Oranges - I love that we can bring these and just keep them unpeeled to save for another day if they don't eat them. Meat Sticks - I get mine from Imperfect Foods. They have a grassfed meat stick as well as a turkey one. Cucumbers - These are a great low mess, easy prep veggie. Bananas - This is another one we can just keep unpeeled if they don't get eaten. If they get bruised, I just throw them in my weekend batch of banana pancakes! Cashews - This is a nice shelf stable one I can just keep in my purse or in the car. My kids love pumpkin seeds as well. When you decide to avoid or eliminate gluten you likely will long for the foods you once ate, including pancakes, bread, pasta, etc. Pancakes though have a special meaning for me, because I often make them for my children on the weekends, those big breakfasts and times spent together are memories I cherish. Lately, I watch my kids eat those gluten-filled pancakes with a jealous eye and often much frustration. I often think of making them better and imagine me actually enjoying them….without gluten. But until recently, those attempts were never truly satisfying. The trouble with most store-bought recipes is many have too much coconut flour and taste more like the tropics instead of the mountains of Vermont….where pancakes and syrup are very popular I imagine. So I went back to the drawing board and created a gluten-free mix that is pretty darn enjoyable. You would NEVER miss the gluten or even ask if they were gluten-free because there is no chalky aftertaste or crumbly texture all-too-common with store-bought gluten-free pancake mixes. Many today are aimed at Keto eaters and these are particularly “coconutty” and usually fall apart too easily, plus the overwhelming taste of fake sweeteners is not to my liking. I will be testing this recipe without the banana mashed up in the batter and will evaluate the taste and texture minus the banana, because believe it or not, some people don't like bananas, my son included. Here is my recipe, you'll see that the ingredients are easy to find and it could not be simpler to execute.

Admittedly shaken up by the storm, Folk-Americana singer/songwriter Calista Garcia snapped out of fear by turning to music… specifically, “Banana Pancakes” by Jack Johnson. As howling winds have continued over the past year, Calista has kept her calm by tapping back into this feeling through renewed awareness of the beauty that remains. On nature walks by her house, for example, she has come to notice how the canopies of leaves wave hello as she walks by; it is from this tender place, she has created a musical world to reflect what she has witnessed. Lending her lyrics now to listeners, Calista Garcia's “A Beautiful World” EP, out October 29th, 2021, provides refuge through the power of rose-colored perspective. “I created ‘A Beautiful World' to be an expression of radical optimism,” Calista shares. “Optimism, not because life is full of sunshine and rainbows, but rather in spite of how tough it can be... I think holding knowledge of the bad and still believing good can prevail is the bravest thing we can do.” As she has accessed hope through songwriting, Calista has found herself writing the EP in solitude from safe places like the park benches nearby, her piano and the floor of her bedroom. Notably, the only co-write on the EP, “After You're Gone,” came from a Zoom collaboration with Rachel Weisbart and Patrick Oberstaedt of the Gender Gnomes; speaking to the loss of family members during the pandemic, this song has already moved listeners to tears including composer/lyricist Andrew Lippa. Sorry for the delay all the listeners out there. This was recorded the night before Thanksgiving.Start it off with some NFL week 11 breakdown and most importantly the Patriots losing to the Texans. Was a good game overall but not the outcome we had hoped for. Kansas City once again not looking great and almost losing a second game to Las Vegas.Green Bay losing in OT to the Colts. Are the Colts that good or is Green Bay in trouble? The Arizona/Seattle game was great but another outcome we weren't expecting. Murray was finding the open man but just couldn't finish the drives. A ref holding call didn't help them out.The Titans/Ravens also go to OT and Raven go down again. Henry is dominant in another game and runs for the game winner.Just what some of us love seeing and that's Tom Brady and the Bucs once again going down in primetime to the Rams. Is Tommy Boy really washed up and is this proof? Seems like he is trying too hard to get Antonio Brown the ball. Could cause more tension than needed in Tampa.Then we will go to some Week 12 talk with some really good games on the line. Bucs/Chiefs being at the top. As said, can Brady come through and beat Mahomes. See what we think.Can the Patriots hold off the powerful Cardinals offense and escape with victory? We sure hope so. Does anyone pick the Pats as an upset?We will turn NBA after that as some crazy trades and draft picks went down over the week. Celtics sign their man Tatum to a great deal and that's just the beginning.Have a little something different for everyone and we will share out best and worst concert experiences out there. We have a lot of history on the show so find out what everyone thinks was the best concert ever.Of course we have the preposterous stat and we will have our upset picks. Jay wants to make sure there is a **WARNING** at the beginning of the show notes letting everyone know we are talking about food for an hour so if you are hungry you should get something to eat. This week we bring back the official dietitian of Coie's Questions to talk all about eating healthy during the holidays and how to go about getting back on track if you don't eat quite so healthily. Any conversation about food would not be complete with out mentioning Courtneys new bff Eric and how he taught us about the Oreo Challenge. Listen to that episode here. We are still waiting on Jay to post him doing the challenge and something tells us we are going to be waiting for quite awhile. Amanda is back to talk with us all about mindful eating, holiday foods and smells, and how food is a social thing more than we realize. Don't worry y'all, she isn't going to make you give up all the good things in the name of being healthy. Amanda wants everyone to know there is always room for everyones favorite food. Spoiler Alert she is going to remind y'all to focus on those veggies, healthy carbs, lean protein, and portion sizes. Jay wants everyone to know he wants plates full of steak. What else is new? Amanda talks again about how there isn't really "bad foods" there are energy dense foods and slowing down while eating helps a lot. Jay struggles with that concept while Courtney shares about how she doesn't like her food to touch. Yes really, and she totally would be down to use a divider plate so if you know where to get one let us know! We talk about mindful eating, how to outsmart the buffet, and a dietitians super sneaky tip for all meals. If you take one thing away from this episode Amanda wants you to know not to skip meals. That isn't going to help anything. We have a discussion about dark chocolate and Jay says no men keep that in the house it's for girls only so if you're a man that keeps dark chocolate in the house please let us know, and if you don't want to be like jay you can get some dark chocolate here and we will be giving some away in our ultimate Christmas guest giveaway. Jay says he feels like he is having 'food confession' and even starts it with forgive me dietitian. We talk about substituting in holiday baking and Jay points out a banana will never taste like a steak. For anyone who thought it might. Amanda tells us about a 5 ingredient banana pancake we need to try and that leads us to finding out Jay has no idea who Jack Johnson is and really needs to listen to Banana Pancakes.

In his (increasingly medium rare Broccoli on the BBQ) spare time he also shoots photos, writes, designs websites, crafts infographics and works on brand strategy for several organisations through his whale of good time design agency - Whale Shark In our short but sweet, Eight Thirty caffeinated conversation at their new Auckland urban refurbished, reused #sustainable, camping headquarters we dive head first mouth open into some shitty, how was single use plastic ever a good idea, problems that can't be resolved Kardashian style with a bit of surgery - #nobigbutts ifs or maybes. Truth is, New Zealand and the world has more than 99 problems, and single use plastic is a big one - I'd add turmeric to my smoothie and dairy and agriculture to the top of that list too. So much so we can't swim in half of our rivers a 100% of the time, and 90% of them when it rains, because when it rains it pours and pollutes with plastics and a variety of things all of which end up in our H2-0hhno, which is just bananas and as a percentage more toxic than Kardashians reality TV. Who's to blame? I don't know. Shaggy would say it wasn't him. Too be honest I ate all my flat mates cookies this weekend, and it's all of us. Good/bad advertising, lack of awareness, too many Kanye's rapping rubbish, too many cows, dags and Israel Dagg's repping Powerade and not enough power to the people. However it's not all Michael Jackson Bad and that movie Blue Valentine is sad. But there is a solar powered flash light at the end of the tunnel, with a BBQ, people planting trees, kids cleaning up beaches and sometimes a guy named Jack last named after your old fella, "Johnson", making every problem that seems so bananas in to "Banana Pancakes" #smoothsegue - all thanks to the Cam & Co at Sustainable Coastlines. These guys/girls and friendly volunteers for SC, like most have sexy dreams, about Scarlett Jo and Ryan Go. But also sexy sustainable dreams about a better reality. One with inspired people, healthy waters and beautiful beaches. And unlike dreams about naked celebrities this is one you can be apart of. So don't stay "Sitting, Waiting, Watching". Know that we're "Better Together". And together we can turn this problem "Upside Down", lessen the "Plastic Traffic in the Sky" and waterways, and be an "Angel" to mother nature. Because there's "No Other Way" and you "Never Know" what a "Fortunate Fool" you are and how big a change you can make - #JackJohnson. On that musical note, make sure the only thing you wrap plastic in is a penis and maybe your hands if your a doctor and doing heart surgery after peeling spuds. Let's make a lasting change and get down and dirty planting trees rather than polluting waterwas.
