With that in mind, we brought together three leading names from across the brewing spectrum to find out… In this panel discussion, which took place at our Brewers Congress in London, top of the agenda was biotechnology past, present, future and how to harness it. In this episode we hear from Margaux Huismann, Stephanie Brindley and Todd Isbell, who share their brewing expertise and observations of the changes taking place in this fast-moving industry. Panel host Margaux Huismann works for Molson Coors as a Research and Development manager She got her start in the industry by doing a Masters in Brewing & Distilling and completing her PhD on Understanding the Physical-Chemical stability of Dry-Hopped Beer. Stephanie Brindley is a brewing scientist with more than 10 years of experience in the industry. As a technical representative at Murphy and Son, she is passionate about the science, creativity, and social aspects of beer. And completing the panel is Todd Isbell. A graduate of the Master Brewers program at UC Davis in California, Todd has been a professional brewer for more than 20 years. I was introduced to Nile via one of his beers sent by a friend. The beer was so close to the line between wines and beers that I was intrigued, so I looked up the brewery. I was able to get some time with Nile to speak about Mad Fritz Brewing and the philosophy of “Origin Beer.” Mad Fritz and their beers, according to Nile, is a reflection of the beer's ingredients, not the recipe. In addition to making the beer, Mad Fritz malts their own barley and sources water from different wells and springs, often close to the brewery. Nile feels that the beer that emerges from this process is a reflection of the land it was grown on and the people who had a hand in making it. Fogbelt Brewing co-founders Paul Hawley and Remy Martin are our guests on Brew Ha Ha with Harry Duke and Herlinda Heras. Remy starts with the history of Fogbelt. They both grew up in Healdsburg and their fathers were winemakers. They worked a southern hemisphere harvest where they started home brewing on the side. He took the Master Brewer degree at UC Davis while Paul went to work at his family's winery. 10 years later they opened in 2014. Their taproom on Cleveland Avenue in Healdsburg is not in a part of town with a lot of foot traffic, so people who come there have made the trip to get good beer, they don't wander in off the street. They have really grown in the kitchen with a new chef and new recipes. Having begun thinking that they should make lighter lagers but they have to make what is popular. They didn't want to just make IPAs like everyone else. So they try to keep a wide variety of styles. Their first famous beer was a red ale that was hoppy and higher in alcohol. It's called Hyperion Red Ale. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Visit their website for up-to-date hours, menus, beers and more info. Fogbelt was one of the first breweries to brew with locally grown and locally sourced hops and fresh-hopped beer. They taste a beer called Sapling, what they call a crushable ale, a single malt and single hop. It's meant to be easy to drink, light and fresh. Most of their beers are named after famous redwood trees. They also taste a golden stout aged in bourbon barrels with coffee added, called Bamboozle.

"It's no secret I love a well made lager. One of the great benefits of this current brewing age is the number of small producers that are creating high quality pilsners and lagers. Goldfinger Brewing, located in a western Chicago suburb is one of them. Thomas Beckmann, the co-founder and brewer is my guest this week. He has all the credentials one would want from a proper lager brewer. He has his Master Brewer's diploma through the World Brewing Academy in Chicago and Munich, and built Goldfinger to the specs he wanted, including a decoction brewhouse, aeration, horizontal lager tanks and natural carbonation. There is also some family history involved here as well. Markus Goldfinger, a brewer – and equipment manufacturer - who lived in the 19th century in Poland and sold across Europe is Tom's ancestor. That's what you get when you visit the recent winners of "Best New PA Brewery in PA - 2021" - Rick, Eric and Jay Von Czoernig - the brothers and owners of Von C Brewing in Norristown PA. If you build it, they will come. We take a walk down memory lane and travel back to the 1800's when Christian Schmidt founded Schmidt's Brewery in Philadelphia. Their father, uncles, and grandfather, and so on, were all Master Brewers and they've resurrected some of the old recipes. We hear stories of folks who've brought by memorabilia and told their nostalgic memories of Schmidt's. It took a solid business plan and perserverence to push through the COVID hiccups to create a great space that you can visit today. Show notes from John Holl: "If you've been listening to this show as well as Steal This Beer over the last few weeks there's been a focus in and around the Rochester, New York area breweries. Rochester is of course well known for Genesee Beer, but over the last decade has emerged as a craft beer destination, fueled by small breweries who are paying careful attention to recipes, integrating into the local fabric through art and music, and giving chefs a chance to shine in the kitchens. Among the many bright spots of the city's beer scene is Strangebird. It opened in January 2021 inside a sprawling yet solid building that once held a food co-op and immediately impresses with its well designed taproom, barrel aging space, and impactful kitchen. Micah Krichinsky is a founder and brewer. He's a student of biochemistry and microbiology and a graduate of the Master Brewer's Program at the University of California at Davis. His career before Rochester had him at Capitol City Brewing in Washington, D.C. and then later at at Dogfish Head in Delaware, where he spent five years. Eric Salazar is the brewery's Director of Wood Aged Beers. His career started back in the 1990s at New Belgium Brewing Co. where, as you'll hear, he learned to work with barrels and to trust and respect microbes. Both of the brewers found their way to Rochester by way of their significant others, and are not only putting down family roots in the city but also long-term plans for the brewery and fostering the local beer scene. Kate really enjoyed her too. Hannah came on the show to talk about the importance of eating bacteria rich foods. She's a huge fan of making kefir, sauerkraut but she's most passionate about brewing and teaching people how to ferment kombucha. She shared with Kate and I how she got started making this wonderful drink. She now runs an entire business making videos, selling products like continuous brew kits, scobys (symbiotic culture of bacteria and yeast), teas and warming strips and so much more. She also works with people one on one and she also runs a thriving community on her website to give support on making this amazing beverage. She gives some wonderful tips on how to make kombucha fizzy with lots of carbonation and bubbles. What fruits tends to produce the most amount of fizz. She also talks about why bacteria is so important. In my opinion, one of the reasons why people often come down with colds, skin rashes, flus, and even major diseases is because they don't have enough beneficial micro flora in their intestines. The seat of our immune system (some say as much as 80%!) is the bacteria in our guts. Have a wide variety of healthy microbes in our intestinal tract not only provides us with a way to fight off sickness and disease but these little critters actually digest our food for us too. What the metabolize is what gets passed through the villi on the inside of our colon walls that actually passes into our blood stream. So not having good bacteria in our bodies is going to be very harmful to us in the long term. These bacteria are absolutely critical for life to exist on this planet. The problem is that we as a culture eat foods that feed bad bacteria (think: sugar, white flour, pastas, breads etc) and the delicate balance becomes out of harmony and all kinds of health problems arise as a result. So it's critical you eat lots of fermented foods like sauerkraut, kombucha, kefir (water and milk), miso and other types of fermented vegetables. Drinking kombucha ever single day can literally change your life. It is THAT powerful of a food. So make sure to start small and slowly over time increase your dose daily. It will clean you out!
