A pocas semanas de la apertura de la apertura de la Cop28 en Dubái, la ONU advierte que las medidas de reducción de emisiones de gases de efecto invernadero aún son insuficientes para limitar a +1.5°C el aumento de las temperaturas globales. La ganadería es uno de los sectores que tendrá que hacer esfuerzos drásticos para reducir sus emisiones. Producir carne in vitro ofrece perspectivas prometedoras en este sentido. Algunos países ya autorizaron incluso su comercialización. ¿Y si producir carne in vitro fuera la solución para reducir la huella de carbono de la carne? En septiembre pasado, en una carta abierta dirigida a la presidenta de la Comisión Europea, un grupo de científicos llamó a invertir masivamente en la producción de proteínas sostenibles para reducir la huella de carbono del sector de producción de la carne.Actualmente, la ganadería representa más del 14,5% de los gases de efecto invernadero que agravan el calentamiento global, según Naciones Unidas. Los autores de esta carta abierta abogan por una inversión masiva en la carne cultivada que permitiría producir proteínas sin deforestar, sin sacrificio animal, utilizando poca agua y sin emitir las grandes cantidades de metano de los bovinos.Todos conocemos las proteínas de origen vegetal, como las hamburguesas de soja y las leches vegetales, comunes en los supermercados. Pero existen otras opciones -aun en ciernes- como la carne de vacuno o de pollo producida in vitro, cuya comercialización fue autorizada por Estados Unidos en junio pasado.Y aunque les parezca ciencia ficción, sí es posible crear carne sintética, gracias a grandes incubadores. Pero el proceso tecnológico es aún costoso.RFI conversó con Massimo Castellari, científico del Instituto de Investigacion y Tecnología Alimentaria de Cataluña, IRTA coordina investigaciones sobre la producción sostenible de proteínas. Dominique Crenn is the co-owner and chef of the three-Michelin-starred restaurant Atelier Crenn in San Francisco, where artistry is at the forefront, cuisine is a craft, and the community is an inspiration. “Atelier” can be defined as a workshop or studio, a concept that drives Chef Crenn's modern vision for fine French cuisine. Her highly distinctive French heritage and imaginative gastronomic lair behind the stove at Atelier Crenn is a clear reflection of her unique life story. Growing up in Brittany, France, Dominique Crenn developed a keen interest in cuisine from her parents, who celebrated fine dining. While Crenn credits her mother for her early introduction to the culinary arts, she also attributes her culinary passion to her politician father and his best friend, a well-respected French food critic, who exposed her from a young age to many of the region's best restaurants. It was in San Francisco where Crenn began her formal training as a chef, when in 1988, she moved from France and began working under the tutelage of San Francisco luminaries Jeremiah Tower and Mark Franz for over two years at the celebrated restaurant, Stars. Crenn then went on to make history as the first female executive chef in Jakarta, Indonesia, where she headed the kitchen at the Intercontinental Hotel. After having spent about a decade away from San Francisco, she returned there in 2008 to head the kitchen at Luce, in San Francisco's Intercontinental Hotel. It was there that Crenn earned her first Michelin star in 2009 and again in 2010. Driven by her passion to create a deeply personal project, Crenn opened Atelier Crenn, a place to express her heritage as well as an ode to “poetic culinaria,” in January 2011. Atelier Crenn achieved its first Michelin Star within a year, in October of 2011. In the following year, Crenn made history again when Atelier Crenn received its second Michelin Star, becoming the first female chef in the US to receive this honor. In November 2018, Crenn beat her own record and became the first female chef in the US to receive three Michelin Stars. In the summer of 2015, Crenn opened her second restaurant in San Francisco: Petit Crenn, a place where she presented the core of her culinary upbringing and inspiration in a more casual setting. Petit Crenn is an ode to the home cooking of Brittany, inspired by the dinner parties held by Crenn's mother and grandmother, where she first became mesmerized by the art of cuisine and dining. Later that year, she published her debut cookbook: Atelier Crenn: Metamorphosis of Taste. In March 2018, Chef Crenn opened Bar Crenn, a wine bar situated right next to Atelier Crenn. Bar Crenn pays homage to the Parisian salons of the early twentieth century, luxurious locations in the French capital that sought to inspire political, social, and cultural conversations around fine wine and classic French food. Bar Crenn received one Michelin star in November 2018, adding yet more luster to Chef Crenn's luminous career. Crenn and her teams at Atelier Crenn and Petit Crenn were featured on Netflix's second season of the popular Netflix series "Chef's Table." Crenn was nominated in 2016 and 2017 by the James Beard Foundation for Best Chefs in America and received recognition from World's 50 Best Restaurants. In 2017, Atelier Crenn debuted at no. 83 on the organization's list of the world's best restaurants, in 2018 Crenn was honored with the award for Best Chef: West by The James Beard Foundation, and in 2019 Atelier Crenn was named to the World's 50 Best Restaurants at no. 35. In 2021, Atelier Crenn ranked no. 48 on the list and Chef Crenn was honored with the World's 50 Best Icon Award. Crenn continues to be an outspoken and active member of the international culinary community, promoting innovation, sustainability, and equality through her collaborations with organizations such as the Basque Culinary Center and Pan American Development Foundation, as well as her frequent participation in various panels and summits. After years in the culinary world, Crenn has long since evolved from the little girl who sat and dined, entranced by the intricacies and beauty of fine cuisine, although it is still the memories of her childhood that continue to define and extend into her artistic culinary style. Quelle organisation d'un système où le chef est “un homme blanc hétérosexuel”, pour reprendre les mots d'Estérelle, quels sont les points sur lesquels la hiérarchie prend ancrage, quelle place peut occuper la femme pâtissière dans un milieu extrêmement masculin ? Comment exister en tant que femme, alors que le sexisme se nourrit de l'effet de groupe, et quele fonctionnement de brigade est par essence collectif ? A qui s'adresser ? Nous poursuivrons la réflexion en nommant le grand principe qui fonde cette impunité et assoit cette puissance masculine : l'invisibilisation des femmes.Comment y remédier et comment déconstruire ce modèle qui est tout sauf inclusif ? Au fil de l'épisode : Du choc au mimétisme pour s'intégrer, quelle attitude adopter pour “survivre” en tant que femme dans le milieu ? Nous verrons avec le témoignage de Séréna combien le harcèlement vécu au travail peut être difficile à analyser, tant la limite est difficile à déterminer entre questions professionnelles et personnelles. Ce n'est pas pour rien qu'elle a fini, à 25 ans, par se mettre en indépendante pour chercher la liberté et poursuivre l'exercice de sa passion dans des conditions vivables. Du choc à l'adaptation/masculinisation puis à la prise de conscience, elle nous donnera les conseils qu'elle aurait aimé entendre avant d'entrer en pâtisserie. Il y a un effet de groupe dans le sexisme, et comme le fonctionnement de brigade est par essence collectif, il peut arriver que l'on se retrouve très seule. Séréna insiste donc sur la nécessité de développer l'écoute, notamment au sein des écoles. Elle propose également de dresser une sorte de typologie des situations auxquelles on peut être confrontés. Ensuite avec Estérelle, nous essayerons d'analyser la situation globale. Tout semble commencer par le problème de l'invisibilisation des femmes et donc leur manque de représentation. Quelques-unes des questions qui se posent ensuite : pourquoi nombre de femmes sortent-elles très tôt du système classique ? Que penser des brigades 100% féminines ou masculines ? Dominique Crenn is a human-being, first and always. And, even though she has created a life that is speckled with achievements - from becoming the first (and only) woman to earn three Michelin Stars for her first restaurant, Atelier Crenn, to being named the Best Chef in the World by the James Beard Foundation - she has continued to stay guided by her curiosity instead. From a young age, Dominique bent the rules for good; growing up as an adopted child in France, she was given the freedom to tap into her creativity. And, that creativity drove her seemingly risky decisions: move across the world to San Francisco, convince a world-renowned chef to work with you (without any formal culinary training might we add), and open an 18-course restaurant with poetry instead of menus. But, through it all Dominique hasn't let the rules or awards or growth sway her away from her personal mission: help people reconnect to their roots, become more conscious of their choices, and treat our planet (and each other) with kindness. The Twelve Tribes of Hattie revolves around the matriarch of a black family of the Great Migration and her children and grandchildren, and was an Oprah Book Club selection. From the New York Times review: “Hattie Shepherd, the title character of Ayana Mathis's piercing debut novel, is at once a tragic heroine with mythic dimensions and an entirely recognizable mother and wife trying to make ends meet. Her story, set in 20th-century Philadelphia, is one of terrible loss and grief and survival, a story of endurance in the face of disappointment, heartbreak and harrowing adversity.” This was a debut novel. Arts-Waves Mart Crowley, author of “The Boys in the Band” and its sequel, “The Men from the Boys,” in conversation with Richard Wolinsky on October 31, 2002. Mart Crowley's play The Boys in the Band, which deals with the lives of gay men in the 1960s burst upon the off-Broadway scene in 1968 and ran for a thousand performances, becoming a film directed by William Friedkin two years later. In 2002, he wrote a sequel titled The Men from the Boys, which took place 35 years later, after Stonewall and after the AIDS epidemic. It premiered at San Francisco's New Conservatory Theatre on November 9, 2002. This past year, Broadway saw a revival of The Boys in the Band, featuring Zachary Quinto, Matt Bomer, Andrew Rannels and Jim Parsons. Several members of that cast, including Mario Cantone and Denis O'Hare return to their roles for a live stream of The Men From the Boys, directed by Zachary Quinto, streams through June 29, 2020 on playbill.com/prideplays Mart Crowley died of a heart attack on March 7, 2020 at the age of 84. Sweet and sour cane-toad legs. Multiple cat recipes. A deadly cocktail you're not meant to serve. These are some of the fascinating (and deliberately provocative) things you'll find in Eat The Problem, the 544-page book by American artist and curator Kirsha Kaechele. It's part cookbook and art project, with an impressive list of collaborators (including chefs Dominique Crenn, Peter Gilmore, Christine Manfield and Enrique Olvera) and pages that are filled with creative ways of dealing with invasive species (pig's eyeball margaritas or starfish-on-a-stick, anyone?). Eat The Problem is also the inspiration behind an exhibition of the same name at MONA, Hobart (running until September 2) and a guest dinner series happening on August 6 at Melbourne's Vue de Monde, Byron Bay's Harvest on August 7 and Brisbane's Urbane on August 8. Kirsha is the perfect candidate for imaginatively addressing pests, given that she grew up on Guam, which was overrun with brown snakes – the "rock star of invasive species". They even landed coverage in The New York Times and inspired WTF solutions (paracetamol-laced mice were dropped from parachutes to deal with the snake problem). Also, her wedding dress was made out of invasive deer, she carries a cane toad purse and thinks we should make candles using fat from culled animals. Thinking sustainably comes naturally to her and it was her plan to hold a zero-waste food market at MONA in 2013 that helped kickstart the Eat The Problem project. Kirsha is fascinating to talk to and she approaches the issue of sustainability like no one else – instead of being overly serious and dour, she addresses environmental issues with plenty of invention and an unmissably bright palette (the feasts that launched the Eat The Problem exhibition, after all, took place on the world's biggest rainbow-coloured glockenspiel). Even her cutlery designs, which force people to share their food or feed someone across the table, are meant to provoke conversation and social interactions. She also talks about her 24 Carrot Gardens Project and her favourite places to eat and drink in Hobart (and Sydney, too).
