Jason Spaulding, cofounder of Brewery Vivant (https://breweryvivant.com) and Broad Leaf Brewery, (https://broadleafbeer.com) has been around the block. He cofounded his first brewery, New Holland, in the mid-90's, and after exiting that brewery and spending time away from the brewing industry, launched Brewery Vivant with his wife Kris about twelve years ago. Operating a brewery with a niche focus comes with benefits as well as challenges, but Vivant has always focused on beer, food, and hospitality with a particular bit of Wallonian-like flair. Their take on Belgian-style beers is a bit more earthy and a touch more subdued than the American norm, but their audience has followed along. There's a temptation in every business to chase growth, no matter the cost, and Brewery Vivant followed the same book that everyone followed through the early 2010's. They put beer into grocery stores through distributors, and when distributors told them which beers to make more of, or make less of, they had no choice but to listen. Rather than dilute the Brewery Vivant brand with styles that didn't feel germane, they launched a second brewpub out in the ‘burbs (Broad Leaf) dedicated to progressive styles like hazy IPA and fruited kettle sours. Then, through COVID, the bottom all but dropped out. They made it through, but the broader conditions were an existence-level threat. Now, the Spauldings are rethinking why, and how, they make beer. The larger 60bbl tanks that required three turns on their 20bbl brewhouse, have gone and are being replaced by a pair of 20bbl tanks. Rather than feeding the distribution beast, they're refocusing on making the beer their customers want in the quantity they want it, and packaging any extra that isn't earmarked for their own locations. It's been a tough to scale back the earlier aspirations, but the health of the business requires it, and the ability to be dynamic and creative at this smaller scale is creating a new excitement. This isn't a typical episode of the podcast, more business than brewing, but it's honest look at how this long-time craft brewer is taking on the challenge of the beer business, now. Maybe we're remembering the lyrics wrong, but regardless, it does bring some interesting thoughts to mind. What would you do if you were just going about your daily business (work, school, shopping at the mall, working out at the gym), and suddenly you were thrust into a scenario where you had to kill everyone else around you to survive? It doesn't matter if they are your friends, enemies, neighbors, strangers, family, or coworkers. The only way for you to survive is for everyone else to die. That's a pretty rough situation. We know what we would do. We would use our extensive knowledge of genre movies to craft our own awesome weapons, and we would dive headlong into the carnage…. and immediately be dispatched by anyone with just a minimal amount of self-defense knowledge. This week we grabbed some Lost Minds Tart IPA from Brewery Vivant, and discussed a couple movies where people are forced to fight everyone around them, until only one person is left standing. EP67 - Do You Wanna Kill A Snowman Winter has officially begun here in Michigan, and that means a couple of things for us. It means harsh, blowing winds, subzero temperatures, shoveling snow on a daily basis, and trading in our shorts and t-shirts for.... slightly longer shorts and heavier t-shirts. Yeah, we deal pretty well with the weather here in the midwest. More so than all of those things, however, the arrival of winter means that we get to start doing two of our favorite outdoor activities. Building snowmen and hitting the slopes. It's a wonderful time of year... for the most part. Every once in a great while we do deal with unexpectedly being stranded on chairlifts, and in some extremely rare instances we have to deal with the occasional homicidal snowman who has been possessed by a serial killer. That hardly ever happens though. This week we stocked our icebox with some Ski Patrol Belgian Inspired Wit from Brewery Vivant and chilled with a discussion about a couple winter horror classics. You’ll sometimes hear people describe craft beer as a sort of zeitgeist all its own, coming out of nowhere to upend a century-old domination of the big corporate brewers, rising like punk rock to legendary status by following its own rules, and changing people's expectations for what beer can be in the process.  And a lot of that’s true, though it didn’t happen in a vacuum. Way back in episode 18 with Gary Fish of Deschutes, you hear a much more contextual perspective. Which is to say: craft beer, at least in its current form, is part of something much bigger that’s changing about the way we eat and drink. The slow food movement that has transformed so many of the world’s dining experiences from city to city, bringing things like "farm to table" into our common vernacular. Phrases like "know your farmer," which sounds a lot like "know your brewer." And "locavore," which sounds a lot like "drink local." All these things were setting a stage that craft beer now dances on. It just happens to be a part in the play where beer is stealing the show a bit.  And that brings us to today’s guest, Rick Muschiana. I first met Rick when he was working at Brewery Vivant in Grand Rapids. Back in episode 10, we talked to founders Jason and Kristen Spaulding about their unique community and sustainability-focused brewpub. Rick helped them grow that operation, playing roles in marketing, sales, and operations.  He then went on to lead Michigan sales for Virtue Cider in Fenville, Michigan.  And then he took the plunge into his own concept, focused on a sort of Nordic style of cuisine alongside great beer, wine, and more in a restaurant and garden concept called Sovengard in Grand Rapids. It's there you’ll find the culmination of Rick’s former professional experiences, but also something more fundamental—the influence his parents had on his perspective on food, beverage, and hospitality. They remain an influence to this day.  The result is a place in Grand Rapids unlike any other.

I spent the break up in Michigan, with my wife’s family in Grand Rapids like we do every year. But this year the city felt completely different. So many new things are opening, major new projects underway in beer and otherwise. We visited Sovengaard, Rick Muschiana’s new nordic-inspired restaurant and beer garden. Rick used to work at Brewery Vivant, one of our favorites. And he took what he learned there in terms of sustainability and hospitably and applied it to a new concept that really brightens up the Grand Rapids scene for me. He's got an amazing beer list—one of the most adventurous in the city by far. But also great wines, and a unique menus far away form the pub food that GR so often does. This spring the beer garden portion will open up, and I can’t wait to see it.  Across the street from Sovengaard is one of GR’s most ambitious projects, the New Holland brewpub. It towers over the neighborhood, a complex with the brewpub on the ground floors, a set of private event rooms and a cocktail bar on the second, and above that new condo residences. Compared to their original brewpub back in Holland, Michigan, the contrast is stark.  It’s a long way from home, maybe not geographically, but spiritually, from how I perceived the New Holland brand so many years ago on my first visit when Mad Hatter was a stand-out hoppy beer for the region, and Dragon’s Milk was something I could barely wrap my head around. As you’ll hear in this series of interviews, that’s going to change forever—maybe for the entire country.  To paint a full picture of the evolution of New Holland, I decided to talk to a few people in the organization. So this is going to be a unique one. We’re going to hear from the new Grand Rapids brewpub brewer, the VP of marketing, the executive chef who overseas both locations, and the national sales manager who is taking on the challenge of taking New Holland, well, national.
