The landscape of specialty coffee has been influenced by many people and companies over the last few decades. The foundations of the standards and methods we use now, at one time, were merely ideas waiting for someone to put them into action. In the class of companies operators that have championed that exploration one of the most influential was Intelligentsia Coffee under the leadership of founder Doug Zell. Doug Zell is the founder of Intelligentsia Coffee and the Meteor Cafe. In 1995 he and Emily Mange founded what was just a small roastery and cafe in Chicago. Through a passion for design, coffee, and innovative hospitality Intelligentsia became an iconic brand with retail locations and roasting operations across the country and an influence in coffee that has inspired countless professionals globally. Intelligentsia was an early innovator of Direct Trade, and has boasted progressive design and service concepts that have challenged the status quo of training and hospitality in the industry. Included in their staff of some of the best green buyers, baristas, and managers, including a WBC Champion. Throughout his coffee career, the main focus has been on craftsmanship, education, and fostering relationships across the supply chain for the betterment of the coffee industry as a whole. Steve spent two terms on the Roasters Guild Executive Council where he had served as the Vice Chair to the Education Committee and Vice Chair to the Events Committee, focusing on creating content for the RG Origin Trips. Steve is currently the C.O.O. of Linea Caffe, a micro-roastery based in San Francisco, CA. This week's episode is kind of an angry one. We start out with some good news, as the ATU in DC have won their strike, and workers at Intelligentsia Coffee in Chicago have won their union vote. Trader Joe's workers in Minneapolis won their union election in a landslide, potentially setting up a new nationwide union push. We also follow up with the workers at Heine Brothers coffee, where union busting efforts by management have escalated. We discuss the many (600,000+) crimes of Chipotle, which recently settled a massive lawsuit from NYC with a minor fine. Working conditions at Amazon continue to maim and kill workers, we discuss more deaths in New Jersey, unsafe temps in Memphis, and backbreaking labor in Albany. A new report was recently issued showing that unions have far more cash, and far fewer organizers, than business unionist leadership would like us to believe. Also this week, “detainees” have been on strike for months at two of the US migrant concentration camps, refusing to work for slave wages of $1/day in unsafe conditions. Bourbon County Brand Special #4 is a double oatmeal Stout by style. Bourbon County Special #4 Stout is an oatmeal stout variant of our original Bourbon County Stout recipe, also aged in bourbon barrels, that uses crystal oats to add a nutty character and a smooth mouthfeel. After barrel aging, we added Intelligentsia Coffee, both their cold coffee and single origin coffee beans from Ethiopia, called “Metad Buku,” to bring out a pleasant fruity coffee character. Lastly bourbon barrel-aged maple syrup from Bissell Maple Farm in Ohio is added which provides complexity to the nutty oats and coffee to round out the flavors, ultimately reminiscent of your breakfast ‘special’ at the local diner. This craft beer is 13.3% ABV. In this craft beer review, we will take a look at the color, smell, and taste.
Episode 176 - Paul Leisen, PhD. Dan Sterenchuk and Tommy Estlund are honored to have as our guest, Paul Leisen, PhD. Paul Leisen holds a PhD in social-political philosophy (Loyola University Chicago). He has a background in theatre performance and set design (B.S., Northwestern University). Leisen flips the development story in favor of people. Strategic design thinking answers the felt conditions of fragmentation; project success closely follows the success of its makers. Person to person connection in a shared endeavor makes it happen. Leisen worked as Director of Development for Intelligentsia Coffee during its most exciting growth phase, opening shops in Venice Beach, Pasadena; relaunching multiple stores in Chicago, notably Millennium Park, and breaking ground for a coffee roastery in San Francisco. Intelligentsia was subsequently acquired by Peet's Coffee/JAB Holdings. (Andrew Barnett now owns the SF Linea Cafe Roastery on Potrero Hill!) In 2011 Leisen formed leisendesign. He led a small group of investors and managers in reinventing two-store Dollop Coffee, resulting in 17 new locations, strategic acquisitions, and a roastery. Dollop won a buy out/capitalization by Docasa, the British powerhouse responsible for London's Department of Coffee and Social Affairs. Leisen shepherded this rapid development, executing site selection, lease negotiation, design, architecture, finishes and successful shop openings. Pairing with Datascope Analytics (acquired by IDEO in 2017) Leisen reclaimed a 17th floor office suite overlooking Chicago's Millennium Park. He invented a multi colored and delightfully illuminated creative launch pad for a leading edge consultant in today's big data world. Leisen has designed theatre sets for the Curious Theatre Branch, Theatre Oobleck, and the Rhinoceros Theatre Festival. He sustains a small performance space adjacent his design studio on the South Side of Chicago. Leisen writes on Hannah Arendt and Bertolt Brecht. He has lectured on Philosophy at Loyola University. Tim Williams is the founder of Bureaux Collective — Australia's first shared coffee roasting workspace. Over a 20-year career, Tim has developed and led renowned specialty coffee brands like Square Mile Coffee Roasters (London) and Intelligentsia Coffee and Tea (Los Angeles) across three continents, focusing on building quality-driven coffee sourcing, roasting, and retailing operations. Marisa collaborated with Quetzal and also started her own group, the “Know It Alls’. Their album “Blueberry Moon” was released in 2014. Blue Bottle Coffee CEO Bryan Meehan is well aware of the increasingly competitive landscape for coffee. Yet while some companies are racing to expand and innovate, Blue Bottle, one of the most admired coffee roasters and retailers in the world, is taking a patient and restrained approach. “Our way is not the right way if we want to be the most commercially successful company in the country. Meehan said in an interview included in this episode. “There are companies ahead of us that are doing more innovation. But I think our way is the right way if we think about the long-term value of the brand and what taste we deliver to our customers.” That perspective is embraced by Blue Bottle’s majority owner, Nestlé, which in September 2017 paid approximately $500 million for a 68 percent stake in the company. Meehan remarked that Nestlé views Blue Bottle as “doing something very unique and should not be touched.” “Throughout the whole culture of Nestlé, there’s support to just (let) Blue Bottle be,” he said. As part of our conversation, we spoke with Meehan about how Blue Bottle’s new line of whole bean coffee in pressure-sealed cans fits into its purposeful innovation strategy. He also discussed the evolution of Blue Bottle’s cafe and beverage business and the company’s efforts to enhance consumers’ experience with coffee and his perspective on the future of packaged coffee drinks and the industry as a whole. It would seem that Andrew Zimmern, the host and co-creator of the popular television series “Bizarre Foods,” is willing to try anything at least once. Over the course of the show’s 12 seasons, Zimmern has chowed down on stomach-churning foods like raw pig testicles, a frog's beating heart and cobra penis. Yet for someone with such an adventurous palate, Zimmern is particular about trendy food brands. This week features the last speaker from our last collaboration with BGE this year at CoLab: Antwerp—the one and only Stephen Morrissey! Kicking off with a somewhat provocative title, “I’m a World Barista Champion and I don’t want to pay for your coffee”, Stephen’s talk is an engaging look at how our position within the industry impacts our perception of “good value” when it comes to coffee. Drawing on personal experience, Stephen’s talk is an incredibly honest—and humorous—reminder that we could all benefit to walk at least a mile in a consumer’s shoes before we try to sell them a transcendental coffee experience. We realise we’ve been bandying about the term “must watch” a bit recently—and we can only attribute this to the incredible speakers we’ve been lucky enough to bring on board—but we’re pretty sure you’ll not only benefit from but also enjoy having your eyes re-opened to what it’s like on the other side of the till. -- Stephen Morrissey’s coffee career began in Rio Coffee Co. on Dublin’s Exchequer Street. He spent a few years training baristas and roasting at Bewley’s on Grafton St, while at the same time completing a degree in Music Composition at DIT. In 2008, Stephen moved to London to help open Square Mile Coffee Roasters and that year became the first Irish person to win the World Barista Championship in Copenhagen. This led to traveling the world visiting coffee farms, providing education on the merits of specialty coffee, and ultimately a new home in Chicago where Stephen began work at the renowned Intelligentsia Coffee. Over six years, his many duties involved overseeing the education department, store design, brand development, design, product development, events, marketing, and communications—skills that serve him well as Senior Creative Advisor for the Specialty Coffee Association of America. Stephen has judged in national barista competitions spanning four continents and today serves on the Advisory Board for World Coffee Events, the governing body that produces events and competitions promoting specialty coffee. He is the inaugural chair of the Competitions Development Committee, a group charged with evolving the World Barista Championship format. Stephen was the co-founder of Coffee Common, a series of consumer-focussed educational events that originated at the TED conference in California. He lives in Chicago with his wife Jen, his son Gene, and their black lab Regis.

We caught up at Intelligentsia Coffee, which in case you don’t frequent Silverlake or are not a certified LA hipster, turns out to be ground zero for both. With Sean’s geiger counter flashing insouciantly on the table between us, we chatted about citizen science, crowdsourcing invention, neo-minimalism, hacker spaces and the emergence of a maker ecosystem in LA.
