Think about your favourite foods… the dishes you eat to make you happy. Are they traditional African foods - like vegetables, fresh fruits, roots, tubers, nuts, beans, and staple whole grains? A new small-scale study found that when participants switched from a western diet to the traditional Kilimanjaro diet, their health markers improved in as little as two weeks. In “Bala's Bistro: Where Mali Meets Memphis,” Gravy producers Marie Cascione and Joshua Carlucci profile Malian chefs, cousins, and business partners Bala Tounkara and Mady Magassa. Their story takes us from West Africa to the casinos of Tunica, Mississippi, and finally to South Memphis, where their restaurant, Bala's Bistro, has become an emblem of success and belonging for African immigrants in the South. Today, 21% of Black Americans are either immigrants themselves or children of immigrants. The vast majority of Black immigrants in America live in the South, and Tennessee is one of the fastest growing states for this community. Bala and Mady both immigrated to Memphis by way of New York City in the early 2000s. Looking for some semblance of community, they landed in Whitehaven, a Black neighborhood that, at the time, had only a small enclave of West Africans. They started cooking in restaurants with no initial plans beyond making money to make ends meet. Over the years spent around fire and knives, Bala and Mady decided to dive into a business venture of their own: making food from home, as they saw it. They opened Bala's Bistro in 2019 to answer the question: Where's all the African food in Memphis? Though Bala and Mady are from Mali, they make and serve food from all over West Africa. Fufu, egusi, maafe, and saka saga—just to name a few—all make star-studded appearances in the glass display case from which Bala's customers can pick and choose to make their plates. The case looks like a buffet for a reason: Bala and Mady want you to ask about the food. Bala used to be self-conscious of what he ate back home, but today he embraces it and encourages others to give it a shot. When Memphians wonder about some of the soupy, bubbling concoctions, he explains and gives them samples. He's big on education; he wants curious eaters to satisfy their wonder, but even more, he wants Memphis to know that the soul food they know and love, and the rich and spicy cuisine of West Africa, were cut from the same cloth. In this episode, Cascione and Carlucci talk to Bala Tounkara and Mady Magassa all about their journey to Memphis and the story of their restaurants. Gravy listeners will also hear from guests, some who come to Bala's for a taste of something new and leave with a sense of community. Having just opened a second restaurant—Mande Dibi—Bala and Mady double down on the idea they hatched long ago. The pair place their bets on African food finding a widely-adored home, just as they did, in Memphis. At the same time, their restaurants have become a place of refuge and community for all who come to eat at their table, whether from Memphis, Mali, or all that in between. Food and fashion are common ways people begin acquainting with new cultures. In this episode, Alan and Jessica talk about Bubble Goods, who it serves, and how they are helping emerging food brands and unique consumers alike. Jessica Young is a fan of Fufu and the founder and CEO of Bubble Goods. With 10+ years in the food and wellness industry, Jessica saw a gap in the market: food brands were innovating (specifically in the health foods sector), but they didn't have the digital know-how or right platform to launch and scale on. It was becoming harder and harder for these brands to get onto Whole Foods, launch and scale within Amazon, and drive customers into their singular e-commerce channels. Jessica saw an opportunity to launch something similar to what Etsy has done in the handmade goods space by creating and curating a marketplace for innovative, truly strict-label, independent food brands. When she was starting her career, she didn't intend to enter the food industry, but her passion for cooking triggered an evolution that led her to it, and she never looked back. After going to culinary school, she worked as a chef in NYC in Michelin-starred restaurants for a while before she became burned out and began exploring the online food space. She transitioned to the food startup scene in 2013 and eventually became the first employee and Head of Product and Operations for Daily Harvest in 2015 before launching Bubble Goods in 2019.Bubble Goods is a drop-ship marketplace that curates brands for their users and gives small independent food and beverage brands the ability to market nationally. Jessica tells us they have a strict vetting process to make sure they are only delivering the best to their customers, but there is no order minimum so they can remain start-up friendly and keep their finger on the pulse of emerging trends. Bubble Goods has two main groups of customers: one is interested in discovering innovative foods, and the other is searching for foods that adhere to lifestyle and dietary restrictions. t shouldn't have been this hard, and it shouldn't have taken this long, but finally, LAFC has punched their ticket to the 2023 MLS Cup Playoffs, and boy does it feel nice! On Episode 280, hear all about how the Black and Gold downed the Loons and booked their spot in the postseason. Turns out, Denis Bouanga is good. Really good. But even Denis Bouanga would need to pat himself on the back for the history he accomplished on Wednesday, becoming the first player in LAFC history to score a hat trick in the first half!From there, LAFC was off and running. A Minnesota OG followed by Fufu's great steal, breakaway, and finish capped off a raucous Appreciation Day celebration. Now sitting third in the table, LAFC will need all points possible to finish as high as they can. Performances like this one certainly show how hard an out LAFC will be come playoff time. Also on this episode, we share a couple stories about the OG in falcon flight, Ken Miknuk, upon his retirement from being attacked by Olly. It's Episode 272 of Defenders of the Banc, now heard in Fiji! You know what they don't have much of in Fiji? TURF! LAFC falls to yet another inferior club on turf, this time in Charlotte. Listen as we recap and rant about the road loss. LAFC played a dismal first half, falling behind 1-0 after a series of turnovers and not doing a whole lot on the offensive end. When was the last time you heard of an LAFC club completing 90 passes in a half?Just after the hour mark, Dolo would make his first move, and it was a good one. Subbing on Olivera, Fufu, and Acosta seemed to get the ball moving, and soon after, Super Mario Gonzalez would open his account after a great pass from Denis. The lead was short-lived, however, as a set of Charlotte subs had their desired effect. The Rangers legend, Scott Arfield, pounced on a rebound after a solid save by J-Mac, and LAFC found themselves down a goal yet again. Despite a series of solid efforts by Denis and Olivera, it was too little, too late, as LAFC falls in Charlotte. Also on this episode, Filly takes us on a trip through Fiji, Scarf rants about our upcoming gauntlet in September, and the boys are waking up very early for eggs tomorrow.
