Kennedy Jr. threw his hat into the presidential race, he brought a fresh focus on a subject many Americans had been ignoring: their health. RFK Jr. has been outspoken on everything from genetically modified organisms (GMOs) in our food to the overuse of vaccines, and Americans are beginning to listen. Health isn't just an abstract idea or a checkbox on a New Year's resolution list. It's the foundation of everything we do. And as the saying goes, “No one on their deathbed wishes they'd spent more time at work—they wish they'd had more time, period.”RFK Jr.'s Vision for a Healthier America The GMO Battle One of RFK Jr.'s most passionate issues is the elimination of GMOs in our food supply. He argues that GMOs, heavily reliant on pesticides like glyphosate (found in Roundup), are linked to numerous health concerns, including cancer and hormonal disruptions. But scandals and failures—like the opioid epidemic, COVID-19 policies, and J6 revelations—have eroded that trust. Take the FDA's approval of certain harmful additives or the USDA's coziness with agribusiness giants like Monsanto. Americans are starting to ask, “Are they protecting us or their donors?” For athletes like me, the stakes are even higher. I spent years focused on performance, but neglected the basics like nutrition and recovery. If I'd had RFK Jr. whispering in my ear, I might have reached another level. And let's be real: most of us don't even read labels. RFK Jr.'s push to remove GMOs and toxins from our food would make healthy choices a no-brainer.Psychology of Good Health Good health isn't just about the body; it's a state of mind. I'm sure at some point most of us have read some type of nutrition flyer our doctor gave us at an appointment. Or maybe we googled a particular food, or even what food to eat for a certain medical complaint like certain fruit or vegetables are good for inflammation. Or if you are like me, I make many food decisions based on what I read on the label. I watch the sugar, salt, carbohydrates, etc. Well, except during my birthday month. But I digress! Reading Joyful Eating was an eye opener as I think my biggest take aways were: not beating myself up over my weight, not feeling guilty about my food choices, to diet or not to diet, and my general relationship with food! Today we are chatting with Nutritionist/ Author | Nutrition Writer | Recipe Developer | specialising in a non-diet and mindful eating approach, Mrs. Tansy Boggon. Hi Tansy, welcome to the show! We have so much to talk about! Body of episode: As I read your book Joyful Eating, I dog-eared and highlighted so many pages! And I love how you start with your food story, including the story of your mom and grandmother. Why did you choose to start Joyful Eating in this way? What caused you to become a nutritionist? (pg 7, 13). Do you believe the stress of childlessness, our self-worth even, can tie in with our relationship with food? Well, speaking of the previous question, on page 26 you speak of ‘the myth of optimal health'. (read highlighted section). On Page 27 you say…read section). I thought it so intriguing and important to recognize that weight, healthy weight, can be relative to the doctor we are seeing: cardiologist, primary care provider, psychologist, etc. Tell us more! Self-care is definitely important right? Many childless not by choice people are doing what they can healthwise to try to have kids. Then coming out the other side of not being able to have kids do you let go of your health and self-care, or find a happy medium? In fact, on page 70 you say that ‘accepting what is does not imply inaction'. I love that! In our pre-interview, you said that ‘Life can bring joy even as a childless not by choice couple. It has brought a playfulness after the time of adulting and also trying to have a child', Can you speak to the person listening who may be trying to figure out the ‘playfulness' aspect of life, for those who have partners as well as those of us who do not? 7) Tell us about your children's book, how is that done as a childless not by choice person? I mean there are lots of childless not by choice people working with children every day, but is it a giant step to write a book for and about children? 8) And of course, we understand that one's comfort level around children relies on how raw, where you are in your CNBC journey, so definitely don't beat yourself up if you just can't be in the room at that moment. But tapping into the way children see the world is a beautiful way for childless not by choice people see the world. “We all need to work together across the entire value chain, even as consumers, to make a difference to ensure that fruit and vegetable consumption really becomes a part of everyone's diet.” Kelly Bristow (39:39-40:00) The UN declared 2021 as the International Year of Fruits and Vegetables. With this declaration, the UN gifted Bayer with an invitation to raise awareness to the importance of fruit and vegetable consumption and the role it plays in human nutrition, food security, and health. Bayer wanted to take the year as a lens and bring together the important steps across the value chain all the way from seed to ultimately what ends up on consumer's plates. To help increase awareness, consumption, and even enhance flavor of fruits and vegetables. Kelly Bristow is the Science and Nutrition Partnerships Manager at Bayer and mom to two young kids. She meets with outside organizations and stakeholders to bring together influential people to think globally about how we can impact fruit and vegetable consumption. Jenny Maloney is the Strategic Account Manager for the Americas for Bayer Vegetable Seeds all while being mom to three young girls. Jenny and Kelly, along with Lori, put together a virtual event called Beyond Farm to Table: A Seed's Journey to Your Plate. Bayer wanted to have a holistic look at the food chain, not only looking at it from a grower or retailer perspective, but also a consumer perspective. Bayer pulled together three leading experts in this space. Lori was there moderating the event. They also had David Bell, CMO at Long Vine Growing Company, Chad Street from the Albertson's Company, and Jana Parker from IRI Fresh. All of these different perspectives made for such a great, well-rounded, interactive event. For Kelly, it was so great to get three different people in different parts of the value together and seeing their different perspectives. One really does play off the other. It's not often you get to see the whole process in one event. It was interesting to Kelly to hear from Jana about what are in shopper's carts. What produce are shoppers buying and what's accompanying it. It was great to hear that shoppers are buying an increased amount of produce and some ways to help improve that consumption even more. For Jenny, it was interesting to hear David Bell talk about the journey of a tomato. Starting with seed selection, propagation, transferring to a grow house after eight weeks, How they're picked by hand then sorted for quality, and then sold to consumers. The other thing that stuck out was Long Vine Growing Company's Sustainability Program. One of their facilities is located adjacent to a natural gas power plant. They use energy from that plant to power their own greenhouse. Any water that isn't used by the pants is recirculated. Over 90% of their water is recycled. They are ultimately aiming to grow with care. What Chad really highlighted was the thought and precision that goes into the placement of every piece of produce in the store. There's a whole team behind the scenes that makes it easy to shop for your produce. He was able to shed a lot of light on the behind the scenes work. “The way we changed our shopping habits, the way we use produce differently, the way we bought produce differently. That all changed in 2020 and we're still sorting out what that's going to mean for the rest of 2021, 2022, and beyond.” Jenny Maloney (33:50-34:07) Taste, convenience, and price are big motivators for consumers buying produce, but seeing Jana's data to back this up was really eye-opening for Kelly. We see that people are cooking at home more than ever, but they're still looking for the convenience factor. Even though people are spending more time at home, they are still looking for their fruits and vegetables to be easy and quick to buy and make at home. It was interesting to see this data through the lens of the pandemic. This International Year of Fruits and Vegetables really helped Bayer shine a spotlight on the importance of developmental goals and looking at giving greater visibility to small scale growers. They brought more awareness to food security, nutrition, and even looked at scalable production and consumption. Everyone across the entire value chain needs to work together, even as individual consumers, to make a difference and ensure that fruit and vegetable consumption really becomes a part of everyone's diet, promote healthy habits, and fight against hunger and malnutrition. I think that not only are they trying to get you to spend more money, but there IS something about this time of the year that changes the atmosphere and for many it sparks JOY. It can be a positive distraction from the everyday mundane of life and blur out the stress of the past year's craziness, and businesses KNOW how to sell “happiness” through some good ole retail therapy. But I know you friend... I know you'd rather pursue an inner joy and satisfaction that does not come from materialistic stuff or is dictated by circumstances or special occasions. You want to do the inner work so that your outer response reflects Joy and beauty of this season. I love simplicity too!...and am not an over top shopper or decorator when it comes to the holidays, BUT...there is NO hiding from the fact that it's ALMOST HERE! And that means there's more to do and more to plan and more to buy and just more on YOUR PLATE. NOW is the perfect time to get prepared and get our “inner game” in order as we get all the things done. Lucy Lauer, is a Licensed Mental Health Counselor with 26 years’ experience as a Registered Dietitian. She specializes in helping people navigate the rough waters of disordered eating to achieve a healthier life and relationship with food. She has experience with Anorexia Nervosa, Bulimia Nervosa, Binge Eating Disorder, Nocturnal Eating Disorder, and the range of dysfunctional eating patterns that cause distress but may not have a diagnostic label. In 35 years of practice, Lucy has treated disordered eating from both a nutritional and psychological perspective. She has presented workshops at the local, state and national level on many aspects of disordered eating for psychologists and counselors, physicians, dietitians, parents and teachers. She established and facilitated the Space Coast Eating Disorders Professional Consortium from 2009-2011, and supervises Florida Tech Psychology students in a special practicum focused on Eating Disorder treatment. She participates regularly in continuing education programs and has had over 60 hours of specialized training in ED treatment in the last 3 years alone. Specific topics have included ACT and other evidence-based interventions, medical complications, trauma impact, co-occurring disorders (substance abuse, self-injury, etc), assessment for appropriate level of care, body image, art and other expressive therapies, and using a team approach to treatment. She has also been invited to site visits at residential treatment centers in South Florida and Colorado. What are the various types of eating disorders? Anorexia Nervosa, Bulimia Nervosa, Binge Eating Disorder Since eating disorders have a direct impact on physical health as well, tell us a bit about the team approach to treatment when collaborating with Registered Nutritionists, Physicians, etc... The gold standard of ED treatment involves a team of clinicians working together. The team consists of a mental health counselor or psychologist, Registered Dietitian (RD), primary care physician, and if needed, a psychiatrist. In an out-patient setting, it is usually the mental health clinician who coordinates care by communicating with other team members re. treatment goals, progress toward goals, and psychoeducation, as needed. The RD monitors weight, food intake and specific food-related issues and may also help set exercise goals. Medical parameters such as labs, EKGs and bone-density are ordered by the PCP and shared with other team members as markers for progress. When all team members are not under the same roof (which is usually the case), communication is done through phone calls, written assessments and updates and occasionally, face-to-face team meetings. If the client is a minor, the parents are also part of the team and are included in treatment planning, progress updates and psychoeducation so they can more effectively support their child’s recovery. Many people with an eating disorder have a fear of recovery. Talk a bit about this and how a clinician can work with someone resistant about recovering from their eating disorder. An eating disorder is experienced as a life-raft in the rough sea of uncertainty that is a normal part of life. Despite the fact that eating disorders are deadly and create enormous physical and psychological pain, they also serve important functions such as protection from intrusion, a sense of control when life feels chaotic, a way to make complex issues seem more manageable and many others. In order to help a person let go of this safety net, the clinician has to help them: 1) recognize the costs to other valued parts of their lives such as relationships, energy & concentration for other persuits; 2) Identify the functions of the ED and Develop other ways to address those. This often requires practicing acceptance of the inherent uncertainty of life, imperfection of themselves and others, and the messiness of living in a human body with all of its flaws and limitations. Sometimes, cognitive growth and recovery cannot take place until weight and nutritional balance is restored and this takes education, support, encouragement and a leap of faith on the part of the client. I know you facilitate a wonderful group for people with an eating disorder. Tell us a bit about that group and how it's different from individual therapy? Our 8-week eating disorder therapy group employs a combination of mindfulness practice, self-compassion and some elements of ACT (acceptance & Commitment Therapy), which helps people identify personal values that the ED has robbed them of. There is a lot of discussion about perfectionism, fear of failure, body hatred, habitual responses to difficult emotions and practice slowing down and experimenting with alternative perspectives and behaviors. Much of the benefit from the group comes from the common experiences of the members who usually feel alien and outside of “normal” human connections. ED is a very isolating illness and it is progressive, so over the years, people feel more and more alone and ashamed of the disorder in addition to all the other things about themselves they already hate. Where can clinicians go for more information, trainings, certifications, etc... My favorite resources are programs presented by The Renfrew Center & the Eating Recover Center, both of which have residential treatment facilities in several US cities and do a lot of research, outreach and education. There are some very useful websites with loads of info, too. I’ve attached a list of resources we turn to on a regular basis. The reality is that restaurants serve way too much food than they should and end up overeating or overindulging when we go out to eat. Don't follow restaurant portion servings, but keep in mind that every person's body is different and their plate's food portion will differ in accordance to their body size and weight. People who weigh more will eat more food and smaller people will eat less food. On everyone's plate you should have the following food categories for a healthy diet: Protein Starchy Vegetables Non-starchy Vegetables Healthy Fats How Much Protein on Your Plate for a Healthy Diet? The amount of protein that you should eat is measured by the size of your palm. Not your fingers, just your normal palm. For both men and women, they should eat about 1-2 palm sizes of protein. Healthy sources of protein include: Steak Ground Beef Pork Chops Chicken Breast Turkey Breast Tuna fish Halibut Salmon Tilapia Tofu How Many Vegetables on Your Plate for a Healthy Diet? Try to include both starchy vegetables and non-starchy vegetables on your plate of food. Starchy Vegetables include any variety of: Tubers Potatoes Squashes Women should include a portion in the size of their fist and men can have a portion that is a fist and a half. Non-Starchy Vegetables can include anything green and leafy such as: Asparagus Broccoli Kale Cauliflower Onions Peppers Zucchini Celery Cucumber When it comes to non-starchy vegetables, you can pretty much all that you want! For a minimum amount, we do recommend that women eat a fist of these veggies and men have a fist and a half portion. If you can have a portion size of 2 fists, that's great! How Many Healthy Fats on Your Plate for a Healthy Diet? Healthy fats include: Coconut Oil Grass fed butter Olive Oil Avocado Oil Avocados You can measure healthy fats by your thumb size and we recommend a portion size of 2-3 thumbs. Party Portions for the Holidays With the holiday season around the corner, you'll probably be attending lots of events with family, friends, and co-workers. It can be super tempting to eat lots of food; especially if there is a buffet at the party. "Grab a small plate instead of a large one." Instead of getting a large plate to completely fill up on with food, take a smaller plate instead and fill it up with vegetables such as starchy sweet potatoes, zucchini, mashed potatoes, but try to fill up on lots of leafy greens. Include protein as well on your first plate to help satisfy your stomach. Also try to eat your food in this order: veggies, proteins, and finally starchy vegetables. By the time you've finished your first plate, you'll have eaten a good amount of healthy, nutritious food that will satisfy you enough that you won't be tempted to eat a ton of food afterwards. Common Portion & Diet Myths There's a common portion myth and saying that goes, "You can eat as much as you want as long as it's healthy i.e. vegetables." However, this only counts on if the food is actually healthy to eat in large amounts and it depends on how it's prepared in the kitchen. For example, cheese is a good source of dairy and protein, but too much is not good for our stomach's digestion. It's very easy to over eat foods that are healthy like cheese, but cheese is only good for us in small amounts. A good portion size of cheese would be 3 die sized pieces or the size of your thumb. So smaller portions of healthy foods are okay, just don't eat small portions of unhealthy food all the time like getting a daily Starbucks Frappucino or eating dessert after dinner every day. If we're eating healthy food, why do we eat less of it? Healthy foods are more nutrient dense and therefore we don't overeat them because they satisfy our stomachs. In comparison, we're likely to overeat on less nutrient dense foods such as Doritos or fast food because they have empty calories that we crave. Why do we crave these unhealthy foods and never seem to feel full? It's because unhealthy foods and snacks are not giving our bodies the nutrition that it really needs. Fasting 101 What is fasting? Fasting is simply not eating over a period of time. In fact, we all go through a fasting period every night when we go to bed and fall asleep and wake up to have BREAKFAST. Our first meal of the day actually helps us to break the fast! How Does Fasting Help Our Bodies? Fasting has a ton of health benefits: Weight Loss Improves Insulin resistance and sensitivity Cardiovascular Disease Lowers Diabetes Lowers Blood Pressure Brain Function High Stress Levels or Building Muscle? Stay Away from Fasting Fasting has a lot of great benefits, but it's not suggested if you're currently going through a period of high stress or you're not able to sleep well at night. Fasting is supposed to naturally put the body into stress mode aka Adaptive Stress Response to help it lose weight. Therefore, if you're going through already stressed out, fasting will just fatigue your body even more. You should also stay away from fasting if your main focus is to build muscle, not lose weight. Fasting is not good for muscle building because you're depleting the calories that your body needs to restore and build muscle tissue. Different Types of Fasting Devon and I explain the several different types of fasting further in the podcast (33:30): Dietary Restriction Fasting Chronic Dietary Restriction Intermittent Fasting Alternate Day Fasting What is Carb Cycling? Carb cycling is essentially the process of mixing low carb days, high carb days, or no carb days. During the week, you decide which days you'll eat a high number of carbs, low number, or no carbs at all. This cycle helps a person to lose weight because it revolves around calorie deficits. What isn't carb cycling? Only eating carbs on days that you workout or include carbs as part of one meal during the day. Who's a Candidate to Begin Carb Cycling? Carb cycling is perfect for those who want to lose weight, but these people must also be working out constantly to tolerate the constant fluctuation of eating different amounts of carbohydrates, fats, and proteins on different days. Carb cycling is about burning fat, not building muscle. Any diet that focuses on lowering food and calorie intake like carb cycling, is for losing fat, not gaining muscle. It is very common for body builders and physique competitors to participate in carb cycling to lose excess fat after they've built their muscles. How to Start a Carb Cycle The amount of carbohydrates and healthy fats will always change, but proteins stay the same. To begin a carb cycle, you need to know how many calories you're taking in. High Carb Days As an example for a person who weighs 200 pounds, if you know that you need to take in 2,000 calories a day, that's 14,000 calories per week. High carb days have an increase in calories (2,400 for example..increase your calorie intake by 400 calories). Let's say you do high carb days 3 times a week (M,W,F). If you take 2,400 calories during a high carb day, you should take 7,200 calories during for the total of those 3 high carb days. On a high carb day, your diet would include: 50% carbohydrates or 1,200 calories or 300 grams 33% is from protein** or 800 grams or 800 calories 17% Healthy fat or 400 calories or 45 grams. **1 gram of protein per pound of body weight is more or less how much you want to eat. So a 200 pound person would take 200 grams of protein. There are 4 calories in 1 gram of protein so you would be taking in 800 calories when you eat 200 grams of protein and that amount is constant for both low carb and high carb day. Low Carb Days 14,000 total calories-7,200 from 3 high carb days=6,800 calories for the remaining 4 days of the week or 1,700 calories per day on low-carb days. On a low carb day, your diet would include: 20% Carbohydrates or 300 calories 50% Protein or 800 calories or 800 grams 30% Healthy Fats or 600 calories No Carb Day A no carb day is very similar to following the Ketogenic Diet.
