The Whole View, Episode 465: Too Many Food Restrictions? But, it's very easy to forget just how overwhelming the process can be when you're just starting. This episode was inspired by a listener question: I'm very grateful to have found your book "The Paleo Approach" at my local library. I have since purchased copies of it and the cookbook for myself and family members because of the vital information in it. My question is: Having lupus and hypothyroidism causes me to steer clear of various foods and herbs, (nightshades and echinacea) and being gluten-free, dairy-free, sugar-free I am staying away from other groups of foods and dishes.  How can I reach optimal health benefits and nutrients having to avoid so many things that are supposedly "good for you"? - Sandy   Beyond Elimination Mindset Sarah thinks there's a few things worth talking about under the banner of "mindset." (12:25)  First is the mindset when we are approaching eliminations, especially when first adopting AIP or any diet protocol that involves eliminations.   It's worth mentioning that Sarah incorporates a lot of these mindset-type discussions and self-reflection exercises in her AIP Lecture Series. Registration for the next session, Sept 13, just opened up. Early bird pricing goes until the end of July! Just eliminating wheat, soy, corn, and dairy eliminates most SAD staples. The same few ingredients make up so many different foods, so it feels like more variety, but it isn't. This is what Sarah calls the "learning curve," which she likens to when you first move out of your parent's home. You have to learn how to shop and cook meals on a budget. You're doing the same there here, just with different foods. Part of the learning curve is re-learning what a healthy diet looks like.  Many foods promoted as "good for you" aren't. Sarah's journey in understanding that came first from founding the AIP, diving into gut microbiome research, and from all the foundational content she's creating for Nutrivore.  It's crazy how many foods (like whole grains and dairy) are promoted as "the basis of a healthy diet" have very little valuable nutrition. Not to mention, they're even problematic for large swaths of Americans.  Too Many Food Restrictions: Recipes and Cookbooks A great avenue to explore is finding new recipes that replicate old favorites or find new favorites entirely. Sarah recommends investing in a cookbook or two. Don't forget about e-books options, like Sarah's Autoimmune Protocol e-book. In addition, many of these bloggers have their own cookbooks and share them regularly online. Another place to start is looking at the meals you like that are already AIP or can be easily made AIP with a simple swap (teak and salad, roast chicken, and veggies). You can make simple swaps: sweet potato or green plantain for regular potato, Jovial cassava pasta or japchae, coconut aminos for soy sauce, and homemade salad dressing.  Check out Stacy's epic nomato sauce recipe and ShopAIP, too! Don't forget to play around! Stacy has had many trial-and-error recipe disasters while figuring things out and can laugh about it now. It's a process, and it's not always going to work out perfectly! Too Many Food Restrictions: Try New Foods The foods Sarah tried in her search for more variety on the AIP include cassava/yucca, boniato root, jackfruit, passionfruit, and dragon fruit. (30:31) Also, there are some foods that Sarah had before at restaurants but cooked for the first time, like taro root and plantain.  Experiment with new herbs and seasonings like curry leaf, sumac, tamarind paste, umeboshi paste, beefsteak leaves, coconut aminos, pomegranate molasses, truffle salt (aka, The Best Salt Ever), and fish sauce. There's way more variety in the health-promoting nutrient-dense foods that are AIP than what other diets eliminate. Finding new threats and convenience foods is easier than it sounds. ShopAIP is a great resource for this! Sarah reminds Sandy that the AIP is not a zero sugar diet, but a low added sugar one. Fruit is great, and natural sugars like honey, maple syrup, and molasses in moderation are totally fine. Stacy and Sarah talked about this recently in TWV Podcast Episode 459: Gluten-Free Baking, Our Best Tips, and Tricks. There's a vast array of foods that are AIP, but it might mean getting adventurous with new foods, flavoring ingredients, or cooking methods. Instead, focusing on what you do eat is more important. Meal plans can simplify this. Almost all of the cookbooks I mentioned above have meal plans with shopping lists in them. Make a collection of recipes for quick weeknight meals when you're in a rush. You can also cook for your freezer, so you always have back up meals on hand. Decide what you'll eat for breakfast if you sleep in and form a list of your go-to grocery stores, farmer's markets, online vendors. Think ahead for what you'll serve company, bring to a potluck, or choose at a restaurant. Too Many Food Restrictions: Individual Challenges A few individual challenges take some planning and preparation to solve, which favor adaption. (48:21) Studies looking at taste adaptation to one of a low-sugar, low-salt, or low-fat diet have shown that participants develop a preference for the healthier over a few weeks (4 to 12, depending on the study) foods they've been eating. This is attributable to our taste buds becoming more sensitive.  Food familiarity and flavor association with positive experiences (e.g., feeling good physically, the food tasting good, or eating in a positive social environment) is another key driver of food preference.  Studies show that with repeated exposure to foods that we innately dislike, we can not only lose our aversions to those foods but develop a preference for them. We can learn to like new flavors after trying them as few as four or five times.  Another way to increase adaptation to new foods is to pair them with foods you love. For example, one study looked at ways to increase children's liking and willingness to consume Brussels sprouts through associative learning.  They looked at the impact of pairing veggies with sweetened and unsweetened cream cheese compared to repeated exposure to plain veggies in increasing how much the children (aged 3 to 5 years) liked and ate bitter and non-bitter veggies.  The results showed that pairing Brussels sprouts with cream cheese increased liking and consumption more than exposure. For example, less than 25% of children liked the sprouts alone, but 72% liked sprouts with cream cheese. Also, don't forget about your lifestyle! Getting enough sleep and managing stress can help curb cravings and regulate appetite.   Make Sure Your Restrictions Make Sense It's crucial to make sure the food restrictions you're taking on make sense for you. (54:25) Stacy and Sarah have already talked in Episode 463: Is There Science Behind Candida Cleanses? and Episode 457: The Problem with a Low-FODMAP Diet about how too many food restrictions in those diets can impact our health.  Some of these protocols have science behind them, while others don't. The common theme is avoiding additional foods by combining AIP with another protocol, like GAPS, SCD, low-carb, keto, vegan, in here too.  These additional restrictions make it hard (if not impossible) to eat enough variety to support a healthy gut microbiome and nutrient sufficiency. And we can get ourselves into trouble if we're abiding by too many food restrictions. Common Deficiencies in Popular Diets Vegan and vegetarian diets are commonly deficient in vitamin A, vitamin B3, vitamin B9, vitamin B12, calcium, chromium, copper, iodine, iron, magnesium, manganese, zinc, and omega-3 fats. Low-carb diets are commonly deficient in vitamin B2, vitamin B5, vitamin B6, vitamin B9, vitamin D, vitamin E, biotin, choline, calcium, chromium, iodine, iron, magnesium, molybdenum, potassium, zinc, and fiber. Low-fat diets are commonly deficient in vitamin A, vitamin D, vitamin E, vitamin K, calcium, and omega-3 fats. Calorie-restriction programs are commonly deficient in vitamin A, vitamin B1, vitamin B2, vitamin B3, vitamin C, vitamin E, calcium, iron, magnesium, potassium, and zinc. Gluten-free diets are commonly deficient in vitamin D, vitamin B3, vitamin B9, vitamin B12, iron, magnesium, calcium, zinc, and fiber. Paleo and primal diets are commonly deficient in biotin, calcium, and chromium. Ketogenic diets are commonly deficient in vitamin A, vitamin B2, vitamin B5, vitamin B6, vitamin B9, vitamin E, vitamin D, vitamin K, biotin, choline, calcium, chromium, choline, iodine, iron, magnesium, molybdenum, potassium, selenium zinc, and fiber.   Final Thoughts The problem with so many years of diet culture fixated on elimination is that our first thought is what we can get rid of. (58:01) What we cut out of our diet is pretty irrelevant because health is determined by what we're putting into our bodies. This is why the nutrivore focus of AIP is so important. The Autoimmune Protocol promotes nutrient-dense superfoods (organ meat, seafood, and tons of veggies) as the foundation of the diet.  It's paired with recommendations for nutrient tracking to ensure nutrient sufficiency. So one of the first activities we do in the AIP Lecture Series is nutrient tracking. Stacy has had a lot of personal experience with elimination diets with the main goal of weight loss (even if she told herself it wasn't). She had no idea how many nutrients she'd cut out of her diet and how she had the opposite effect despite telling herself she was doing it for her health. Because health and diet culture have been so entwined for so long, the two can be difficult to set apart. The Paleo View (TPV), Episode 343: Nutritional Therapy Association Conference Check-In Show (0:00) Intro Stacy is wet (because she just did water aerobics) and Sarah can't stop laughing. Stacy just lathered herself in Vitamin C cream (hopefully to combat the effects of pool water chlorine) and she's wondering if that's actually effective. Sarah isn't sure! And she's more than happy to admit that she doesn't know the answer! Stacy is making a list of topics like this for future podcast episodes (4:57) Sarah dishes on her keynote (and more!) at the NTA Conference This is Sarah's third presentation at an NTA (Nutritional Therapy Association) conference, but this was by far the biggest audience with 800 or so attendees These conferences are for NTPs (Nutritional Therapy Practitioners) and NTCs (Nutritional Therapy Consultants) who have graduated from the NTA program and have a solid foundation in nutrition and health. Sarah's keynote was on the gut microbiome and she had a blast sharing it with practitioners because she totally got to nerd out! When Sarah references a year, take it with a grain of salt because she's not great with time One thing that stood out this year was the number of exhibitors. Sarah loves seeing her favorite brands, but also discovering new brands and meeting their owners so she can bring you more awesome products that will benefit you! Stacy often gets asked if she recommends attending wellness conferences like this. She says there are a couple of things to consider: Is it the right conference for you? For example, if you're not an NTP, NTC, or health practitioner, there might be a better fit for you than the NTA conference What do you want to get out of the conference experience? Education? Business connections? Unfortunately, Sarah's NTA keynote will not be available online, however, she will do a similar presentation at this year's PaleoFX! (23:27) The NTA Panel on Sunday This panel was moderated by Mickey Trescott (on the podcast two weeks ago) and featured Angie Alt, Dr. Rob Abbott, Dr. Gauree Konijeti, and Sarah. These two clinicians have really led the research on using the Autoimmune Protocols to treat Autoimmune disease. The panel discussed scientific evidence, how we approach therapies that are supported by science vs disproven by science. Sarah enjoyed talking about the need to stay rooted in scientific evidence in order to effectively educate people. When we start to let pseudo-science creep in, we undermine the validity of the much more important messaging we're doing. However, it's important to acknowledge that we don't know everything and there are a lot of unanswered questions. When we're faced with evidence that disproves theories, we need to be open to that evidence. We need to be cautious of our tribalism and not dismissing things because they don't agree with our beliefs. 8 people told Sarah it was the best NTA panel they'd ever seen! Sarah wants to give a shout out to Mickey and Angie for a very well thought out panel! There were great discussions about how functional medicine and nutritional therapy interface. The Paleo View (TPV), Episode 341: Mickey Trescott of Autoimmune Wellness (0:00) Intro Please welcome special guest, Mickey Trescott of Autoimmune Wellness! Mickey has a new book coming out titled The Nutrient Dense Kitchen. With the explosion of the Autoimmune community in the past couple years, Mickey has noticed there's been a loss of focus on nutrient density. Mickey wrote this book to be approachable with a lot of nutrient dense recipes so you don't have to be afraid of food. You can change your health by what you put on your plate! Sarah is super excited about Mickey's new cookbook! It's gorgeous and she and her children are already bookmarking recipes they want to try. (5:11) AIP Then Mickey and Sarah were two of the first handful of people to do the autoimmune diet. Sarah first gave it a try in 2011, just 4 months after discovering the Paleo Diet. Mickey first found the Autoimmune Diet after seeing Dr. Terry Wahls' TEDx presentation on how she manages MS with diet and lifestyle. At that time there were just a few mentions of the autoimmune protocol - one page in Robb Wolf's book The Paleo Solution and half a page in Loren Cordain's The Paleo Diet. Funny thing is, the food recommendations on each of these lists didn't even match up, it was such a new idea. Stacy remembers back in the day people didn't even know what nightshades are! (15:15) AIP Clinical Trials There are now clinical trials which are beginning to bring medical awareness to the autoimmune protocol. Mickey and her partner at Autoimmune Wellness, Angie Alt, are working with researchers on AIP clinical trials. Mickey, Angie, and Sarah have co-created and co-teach the AIP Certified Coach Practitioner Training Program, an advanced training for practitioners across the spectrum of both natural and conventional healthcare. Up til now, evidence that AIP works has just been anecdotal. The study Mickey and Angie are involved with showed a 73% improvement in remission in just 6 weeks! It was an 11 week study. The first 6 weeks, patients did Angie's SAD to AIP in 6 program (which transitions people into the AIP diet). Then they stayed on the AIP diet for the next 5 weeks. They were given copies of The Paleo Approach and The Autoimmune Wellness Handbook as their two main resources. 73% of patients were in full clinical remission by the time they finished transitioning to the autoimmune protocol in week 6 and maintained it. Mickey says the most powerful takeaway was that these people were not newly diagnosed. They'd been living with an autoimmune disease for an average of 19 years and many of them had failed biologic treatment. The 27% of people who didn't achieve remission still had quantifiable improvement, but didn't achieve remission. More studies on quality of life and gut microbiome health are coming. They've also partnered with Dr. Rob Abbott for a study on Hashimoto's. They crowd-funded this study thanks to the AIP community! AIP has always been more than a fad diet because it's based on science and logic. (23:50) AIP today This movement has grown thanks to the people who've done it! There are over 100 AIP bloggers today. Thousands have told their doctors about their results on AIP. It has a powerful snowball effect! Sarah guesses there are at least a million people out there who have a connection to AIP. It's thanks to everyone who has done AIP that there are now more options on the grocery and in restaurants. One of the most special things about AIP is the community - and they're all over the world! This is due to the hormone changes that women undergo.If you’re curious about prevention you can focus on sleep, eliminating stress and consuming nutrient-dense foods, but don’t think that you’re guilty of brining on an autoimmune disorder yourself if you haven’t always followed these prevention practices. Let’s get down to the brass tacks. AIP means no grains, legumes, dairy, eggs, nuts, seeds, chocolate, coffee, night shades. (tomatoes, eggplant, peppers, etc.) AIP means yes to bone broth, fish, shell fish, organ meats, fermented foods, and more vegetables than a vegetarian. AIP means good sleep and stress management.Should you begin your elimination phase slow and steady or go cold turkey? Kylene and Angie discuss how you can know which style is for you.Go easy on yourself when you experience and struggle with sugar cravings. You may remember in Episode 025, I held an inspiring conversation with the other half of this courageous duo, Mickey Trescott, and in this episode I continue the conversation with Angie as we seek to uncover the secrets behind communal healing, the real roots of wholesome lifestyle change and the hope that is born when we begin to see the past, no matter how troubling, not as something to run from, but as something to grow into.   In this podcast, we begin by exploring Angie's story, a story of suffering, renewal and unfathomable faith, leading her to her current calling as a health coach guiding others through the uncertainty and hurt of autoimmune illness.      Angie highlights her innovative initiative SAD to AIP in SIX, a group coaching program that has lead thousands of folks through their transition to the Autoimmune Protocol and sustainable lifestyle change. Speaking on its early origins and immediate success, into its most recent period of growth, Angie offers us some insights into the structure of the program, who is actually involved in the group and how truly does one support those through the healing journey?   Straying perhaps from the measurable and describable, we ask some curious questions behind the cultivation of community, the opening to vulnerability, and the eventual path to empowered wellness.   Is it really all about food?   We then explore Angie's most recent collaboration with Dr. Gauree Konijeti, MD, MPH, Director of the Inflammatory Bowel Disease Program at the Scripps Clinic in San Diego, California. Nyligen genomfördes en klinisk studie på autoimmuna protokollet (AIP, autoimmun paleokost) på ett sjukhus i Kalifornien. Well I’m going to pass the baton off. Those were really lovely bios, and gave a nice introduction, but I would love it if y’all could share a little bit more about your stories, and about this latest project that you girls are working on. Mickey Trescott: Yeah, so Mickey here, I’ll go first. And you know, my journey really started like a lot of us who come to paleo, come to all these health modifications, diet modifications, the autoimmune protocol, with a personal health issue. So I was diagnosed with Hashimoto’s and Celiac disease about 5 years ago now after suffering for about a year, which in the scheme of things isn’t very long; but it was a pretty bad year. And I kept going to the doctor and trying to figure out what was wrong, and there were kind of two parts to my story. One part was not really getting what I needed from the medical community; so, going to the doctor and being told that there was nothing wrong,
