If you're going to stare out over the ocean beyond the horizon and into the infinite, you're well advised to have a great cup of coffee while you do it. And there is a place for coffee unlike any you've ever been to, unless you're lucky enough to have been to Haida Gwaii. And to Jags. At the end of June, I sat down after-hours with family team members Khataya and with Jags himself (the shop's namesake and Khataya's father), to learn just how their family created this wonderfully special place. Join us for a talk that starts in the shop pouring coffee and baking scones, but quickly winds down logging roads, hikes a trail, and flies to Vancouver for a coffee expo. We also take the scenic route through a business-funding story that is the closest I've come in real life to Willy Wonka's golden tickets! Haida Gwaii is a special place. Jags is a fantastic spot for coffee and food and conversation. Episode 077 gives you a glimpse.

Like Pepsi in 1984, coffee is the "Choice of a New Generation"... but maybe not in the same way as we of older generations are comfortable with. The ways digital natives are consuming coffee today may be unique, but as with all coffee consumers before and after, they are seeking the identity, belonging, utility, and promises associated with coffee and the community it has always facilitated. The question we need to ask is how do we in the world f coffee shops acknowledge, welcome, include, adn understand these very important consumers? To help us explore this we are chatting with friend of the show and deep thinker extraordinaire, Kosta Kallivrousis! Kosta Kallivrousis has spent over 14 years working across the specialty-coffee supply chain. His unique combination of experience as a barista, licensed Q grader, and in strategic sales at both roasted and green coffee companies has given him a 360°-view of the specialty-coffee world. Kosta is passionate about building equitable sourcing relationships between coffee producers and buyers, challenging industry norms around taste and value, and advocating for greater connection and community in the coffee industry. It's twenty years since Starbucks arrived here in Ireland, sounding the death knell for local coffee shops nationwide. But just when we thought every corner cafe was done for, the independent coffee shops began to rise and rise. Newstalk's Sarah Madden went on a coffee crawl around the capital to find out:

We're back in the wild for Episode 11, blending percussive power with euphoric grooves and global rhythm. Sunrise opens with a return to Thomas Jack, fresh from last week's Tropical Transition, now setting the tone with “Rise Up” alongside Jasmine Thompson. Treasure Track takes it old school with “Oye” — the Block & Crown edit that injects Latin sass into the dancefloor via Vamos Music. New Wave Artist Spotlight beams on Oden & Fatzo, the French duo fusing UK garage, house, jazz, and funk. With over 80 million streams, Defected releases, and Boiler Room magic — their track “Only For Tonight” shows why they're leading a whole new wave of feel-good house. Tropical Transition spotlights Sunnery James & Ryan Marciano, bringing tribal depth and tropical energy with “Coffee Shop” and “Summer Thing” — percussion-laced and made for heat. Melodic Map explores the South of France with Baiana at Le Cirque, an open-air party serving tropical, melodic, and Latin house — with a Jagged Jungle favourite, “Baiana”, in a new Lilian Bilotta edit. Sunset Strip wraps the ride with selections from Switch Disco, Dennis Cruz, Justin Timberlake (remixed!), Chris Lake, and Marshall Jefferson. — Featuring music from: Oden & Fatzo (Defected), Sunnery James & Ryan Marciano, Block & Crown, Thomas Jack, Dennis Cruz (Solid Grooves), and more. It goes a long way!Our two cafes made a million bucks cumulatively from January to June — but where did it all go? In this episode, we pull back the curtain and share our real numbers from the first half of 2025 across both of our cafes. We break down how much we earned, how much went to cost of goods sold (COGS), what our labor percentages are, and why it feels like there's never quite as much left over as you'd think. Whether you're an aspiring cafe owner or a seasoned vet trying to better understand your margins, this episode is all about transparency and growth. We even get into how our inventory systems evolved, our goals for tracking waste, and the tradeoffs of running a coffee business where profit margins are razor-thin. Oh yeah, and we talk about half birthdays and David Archuleta.*If you purchase something through one of our links, we may be entitled to a share of the sale*Buy Valor Coffee: https://valor.coffee/shop?utm_source=spotify&utm_campaign=ep149Watch on Youtube: https://youtube.com/valorcoffee16Want to become a Wholesale Partner? In this episode, Gino and Rob have another "Coffee Shop Conversation" to discuss the power of organization, self-reflection, and trusting the journey. They explore the “one place” system—keeping essential information in a single, organized spot, whether handwritten or digital. Gino shares why he prefers handwritten notes for deeper retention and emotional connection, while emphasizing the importance of selective filing—keeping only what truly matters and letting go of the rest. The conversation then shifts to embracing uncertainty and recognizing how our perceptions of others mirror our inner struggles. They highlight the importance of staying mission-driven, especially during business transitions, and trusting that the right opportunities will emerge. In the end, they reiterate their shared vision: freeing a million entrepreneurs by following their passion, purpose, and intuition.
