Sometimes when I'm putting this show together I like to imagine that someone has somehow found this show in 50 years time and are having a good ol' giggle at how quaint and ol'timey the things we are talking about are. And if you are one of these people from the future it's probably worth me telling you about a little thing called the Covid-19 pandemic. This was (hopefully) a once-in-a-lifetime event where a highly contagious disease was sweeping the globe and, so, we were all made to stay in our houses for a good chunk of time to slow down the spread - like, around two years. It was especially tough because we didn't know when it was going to end, and we kept having these false starts where we were told we were allowed out and then our governments were like 'oh, whoops, no, spoke too soon - get back in your houses!'. Anyway, I tell you all of this because this week's guest, actor/singer/cabaret artist Jens Radda, had just moved to the city of Melbourne, Australia, from Sydney when the pandemic broke out, and so it had a significant influence on how he settled in to the city, how he made friends, and how he filled his days. And the periods of 'freedom' (for want of a better word) that he got in between lockdowns were precious and exciting to him because he got to go to queer spaces like the Rainbow House Club. The ConversationThe Restaurant Guys were so taken with the stories behind a book by Susan McKenna Grant that they took a detour while at an Italian wine festival to stay at her beautiful property that she is restoring, La Petraia. This interview in this episode was recorded on location at Radda in Chianti at the farm (you can hear the pigs snorting) interspersed commentary from The Guys after they arrived home. The amount and variety of products acquired from that farm is amazing! The Inside TrackThe Restaurant Guys Podcast was Susan's soundtrack as she lovingly restored La Patraia. After she wrote her book Piano, Piano, Pieno , she sent it to them and they just had to have her on the show. A few years later, they went to see her and stayed at the gorgeous La Petraia. “We've got old maps of the property from a couple of hundred years ago and you can look at those maps and see that it's still exactly the same today as it was then. There's the same amount of field and there's the same amount of forest. The house is the same size. It's just the way it is,” Susan Grant McKenna on The Restaurant Guys Podcast 2010 BioSusan McKenna Grant spent several years traveling in Europe and studying cooking, pastry, and artisan bread baking. She attended the Cordon Bleu and Ecole Lenôtre in Paris, the San Francisco Baking Institute, the Ecole Française de Boulangerie d'Aurillac in the Auvergne region of France and the Boscolo Etoile Academy in Italy. In 2001, Susan and her husband, Michael, purchased La Petraia in the Chianti Classico region of Tuscany in Italy. The couple spent fifteen years restoring La Petraia to its origins as a sustainable, mixed working farm. The couple also operated a luxury agriturismo, which included four guest rooms, a restaurant and cooking school. Petraia was the inspiration for Susan's two award winning cookbooks.Susan currently resides in Switzerland where she continues to write about food and sustainable foodways.InfoSusan Leaves La Petraia (click for photos of the property)https://www.susanmckennagrant.com/2015/11/14/farewell-la-petraia/Susan's Bookshttps://www.susanmckennagrant.com/Reach out to The Restaurant GuysIf you're in New Jersey...November 22 Dale & Jill DeGroff Happy Hourstageleft.com/eventsOur Sponsors The Heldrich Hotel & Conference Centerhttps://www.theheldrich.com/ Magyar Bankhttps://www.magbank.com/ Withum Accountinghttps://www.withum.com/ Our Places Stage Left Steakhttps://www.stageleft.com/ Catherine Lombardi Restauranthttps://www.catherinelombardi.com/ Stage Left Wineshophttps://www.stageleftwineshop.com/ To hear more about food, wine and the finer things in life:https://www.instagram.com/restaurantguyspodcast/https://www.facebook.com/restaurantguys**Become a Restaurant Guys Regular and get two bonus episodes per month, bonus content and Regulars Only events.**Click Below! https://www.buzzsprout.com/2401692/subscribe

The Wine Thieves are back with part two of a series on the Unità Geografiche Aggiuntivi of Chianti Classico (or UGAs) the recently announced additional geographic units that will begin appearing on labels of the Chianti Classico Gran Selezione category as of this year. Joining us again are Caterina Mori, Director of Communications for the Chianti Classico Consorzio, and the "Map Man" Alessandro Masnaghetti who literally drew up the map of the 11 new UGS that we'll be covering in deep detail in this episode. If you haven't already listened to part one, go back to the previous episode as it will be critical to your understanding of this instalment. Geology, and the soils derived from these underlying rocks formed an important basis for Masnaghetti's map-making work. To begin the episode, John and Sara provide a brief recap of Tuscan geology and terminology you'll encounter travelling through the 11 UGAs, along with what can be expected from the wines grown on each of the main "geological units", marine and continental, and the specific soil types that fall under each. Masgnaghetti discusses how the various soil types translate into to different organoleptic wine profiles in each UGA, from the macigno, pietraforte, albarese and Formazione di Sillano of the marine formations, to the continental units that include the gravelly-alluvial soils of San Casciano in the north and the lacustrine clay soils typical of the western part of the Castellina UGA. The UGA tour proceeds clockwise, starting from San Casciano in the northwest corner of the Chianti Classico area, continuing through Greve, Montefiorale, Lamole, Panzano, Radda, Gaiole, Castelnuovo Berardenga, Valgliagli, and finally San Donato in Poggio.Special thanks to our WineAlign colleague and Chianti Classico ambassador Michael Godel, who kindly chose a song to match the feel and vibe of each of the 11 UGAs for this episode.
"I thought I had the perfect life in New York, but fate had something different in mind for me. I've fallen in love with this place and what it has to offer" - Casalvento: House of the Wind by Gudrun CuilloWelcome to Episode #79:About twenty five years ago, Bob and Gudrun Cuillo were looking for a place to buy in Capri Italy, not far from Benevento, near Naples where Bob had family ties to the region. The Capri property fell through and next they found themselves in Tuscany talking to friends when they were introduced to an ancient Borgo in Radda, Chianti that might be up for sale. A week later they were the owners of medieval Casalvento, a hamlet of land and historic buildings. Bob And Gudrun didn't even realise there was a vineyard, and on the ground were vines of Chianti Classico. Bob and Gudrun's fate was sealed and the next twenty years or so were spent restoring the vineyard, the olives and the Borgo, amongst other projects in their busy and creative lives. Later they purchased more land close by, a medieval hamlet called Livernano and onwards they went. Today I introduce to Gudrun Cuillo and her book of fiction Casalvento - House of the Wind. If you love a book set in Italy, and heart thudding, more palpitations set in the beautiful hills of Tuscany, but not just Tuscany that Italian Ideal, the Italian beauty Chianti, one of the oldest settlements ancient Radda, and if you love a little romance and travel, and Italian history and a story that makes you want to jump on a plane, well as soon as possible, well then Casalvento: House of the Wind is a book to escape with, wherever you are in the world.Gudrun's estate these days makes award winning wines, Chianti Classico, Chianti Riserva, those gorgeous Super Tuscans and much more. You can also stay and sip at your own leisure, do cooking classes, and wine tours, but mostly if you are intrigued you can visit her website Livernano Winery and Resort and follow Gudrun on Instagram at livernano_casalvento_ ….Or just listen along and enjoy Gudrun's story about the vines, the wine making and the writing journey. And the surprising and wonderful process of becoming a fiction author, something she turned to at a time of grief and loss. F., Baldissera, G., Muzumdar, M. D., Wang, S. Abstract: Alterations in three-dimensional (3D) genome structures are associated with cancer. However, how genome folding evolves and diversifies during subclonal cancer progression in the native tissue environment remains unknown. Here, we leveraged a genome-wide chromatin tracing technology to directly visualize 3D genome folding in situ in a faithful Kras-driven mouse model of lung adenocarcinoma (LUAD), generating the first single-cell 3D genome atlas of any cancer. We discovered stereotypical 3D genome alterations during cancer development, including a striking structural bottleneck in preinvasive adenomas prior to progression to LUAD, indicating a stringent selection on the 3D genome early in cancer progression. We further showed that the 3D genome precisely encodes cancer states in single cells, despite considerable cell-to-cell heterogeneity. Finally, evolutionary changes in 3D genome compartmentalization -- partially regulated by polycomb group protein Rnf2 through its ubiquitin ligase-independent activity -- reveal novel genetic drivers and suppressors of LUAD progression. Our results demonstrate the importance of mapping the single-cell cancer 3D genome and the potential to identify new diagnostic and therapeutic biomarkers from 3D genomic architectures.

Canale Telegram: https://t.me/da0a42Instagram: https://www.instagram.com/da0a42/Facebook: https://www.facebook.com/da0a42/Profilo Strava: https://www.strava.com/athletes/37970087Club Strava: https://www.strava.com/clubs/da0a42Sito: https://da0a42.home.blogOppure contattami!https://da0a42.home.blog/contatti/Il mio microfono, HyperX Quadcast: https://amzn.to/3bs06wC----------------------Un grazie a tutti i miei sostenitori:Matteo Bombelli, Antonio Palma, George Caldarescu, Dorothea Cuccini, Alessandro Rizzo, Calogero Augusta, Mauro Del Quondam, Claudio Pittarello, Massimo Cabrini, Fabio Perrone, Roberto Callegari, Jim Bilotto, Cristiano Paganoni, Luca Felicetti, Andrea Borsetto, Massimo Ferretti, Bruno Gianeri.----------------------Music credits: Feeling of Sunlight by Danosongs - https://danosongs.com

Tónlist í þættinum í dag: Þjóðvegurinn / Elín Eyþórsdóttir og Pétur Ben (Magnús Eiríksson) Good Vibrations / Beach Boys (Brian Wilson og Mike Love) Veðurglöggur / Spilverk þjóðanna (Spilverk þjóðanna) Islands in the Stream / Kenny Rogers & Dolly Parton (R.Gibb, B.Gibb & M.Gibb) UMSJÓN: GUÐRÚN GUNNARSDÓTTIR OG GUNNAR HANSSON

This episode is a long time coming, we recorded it in the fall of 2021, but with the golf, season slowing down coupled with the issues we had we were having with our WordPress tech, we felt like it was worth waiting till we had our tech issues resolved and golf season was back up and going. With Tiger back in the hunt this week, to say golf is back to the year is an understatement and a perfect time to release the episode. This interview focused on talking with Jason Fields, one of Radda's founders about golf, their brand, and what it means to be successful in a modern retail landscape. Episode 729 Steve Raye interviews Natalya Meylunas of Fattoria della Aiola in this episode of Get US Market Ready With Italian Wine People on the Italian Wine Podcast. About today's winery: Fattoria della Aiola is a historic wine estate situated in the heart of the original Chianti Classico wine zone near the village of Vagliagli and only 10 km away from Siena. The estate spans across 100 ha of gently sloping hills and winding roads in two communes – Castelnuovo Berardenga and Radda in Chianti. Vineyards take over one third of the estate – 36 ha planted at 350 – 450 m above the sea level. Another 10 ha are taken by olive trees. In addition to Chianti Classico DOCG and Toscana IGT wines, where Sangiovese grape is the king, we also produce Extra Virgin Olive Oil. Just like our wines, Fattoria della Aiola itself is a fascinating blend of traditional and modern, timeless legends and bold innovation. For more information on today's winery you can check out: https://aiolawines.com/en More about the host Steve Raye: Steve Raye of Bevology Inc originally joined our weekly lineup with narrations from his book “How to get US Market Ready” - but everyone just loved him so much, we brought him back with this series of interviews that informs and inspires! James caught up with Brancaia winemaker Barbara Widmer on Brancaia Toscana Il Blu 2018 and Brancaia Toscana Ilatraia 2018.James was impressed with the 2019 vintages but wanted to know more about the growing seasons in Radda, Chianti. Barbara notes that 2017 was a challenging year, 2018 produced a more balanced wine, while 2019 – the year that Brancaia changed to organic practices – turned out riper.
Featuring: David Bowden The mere mention of Tuscany sends most travellers into a world of eager anticipation. The intensity and quality of the light impress me most about this part of Italy. It is this light that provides the energy so essential for growing crops, especially grapes and olives, that are integral components to the Italian lifestyle. READ MORE HERE

The so-called “discovery” of the world by European navigators in the XV century is the event that defines the beginning of the historical process known as colonialism, a system marked by the exploitation of labor and expropriation of land that is still present in different forms in the international geopolitical arena. In this episode, the first of a small series, we will discuss how these colonial structures are present in modern times and how they are reflected in the Covid-19 crisis we currently live. Our attention will focus on the Navajo Nation and the Republic of Zimbabwe. Our guests today are Dr. Farina King, a citizen of the Navajo Nation and an Assistant Professor of History as well as an affiliated faculty of Cherokee and Indigenous Studies at Northeastern State University and author of The Earth Memory Compass: Diné Landscapes and Education in the Twentieth Century; and Tinashe Goronga, a physician from Zimbabwe who is focused on social medicine, public health, and health equity. Tinashe is also member of the Global Campaign Against Racism’s, Zimbabwe chapter. ** This episode was recorded on July 10th, the data presented refers back to that moment and might have changed by now.

Chianti Classico meets Maremma! In 1972, Giovanella Stianti's father gifted her Volpaia, an 11th century village and winery in Radda en Chianti, to celebrate her marriage. A second estate, Prelius, is located in Maremma near the sea. Alessandro Cellai is Managing Director/ Winemaker for Castellare di Castellina in Chianti, Rocca di Frassinello in Maremma and Feudi di Pisciotto in Sicily. Both Volpaia and Castellare have produced Wine Spectator Top 100 Chianti Classico wines. Castello di Albola Chianti Classico In this episode, Rob, Scott, and Becky all review the classic Chianti Classico from Castello di Albola. Further, we have another game of Pro v. Con, however, this time we see The Unlicensed take on The Wine Guy. Will this be an even matchup, or does Scott need to take on a 6 year old for that to be possible? We shall see...on The Wine Vault.
In this episode Monty Waldin interviews Alessandro Gallo, general manager as well as vineyard manager and wine maker at Castello d’Albola, an estate in Radda in Chianti, Tuscany, which belongs to the Zonin family. Alessandro, who is originally from the Langhe region in Piemonte, has been living and working in the area for 15 years and tells Monty about the Chianti Classico terroir of Radda in Chianti. The village of Radda in Chianti is one of the highest in the appellation and the most historical for Chianti Classico production. Castello d’Albola grows mostly Sangiovese, which is cultivated up to 600 meters on the sea level. The estate also grows Chardonnay at 700 meters to make their Poggio alle Fate white wine; they also grow Cabernet Sauvignon for their “Super Toscano” Acciaiolo. Monty and Alessandro discuss the difference between the Chianti Classico Riserva and the Gran Selezione and Alessandro presents some of Castello di Albola’s flagship wines: Chianti Classico DOCG Riserva, and the Gran Selezione Santa Caterina and Il Solatio. Tune in to learn more about the Chianti Classico soils and wines and discover Alessandro’s passion for steak!
We wrap up our visit to Chianti Classico with a visit to Castello Monterinaldi in Radda. Searching for the terroir of each commune of the region has proven to be a challenge as so many microclimates and soil types exist withing each commune. However, matching clones of sangiovese to each microclimate within an estate is an important job at Castello Monterinaldi. This effort leads to some special wine. I met with Fabrizio Benedetti to discuss this and of course to taste some delicious wines.

I've traveled throughout the wine world and few places have enchanted me the way Volpaia and the people there have. The hilltop hamlet is magical. The 11th century piazza is composed of a church, a cafe and a the Castello di Volpaia tasting room which was closed when I arrived. That's it. I wander up the road another 50 or so meters to find a smaller, older piazza consisting of not much more than yet another church, a small ancient well and an iron gate. With no signs, I have no idea where to go so I throw caution to the wind and enter the gate. Sitting in the manicured garden under the warm spring Tuscan sun I meet Giovannella Stianti. Tall, grey haired and elegant Giovannella introduces herself to me and warmly welcomes me into her home. All of the walls inside the ancient building are lined with beautiful books. Gio explains that her father was a book binder and this was his work. After lunch Gio takes me on a wonderful tour of the village and winery within. The modern winery is built into the building of the 11th century with pipes running underground connecting one production area to the next. Already enchanted with both the place and Giovannella, I then sat down to record this episode with Federica Mascheroni Stianti, Gio's daughter, who now runs the family business. As charming as her mother, Federica and I talk about what makes wine from Radda unique, the controversy behind the gran selezione classification, and of course we taste some delicious wines. If you travel to Chianti Classico a visit to Castello di Volpaia is not to be missed.

We welcome our new Italy co-host, Filippo Bartolotta, a native Florentine, wine expert, writer, and travel company owner. This fabulous normal wine guy tells us about himself, about Italian wine culture, and about how to get the best out of Tuscan wine! The Show Notes: 1. Chianti is hard to recommend by appellation, the producer is more important ("heart and land"). Still, the best areas for Sangiovese are on the northern slopes. Areas between Florence and Siena like: Castelnuovo Berardenga, Castellina, Gaiole, Radda, Barberino Val d'Elsa, San Casciano are great. Colli Pisane, Colli Fiorentine, Colli Sienese have good wines as well. 2. Classico is a safe bet for an old school Chianti with: A light color licorice orange peel violet cherry terroir! 3. Chianti Classics a minimum of 80% Sangiovese but can be 100%. It includes native grapes like Colorino or Canaiolo, and Merlot, Cabernet, and Syrah in small proportions. 4. Classico also has a Riserva tier (aged a min of 24 months with a minimum of 12.5% alcohol to guarantee the fruit is ripe), and Gran Selezione (aged 30 months in barrel, 13% alcohol minimum). Example: Montevertine (especially Le Pergola Torte), 5. We talk about how Super Tuscans raised the bar. We discuss Tiganello by Antinomy, Cepparello 6. The best producers pay attention to climate, clonal selection and tension between acidity, fruit and terroir. 7. Great producers In Montalcino: Tenuta di Renieri Pietroso Tenuta Le Potazzine Fuligni Le Ragnaie In San Gimignano (Vernaccia): Sono Montenidoli, Cesani Panizzi Il Colombaio di Santa Chiara La Lastra San Quirico Il Lebbio I know we promised a list of more Tuscan producers, but it's been hard to get a hold of those names since Filippo is the wineman to the stars : ) For now, we can use this list from an article he penned for Decanter a while back... http://www.decanter.com/wine-travel/italy/top-10-tuscan-wineries-to-visit-13770/2/

Zachary Sussman pens an excellent post on the subject of wine futures, detailing how they work and sometimes why they don't. Do we need another law aimed at dealing with drunk drivers? Assemblywoman Lorena Gonzalez, D-San Diego believes we do and has introduced a bill that would require more training for restaurant and bar workers to recognize patrons that have had too much to drink. Kerin O'Keefe tells a story about one of the most exciting white wines coming out of northern Italy.Wine of the week: 2011 Castello di Volpaia Chianti Classico Riserva Volpaia is a hilltop walled village north of Radda in central Tuscany. Raffaelo Stianti purchased the estate in 1966 and when his daughter Giovanella married in 1972, the estate became the young couples wedding present. All of the estate owned vineyards are organically farmed and certified, 114 acres in total, situated with southern hillside exposures at 1,300 to 2,130 ft. The nose shows black plums and cherries, floral aromas of lavender, with trailing hints of sage and cedar. Elegant with crisp acidity and good structure it's full bodied at 14.5 % alc. On the palate it has beautiful juicy black fruit, with silky tannins and a persistent finish. $25 Thanks for listening and please tell a friend. Cheers!
