After a chance meeting while coaching young athletes I stayed in touch with Eric Bostrom for two reasons. First, he had a clean energy. I know that sounds pretty damn woo-woo, but as I've gotten older I've just learned to trust my gut more when it comes to meeting people. Eric was soft spoken but from the moment I met him there was an obvious intensity to him. That leads to the second reason: He was a champion motorcycle racer. You don't get to be a champion by being unfocused, and God knows I love the folks who can dial in focus to the white hot intensity of a thousand burning suns. Getting on a motorcycle (for me) represents the fastest way to transition from the normal humdrum of life into an experience that puts you at mortal peril. One minute you're straddling an inert piece of metal and plastic in front of your house, the next you're in traffic, whipping along at speeds humans just weren't meant to attain, surrounded by heavy and fast beasts that basically don't notice or care whether you exist. Bloody dangerous, and open to anyone crazy enough to swing a leg over and twist the throttle. Racing motorcycles is a few steps further, and something I've always thought far too dangerous for me. Eric is one of those guys who raced at a bunch of levels, who chased victory hard for years because that's how he paid the bills, and who squeaked through the injury cycle of professional motorsports and out the other side with a combination of skill and luck. On that far side of competition he created a solution for the neck and back pain that had come from the crashing, dings, and dents that are a part of hurtling through space with basically no protection. At the end of the show we talk about the Backmate, which we use at the Paleo Treats office. Not only does the thing work and provide relief, it stands as a shining example of how to ROCK a Kickstarter campaign. You'll notice some common themes with Eric and Brian Enos. Competition forces you to get better. The more skilled you become, the better you are at listening to your environment. You don't need to try harder to go faster, you need to think better. It ended up in arbitration, so she had to fall back on waiting tables to keep her life afloat. “I feel that these heavy NO’s work something inside of you, it's a certain resilience where you just learn to get through it.” ~ Lee Selman Lee shares a couple of stories about her other businesses that have failed. Another devastating NO for Lee had to do with her Paleo Treats company and Starbucks. Trust me, you definitely want to hear this story! Lee believes in growing her business organically and never compromising what she and her partner believe in. If you are looking to lift your spirits, Lee recommends listening to podcasts or videos with people who have found success through massive failure. Some of the toughest NO’s that Lee has had to deal with comes from investors that turned Paleo Treats down. However, looking back Lee knows that it is almost always for the best. “It's an accomplishment to stay true to your vision, stay true to your roots.” ~ Lee Selman A very prominent investor wanted to invest in Paleo Treats, but they wanted to add fillers into the core recipe. This is against what Lee and her partner believe, so they turned him down, despite how much it could have helped them grow down the line. One strategy Sarah uses to be mindful of her dessert intake is that she'll freeze cookies or sweets. Then, when a craving strikes, she must defrost the treat, which allows time for her craving to lessen or go away. Paleo Treats are great for this because they're stored frozen! (19:38) Natural Sweeteners Paleo Treats uses honey to sweeten their treats (no refined sugar!). In researching her new book about the microbiome, Sarah has discovered really cool research about honey, which separates it from any other sugar. Before we get to honey though, Blackstrap molasses is definitely on a pedestal. One tablespoon has just 42 calories, 20% of your RDA of calcium and iron, most B vitamins, and is a great source of chromium. It has more iron per calorie than steak and more calcium per calorie than cheese. But it's a very strong sweetener so it's primarily used in gingerbread flavored foods. Stacy uses blackstrap molasses in sauces or in her Asian Short Ribs recipe. It's also great in her Chewy Molasses & Ginger Cookies! Honey is non diabetogenic. For some reason that researchers are still trying to figure out, it doesn't elicit the insulin response you'd expect and doesn't seem to contribute to insulin resistance the way you'd expect. Studies show that diabetics can sweeten with honey which dysregulating their blood sugar. Honey doesn't create the same response as cane sugar or maple syrup, two sweeteners that have a very similar saccharide breakdown. Honey has incredible anti-microbial properties. Raw honey has fermentable substrate in it, which feeds our gut bacteria. It increases microbial diversities and selectively feeds probiotic stains that are very desirable. It's incredibly beneficial to the gut microbiome! So Sarah puts honey on an equally high, but different pedestal as blackstrap molasses. (24:26) Honey versus raw honey There are certain properties of honey that are lost when it's pasteurized or cooked. It has unique compounds that are similar to phytochemicals that we haven't completely characterized. There really isn't another food like honey! But when you heat things, chemical structures tend to unravel which can change their function. Raw honey is antibacterial, antioxidant, anti-tumor, anti-inflammatory, and antiviral. It's cardio protective, gastro protective, and can promote wound healing. If you make cookies with raw honey or put a spoonful of raw honey in a cup of tea, you're going to lose some of these properties, but it's still going to be fermentable (things the gut bacteria will eat), which still benefits your microbiome. Stacy's strategy to maximize the benefits of raw honey in hot tea is to let the tea cool to drinking temperature and then add the honey. Honey has been shown to improve IBS both with chronic constipation and chronic diarrhea. Honey is also a cough suppressant and is very soothing for the throat. (30:27) Defining what a treat is Stacy defines treats as anything outside the scope of a nutrient dense healing food, or what Mark Sisson would call "the 20%." Sarah agrees, defining treats as anything that's not adding nutritive value to her diet, for example, gluten-free burger buns, popcorn, and rice (unless it's made with broth). In her house, the most common treat foods are popcorn (once a week, maybe twice) or a sweet treat (once a week). Stacy agrees, saying her family usually has a sweet treat twice a week and they try to focus on recipes that are naturally low in sugar. One of their favorites is this Chocolate Chia Seed Pudding, which has a lot of nutrient density! If you're experiencing a craving, it's often because you need something. If you're craving sugar, it might be a sign that you need vitamin C, more sleep, some downtime (reducing stress), healthy fats, magnesium, calcium, etc. Sometimes when Stacy has a sugar craving, she eats a clementine or an orange to get a dose of vitamin C. (37:12) Approaching Halloween and making treats a choice Stacy makes an agreement with her kids that they can keep a few pieces of trick-or-treating candy and they'll exchange the rest for legos or pennies - whatever they negotiate. Then Stacy removes the "exchanged candy" from their house and brings it to share at her office. Sarah's kids love the ritual of trick-or-treating! Sarah goes through the candy with her kids and separates out the candy that will make them sick. Her kids will then pick the treats they want and amazingly, have the self control to eat them over an extended period of time (versus all in one sitting). It's important to figure out what works for you treat-wise - what fulfills you and makes you happy! If you don't define a limit yourself, that's where temptation can creep in, leaving you feeling ashamed and guilty. If you overindulge, don't dwell on it. It's over and done with so don't decide to throw in the towel and eat that other bag of candy. Move forward and start fresh! If you get stuck on the "sugar rollercoaster," and have a hard time going cold turkey to reset your palette, Stacy recommends weaning yourself off sugar by upgrading your sweets to clean ingredients by making paleo cookies or eating Paleo Treats. Sarah has totally experienced the slippery slope of eating one sweet and it creating a domino effect to eat the whole bag - more than once! Mindset is very important when it comes to treats. Sarah recommends viewing treats as an indulgence and as a choice. If things start to unravel, there are foods she won't touch like gluten, dairy, or soy, but there are plenty of delicious treats that can be made with paleo ingredients that will set her up for a sugar rollercoaster. What's true of those days is that it stops being a choice and starts becoming a compulsion. One thing Sarah has found really useful when things start to unravel is that she consciously chooses to eat the treat and be very present. She makes it a real, intentional moment, savoring the flavors, the texture, and the experience. She also notices that this compulsion is a symptom of not getting enough sleep or being overly stressed and comes up with a plan for taking action to address those imbalances so the compulsions stop. Dark chocolate and sometimes fruit is Sarah's go-to for a treat when she's trying to reset her compulsions. (51:24) Alternative sweeteners Be a mindful consumer when it comes to the new, no calorie sweeteners on the market. Think through what the ingredients are and if that's what will set you up for success. Google these products, look up the ingredients and how it's made. Check the sources and read multiple articles with varying view points. There is now a conclusive study in humans that stevia can disrupt progesterone and testosterone signaling. Low calorie sweeteners, low glycemic sweeteners, and keto sweeteners all have problems. They either disrupt the gut microbiome, increase leaky gut, or mess with hormones. The body has a far greater capacity to process a moderate and occasional amount of real sugar (honey, maple sugar, cane sugar). We can process and detox those better than sugar substitutes (even plant-derived sweeteners) like stevia. If you overindulge this holiday season, eat fish, drink broth, and sleep! There are some folks out there who are a little scary in their pursuit of excellence; they have an intensity about them that is damn near palpable. Randy Leavitt is one of those people. Randy is known as a climber, one of America's best. With just a little bit of Googling you'll see just how good he is, but this podcast ain't about climbing, it's about the pursuit of excellence. When I first heard about Randy it was from Greg Crouch, another guest on the Paleo Treats podcast. I had told Greg I was looking for more pursuers of excellence and Greg recommended Randy. When I asked why, Greg simply said, "Four decades of world class performance." Well, that just piqued my interest. In this show we skip past a bunch of Randy's climbing history (well covered on episode 18 of Chris Kalous' podcast, The Enormocast) and go deeper into the pursuit of excellence. Randy talks about what made climbing his first love, how got into and out of BASE jumping (went off El Capitan in 1980!), when he found kite surfing and why he waited a couple of years before he actually started doing it. Randy attributes a lot of his results to being a "delayed gratification-ist", something that most of us, including myself, need to work on developing. We got into his passion for flying and some of the surprising things he had to learn as a pilot that he feels all climbers should know, along with why he stuck with motor planes and didn't get into sailplanes. Of course I had to butt in and start yapping about paragliding, but I'd like to think I kept it to a minimum. I took a couple of questions for this show from listeners, so you'll get to hear a bit about the Jumbo Love story, what goes through Randy's head when he's stepping into a true challenge, and of a clarification of his comparison between the best day climbing and the best day surfing. I spoke with Joshua Cooper Ramo in this podcast interview, partly about his latest book, The Seventh Sense and partly about his overall life and pursuit of excellence. Mr. Ramo started off as a journalist, working at Newsweek then for Time Inc back when, as he says, “it mattered who The Man of the Year was.” He worked as both senior and as foreign editor at Time, and he wrote for them long enough ago (1997) that he wrote The Man Of the Year cover story on Andy Grove, one of the founders of Intel. From Time Inc he moved to China to pursue adventure in the world of business. He became fluent in Chinese and fell in love with the culture. In China he worked for the former president of Goldman Sachs and eventually began working at his current company, Kissinger Associates, where he's now co-CEO. He lived in Beijing full time for a little over a decade and now splits his time between Beijing and New York. Yes, he's a busy, pipe hittin' dude and I was super stoked to connect for this conversation. I found him through his first book, No Visible Horizon, a lovely story about his journey to aerobatic nationals as a pilot that reminded me of reading Ernest Gann's “Fate Is The Hunter”, another excellent and relatively unsung pilot book. Curious about what else he'd written, I found his third book, The Seventh Sense, which I read through with great enjoyment and then went on to read his second book, The Age of the Unthinkable. Reading those two books gave me a look into the mind of a writer deeply immersed in international relations, intensely curious about connections in the modern age, and fascinated with networks in particular. Both books deal with the unpredictable nature of an increasingly connected world, and as a business owner running a small enterprise in that world I found them entertaining and educational. In fact, they forced me to re-evaluate our strategy at Paleo Treats and the way we're using our networks. In this interview we dive into the important points of a network, the difference between complex and complicated systems, what topology is and why it matters, and how emergent properties of networks are inevitable. I asked him how he curates and uses his curiosity, and he talked about his main theme in The Seventh Sense that “connection changes the nature of an object.” We do dive briefly into some flying stuff and how flying may move from unnatural to natural as you become a better pilot, but the majority of this interview deals with networks and how to understand and explore them in this incredibly connected world. Joshua talks about the importance of figuring out what tools you need in order to understand and investigate a problem. How did your learning of Chinese culture influence that? Is there anything more important than building relationships when it comes to getting things done? (Planning to be Dan Kaminsky) -connection changes the nature of an object. What does that mean? -how are the fourth revolution & the seventh sense tied together? -how do we cultivate the 7th sense? -Clausewitz noted, “Many intelligence reports in war are contradictory; even more are false, and most are uncertain. . . . In short, most intelligence is false.” How are you assessing a network accurately? -in Age of the Unthinkable you talk about the spymaster Farkash asking questions no one else asked and being amazed that Israel's actions had forced the enemy to evolve. This evolution of both sides seems like a fundamental part of struggle. Is anyone asking “How do we force our enemy to *devolve*?” Examples of it working? -how many languages do you speak or you speak or understand? Is it worth it to learn another language, or is there a universal language of networks? The standard visualization of a network is as a fish net, however, that is not what it might look like. When you talk about topology there is a deceptive notion that these things can be understood in nearly 3 dimensions. How else can someone visualize what a network might physically look like? Or does this require a new skill of four dimensional visualization? -can you talk a little about how blockchain ties together multiple networks (financial, legal, social?) -do we need to change to a network system without fallible leaders? Our current leaders seem unable to solve problems for which there are fairly clear solutions. -how would you befriend a network? Can you be friends with a network? -how would you addict a network? -assessing trust in a network? -assessing quality of expertise in the network? use past predictions? -let's talk about topology & networks. As I understand it, topology basically refers to the way networks can be thought of in terms of connection time between nodes, regardless of physical distance. If topology is 2 dimensional, is there a way to understand how a 3rd dimension would apply? -how can we find the edge of a network so we can “shake the blanket” and cause change? Is it possible? -a group of almost successful (or even unsuccessful) people is far more powerful than a single lucky person; do networks remove the filter of luck, or offset the capriciousness of chance? -how does a small business use the seventh sense? practical example? He had a great time doing the things he dreamed of. In the year 2000, he transitioned into the civilian life. When he met the woman who was to become his wife, she was sold out on entrepreneurship. He saw the possible things he could achieve if he did the same thing. And that inspired him in his journey. One Valuable Skill from the Military Nik saw that even with his well-honed skills, they were not very useful in the civilian life. The hard skills they have like shooting or jumping from an airplane do not transfer well. According to him, learning to do something easily and well is a valuable skill that most Veterans take away from their career in the military. They can step into any job and learn it easily. Paleo Treats for Crossfitters Nik started one business after another. He experienced building websites, running a T-shirt company, as well as driving around California with a mobile notary for real estate. It was in 2009 when he and his wife came across Paleo treats for crossfitters. They started that business and their products were sold out as early as 10 AM in the first day. To this day, they sell healthy desserts. Among which are brownies and chocolate bars. All are strictly made of Paleo ingredients and are also tasty.
