Cruising along the Bosphorus, either for pleasure, or like the majority of Istanbul's denizens, for transit, you cannot help but notice that the city's landscape would be dramatically altered without the mosques of the city. In Ottoman Baroque: The Architectural Refashioning of Eighteenth-Century Istanbul (Princeton University Press, 2019), Ünver Rüstem takes a stab of a slice of that history, arguing that we should see the eighteenth-century Baroque period in Ottoman mosque architecture as innovative and not derivative in how Ottoman mosque architecture integrated Baroque elements. By doing so, he pushes back effectively against notions of Ottoman decline and demonstrates that such architecture, praised in the contemporary writings of both Ottoman and Western viewers, successfully rebranded the Ottoman capital for a changing world. He also draws our eyes to the complex social process by which mosque design develops, bringing in a cast of characters that includes non-Muslims as much as non-Muslims. For centuries, beef tallow was a cornerstone of global cuisine. Ancient Romans used it to preserve meat and fry food. Medieval Europeans relied on it for cooking, candle-making, and even leather conditioning. In early America, tallow wasIndispensable—settlers used it for everything from pie crusts to waterproofing boots.In the 20th century, tallow had nearly disappeared from kitchens. Flawed nutritional studies demonized saturated fats, and industrial seed oils took their place. Only now, as modern science reevaluates dietary fats, is tallow reclaiming its rightfulrole in culinary traditions.Beef tallow is rendered fat, primarily sourced from suet—the dense fat surrounding a cow's kidneys and loins. Unlike lard (pig fat), tallow has a firmer texture and a higher smoke point, making it ideal for high-heat cooking.The rendering process is simple but precise: suet is slowly melted at low heat, strained to remove impurities, and cooled into a smooth, shelf-stable fat. Properly rendered tallow can last up to a year at room temperature, a testament to itsstability.The Nutritional Benefits of TallowEmerging research challenges old assumptions about saturated fats. Beef tallow contains a balanced profile of saturated and monounsaturated fats, including stearic acid,which may support healthy cholesterol levels. It's also rich in conjugated linoleic acid (CLA), a fatty acid linked to reduced inflammation and improved metabolism.Additionally, tallow provides fat-soluble vitamins A, D, E, and K2—essential for immune function, bone health, and skin vitality. Grass-fed tallow offers even higher concentrations of these beneficial compounds. Tallow vs. Industrial Seed Oils Unlike highly processed vegetable oils, tallow is a whole food. Industrial seed oils—such as soybean, corn, and canola oil—are often extracted with chemical solvents and are prone to oxidation, especially at high temperatures. Tallow, with its smoke point of 400°F or higher, remains stable under heat, reducing the formation of harmful compounds.The shift from traditional fats like tallow may have contributed to modern health challenges. Reintroducing some of the challenges can help us to achieve better health, both mentally and physically. (26:00) Dr. Sharon explains hormesis, which is a form of adaptation. (30:00) The leading cause of disability in this country is disuse. (37:50) There is a more recent specialty in medicine called “exercise oncology.” It has been shown that exercise can improve cancer outcomes. (38:00) Stress For Growth There are various types of stress; however, too much and too inadequate amounts of stress can both be harmful. (46:00) The goal is to find the optimal or “Goldilocks level” of stress. A mild or moderate amount should work. There's no real need to go to extremes to make a difference. Vinnie mentions his desire to get back to a “fitness middle class.” (51:00) “Stress inoculation” is an idea (not an actual vaccine and not childhood adversity) that exposes kids to small amounts of stress to help childhood development. There's no one best diet for any health condition but there are certain similarities across diets that are beneficial for those with thyroid and autoimmune thyroid conditions. For my patients with Graves' and Hashimoto's, I typically recommend an AIP diet as a starting point, eventually reintroducing foods which don't trigger a negative response. While many patients start there, some will choose to follow other diets that people with autoimmune conditions have found to be beneficial.Today I'm sharing my dietary recommendations for people with Hashimoto's.
