Charlotte, NC is one of the fastest growing metropolitan cities in the United States. While the city has always looked forward, it was actually founded before the American Revolution and the site of the first US Mint. But in the past two decades, the intense growth and the addition of a light rail system have brought immense changes citywide. In the middle of it all, the Nguyen family has been feeding its community, one Bahn Mi sandwich at a time. From homemade beginnings to a cornerstone business of the Asian Corner Mall, Le's Sandwiches and Cafe now has another new chapter of its own. Tuan Nguyen has taken over the business from his parents and is carrying on their legacy, despite the closing of the mall that is slated for imminent demolition. Le's has a beautiful new streetfront building on Sugar Creek Road, and they routinely sell out of everything they can make. Le's Bahn Mi #6 was voted one of the best sandwiches in Charlotte by QC Magazine, they have been featured in The Charlotte Observer, and the restaurant was the subject of an oral history published by The Southern Foodways Alliance. It's a HAM-ERGENCY! Easter Sunday is over and done — but what's a Lutheran lady to do with all that leftover ham? In this Iron Ladle Challenge, Sarah, Erin, and Rachel (together with dozens of ladies from the Lutheran Ladies Lounge Facebook group) are coming to the rescue, with a smorgasbord of recipe ideas all involving ham. Will you use your leftover ham in savory Cuban sandwiches? Fluffy crustless quiche? Hawaiian-inspired ham musubi? Ham empanadas? Korean bahn mi sandwiches? Ham-and-bean soup? Ham-and-potato casserole? Devilled ham? Ham salad? Ham balls? Whatever recipe you choose, the fridge (and the table) will be empty when you're done. Cuban Sandwich (Sarah's Favorite) For a full recipe, see seriouseats.com/cuban-sandwich-recipe. Cuban bread (can be substituted with French bread) Mayo Mustard Ham Mojo roasted/pulled pork Swiss cheese Salami (optional) Dill pickles Can be hot-pressed for an even better eating experience. So long as one cup is cheese, you can add extra “add-ins” — sauteed onions, green peppers, kale, mushrooms, asparagus (so many options) — without ruining the quiche HAMBALLS AND SAUCE, from Cristin Otte and Ann Otte (in a church cookbook, via Debbie Larson) For the ham balls: 1 lb. ground ham 2 lbs. hamburger 3/4 c. bread crumbs 3/4 c. graham cracker crumbs 2 eggs, beaten 1 can tomato soup 3/4 c. water For the sauce: 2 cans tomato soup 1/2 c. water 4 T. brown sugar 4 T. vinegar 2 T. mustard Mix the ham ball ingredients together and form into balls. Mix the sauce ingredients and pour over balls. Bake at 325 to 350 degrees for 1 ½ to 2 hours. A variation on this from Victoria Maaske: Ham balls meatloaf style with a ketchup and grape jam sauce. In this Quick Bite, our cameraman, Dana, tries a Bahn Mi sandwich at Asian Kitchen! This is a continuation of our series recapping our visit to Tampa, Florida for our half marathon at the Publix Gasparilla Distance Classic Weekend! This restaurant takes a variety of Asian influences and puts a unique, fast, and fresh take on them. They cleverly titled this sandwich the “Stand Bahn Mi” on their menu. As a child of the 80’s, this made me smile and think of the movie of the same name from that decade. You can choose your protein, and my cameraman decided on chicken. Then Lisa Larkin, owner of Asian Kitchen, told us that they would use chicken thighs to make the sandwich! That was so smart because the meat was tender and juicy. (Can you tell that the cameraman let me have a bite or two?) Be sure to drop by Asian Kitchen if you are in the area. The food is amazing. (Did we mention they do their own smoked meats, original sauces, and dry rubs for their dishes?) Be sure to visit Asian Kitchen’s website or their Instagram (which had our mouths watering before we even arrived in the Tampa Bay area!) Thank you, Lisa, for the outstanding dishes and for welcoming us in like family! Like what you see? Tune in to the podcast all this week or subscribe on iTunes so you don’t miss a minute. Tofu is an amazingly versatile and economical ingredient. However, unless one has the luck to grow up in a household cuisine that uses it (hello, Mapo Tofu, Moosewood Cookbook, or Soon Du Bu Jigae!), good recipes may be elusive. Hopefully we’ve found a few new methods -like a gingery soup or crunchy, tangy salad- that will add to your repertoire
