Our guest is Daniel Bennett who is the sake sommelier at Sushi-san www.sushisanrestaurant.com and The Omakase Room at Sushi-san www.theomakaseroom.com in Chicago. Both are a part of Lettuce Entertain You Restaurants, which is an independent, family-owned restaurant group that owns, manages and licenses more than 110 restaurants nationwide with over 60 concepts ranging from fast casual to fine dining. Daniel is a certified sake sommelier and has approximately 15 years of deep experience working in Japanese food and sake. Our guest is Kumiko Hashimoto who grew up in the family of the 200-year-old sake brewery in Osaka. She now plays a key role at Dojima Sake Brewery https://fordhamabbey.co.uk/ near Cambridge in the U.K., which the family founded in 2018. Dojima Sake Brewery is the first sake brewery in the U.K. It is known not just for the quality of sake it produces but the scale of the project. The property is set in a historic, approximately 75-acre garden and pastureland. And its sake is priced far above the regular premium sake for a good reason. Our guest is John Gauntner who is one of the world's leading non-Japanese sake experts and educators. He has been writing and lecturing about sake since 1994, in various newspapers and magazines in Japan and overseas. He has published six books on sake across two languages, and hundreds of articles on the topic. Several times each year, he runs the Sake Professional Course, a week-long intensive sake study course, held both in and outside of Japan, as well as the advanced level of that course. John joined us in Episode 25 in December 2015 and discussed his intriguing path to becoming a sake expert, why sake was gaining popularity in the world, how to get to know more about sake and many other topics. Sake has become popular globally over the last decades but we tend to think that sake is something to drink only at Japanese restaurants. However, more non-Japanese restaurants are serving sake, including new American restaurants Michelin-starred Per Se, Blue Hill At Stone Barns and Eleven Madison Park in New York. It feels like only the very recent past when opportunities for more formal sake education and certifications were few and far between, and when they were available, they were often infrequent and hosted in only a handful of territories, which made learning from knowledgeable industry insiders and professionals relatively prohibitive for most of the world's growing number of sake-curious. Thankfully offerings from formalized organizations and institutions expanded, and a handful of ambitious sake pioneers helped increase both the frequency and quality of these much-needed places and spaces.This week's guest, however, not only positioned himself on the front lines of the sake education movement as a certified instructor of the WSET sake curriculum while raising the bar for service night-in and night-out as the Beverage Director of Ki Modern Japanese + Bar in Toronto, he also established the world's first core curriculum and certification focusing on the regional qualities of Japanese Sake with the Sake Scholar Course. His extensive travel throughout Japan and relentless dedication to furthering the depth of knowledge available to sake professionals led to him being anointed a Sake Samurai in 2018. Our guest is Yoshiki Yukimachi, the 6th generation brewmaster of Takeno Brewery in Kyoto. Founded in 1947, Takeno Brewery is known for its high-quality sake as well as its innovative mindset. Yoshiki's father, Yoshihei Yukimachi, initiated the transformation of the brewery's strategy and introduced unique products under the Kurabu brand, which features ancient sake rice. Also, Yoshiki has produced creative products and put Takeno Brewery's name on the map in the global market. Recently, the domestic Japanese sake market has been shrinking due to a number of reasons, including the aging population in Japan and the increase in competing products. Despite this, sake exports have been record-high in recent years, thanks to the efforts and inventive mindsets of sake producers like Takeno Brewery. Our guest is Richard Geoffroy who is the founder and maker of Shiraiwa, a sake brewery in Toyama Prefecture, Japan. Our guest is Cinzia Mesolella who is in charge of PR and communication at Kobe Shushinkan Breweries in Hyogo Prefecture. Hyogo is the home of “Nada no sake”, which means “Sake from Nada”, and is synonymous with great sake. Kobe Shushinkan Breweries was founded in 1751 and its award-winning label Fukuju has been served at Nobel prize dinners several times since 2008. Kobe Shushinkan is also known for its sustainable-minded sake production, and last year it released the world's first carbon-free sake called Fukuju Junmai EcoZero. Cinzia is from Italy and since 2019, she has been playing a precious role in Kobe Shushinkan's global communication. She is also a certified sake specialist. Abstract: Chronic stress during the pre-pubertal period has adverse effects in developing neuropsychiatric disorders such as depression and anxiety. The administration of supplements with antioxidant properties may alleviate depression and anxiety behavior. This study investigated the effects of oral supplementation of Japanese sake yeast on anxiety, depressive-like symptoms, oxidative stress, and changes in brain-derived neurotropic factor (BDNF) in adolescence rats subjected to chronic stress. In order to assess the effects of chronic stress, adolescent rats were grouped into one non-stressed control group (non-stress) and four different experimental groups. The other animals were subjected to stress and orally received normal saline (Control-stress), 15 mg/kg yeast (Stress-15), 30 mg/kg yeast (Stress-30) and 45 mg/kg yeast (Stress-45). Anxiety and depression-like behavior, BDNF levels, and oxidative stress markers were evaluated. The rats exposed to stress exhibited anxiogenic and depression-like behavior as well as lower levels of BDNF and higher levels of oxidative markers compared with non-stressed rats (P less than 0.05). However, the oral supplementation of sake yeast decreased anxiogenic and depression-like behavior and oxidative indices, and also increased BDNF levels compared to stressed rats treated with saline in a dose-dependent manner (P less than 0.05). In sum, stress caused anxiety and depression behavior, increased oxidative indices, and reduced BDNF levels while sake yeast alleviated adverse effects of stress on anxiety and depression behaviors, decreased oxidative markers, and increased BDNF levels. Our guests are Mark Isbell and Chris Isbell of Isbell Farms in Arkansas. Isbell Farms has always been forward-minded and played an important role as a strong supporter of the American sake industry. It is a multi-generational family farm with a focus on the sustainable production of quality rice. And also, Isbell is the first American farm that produced Sakamai, which means Japanese rice varieties developed specifically for sake production. There are approximately 25 sake breweries in the U.S. and it is very exciting to see that the number has been increasing. These breweries often use Calrose rice, which is table rice, because sake rice is not readily available in this country. While Calrose has proven to be a right variety to produce high-quality sake, there is a solid demand for sake rice among American brewers. His most recent publication is The Japanese Sake Bible: Everything You Need to Know About Great Sake (With Tasting Notes and Scores for Over 100 Top Brands). It's a marvelous book that takes you deep into the world of sake without being too technical or boring. Every chapter has individual stories to highlight the topic or area being discussed. As one would hope, the last section of the book is a tasting guide to over 100 kinds of sake with tasting notes and pictures of the bottles. In this episode we're diving back into the world of Japanese sake, which we explored in the very first episode of Season One.This time I've got two interviews to share with you from my time in Japan earlier this year doing a sake press tour with the Japanese Sake & Shochu Makers Association.First up is a chat with John Gauntner, who is recognised as the world's leading non-Japanese sake expert.A resident of Japan since 1988, he has been writing and lecturing about sake since 1994 and has published six books on the topic.Next up, I visited the Japanese Sake & Shochu Makers Association Information Centre in Tokyo where I sat down for a chat with the centre manager, Shuso Imada.Shuso has spent almost his entire life in the sake industry - he was born into a family that owns a sake brewery.At first he had little interest in following in his family's footsteps, so much so that he did the unthinkable and study a sommelier equivalent qualification in wine.But little by little, sake drew him back in. And as you would expect for someone of his experience, he has some really interesting insights into Japanese sake industry.And if you're heading to Tokyo, I highly recommend you visit the JSS Information Centre, it really is one of the best places you can taste a lot of sake and learn about it.I also want to recommend John Gauntner's excellent book, Sake Confidential - I bought a copy last year and it's a fantastic introductory resource for sake beginners.And finally, also for people visiting Japan, look out for Rangitoto Tokyo. If you haven't yet discovered the delights of Japanese sake, now is the time to add it to your drinking repertoire.Cast aside any preconceptions you may have of that cheap and nasty stuff served hot in Aussie-Japanese restaurants.Premium Japanese sake is every bit as rich in heritage, sophistication and complexity as fine wine, and it is a superior match for many cuisines.Australian visitation to Japan continues to increase and with that, growing numbers of us are looking to enjoy fine Japanese food and drink on our return.The increased interest in Japanese sake has driven the growth of exports to Australia, which is now the second fastest growing market for Japanese sake worldwide.Eighteen sake breweries recently participated in a sake showcase and masterclass in Sydney organised by Japanese trade authorities, attended by the local restaurant trade.Drinks Adventures attended to find out a bit more about what makes sake unique. This week on Japan Eats, Akiko is joined by sake expert Chizuko Niikawa-Helton. Ms. Niikawa, grew up on the Temple grounds of the Zen Buddhist Temple Gihozan Hosho Ji, located in the finest Rice and Sake producing prefecture of Japan, Akita. chizAfter graduating, Takushoku University and with additional studies at Esmond Japon, a fashion college. Ms. Niikawa embarked on a career in fashion as a fashion designer for over ten years. With her firm grounding in balance, and form, through a decade of fashion design Ms. Niikawa began to awaken to her deep appreciation, and love of the ancient art of Sake, and the pleasures and complexities it possesses. She began to feel that Sake had life, and form, and texture. She remembered her childhood, and her roots, she remembered the incredible rice, and Sake that her famous prefecture of Akita was known for and she began to appreciate of how closely Sake in form, as well as in balance was a living thing and that it needed to be understood and discussed in its purest, simplest way and thus launched her in her career as a Sake sommelier. Ms. Niikawa earned her prestigious Sake Sommelier Certificate at the Sake Service Institute (SSI), in Tokyo, Japan. Ms. Niikawa has competed in the New York Regional 2nd World Kikisake-shi (Sake Sommelier) Competition where she placed 3rd in a field of over 75 competitors, wining the recognition, praise and admiration of her fellow competitors, as well as the events sponsor SSI. Ms. Niikawa has the enviable position as Sake sommelier, to the nation’s most prestigious Sake restaurant located in New York City. What she loves most is about being a Sake sommelier here in the United States, is sharing the experience, the wonder, complexity, and art of Japanese Sake, and bringing Japanese Sake in its purest form here to the United States.
