Schon die Namen sind eine Geschichte für sich – Enrico klingt italienisch, ist es aber gar nicht (Mutter aus Spanien, Nachname ostpreußisch), und Winkelmann wandert irgendwo zwischen Sauerland und Hagen. Zwei Gründer, fifty-fifty, Good Cop und Bad Cop im täglichen Wechsel. Der Name trägt den „Pott" im Herzen, auf dem Teller aber findet ausdrücklich keine Ruhrpott-Reminiszenz statt: Hier meint Pott Mentalität, nicht Menü – schnörkellos, ehrlich, direkt.Im Gespräch: die Küche mitten im Gastraum (keine Wand, kein Versteck, kein Kühlhaus), das 5-Komponenten-Prinzip, das in einem überdrehten Dezember als Notbremse entstand und längst zum Stil wurde, und ein 6-Gänge-Menü, das heimlich aus zehn Servierungen besteht – Kaviar des Feldes und Robuchons Butter-Kartoffel-Püree mit noch mehr Butter inklusive. Lou und Jonas sprechen mit Bastian Krüger über das Gemeinschaftsprojekt Tamino aus Baden-Württemberg – eine Rotwein-Cuvée, die zeigt, dass Umweltbewusstsein und Genuss perfekt zusammenpassen. Du erfährst, warum PIWIs weniger Pflanzenschutz brauchen, weshalb sie im Weinberg echte Gamechanger sind und wieso viele Winzer lieber mit Fantasienamen statt mit komplizierten Rebsortenbezeichnungen arbeiten. Außerdem geht's um die Frage, wie Tamino schmeckt, welche Idee dahinter steckt und warum die Bewegung gerade so viel Rückenwind bekommt. Weine der Woche 2022 Tamino Rotweincuvée trocken – Weingut Kaufmann Vollmundig und würzig, mit Aromen von dunklen Früchten und feiner Cassisnote. Die Cuvée besteht ausschließlich aus robusten PIWI-Sorten und zeigt, wie elegant Nachhaltigkeit schmecken kann – kräftig, rund und mit angenehm saftigem Trinkfluss. 2022 Tamino Cuvée trocken – Weingut Dreher Ein kräftiger Rotwein aus 85 % Cabernet Cortis, 14 Monate im Barrique gereift. In der Nase dunkle Beeren, Gewürze und ein Hauch Zedernholz; am Gaumen saftig, mit Noten von Kakao und feiner Holzwürze. Die Tannine sind seidig, der Nachhall lang – ein PIWI mit Charakter und Lagerpotenzial bis 2028 . 2021 Tamino Cuvée trocken – Weingut Maier Eine Cuvée aus Cabernet Carbon, Cabernet Cortis, Monarch und Prior. Kräftig, fruchtbetont und ausgewogen – mit Aromen von Schwarzkirsche, Brombeere und einem Hauch Vanille. Durch den Barrique-Ausbau gewinnt der Wein an Tiefe und Balance – ideal zu Wild, Lamm oder Schmorgerichten . Lous Weinlexikon: M wie Mehrwegflasche Glasflaschen zählen zu den größten CO₂-Treibern im Weinbau. Mehr als die Hälfte des Fußabdrucks entsteht allein durch Transport und Produktion. Einige Betriebe wie das Staatsweingut Freiburg denken neu und füllen PIWI-Weine wie Tamino in standardisierte Bierflaschen ab. So kann das bereits existierende Mehrwegsystem genutzt werden – jede Flasche wird zigmal wiederverwendet, spart Energie und verringert Abfall. Ein echter Gamechanger für die Weinwelt der Zukunft. Martin Schmidt steht für einen neuen, geerdeten Winzertyp: fest verwurzelt am Kaiserstuhl und zugleich offen für Wandel. Seit er 2008 das traditionsreiche Weingut Kiefer übernommen hat, führt er es gemeinsam mit seiner Frau Helen Schritt für Schritt in die Zukunft – ohne die Wurzeln zu verlieren. How Fungus-Resistant Vines Are Shaping the Future of Italian Wine A few decades ago, “PIWI wines” sounded like something out of a laboratory experiment. Today they are front-and-center in sustainable viticulture conversations from Alto Adige to Lake Garda—and for good reason. PIWI is an acronym drawn from the German Pilzwiderstandsfähige, meaning “fungus-resistant” vines. These precision-bred crossings can fend off downy and powdery mildew with far fewer chemical treatments than classic Vitis vinifera varieties, offering a timely solution as climate change makes summers ever hotter and more humid in key wine regions. The PiWi family of genes may have a diminutive sounding name, but they have a large role in the function of the germline and germline stem cells. Initially discovered in Drosophila, these highly conserved RNA-binding proteins have well-established roles in the regulation of spermatogenesis and germ stem cell maintenance, in addition to silencing transposable elements. However, PiWi function outside of the germline is relatively unexplored. New findings from the Lin laboratory show that Drosophila Piwi has a role in intestinal homeostasis where it functions to establish intestinal stem cells, maintain the enteroblast lineage, and support of the enterocytes. It also has a role in silencing retrotransposons of the gut. Collectively, these intestinal roles of PiWi are critical to organismal longevity as the loss of PiWi leads to a shortened lifespan in the fly. Martin Pera is joined by scientists Drs. Haifan Lin and Xiongzhuo Tang. Dr. Lin is the Eugene Higgins Professor of Cell Biology and the Founding Director of the Yale Stem Cell Center. Among his many achievements, Haifan is a member of US National Academy of Sciences, a member of American Academy of Arts and Sciences, and a Foreign Member of Chinese Academy of Sciences. He is currently the president of the ISSCR. Xiongzhuo Tang was a postdoctoral fellow in the Lin laboratory and is now a professor in the Animal and Nutritional Genome and Germplasm Innovation Research Center in the College of Animal Science and Technology at the Hunan Agricultural University in Hunan China.Drs. Le varietà piwi cosiddette resistenti sono sempre più oggetto di studio e di sperimentazioni. Nel 2022 per la prima volta un vino da vitigni piwi ha conquistato i 3 bicchieri Gambero Rosso. Si può bere quindi bene anche piwi? Coltivare vitigni di fatto creati dall'uomo vuol dire perdita delle nostre radici enoiche? Ne parliamo con Erika Prandini della cantina Pravis che è stata tra i pionieri della sperimentazione piwi iniziando più di vent'anni fa con una collaborazione con l'università di Freiburg.
