Aaaaand stop! Ugh, do you know that jolt in your body just before a braking car comes to a complete standstill? That's a thing of the past: Bosch engineers have made it disappear. They use an EV's electric drive to provide extremely smooth, software-controlled braking. This feature, called e-brake to zero, is just one example of how algorithms can improve the driving experience. While Melena tries it out on a test track with Bosch expert Thomas Friedrich, Shuko and Bosch product owner Enrico Haberkern see what else Vehicle Motion Management can do. The core idea is that a driving task is no longer performed by a single actuator, but by an intelligent combination of actuators. Let's get started!

Fake! Or is it? It's getting harder and harder to tell if something is real or not. This applies not only to images or facts, but also to physical goods such as consumer electronics, pharmaceuticals, or luxury watches. Bosch engineer Louis Tepper is part of a team that has developed a solution: Origify is able to scan and recognize the surface of an item based on a simple smartphone image. Melena and Shuko test it. In the process, they learn a lot about the luxury and vintage watch industry. They meet a young Danish watchmaker, Rune Bakkendorff, who builds watches from scratch. Origify, it turns out, could not only help consumers identify counterfeit products, but also help experts authenticate spare parts or industry identify parts too small for serial numbers or QR codes. Take a deep breath. What you just breathed in was probably about 78% nitrogen and 21% oxygen and some minor other components. But how do you measure that? Measuring gases and their concentrations has been pretty difficult, says Bosch physicist Alex Stratmann. His team's invention, the optical gas spectrometer, OGS, is set to change that. It packs what used to be a complex lab setup into a tabletop device. OGS leverages Raman spectroscopy, a method that exists for about a 100 years and has been used e.g. in the art world to analyze pigments. Our hosts Melena and Shuko learn from Cristina Aibéo, a chemist at Berlin's National Museums, how Raman spectroscopy can help solve crimes and also save energy. You're driving in your car, you notice a new restaurant as you drive past and you wonder: What was that? A car of the not-so-distant future may be able to answer that question. Because it knows what a driver (or passenger) is looking at - be it a landmark on the side of the road, the dashboard, or the road ahead. In the first place, monitoring the driver's gaze and head position enables important safety features, says Bosch product manager Tyler Warga. Geoff and Shuko learn how cameras and radar sensors can pick up signals that people are subconsciously sending. This can help prevent drunk driving, reduce distractions, and save children's lives. Future autonomous cars could even benefit from a sense of the driver's emotional state: they could pick up on Duchenne smiles. An X-ray-like machine, but for waste. That's what Sidharta Andalam and his team at Bosch Research in Singapore have developed. Instead of X-rays, it uses harmless terahertz waves to identify recyclable materials, help make recycling more profitable, and, in turn, divert recyclables like plastic bottles from landfills. Based on the terahertz images, an AI separates different types of plastic. In addition, Shuko and Geoff learn where plastic can be used wisely: Steven Greenall explains why plastic trombones are more climate-friendly than brass trombones.

A quantum leap in the history of From Know-How to Wow! Shuko and Geoff hear from Riccardo Cipolletti, a physicist at Bosch Quantum Sensing. The team he's a part of is developing magnetic field quantum sensors that are 1,000 times more sensitive than today's MEMS sensors. They can, for instance, easily measure the tiniest magnetic fields inside our own bodies like those caused by neuron activity. Neuroscientist Marc Dingman explains why data like this could help doctors better understand some conditions that today just seem bizarre. Cryptocurrencies are becoming more and more relevant, but they're only a small part of what is called Web3, a decentralized Internet, based on distributed ledger technology. The idea behind Web3 is that in a highly connected world, the key to be successful is to find the right balance between cooperation and competition, a so-called “copetition”. At Bosch Connected World in Berlin, Shuko and Geoff talked about this to Bosch's Chief Digital Officer, Tanja Rückert. Tony and JoeyC team up to talk about Double Dragon! The video game movie from the 90s that isn't as good as Mortal Kombat, as funny as Street Fighter, or as memorable as Super Mario Bros. It is full of dumb fun though! In post-apocalyptic California, brothers Billy Lee (Scott Wolf) and Jimmy (Mark Decascos) are highly trained martial artists living in the ravaged city of New Angeles. The pair have been trained by Satori (Julia Nickson), who took them in after their parents died. When Satori finds herself pursued by evil overlord Koga Shuko (Robert Patrick), who's intent on possessing her mystical dragon medallion, the siblings are charged with protecting it from Shuko and his henchmen.
Throwing and catching are human skills that we not only use in sports, but also as a shortcut - saving time compared to walking a few steps. What if robots could do the same? Bosch Research engineer Timm Linder helps explore this in an EU-funded project called DARKO. In collaboration with research labs across Europe, he and his team are developing a robot that will toss items into bins at a warehouse, while aiming to make the robot behave more intelligently among humans and equipping it with a better 3D perception and semantic scene understanding of the environment it is deployed in. Perhaps the robot can learn some lessons from Ceola McGowan: The world champion in double-bit axe throwing has some advice on how to precisely throw oddly shaped objects and shares her technique with Shuko and Geoff. What's the future of more sustainable truck driving? Hydrogen! In this episode, Bosch engineer Michael Marino explains how he and his team develop fuel cell stacks that convert hydrogen into electricity. Each fuel cell produces less than 1 Volt, but hundreds of fuel cells stacked on top of each other can power long-haul trucks. For example, Nikola Motor Company have trucks with Bosch fuel-cell technology on the streets of the United States. These vehicles are quieter and accelerate faster than trucks with a combustion engine, and have 0 g/km local CO² emissions . Moreover, Shuko and Geoff (virtually) visit a farm - a hydrogen farm. Kore, a startup in California, is working on producing green, sustainable hydrogen made from farming waste. Our guest is J. Trent Harris who is the executive chef at the beautiful new sushi restaurant called Mujo in Atlanta, Georgia, which opened in February 2022. At Mujo there are only 15 seats at the counter made with cypress and he serves an omakase-style tasting menu that changes daily based on the catch of the day. Earlier in his career, chef Harris worked in classic western kitchens, including the Michelin-starred modern Portuguese restaurant Aldea in New York where he was the chef de cuisine. But somehow, he decided to choose sushi as his focus. He trained at reputable Ginza Sushi Onodera in New York as well as in Tokyo and worked as the executive sous chef at Shuko in New York, which showcases a great balance between authentic and creative. Imagine being able to remove odors and bacteria easily and on the go, without needing to wash your clothes. In the latest episode of our "From KNOW-HOW to WOW" podcast, we talk about how our FreshUp device uses plasma technology to remove odors from fabrics simply by brushing over them. Plasma occurs naturally in the universe. During the show, Tobias Wende, a Bosch electronic system engineer, talks about how they were able to incorporate plasma technology, which releases active plasma particles to dissolve simple odor molecules, into a device the size of a glasses case. What an unpleasant smell is, however, differs from one nose to another, says Antonie Bierling, researcher at the Universities of Dresden and Jena. She works on finding out more about which molecules stink and which ones have a lovely scent and shares her know-how with Shuko and Geoff.
Shuko has a passion for motorcycles and takes Geoff on a (virtual) weekend ride on curvy mountain roads. What helps make their ride safer and more comfortable is ARAS, Bosch's Advanced Rider Assistance System. Two of its developers, Yuki Oshida and Daniel Vetter, explain how they transferred ideas like adaptive cruise control from passenger cars to motorcycles. Turns out, 2-wheelers have peculiar physics! Victor Manuel Rivera knows that, too. He pushes the limits of the laws of physics during his motorcycle circus act: The Globe of Speed. No risk, no fun? Wrong, says Shuko. After an exclusive test ride with Daniel, she is convinced that electronic systems can mitigate some of the risks inherent to motorcycles without reducing the fun. Thanks for tuning in to the last episode of this season - we're ending on a high! My guest today is the lovely, and incredibly talented co-founder and chef of the much-loved Japanese restaurant Koya. Shuko Oda and her business partners John and Junya opened Koya in Soho back in 2010, specialising in Udon - the chewy moreish flour-based noodles which they handmake fresh every day and pair with an array of beautiful broths and toppings. Shuko is also renowned for her blackboard specials where she and the chefs at Koya really get creative and use the best of British ingredients to come up with dishes that wow! Koya opened a second restaurant in the city a few years ago, and what they're doing is a recipe for success. Simple dishes, high-quality ingredients, thoughtful cooking, and exceptional flavours. As we know, restaurants in London come and go, but Koya is still as loved, as popular, and as good today as it was 11 years ago. I'm so glad I got to sit down with Shuko and chat with her about how Koya came to be, the dishes that so many of us Londoners have come to love and crave, and what led her from Japan to London, and into the kitchen. That an ancient king had given them to his sons for safe keeping. A Chinese village is being ransacked when one member leads the leader of the group to a cave, we see one half of the medallion and the leader reveals herself, and that it's “modern” times telling someone they found it. The city scape of New Angles in 2007, after the big quake frames the story. Koga activates the soul half of the medallion he has and instructs his minions to find the other half.S:-What's with the big fans on top of the buildings?-The special effects aren't NEARLY as good as T2We then meet the Lee brothers They're in a martial arts completion that is lost because of Billy be dq'ed, They're also shown to have the other half of the dragon medallion. George Hamilton and Vanna White host the evening news, and Andy Dick as the weather man. It seems the police have given up the city at night and roaming gangs control the streets, as the Lees are surrounded by “The Mowhawks.” A car chase ensures where its shown cars are fueled by garbage and paper. After a wreck, they're saved by Powercore and Marion. Satori gives the brothers more background.S:-“Eat some fist, butt-head”-Those computer graphics are terrible-The Abobo guy is so over actedBack with Koga, Abobo gives him information about the Lee brothers, he is rewarded by being experimented on with new steroids. It's shown Marion is the daughter of the police chief. Koga finds where the Lee brothers are staying and comes for the medallion. We find out he used to be called Victor Guisman, but “nobody would party with him,” so he changed it to Koga Shuko. When he sees Billy wearing the medallion, a large fight breaks out. Koga using the medallion and we're introduced to the new Super Abobo. After it seems to be over, Satori tries to get the medallion from Billy, and it's revealed she's been possessed by Koga. After getting Kaga out of her, she sacrifices herself to save the brothers. All the gangs are shown to be meeting under the guidance of the billed, “Maniac Leader” (Micheal Berryman), who is quickly dispatched by Koga. Super Abobo was showing to have survived the explosion and the boys mourn Satori.S:-Classic rebelling daughter against strict father.-Obvious that Jimmy Lee is a real martial artist, Scott Wolf isn't-Abobo off the stage, “nothin' but net”-Terrible one liners, “is it just me, or is it hot in here”-Michael Berryman: Sept 4, 1948, has hypohidroic (hypo-hid-droic) Ectodermal (echo-dermal) dysplasia, a condition where he has no sweat glands, hair, fingernails or teeth. He was quoted as saying, “I was pretty we grounded. I was being teased and whatever and I didn't have anger skills, so I would go to the parents and say your children are brats and tell them they were bad parents.”The brothers have a small fight and resolve to work together and come up with a plan. As they walk, the end up in the middle of a super gang fight. After almost escaping and barricading themselves in a boat house, they escape on a boat and that chase begins. The boat chase ends with the Hollywood river catching fire, and seemingly the brothers die in a crash, but of course they don't. Some exposition they agree to ask Marion for help. She has been, basically, torturing Abobo for information. The brothers show up, ask for help, and invade the Shuko plaza. They witness Koga attempting to bribe Marions dad, which doesn't work. Another fight breaks out, the brothers and Marion vs Kaga inhabiting various bodies. And The police chief against Whip; who looses. Jimmy is captured.S:-“You're Ug-Lee, I'm Home-Lee…” Also, the way they “high five” balled fish and open hand… Me and my friends did this after this movie. We were super cool.-I thought the matte paintings were pretty good. Well done.-The guys fighting over who follows Alyssa Milano into the tunnels.-Why does Billy just randomly have fishing string in his pocket?-Channel 69 news… hahaAs the gangs riot, the chief tries to rally his officers to go back out on the streets and take them back, but no one follows. Jimmy being captured, Koga gives exposition and more background about working with their father. As Billy starts to get romantic with Marian, the gangs attack the Powercore base. Abobo finally sees what Koga has done to him, and goes berserk. Jimmy arrives, possessed by Koga. As they fight, Billy gives up on the medallion, and throws it away, but it comes back and grants him the power of the body. During the fight, Billy losses the medallion, Koga grabs it and units them. He then splits into two monster fighters. As they fight, Abobo enters and tells Marian to turn on the lights, allowing the brothers to defeat the monsters, and in doing so, catch the medallions, and then they unite them. Jimmy enters Kogas body, does some slap-stick, confesses to the chief and is arrested and they hear sirens in the night. As they all celebrate, Abobo shows up, asks to join them, and thinking Billy has possessed him, lets him drive… When Billy shows up in the back seat, they realize their mistake and scream. We end on the henchmen walking away arguing who's fault it was.S:-The whole thing is so overly dramatic.-The double dragon video game in the Powercore HQ-The obviously fake swords during the boss fight.-“You're weak like your father” “You're ugly like your mother…” JFC.-This whole movie about the double dragons, they get them for 5 minutes only to beat up a normal dude. Our guest is Yael Peet who is a chef with impressive culinary training at top restaurants in New York City including Prune and Shuko. Until April 2019 she was the co-executive chef at Karasu, which is a cool Japanese-influenced izakaya-style restaurant in Fort Greene, Brooklyn. Yael and her co-executive chef Elena Yamamoto joined us on Episode 158 to discuss her unique culinary approach and their forthcoming new restaurant Fury’s. While getting ready for opening the new restaurant, Yael participated in a global culinary competition called the Washoku World Challenge and went to Japan last February. Clean Chinese Food and Runaway Pigs It’s 2019 and people still use food to perpetuate racist stereotypes. Food blogger and nutritionist Arielle Haspel opened up “Lucky Lee’s” a “clean” Chinese Restaurant named after her husband. I personally don’t have a problem with someone opening up a restaurant serving food from ethnicities or cultures not their own, as long as they respect it. Haspel is not respecting Chinese culture by playing into awful stereotypes about Chinese Food being greasy and making you feel bloated. Don’t even get me started on MSG. In the ’50s and ’60s, Chinese Restaurants were incredibly popular, but never considered fine dining because of negative stereotypes. Putting up Instagram posts saying that your food has less oil than traditional Chinese Food is like putting up a post saying “Our chicken is real chicken, not cat like other Chinese restaurants” Also, this place is only open from 11-3 so its barely a restaurant. In other news Princess, the Pig escaped her pen in Humboldt County, California. A neighbor posted a photo on Facebook, and the local police were able to figure out who the owner was. They went to a neighbors house to ask him to watch Princess while they tracked down her owners. The neighbor obliged, but when the police got back to the home, the neighbor was in the front yard butchering Princess. R.I.P Princess the Pig, we hardly knew ye. Tipping is Stupid and Unfair, but Completely Necessary Finance Giant CNBC ran this article in February, but it went viral this week. With a clickbaity title like”This Tipping Trip Can Save You Up To $400 A Year”, of course, I knew not to expect anything good, and would probably walk away angry. Long story short, to save you the click and not give them the web traffic, the author says that it is socially acceptable to tip on the pre-tax total instead of the post-tax total and he is correct but just because he is correct doesn’t mean he is right. People, customers, guests, whatever you would like to call them don’t tip on service. They tip on personality, how they connect with their server, and a million other tiny little things. All this author did was take money out of servers pockets. This article will not turn any pre-tax tippers into post-tax tippers but will have people think that they are saving money(You just spent $100 on dinner, tipping $20 instead of $22 isn’t going to save anything) Tipping is a necessary evil though. I definitely come from a place of privilege for what I am about to say. I’m a Tall Cis-Het White Male who has only worked at Upscale Casual/Fine Dining establishments. Every place I’ve ever worked at had a check average of $50-$100 per person, and people tip me between 18 and 20 percent. I love working for tips because I live in a place where people tip well, and I am a person that statistically speaking, people like to give money to. If you live in a small town and work at a chain restaurant that gets people in by serving them 3 courses for $10, tips are everything to you. That fifty cents you get from a table tipping post-tax might be what actually keeps you above zero this week. Server wage is $2.13/hr in most places, which means after taxes you are working strictly for tips. I can go deep into serving actually being skilled labor, and how most people reading this cannot do what my team is able to do. Every dinner is a symphony that I’m conducting, and much like a conductor, all I can do is tell my orchestra what to do and hope they execute it correctly. If your food comes out wrong, give the restaurant a chance to fix it before you decide you now aren’t going to tip. If you ask a female server for her number and she says no and you don’t tip, you’re a garbage person. Lastly, if you actually want to save money, learn to cook and dine out less. The best way to learn to cook is to keep following us on Instagram and Twitter and asking us questions about recipes, techniques, and anything else you can think of food wise. A Guide to Sake with Zak Gross Sake Expert Zak Gross joined us in the studio this week to talk all this Sake. Zak is a partner of Soto Sake, a newer sake brand that is taking the US by storm. It is an incredibly smooth and affordable Junmai Daiginjo. Essentially everything I know about sake I learned from Zak. We worked together at Sen Sakana and he made sure to teach me everything I needed to know and then some. I still occasionally text him questions and he always gets back to me and explains his answer thoroughly. Zak started serving at a very popular Japanese Restaurant in Hollywood, California and decided he would separate himself from the other servers by learning about sake and being able to upsell expensive bottles. His sake knowledge allowed him to go work at top Japanese restaurants all over LA and NYC. He eventually became the head bartender at Shuko and then worked with as the Beverage Director at Sen Sakana. Sake 101 There are two ways to categorize sake Purity: Junmai: Roughly translates to “Pure” this classification means that this sake was made only with Water, Yeast, Rice, and Koji. The rice milling can be at 70% for it to be called Junmai, but can also be a prefix for Ginjo and Daiginjo, hence Soto Sake being a Junmai Daiginjo. If sake does not have the Junmai label it means that the brewer decided to add a small amount of neutral spirit to the sake. Milling: Honjozo: This is the most popular classification of sake in Japan. It is the minimum amount of polishing at 70%. I like to try a brewery’s Honjozo before I try anything else because if it is good, the rest of their sake will most likely be good Ginjo: Rice with a polishing rate of 60% or less, a cleaner sake compared to Honjozo Daiginjo: Rice with a polishing rate of 50% or less, the highest quality sake

It was lovely to get out and have a drive in my 2018 Nissan Leaf. I went to St Pol De Mar which is just north of Barcelona and I checked out the charging points within the town. There were three of them and in all of the places only the granny charging speeds were available. I could plug into Shuko sockets and get 3.3 kW but it wouldn’t do me any good plug-in into the type II sockets as the Menneke’s sockets weren’t working. It was a good day out and finally I got to come Calella de Mar and I found a Type II socket which worked. I plugged in and had a wander around the town while the car was doing some charging up. I put about 12% into the battery and I was happy with that. I was able to get back home with 61% in the battery and so it was a good cheap day out driving my 2018 Nissan Leaf. After some time bussing tables and spilling drinks, Lewis preformed as part of the legendary Radio City Music Hall Rockettes. There were roles in Phantom of the Opera and Chitty Chitty Bang Bang as well, but it was during break on a trip to Italy, that table wine and good food changed her high kicking course. Popping bottles at such restaurants like Gunter Seeger, Shuko, The NoMad Hotel and Rouge Tomate, Lewis' Christmas Spectacular is now more about Champagne, than a chorus line.
