Today's guest, Charlie Mitchell of the one-star Michelin restaurant Clover Hill in Brooklyn, New York, has a wisdom that is hard to come across in a chef barely into his 30s and someone who has gripped the food headlines as becoming the first black Michelin-starred chef in New York City's history and one of only two black chefs in America. Yeah, you heard read that correctly, the first. In 2022, the Michelin guide recognized the work that he and his partners were doing in Brooklyn Heights and saw that the work that he put in, the training, and his dedication to the craft of cooking helped leapfrog him over even some of the more established and well-known chefs in the country's most competitive restaurant city. Here's what else we talked about: Growing up in Detroit, Michigan, and hailing from a family of auto workers Finding a mentor who pointed him in the right direction and inspired him to leave Detroit and go to New York, even though it was his last choice of city Pushing himself to work in the hardest kitchen in NYC Why his first cookbook, Eleven Madison Park, motivated him to work there The layers of protection from failure that EMP has to ensure that each guest has the experience that they expect Why working as a commis at EMP was one of the biggest growth point in his career Going out on a ledge and taking over a smaller neighborhood restaurant in NYC, but then quickly learning he wasn't ready to be the man just yet Meeting his future partners at Clover Hill and why it's such a great match How they slowly transitioned to a tasting menu-only restaurant Creating a fine dining restaurant that was reflective of the owners and why it's so important for Clover Hill to make people feel comfortable and at home without the pretension that you may find often in fine dining Charlie talks about why honest cooking is so important to him Raising their prices because they are getting better ingredients to work with, not just because they now have a Michelin star When they started getting clued in that they may be on the Michelin radar The conversations he had with his partners after they won the star What it means to him to be the first black chef in New York City history to have a Michelin star What he learned once he started writing tasting menus and deciding what kind of journey he wanted to take the guests on How he sees the restaurant continuing to evolve over the next few years How he folks on "doing his part" when it comes to being a leader and showing other black chefs what's possible. Leading by example Sponsors A huge shout out to our sponsors, Maxwell McKenney and Singer Equipment, for their unwavering support, which allows us to be able to bring these conversations to you. As larger portions of Gen-Z reach legal drinking age, their impact on the alcohol industry is becoming more pronounced and the segment's preferences have come into full view. What's become increasingly clear is that how this demographic interacts with alcohol is dramatically different from each generation that's come before it. Strikingly,  Gen-Z is more inclined to imbibe on-premise than any other age bracket in the current market. So as this demographic brings its shifting consumption patterns into bars, restaurants, and venues, in this Essential Talk, Charlie Mitchell, Research & Insights Director at Nielsen IQ Global,  is taking a look at how brands can adapt to capture Gen-Z's attention on-premise.  Key topics mentioned:  Identifying Gen-Z: Mitchell explores the core values of Gen-Z to give brands and bars a sense of how to target this consumer group. "If you activate well, you can build relationships for life." The importance of digital marketing: Gen-Z is highly inclined to explore new categories. One of the biggest contributing factors to how they establish new associations with brands is through social media. Mitchell shares some strategies for engaging Gen-Z digitally before they even arrive on-premise. Occasion based drinking: Mitchell makes the case for why the on-premise's allure to Gen-Z is rooted in their value for experiences. He dives into the type of experiences Gen-Z is after and how they can drive engagement from this demographic. In this episode you'll hear from:Charlie Mitchell, Research & Insights Director, Nielsen IQ Global Mentioned in this episode:NielsenIQ Learn More About Park StreetSign up for our Daily Industry Newsletter.Sign Up for our Monthly Newsletter.Check out Park Street's Guide to Getting Started in the U.S. MarketFollow us for more industry insights onLinkedIn FacebookTwitterInstagram

Chuck Mitchell Season 2 continues with another extraordinary Tallahassee neighbor – Chuck Mitchell.  Chuck’s service to our community has impacted countless lives and will benefit generations to come. As we explore community building on this show, I especially love Chuck’s story because there’s a prominent theme of physically building.  As a founder of Mad Dog Construction, he’s impacted the way we build in this community – focusing on responsible growth and sustainability.  Through his volunteer work, he’s organized and participated in countless work parties to build homes for people.  He’s built playgrounds for kids.  And he played a major role in the creation of the Greenway along Miccosukee Road. But you know… that’s not even why I asked him on this show.  It’s his Animal Therapy work that caught my attention most recently.  Chuck told me a story many years ago that has stayed with me all this time… it’s about how dogs came to be allowed in our local courtrooms to support child victims of sexual violence.  This story is both heart breaking and heartwarming at the same time… but hearing about the impact the animals and volunteers have on people’s lives is what makes this story ultimately uplifting and inspirational. Because we covered so much territory with Chuck, we’re giving you two episodes with him.  In this first one, we cover the TMH Animal Therapy program, the beginnings of the Miccosukee Land Co-op and Mad Dog Construction, and throughout we talk about building community through shared experiences like a legendary softball team and volunteer efforts.  Then we’ll have Chuck back in the next episode to share two stories that demonstrate why local builders and residents play an important role in shaping the community where they live and work.  Join us for part 2 to hear about Chuck’s role in preserving the DeSoto site where Christmas was first celebrated in America. And also learn about the development of the Miccosukee Greenway which is surprisingly relevant today as our community considers how to develop the Welaunee area. Mentioned in this episode: TMH Animal Therapy Miccosukee Land Co-op Mad Dog Construction Big Bend Habitat for Humanity Softball story about Chuck's dad, Charlie Mitchell

In this episode, Charlie discusses his early soccer life, turning pro, transitioning into coaching, Charlie Mitchell is a Scottish American former soccer defender and coach. He played ten seasons in the North American Soccer League from 1970 to 1979. Mitchell played for St Mirren F.C. in his native Scotland.[1] He joined the Rochester Lancers of the NASL in 1970. The Lancers won the NASL championship in 1970, and Mitchell was named an NASL all-star. He was an NASL second-team all-star in 1971 and 1975, and an honorable mention all-star in 1972 and 1974.[2] In 1976 Mitchell moved to the New York Cosmos,[3] where he had an assist on a spectacular bicycle kick goal scored by his teammate Pelé in a game against the Miami Toros.[1] In 1977 Mitchell played for Team Hawaii, where he became player-manager in mid-season.[4] Team Hawaii moved to Tulsa in 1978 and became the Tulsa Roughnecks; Mitchell was the only player Tulsa retained from the Hawaii roster.[5] Mitchell played the 1979 season for the Toronto Blizzard,[3] and finished his NASL playing career with a total of 206 NASL regular-season games and nine NASL playoff games.[2] After ending his playing career, Mitchell returned to Tulsa as manager of the Roughnecks.[4] The 1980 team finished with a 15-17 record and lost to the Cosmos in the first round of the playoffs. His 1981 team started with an 11-10 record, but in July 1981, Mitchell was replaced by his assistant Terry Hennessey. Sports Illustrated reported that this was due to team management's dissatisfaction with the Roughnecks' low-scoring offense.[6] Mitchell remained a popular figure in Tulsa, as a participant in local youth soccer programs,[7] and as a sports bar-restaurant operator.[8] He coached the men's and women's soccer teams at Northeastern State University in Tahlequah, Oklahoma for nine years[9] until his resignation in June 2005.[10]

Bennet Kelley speaks with the author of HACKED: The Inside Story of America's Struggle to Secure Cyberpsace, Charlie Mitchell. The spectacular cyber attack on Sony Pictures and costly hacks of Target, Home Depot, Neiman Marcus, and databases containing sensitive data on millions of U.S. federal workers have shocked the nation. Despite a new urgency for the president, Congress, law enforcement, and corporate America to address the growing threat, the hacks keep coming—each one more pernicious than the last—from China, Russia, Iran, North Korea, the Middle East, and points unknown. The continuing attacks raise a deeply disturbing question: Is the issue simply beyond the reach of our government, political leaders, business leaders, and technology visionaries to resolve? In Hacked, veteran cybersecurity journalist Charlie Mitchell reveals the innovative, occasionally brilliant, and too-often hapless government and industry responses to growing cybersecurity threats. He examines the internal power struggles in the federal government, the paralysis on Capitol Hill, and the industry's desperate effort to stay ahead of both the bad guys and the government
