eating lived 11% longer than the animals who ate the same amount of food but ate throughout the day.  This concept has been proven in humans as well. [47:05] The Major Health Benefit of Taking MCT Oil or Powder  30% of sheep and goat dairy is MCT.  MCTs are an excellent fat that goes directly to our liver, where they are automatically converted into ketones.  You can have insulin resistance, take MCTs, and generate ketones.  A tablespoon of MCT oil will have you generating adequate amounts of ketones to begin uncoupling mitochondria.  MCTs are easy to take; you can mix them in salad dressing.  Many females have issues with MCT oils and their stomachs, so start slow. Powered MCTs work well for women.  [53:35] You Have Melatonin All Wrong: It May Have Nothing To Do With Sleep  Pistachios actually have the highest melatonin content of any food. The Mediterranean diet gets melatonin from olive oil, red wine, and mushrooms.  Melatonin isn't there to put you to sleep. They had five doctors and one lawyer. Plus, they had a vegan doctor to argue against Dr. Paul. There was a lot of yelling, and Dr. Paul was barely given a chance to say what he needed to say. Paul invited them to his podcast to have an honest and genuine debate. None of them showed up. If you want to watch it on YouTube, check it out here: https://www.youtube.com/watch?v=uaPrrg4tytE [09:50] Why Dr. Paul Started To Eat More Carbohydrates Ketosis at the beginning for Dr. Paul without carbohydrates in his diet seemed fine. Eventually, Dr. Paul was getting a lot of muscle cramps, and he was getting heart palpitations at night. So, Dr. Paul started to reintroduce carbohydrates into his diet. First, he started to introduce honey into his lifestyle. After incorporating honey, Dr. Paul started to feel better. Blood sugar will spike when you include carbohydrates in your diet, especially honey. However, Dr. Paul's blood glucose tracing was very low. [22:50] Why Dr. Paul Doesn't Like The Term Insulin Resistance Paul doesn't like the term insulin resistance. He thinks metabolic dysfunction is a more precise term. He doesn't like to say insulin resistance because two types of insulin resistance are often confused and conflated. The first type of insulin resistance is physiologic insulin resistance. Humans have evolved a state known as ketosis, which goes hand in hand with physiologic insulin resistance. Then, there is pathological insulin resistance. Many people who exclude carbohydrates will see improvements in their physiology. [34:50] The Importance of Decreasing The Amount of Linoleic Acid In Your Diet Many people should decrease the amount of linoleic acid in their diet. We have to understand how much linoleic acid is in the foods we eat as humans. Soybean oil has 45 to 50% linoleic acid. Butter and tallow, which has rendered animal fat from cows, will have much lower levels of linoleic acid, around 2%. The composition of our cell membranes takes a long time to change. So, breaking down the linoleic acid will take a great deal of time. A low carbohydrate approach will help lower the linoleic acid in your diet. [40:00] What Happens When We Consume Too Much Linoleic Acid When we eat more linoleic acid, we can find more oxidized LDL. The oxidation and the instability of linoleic acid is one of the problems. There could be some potentially hormonal roles for linoleic acid that are negative as well. The underlying thing to consider here is an evolutionarily appropriate diet for humans. We consume much more linoleic acid than we ever have. [47:25] Should You Be Taking Fish Oil on The Ketogenic Diet? Fish oil spoils extremely fast. These oils are so fragile, and we're putting them in capsules, and we're presuming that they're not oxidized. The only place Dr. Paul is getting omega-3 is essentially from ruminant animal fat. Paul is not convinced that omega-3s are that beneficial or that we should be pumping ourselves full of them. There have been millions and millions of humans that have no access to coastal foods; they did just fine from eating land animals. [64:35] You Want To Push Your Linoleic Acid Consumption As Low As Possible Paul says to keep your linoleic acid consumption as low as possible. The human body can't make omega-6, but there's omega-6 in everything. The linoleic acid composition of a mother's breast milk changes based on their dietary consumption. If you look at the hunter-gatherers, their linoleic acid in the breast milk is much lower because they're eating so little linoleic acid in their diet. If you think canonically about what a vegetable is, it's the part of a plant that it doesn't want you to eat. Vegetables don't have a role in human health unless you want to go to great lengths to detoxify them. If you want to do vegetables, ferment the heck out of them and maybe do something like sauerkraut. Even some fruit can be problematic for humans. [88:10] Is There Really A Connection Between Eating Meat and Colon Cancer? We've been cooking meat for more than a million years. Calcium is an essential part of every human diet, whether you're getting it from bones or you're getting it from good sources of dairy. When you have more calcium in the diet, you tend to see lower rates of colon cancer. Overall, we should go back to the idea of what's evolutionarily consistent, and we try to understand that as best as possible to inform our behaviors. AND MUCH MORE! Today, I am blessed to have here with me Dr. Steven Gundry. He is a cum laude graduate of Yale University with special honors in Human Biological and Social Evolution. After graduating Alpha Omega Alpha from the Medical College of Georgia School of Medicine, Dr. Steven Gundry completed residencies in General Surgery and Thoracic Surgery at the University of Michigan and served as a Clinical Associate at the National Institutes of Health for years. There, he invented devices that reverse the cell death seen in acute heart attacks; variations of these devices subsequently became the Gundry™ Retrograde Cardioplegia Cannula. Ketone bodies are short-chain fats that are water-soluble.  Ketones have a distinct benefit in getting to the brain, which free fatty acids can't because they're too big to get through the blood-brain barrier. Ketosis should happen every night after about eight hours of not eating if you are metabolically flexible.  50% of ordinary people are not metabolically flexible.  [03:50] Uncoupling To Survive: How The Mitochondria Release Pressure  Dr. Gundry recommends reading Uncoupling To Survive: https://pubmed.ncbi.nlm.nih.gov/11053672/ When you're starving to death, mitochondria have to save themselves at all costs.  If mitochondria die, then it's all over.  Making energy is hard work; it's very damaging to mitochondria.  Mitochondria have to have ways of protecting themselves, and one of the ways they protect themselves is to release pressure.  There are five pressure release valves for the mitochondria.  We couple oxygen and protons to make ATP. If we uncouple the burning of oxygen from making ATP, that's how we release pressure.  [21:05] The Reason, Most People, Cannot Get Into Ketosis Right Away  Most people can not get into ketosis by following a high-fat diet because they lack metabolic flexibility.  Many people are insulin resistant. Their cells no longer listen to insulin, so insulin keeps rising and rising.  It can take three to four weeks to liberate fat from fat cells on a ketogenic diet because insulin levels stay high for so long.  The ketogenic diet came about to treat childhood epilepsy.   If you put kids on an MCT oil-based diet, with only about 50% of their calories coming from fat, they would get the same benefit as the full-blown ketogenic diet. [32:25] The “Mito Club” - How Your Body Is Just Like A Nightclub  The mito club has one entrance, and there is only one exit.  If everything works out okay, a proton and electron will couple and exit the mito club.  However, there are a lot more electrons than there are protons.  Electrons will also couple with oxygen; it's a bad match.  The mito club needs to be cleaned up every night after closing.  [38:40] Calorie Restriction Is A Non-Starter, and It Doesn't Work  The best way to expand lifespan and healthspan is calorie restriction.  However, calorie restriction is a non-starter, and it doesn't work.  Calorie-restricted animals are profoundly hungry.  A study found that the animals with time-restricted eating lived 11% longer than the animals who ate the same amount of food but ate throughout the day.  This concept has been proven in humans as well. [47:05] The Major Health Benefit of Taking MCT Oil or Powder  30% of sheep and goat dairy is MCT.  MCTs are an excellent fat that goes directly to our liver, where they are automatically converted into ketones.  You can have insulin resistance, take MCTs, and generate ketones.  A tablespoon of MCT oil will have you generating adequate amounts of ketones to begin uncoupling mitochondria.  MCTs are easy to take; you can mix them in salad dressing.  Many females have issues with MCT oils and their stomachs, so start slow. Powered MCTs work well for women.  [53:35] You Have Melatonin All Wrong: It May Have Nothing To Do With Sleep  Pistachios actually have the highest melatonin content of any food. The Mediterranean diet gets melatonin from olive oil, red wine, and mushrooms.  Melatonin isn't there to put you to sleep. Dr. Steven Gundry is an American doctor and author. He is a former cardiac surgeon and currently runs his own clinic, investigating the impact of diet on health. Dr. Bart and Dr. Gundry discuss the impact that lectins have on our body, how to overcome the challenges they present, and what we should do to remain healthy amidst COVID-19. Lastly, they share their recommendations for crafting our diet and leveling up our journey to becoming superhuman.   - Dr. Gundry's Story   Dr. Grundy began in the medical world as one of the most impactful heart surgeons in the United States. It was not until years of practice that he realized the value that supplements could hold. Dr. Gundry witnessed the transformation of his patients through the use of supplements and a clean diet. Once considered hopeless, he saw inoperable patients rapidly improve through these techniques! After one year, he realized that he should teach people how to eat instead of operating when their conditions deteriorated. This led him to resign from surgery and open up his health and wellness practice.   - What is The Plant Paradox?   Plants use biological defense systems known as lectins. They are used to combat insects eating them and cause insects blood to clot, leaving them paralyzed. These chemicals are in many of the plants we are eating!   Through countless studies, lectin has been proven to make sticky blood cells and cause leaky gut!   Several disruptors have allowed lectins to wreak havoc on our bodies! They are things such as: Antibiotics Antiacids Asprins which create holes in the gut walls   - What Should We Be Eating?   Most anti-inflammatory medicines and foods are similar to a bandaid. Instead of working to fix the symptoms that inflammation is causing, we should aim to combat the cause of inflammation itself! It is more important to consider what you should stop eating than to consider what you should begin eating!   Even if your food is organic, that does not mean that the animals are being fed a proper diet. This is why we need to make sure that the meat we are consuming is pastured.   If the salmon you are consuming did not eat what nature intended, you would not be consuming vital nutrients!   - How You Can Eat Lectins and Remain Healthy?   Lectins are almost always found in peels and the seeds!    You can detoxify your food by making sure that you are not consuming peels or seeds of your favorite fruits and vegetables. Pressure cooking is another excellent alternative. While beans contain lectins, the pressure cooking process defuses their effect on us.   Getting general grains out of your life is an excellent solution to avoiding lectins.   - The Importance of Diet   Instead of trying to beat the system, it is crucial to develop an awareness of how food is impacting us and committing to a sustainable diet.   Leaky gut is directly connected to anxiety and depression. This is another reason considering diet is so important.   For the last three years, the lifespan of those in the United States has decreased. Even those who are living longer are not living healthier. We have been simply living sicker.   - How Does COVID Impact Us?   COVID is a great opportunity to begin to level-up our health. Often those who have passed away from COVID have not died just because of the virus. The virus has compounded with other health conditions leading to their passing. This is why leveling up our health NOW is so important!   When your immune system is busy dealing with a leaky gut, it cannot correctly respond to diseases to viruses.    Vitamin D drastically impacts the impact and longevity of COVID. We should be doubling our intake! We should also stop consuming sugar or things that turn into sugar, as they negatively impact our white blood cells!   - How Important is Fasting?   Fasting has been seen to cure rheumatoid arthritis and provide many other benefits!   However, we should be careful fasting for longer than three days.
