Sometimes, it's the most fun to chop it up with friends. And when your friends include legendary sushi chefs and top DJs, all the better. This week we brought to Happy Half Hour Chris Cantore, a former voice across San Diego's radio airwaves, and his long-time buddy, North County sushi chef Tyler Mars. Troy goes way back with the duo, having been both a music and food journalist during his career. The pair just launched Needlefish, an omakase and record-spinning pop-up that they plan to take around San Diego, and hope to one day make a brick-and-mortar location. In fact, they held their first event for SDM staff just a few weeks ago to rave reviews. The idea is simple: fresh fish and good tunes, vinyl-only. Cantore says he likes to bring back the classics, like 90's hip-hop, punk, and stoner rock like Queens of the Stone Age. Tyler pairs that with his own sliced fish creations, served on warm vinegared rice and usually in combination with other condiments and ingredients you haven't experienced eating sushi before (think thin-sliced prime rib eye and chimichurri, for a non-fish example). Though Needlefish is new, the duo's idea is not. They both wanted to open up a spot together 25 years ago. But they were scared, and life happened. So did kids, and marriages, and careers, and the transitions of said careers, and Mars' eventual cancer diagnosis. The latter came in 2021 but Mars is now in remission. “It's really because of what happened to Tyler that we finally had the courage to pull the trigger on this,” Cantore says. “We realized that life is short, and you don't know how much time you have left. We have a very special episode of The Stories Collective to share with you! Our host Sarah Schalow recently returned from a two-week mission trip serving in Osaka, Japan with J-House Church. Desert Springs has been able to foster a relationship with this church through the efforts of our Missions Pastor Jamie Engram. As a church we had sent teams of young adults for four consecutive years before coronavirus forced a hiatus. It was such a joy to be able to return for the first time since 2019! On July 25, 2023, Sarah sat down in person with Pastor Katsuya and Miki Iida to talk with them about their lives and how the Lord led them to start J-House Church. Katsuya was raised in Osaka about 20 minutes south of where J-House is now. His mother was saved when he was a young boy, and he had some exposure to church and the Christian life growing up which is very uncommon in Japan. Though he had somewhat of a Christian community he did not come to know the Lord until he moved to Canada for school. He describes living alone in Canada as a very lonely time in his life where he really began to question the purpose of his life. This experience eventually led him to place his faith and trust in Jesus. He then moved to California to pursue a Master of Divinity where he and Miki eventually met. Miki was born in the countryside of Kyushu which is about 400 miles away from Osaka. She did not have any Christian influence in her life growing up and it wasn't until she moved to California for school that she began to hear the Gospel and be around Christians. She did not immediately come to the know the Lord but after a few years her heart began to soften, and she placed her trust in Jesus. Shortly after this Katsuya and Miki began dating and eventually married when they were 27 years old in 1997. This would begin a marriage and partnership that would lead to starting J-House in Osaka just two years later. They were feeling led to be missionaries to their own people, to share the Gospel with people who were living in darkness. How do you start a church in a country that is less than 1% Christian? J-House began in Katsuya and Miki's apartment with its members being Katsuya, Miki and Katsuya's mother. You'll hear how J-House grew from three people to now a thriving community of close to 200 believers. As Katsuya describes it was one by one. Often times over the course of years. Not large groups but individuals who came to know who Jesus is and were forever changed. You'll hear so much about Katsuya and Miki's faith journeys, how they adopted their twin boys, how the Lord has blessed J-House, what ministry looks like in Japan and so much more. Leo Holtzman is the co-founder of SoCal Cantina and founder of Cocktail Conjuring, Inc. Leo first started tending bar in Orlando when he attended UCF triple majoring in Theatre, Psychology and Hospitality Management. Bartending was just a means to an end until he could make it as a full-time close-up magician. Upon graduation he moved back to Miami and worked as a magician/performer for various events and companies while working a few nights a week at Cadillac Ranch. Eventually he became the bar manager of Cadillac Ranch while the performing season was in a lull. In 2012, he wanted to take his talents to Las Vegas and saw that his best opportunity was to work for the new hip and chic hotel, SLS South Beach. SLS had/has plans for a large scale resort in Las Vegas set to open Labor Day weekend 2014. He landed an entry level job at SLS as a bar back at Katsuya's Dragon Lounge mixology bar. This was his first introduction to the world of “mixology”. He learned everything from the bottom and within 6 months was the head bartender/manager and was in charge of all normal duties of the bar program including cocktail design. During his time with SLS he also took on consulting and worked various events including the Lucky Rice festival and Bacardi Legacy competition. His talents did not go unnoticed and in 2014 he partnered with Patrick Gleber, owner of Tobacco Road, to open Cocktail Collection and put his magic career on hold. Cocktail Collection was the hottest bar in Miami, featuring a rotating original cocktail menu and local artist show cases. Cocktail Collection has received numerous accolades from various mediate outlets and critics including the only 5 star cocktail lounge/bar rating on YELP in the greater Miami area. It was loved by guests and critics, a rare feat in today's hospitality market. Then without notice Tobacco Road and Cocktail Collection were demolished to make way for the new high rises of Brickell. But Leo kept on bringing his cocktails and hospitality though Cocktail Conjuring events, pop-ups and consulting for select venues including Norwegian Cruise Line and The Palms Hotel and Spa. Then out of nowhere AJ Billapando contacted Leo with an idea. AJ had remembered one night at Cocktail Collection where he had the best cocktails of his life and a surreal experience of Leo performing close-up magic for a group of him and his friends. The cocktails and experience was unpretentious yet sophisticated- something he wanted SoCal to embody. After a brief call, the two met and came up with SoCal Cantina over night. They opened a week later in Brickell and were a wild success. SoCal Cantina offers out-of-this-world margaritas as well as some classics from Cocktail Collection menu (smoke fashion anyone??). The drinks pair perfectly with quite simply the best tacos you will ever have. Since our last conversation in February of 2021, SoCal Cantina has opened another location in Tuscaloosa, AL. Phillip Ozaki's culinary journey began not with utensils and ingredients in hand, but as a 16-year-old dishwasher in a Mississippi restaurant. With the freedom and trust given to him in his first job, he happily became more involved with the restaurant, picking up basic cooking skills over time before working his own station. The top two places to stay at are Hyatt Grand's Baha Mar or the infamous Atlantis. I've traveled down to the Bahamas four times and every time we've stayed at Baha Mar and it has never missed the mark. Baha Mar is a quick 15 minute drive from the International Airport and you can just get a taxi when you walk out. For us, it cost less than $30. Getting to the Bahamas is also extremely easy, especially when you fly out of Fort Lauderdale, FL. It's only a 50 minute flight and BahamasAir, American, and Jet Blue are some of the top flights to choose from. They aren't the cheapest, but it's very convenient.It has a large casino at the center of it, beautiful hotel rooms, 7+ pools, an amazing waterpark and lazy river, 40+ places to eat and dine at, flamingos, entertainment spots, and high-end shopping. Plus, it's right on the beach so you can bounce from the pool to the beach with ease. Once you hit the beach, you can kayak, paddle board, or just float around on rafts with your crew. They also have different gambling promotions if you are into that, such as Slots Tournaments and Blackjack. The best places to eat at Baha Mar are the Sugar Factory for celebrations, Pizza Lab for a late night snack, Katsuya Baha Mar for Sushi and Asian, and Cleo Meditterano for unmatched Mediterranean. If you can get into Katsuya, GO! Even if you stay at Baha Mar, it is so worth it to venture down to Atlantis. The resort is a museum in and of itself with aquariums, underground artifacts, surrounded by yachts, and the largest and most lively casino I've ever seen. They also always have events going on at Atlantis and you can view that, HERE. We recently saw a very intimate and lively concert in their ballroom for Little Big Town and it was so fun for all of us. Right where Atlantis is, there are restaurants right there to choose from for dinner. Our very favorite place to eat in all of the Bahamas is Carmine's; it is family sized Italian food, so come very hungry. This is a great spot to hang out and take pretty pictures for sunset by the yachts and water. Pro-tip: expect to be a little broke after this trip as drinks are $15+ and the slot machines are a lot of fun. Enjoy this island and welcome to island time. In this episode of Chef AF, I chat with the owners Jamila and Akino West of Rosie's, a Southern-American, NY-style café that has progressed from a simple to-go concept to a full-service restaurant, offering feel-good soul food brunch with subtle Italian nuances and classic techniques. The couple has thirty years experience in the food and beverage industry and were nationally celebrated by Vogue Magazine, The New York Times and Travel + Leisure magazine when they opened the Copper Door Bed and Breakfast in 2017. The West's are utilizing the culinary skills at Rosie's with a chef-driven menu. Chef Akino West's career spans from working for James Beard award winning Chef Michael Schwartz in Miami and three-Michelin starred NOMA, in Copenhagen, Denmark. Jamila West graduated from The Culinary Institute of America and has worked for James Beard award winning Chef Jose Andres via the SLS Hotel in Beverly Hills and South Beach. West transitioned to the front of house management in the Middle East opening multiple locations of Katsuya, a Japanese concept. I talk to the Wests about being married and being business partners, they talk about the challenges but both as individuals had big dreams. Both being workaholics were very driven by food, hospitality and their professional careers. Jamila says, “ I think that there were just synergies while we were dating so we ended up committing in different ways on a very serious level. We bought our first house together before being married, we opened up our business together before being married, so we had that. We had this growing relationship for about six years.” The couple shares that Rosie's was created out of a pivot when it came to the pandemic. They were operating a twenty-two room bed and breakfast where they were doing fifty covers at a small communal table that turned every thirty minutes out of a residential kitchen. Jamila and Akino always considered themselves restaurant people and have relied on their expertise from a culinary and hospitality perspective. Leo Holtzman is the co-founder of SoCal Cantina and founder of Cocktail Conjuring, Inc. Leo first started tending bar in Orlando when he attended UCF triple majoring in Theatre, Psychology and Hospitality Management. Bartending was just a means to an end until he could make it as a full-time close-up magician. Upon graduation he moved back to Miami and worked as a magician/performer for various events and companies while working a few nights a week at Cadillac Ranch. Eventually he became the bar manager of Cadillac Ranch while the performing season was in a lull. In 2012, he wanted to take his talents to Las Vegas and saw that his best opportunity was to work for the new hip and chic hotel, SLS South Beach. SLS had/has plans for a large scale resort in Las Vegas set to open Labor Day weekend 2014. He landed an entry level job at SLS as a bar back at Katsuya’s Dragon Lounge mixology bar. This was his first introduction to the world of “mixology”. He learned everything from the bottom and within 6 months was the head bartender/manager and was in charge of all normal duties of the bar program including cocktail design. During his time with SLS he also took on consulting and worked various events including the Lucky Rice festival and Bacardi Legacy competition. His talents did not go unnoticed and in 2014 he partnered with Patrick Gleber, owner of Tobacco Road, to open Cocktail Collection and put his magic career on hold. Cocktail Collection was the hottest bar in Miami, featuring a rotating original cocktail menu and local artist show cases. Cocktail Collection has received numerous accolades from various mediate outlets and critics including the only 5 star cocktail lounge/bar rating on YELP in the greater Miami area. It was loved by guests and critics, a rare feat in today’s hospitality market. Then without notice Tobacco Road and Cocktail Collection were demolished to make way for the new high rises of Brickell. But Leo kept on bringing his cocktails and hospitality though Cocktail Conjuring events, pop-ups and consulting for select venues including Norwegian Cruise Line and The Palms Hotel and Spa. Then out of nowhere AJ Billapando contacted Leo with an idea. AJ had remembered one night at Cocktail Collection where he had the best cocktails of his life and a surreal experience of Leo performing close-up magic for a group of him and his friends. The cocktails and experience was unpretentious yet sophisticated- something he wanted SoCal to embody. After a brief call, the two met and came up with SoCal Cantina over night. "ARPANET was established in 1968. In 1971, "creeper"programmed by Bob Thomas moved from computer to computer on ARPANET and displayed on each user's screen "I'm the creeper. Catch me if you can!". Xerox PARC set up the ethernet in 1973 since researchers were interested in the concept of "distributed processing". They were testing programs whose function were to check other computers on a network to see if they were active. One of the programs became known as the Xerox worm. More than thirty years have passed since the dawn of distrubuted processing. Sun Tzu, a Chinese philosopher wrote "When you know others, then you are able to attack them. When you know yourself, you are able to protect yourself."Or Bismarck, as prime minister of Prussia, said "Fools say they learn from experience; I prefer to learn from the experience of others." This presentation considers "the day-after"and lessons learned. Katsuya Uchida graduated from the Department of Industrial Engineering, the University of Electro-Communications. He engaged in system development and user support at a small business computer dealer, a EDP auditing and a technical support of the electronic banking system at an American bank in Japan, and an implementation project of computer insurance and information security research and study at a major non-life insurance company in Japan. Currently, he teaches "Information Security Management System"and "Hands-on Secure system"at the Institute of Information Security. Mr. Uchida also works on "Education and Training Project for Information Security professionals", and "Research on Security and Reliability in Electronic Society"of the 21st Century Center of Excellence (COE) Program at Chuo University. His main topics of research are "Information Security Management Systems", "Network Security", "Malicious Programs", "Information Forensics"and so on. Mr. Uchida is a member of Computer Security Institute and a member of Information Processing Society of Japan."
