Seafood consumption is going up around the world, including in the US, with salmon being the fish species Americans love to eat the most. (The only seafood Americans eat more is shrimp, who of course are crustaceans, not fish.)  The biggest wave of alt-meat so far has focused on beef replacement like burgers and sausages, given how many consumers already view red meat as bad for their health. But the perception that salmon is a healthy food is widespread, meaning that any effort to entice consumers to switch to alt-salmon will be swimming upstream in ways that alt-beef isn't.  Yet the need for fish-free salmon is as vast as the sea, both for animal welfare and ocean health reasons, but it's far more difficult to replicate salmon's texture than ground beef. Enter, Oshi, a three-year-old startup that's raised $14.5 million dollars to date and has invented new machinery to essentially build a fish-free salmon filet layer by layer.  In this episode, Oshi CEO Ofek Ron talks about his journey from being an animal advocate working at a nonprofit vegan advocacy organization to taking the leap to start his own alt-protein company. As you'll hear, at first he really had no idea how he'd remake salmon, yet still assembled a team of technical co-founders inspired by his desire and they have raised money based on their skills and not the idea.  Since then, they've invented new technology, released various iterations of their salmon filet, and now have entered more than a dozen US restaurants. For full disclosure, my own company, The Better Meat Co., works with Oshi, but I can assure you that my admiration for the company predates that partnership and the decision to bring Ofek on this episode is also independent of it.  So, will Oshi help turn the tides for our oceans and their finned inhabitants? Time will tell. But Oshi is certainly riding a wave right now that's taking them from across the Mediterranean to the shores of the US.  Discussed in this episode Ofek was influenced to become vegan after seeing this speech online. Ofek is a founding board member at the nonprofit Vegan-Friendly. He met his cofounders via the Good Food Institute and the Hebrew University of Jerusalem. More about Ofek Ron: Ofek is the co-founder and CEO of Oshi, a leading company in the plant-based seafood industry, where they have been at the helm for 3.5 years. Prior to that, they were the CEO of Software Sources, a role that followed their entrepreneurial venture as the co-founder and CEO of Buzz Production, an event production company. Ofek holds a BA in Economics and Business from Reichman University in Israel. A dedicated vegan for 13 years, Ofek has been an active advocate for animal rights, notably co-hosting the largest animal rights protest in Tel Aviv in 2017. Outside of professional and advocacy work, Ofek is a proud parent of two and is married.

It's a common time for questions to come up among new vegans (even seasoned vegans), and since it's an emotionally charged time for most (as in the Holiday Season makes you hyperventilate with all the excitement if you're someone like me), all the tips shared will be helpful for many other occasions as well. In part 1 today, we'll be covering the culinary and food aspects with tons of tips for delicious holiday cooking, and in our next episode, some of the deeper, more internal issues that can come up during the Holiday season. Kellogg's Cornflakes, HUEL shakes, Marmite, Cow & Gate baby formula, Tesco's plain flour, Soreen Bars, Sainsbury's Orange Juice, Oatly Oat Milk, Nutri-Grain Bars, Slimfast…  All of these products have one thing in common. They contain synthetic (not natural) vitamins and minerals.  What are the synthetic vitamins made of? Do they work like natural vitamins? Are there negative side effects? The clinically proven answers to these questions might surprise you. With £500k of UK government funding - one  startup, BIOVIT,  and  a team of scientists are comparing the effects of synthetic vs plant-derived nutrients. Synthetic nutrients, that are in all fortified foods, which over 80% of us consume daily, have been shown to have limited to no effect, and in some cases increase cancer risk. Recent article in ‘Food Navigator' here The fall out of this could have major impacts on food labelling, nutrition guidance, human health, and food production sustainability. With Governments globally being lobbied by companies such as Safe Food Advocacy Europe on broader use of synthetic ingredients, it's only a matter of time before all certified natural and plant based foods are banned from using synthetic nutrients for good. SAFE's campaign here.  The vitamins lurking in your everyday corn flakes are not the wholesome nutrients nature intended, instead, they are lab-made vitamin analogues, often made using unsettling ingredients such as coal tar, cattle brains, and a cocktail of harmful chemicals. These artificial impostors, known as 'synthetic nutrients,' are not identical to natural nutrients. They are missing essential enzymes and cofactors required for absorption and use by the body, and there is a growing body of clinical research that indicates they do not work and may even increase the risk of cancer.  Highly regarded website Healthline outlines key differences between synthetic and natural nutrients, and lists a large body of evidence showing adverse health effects. “Synthetic nutrients from supplements and fortified foods may have deleterious effects on health, especially when used in high doses”  BIOVIT are the UK's leading experts in plant-derived nutrients for food. They have developed the world's first clinically developed and tested plant-derived multinutrient blends that can replace synthetic multinutrients,  for use in food manufacture. Now, alongside Professor Richard Bracken and his team at Swansea University, they are conducting first-of-its-kind research into the bioavailability and efficacy of plant-derived vs synthetic nutrients.  Ex-CEO of the ‘Vegan Friendly' certification and founder of vegan rugby club Green Gazelles Brendon Bale commented: “Consumers of plant based and natural products value transparency and trust most of all… synthetic micronutrients are neither natural or made of plants, and so the labelling needs to declare that. It's about health and trust”.  Ky Wright, founder of BIOVIT, suggests the shift to natural nutrients should be common sense for the food giants:  “Independent surveys have shown that over half of the public are generally unaware that foods they eat contain synthetic nutrients. They also show that a heavy majority (90%) would prefer their fortified foods to contain only natural nutrients, and 86% would pay more. There's a massive opportunity here for food companies and consumers.”

In honor of my fellow vegans and vegetarians getting shit from their families this Thursday (and also in honor of World Vegan Month), I wanted to do an episode to help those wanting to lean in a more plant-based direction. This episode was filled with vegan hacks, recs, tips, and heartfelt feelings. I've been vegan for seven years now, and one of my first vegan friends was podcaster, activist, and author Jasmin Singer. She became one of my closest people because she's a compassionate, generous powerhouse and sister from another Jewish mister. Jasmin is the author of The Veg News Guide to Being a Fabulous Vegan, an excellent place to start if you want to learn more about everything we talked about in this episode. She's also the author of Always Too Much and Never Enough: A Memoir, and the editor of Antiracism in Animal Advocacy. She's also the co-host and creator of Our Hen House, an excellent podcast that centers around animal rights.  I hope this conversation is helpful to you, no matter where you are on your journey. I remember being astonished at the options in the grocery stores during my first visit back in 2013. Funny enough, that was the first time I'd heard about Veganuary (vegan January). Icelanders who normally eat meat were excited to take on the challenge of only eating vegan food for the whole month of January. This meant that grocery stores in the country had ordered vegan friendly foods to meet the demand. I first met Paul by accident in Singapore. Seb and I were staying at The Marriott where we were meeting up with friends and our previous travelers who had just finished a trip in Singapore. We were having breakfast and I had my coffee-to-go cup with some vegan sticker on it and Paul approached me and said he was vegan too! As soon as he told us about his blog I knew exactly who he was! Since then we've worked on a couple of projects together and we have become friends. It's wonderful to have him on the podcast.In this episode, we talk about possibly the most famous honeymoon destination of the world, the Maldives! They traveled here in 2019 and have blogged extensively on their findings from a vegan lens of course. In this podcast, you will find out about the tourism scene in The Maldives and a little bit more about three vegan-friendly ultra-luxurious resorts that you might like to put on your wish list as well as some of the attractions of visiting The Maldives.Since we recorded this episode, Paul and his lovely partner Caryl have since moved back to the UK in light of COVID19 to the Southampton area not far from where I grew up. The StoryThe Arroyo del Imperio Chardonnay 2019 is a $5.99 Trader Joe's wine sourced from vineyards in the foothills of the Andes in the Central Valley of Chile.There usually isn't much of a story to tell for six buck Trader Joe's Chardonnay. There is no technical information available concerning the production of this wine. The back label of inexpensive Trader Joe's wines will often give a hint as to what is in the bottle.But the back label for the Arroyo del Imperio Chardonnay 2019 does not say much of anything other than the general location of the vineyards. No hints like butter in the flavor profile that would give some indication of oak treatment of some sort. Nothing that will even allow you to make a guess.The back label does tell us something about this Chardonnay and that is it is both Vegan friendly and a Kosher wine. Here is a link to an explanation of Kosher wine. A simple version is a Rabbi has to oversee parts of the winemaking process. This a wine that Trader Joe's brought in for the Passover Holiday before we were so rudely interrupted.I used to think, "isn't all wine Vegan Friendly?", after all, it is made from grapes. It turns out that the "fining" process used egg whites. To "fine" the wine is to add an agent to the wine to remove chemicals that make the wine cloudy or bitter.The standard way to complete this was to used animal-based products, but today, mineral-based components such as volcanic ash are used. Vegan friendly isn't the same as Natural wine, but it does use some of those practices.I guess there was more to this $5.99 Chardonnay than I thought. The alcohol content is 13%.The Arroyo del Imperio Chardonnay 2019 Tasting NotesThe color is a pale wheat yellow. The nose is crisp and clean, there is lemon, green apple, pear, lime, a little orange blossom honey, and spice lemon cough drops.This is a medium to light-bodied Chardonnay, fairly simple, but tasty. It starts with non-sweetened lemon/lime, tart apple, Anjou pear, and pink grapefruit.The mid-palate does not have a lot to add, but there is tart apricot and maybe some of that salty, nutty, "on lees" thing. The acidity is balanced, the flavors get to unfold and the acid does not bite.The SummaryThe Arroyo del Imperio Chardonnay 2019 very useable $5.99 Chardonnay.It may well perform better as a food wine than sipping wine, though it drinks well.I prefer my Chardonnay to have a more detailed production, some malolactic, some on lees, a little oak, but I can not complain about the Arroyo del Imperio. The price is right, it is Vegan approved and it is Kosher.With Passover in the rearview mirror, this Chardonnay is now a Tuesday night Netflix wine
