Fine dining might conjure up images of exotic foods, sourced from far-off lands. But St. Barts in London is on a mission to prove delicious food can be local—and it's won a coveted Michelin award for its efforts. St. Barts is the only Michelin-starred restaurant in London to also have a Green Michelin Star. While the traditional Michelin star indicates exceptional food, its green sister recognizes restaurants that use industry-leading sustainable practices. From furniture made from fallen trees by a local woodworker to ingredients that are grown in an environmentally responsible way, the ethos is to protect the land and support British suppliers. “Sustainability is for me about making sort of intelligent choices about the food that we use and the way in which we use it. So, a big thing for me is using UK produce. The fact that we can produce everything within the UK gives us a real opportunity to use all of that produce and therefore, help sustain the British farming industry,” says Johnnie Crowe, Executive Head Chef of Restaurant St. Barts. There is a strict policy to only use British ingredients—that means no olive oil, no lemons, no exotic spices. Other restaurants would just throw waste products away, but here they become garums, sauces that can be used in dishes months from now. The idea is that not a single morsel of an animal or fish is wasted. Industry experts say being sustainable is not just about helping the environment, it makes good business sense too. “[...] you can eliminate waste and cost from the business—and many of the green initiatives that people can take do just that, they reduce energy overheads and energy bills, which are a key headache at the moment,” says Kate Nicholls, CEO of the trade organization UK Hospitality. But do diners care? Crowe says he doesn't think there is any point in “lecturing to people.” “There's enough of that going on, without us doing it as well. Be Inclusive Hospitality released their annual report was released a few months ago and cast a light on the state of industry from the perspective of people of colour. The report states that Black respondents, at 43%, are most likely to report that ethnicity has hindered career hospitality progression. Asian (37%) and mixed (28%) respondents reported the same. In contrast, just 7% of White respondents believe this. In real terms, what are the knock-on effects from this? How does this affect the individual and the face of the industry as a whole? The streaming giant Netflix lost 200,000 subscribers in its first such decline since 2011. We get reaction to the development, which saw the firm's share price decline substantially, from Georg Szalai, who is international business editor at The Hollywood Reporter. Also in the programme, YouTube has terminated the campaign channel of John Lee Ka-chiu, who is expected to become Hong Kong's next chief executive. Tom Grundy, editor in chief of the Hong Kong Free Press, explains how YouTube's parent company Google justified the move. Fake online reviews are to be outlawed under a package of measures proposed by the UK government in a bid to stop people being ripped off. We examine the causes of last month's collapse of Champlain Towers South in Florida. Almost a hundred residents are now confirmed to have died in the disaster, and Steve Rosenthal, who lived in the building, tells us he was lucky to escape with his life. Ana Bozovic is a real estate agent who works near the collapsed block, and discusses the red flags that were raised about Champlain Towers South in the past. And Benjamin Schafer, who is a structural engineer and professor at Johns Hopkins University explains one of the main theories about why the building's structure failed so catastrophically. Also in the programme, as most remaining coronavirus restrictions are lifted in England, the number of cases of coronavirus continues to rise. That's given rise to what's been dubbed the 'pingdemic', where hundreds of thousands of people are being asked to isolate by the official Test and Trace mobile phone app, because they came into contact with someone who subsequently tested positive for Covid-19. Tony Sophoclides is strategic affairs director at UK Hospitality, and explains the impact it is having on the bars, clubs and other leisure venues its members run. Plus, a news agency has been launched in Africa called Bird, which aims to find inspirational human interest and feature stories from across the continent. Companies and governments increasingly share and use this information. A small UK based team of experts called Foxglove is challenging how our data's used . Cori Crider a Director at Foxglove talks about how amongst other things the group successfully challenged the A Level grading algorithm last year, Plus as we mark Refugee Week Hella Pick joins us to talk about life as a Kindertransport survivor. She went on to carve out a hugely successful career in journalism. In her 35 year career she's reported on everything from the assassination of President Kennedy to the closing stages of the Cold War. In her book " Invisible Walls A Journalist in Search of Her Life", she explores her life as a female journalist and her struggles with identity. And scientific experts have urged the government to consider delaying 'Freedom Day' from the original planned Step 4 date following a rise in cases of the Delta variant. This will be devastating news for many of those working in the hospitality industry. To discuss the reaction and implications by Kate Nicholls, CEO of UK Hospitality, and Kirsty McCall, a make up artist who yesterday announced the closing of her business after 15 years. Kate Nicholls became CEO of UK Hospitality last year when the British Hospitality Association and the Association of Licensed Multiple Retailers merged. Kate tells SoTogether UK & Ireland co-chair Alistair Drummond about her career, from growing up in County Durham to working as a political researcher after graduating to getting into the hospitality industry. During her spell in Westminster in the early 90s Kate worked on the Maastricht Treaty, so shares her insight on European relations now the country appears to be going the other way.
