A year after his birth, three of his mother's brothers leave for America, settling in Memphis, where they start a successful wholesale grocery business that includes liquor and wine.1859DOMENICO CANALE ARRIVES IN AMERICASixteen-year-old Domenico Canale sails for America, landing in New Orleans after a 65 day-long voyage. From there, he travels up the Mississippi to Memphis, Tennessee where he worked for his uncle, Abraham Vaccaro, running a modest fruit cart up and down the streets of Memphis.1866Canale formally establishes food wholesaler D. Canale & Co., and sets up operations in a warehouse at 8 Madison St. near Front. Among its offering is a whiskey, sold in ceramic jars and bottles, that Canale names Old Dominick.1880Canale develops the Dominick Toddy, a bourbon-based cordial with fruity overtones that must have spoken to the former fruit stand operator. It was described as the “one of which we are the proudest” and its label featured the now iconic Dominicker Rooster.1919Just three days before the ratification of the 18th Amendment to the United States Constitution, better known as Prohibition, Domenico Canale passes away at the age of 75 in his Midtown home.1921During Prohibition, Domenico's eldest son, John Dominick Canale, expanded D. Canale's food and product operations. With distribution up and down the Mississippi from Chicago to the Gulf of Mexico, as far east as Atlanta, and west into Indian Territory, it was one of the largest grocery distributors in the region.1933By the time Prohibition was repealed in 1933, D. Canale and Company was operating the largest refrigerated warehouses in Memphis, which caught the attention of Anheuser-Busch. Most beer at the time was unpasteurized and had to be refrigerated, as a result of their refrigeration and an established distribution footprint, D. Canale was awarded exclusive regional distribution rights for Anheuser-Busch beers.1965A young John D. Canale, Jr. becomes President of D. Canale following his father's untimely death. A graduate of Yale and a Lieutenant in the Navy, John D., known by many as “The Bear”, led D. Canale into some of its most prosperous years by diversifying into institutional food and banking. He conceived of the company bywords, “Quality Products, Quality Service, by Quality People,” which we remember to this day.1982John D. Canale Jr and his wife, Peggy, had two sons; John D. Canale III and Chris W. Canale. Planning for future generations, John D. Canale Jr. spun both the food business and the beer business out from under the parent company D. Canale and Company in 1982, thereby creating D. Canale Food Services, Inc., and D. Canale Beverages, Inc.1999After 125 years of continuous operation, D. Canale Food Services is sold. At the 125th Anniversary celebration, a grateful John D. Canale Jr. reminded his friends, family, customers, and the company's hundreds of employees that “Quality and Service are remembered long after the price is forgotten.” With the beverage industry trending towards craft beer, wine and spirits, the family sold D. Canale Beverages at its peak in 2010.

To make Heather's Holiday Syrup you can follow this easy recipe: Christmas/Holiday Syrup · ½ c fresh squeezed orange juice, strained · ½ c water · 1 c sugar · 10 allspice berries · 8 cloves · 3 cinnamon sticks, cracked · 2 star anise · Orange peel from two oranges (no pith) Add all ingredients to a saucepan and simmer on low for 10 minutes, or until the sugar has dissolved and the orange peel is slightly translucent. Turn off the heat and let the syrup cool to room temperature. Strain and refrigerate. Will keep for 3-4 weeks in the fridge. A Rooster, A Family, and Memphis Barbecue Old Dominick isn't the oldest distillery in Tennessee, but it's no spring chicken either. The brand itself - including a stint as a whiskey blending house - goes back to 1866, the same year a Mr. Jasper "Jack" Daniel was setting up his own stillhouse a few hours east. 158 years later, D. Canale & Co. no longer has a food distribution business, but they do have a thriving distillery. Overseen by their energetic, Kentucky-born Master Distiller Alex Castle, Old Dominick has risen to quickly be one of Tennessee's premier craft distilleries. Shortly after our interview, Alex announced that she was leaving Old Dominick for her next adventure. In the eight years she spent there, the distillery became a go-to destination in Memphis, putting out world-class Tennessee Whiskey as well as sourced products under their Huling Station line (an homage to the station near which the original D. Canale was based). The bottom line is this: Old Dominick will of course miss Alex, and she has left her founding imprimatur on the entire portfolio. It is also in a fantastic position to go forward into its next chapter. He sits down with Master Distiller, Alex Castle, and discusses her rise in the whiskey industry from her humble Kentucky roots. Alex, who has been with Old Dominick since the beginning has helped resurrect this pre-prohibition whiskey brand. Her vision and passion have been recognized throughout the industry and she recently won the Bourbon Women's Women of Whiskey Award for Master Distiller of the Year. In the first half Big Chief and Alex start with their Huling Station Trolly Stop 9-year which is 95 proof. This is a true high rye with a mash-bill of 52% Corn, 44% Rye, and 4% Malted Barley. Then they move onto the next expression with is their bottle in bond expression. This six-year, 100 proof Spring release is absolutely a must - great for Spring or Summer. They finish the show with a single barrel distillery only release. This is why this craft distillery has an amazing cult following. In this episode of EmbellishPod, I had the pleasure of chatting with Devin and Chase from American Mash and Grain and Borrowed Page. They started American Mash and Grain as a whiskey website that features a new craft whiskey distillery each month, diving deep into their history, process, and brand storytelling. They also released their own whiskey called Borrowed Page Volume 1 and recently released Volume 2. Devin and Chase explained that Borrowed Page is a series of blends where they work with distilleries previously featured on their website. They aim to challenge the idea of American whiskey and use the blends as an extension of their storytelling mission. They want to support craft distilleries and push the boundaries of what American whiskey can be. When selecting distilleries for the blends, they look for alignment in ethos and mission. They want to partner with distilleries that have a great message and are doing something different. They also consider the flavor profiles of the component whiskeys and how they will play together in a blend. We discussed the concept of the blends being greater than the sum of their parts. While they aim for a well-crafted blend, their main goal is to showcase the distinct contributions of each individual distillery and allow their products to shine through. They want to create a unique and high-quality blend that represents the hard work and passion of the craft distilleries they work with. They also touched on the geographical aspect of their blends, mentioning that they try to avoid repeating states back-to-back. They want to connect different parts of the country and shine a light on distilleries that may not be as well-known in certain areas. They also discussed the process of selecting distilleries and the importance of finding partners who are aligned with their mission. They mentioned the support they received from distilleries like Watershed, Mammoth, and Old Dominick, and how their enthusiasm for the project helped drive its success. This episode provided insights into the world of American Mash and Grain and Borrowed Page, their mission to support craft distilleries, and their approach to creating unique and high-quality blends. Today, we speak with Alex Castle, Master Distiller at Old Dominick's Distillery in Downtown Memphis. Making spirits isn't as much a job as it is a calling, and Alex Castle found hers early on. As a Kentucky native, there's a passion for good bourbon that runs deep. As a chemical engineer, there's a love of the process that takes something simple and makes it sublime. Her talent, passion and creativity are why she was supervising Wild Turkey's 24-hour-a-day operation at only 24 years old. For her many accomplishments and tireless pursuit of excellence, Alex Castle, was appointed as the state of Tennessee's first female Head Distiller. She now holds the title Master Distiller and Senior Vice President. In 2020, Alex was elected the first female President of the Tennessee Distillers Guild, a position she still holds today. Old Dominick Distillery dates back to the late 1800s and was founded by Domenico Canale, an Italian immigrant. Having family in Memphis, with origins in the fruit business, Canale headed to Tennessee to join the business. Realizing he'd rather make whiskey instead of selling fruit, Old Dominick, the whiskey, was born. Three days before Prohibition, Canale passed away, and whiskey production and sales ceased.Today, Canale's dream has been revived, and we were fortunate to be able to chat with Alex Castle, Master Distiller at the now very much alive and vibrant Old Dominick Distillery. Her story takes into account the rich history of the Canale family while crafting a future in distilling that will continue traditions while still pushing the boundaries.Meet Alex Castle, Master Distiller at Old Dominick DistilleryAlex Castle became the Master Distiller and an integral part of the Canale venture in 2015 when the design process for Old Dominick Distillery began to take shape. Production started in 2016, and the doors finally opened in 2017, giving downtown Memphis its first distillery to make whiskey since before Prohibition.Spending most of her childhood wanting to be a marine biologist, Alex wasn't sure what to do when in high school she found out that she had no interest in biology. She fondly looks back at that defining moment in her life, realizing at the age of 14 she may have already had her mid-life crisis.Instead, she fell in love with physics, chemistry, and calculus, resulting in her attending the University of Kentucky to study chemical engineering. And thankfully, for spirit lovers everywhere, following advice from her mom, she became a master distiller.Bourbon is no longer just your Grandpa's drink.As a distiller for Old Dominick, not only is Alex crafting age-old, traditional spirits, she's innovating within those traditions. Ages are shifting within the bourbon movement, and we are seeing an increased diversity in consumer palates. Alex is an expert at crafting the spirits we desire when we gather around a table with friends, and that is her main passion for distilling, creating connections and building community.Chatting with Alex was like sitting back with an old friend around a cozy fireplace sipping on excellent bourbon. Alex Castle knew from a young age that she wanted to make whiskey. When she got her chance to distill for the first time, there was no turning back.After working at Wild Turkey in the heart of the bourbon belt, a message on Linked In sent her career in a direction she couldn’t foresee coming. She was now tasked with rebuilding a whiskey brand back to it’s former glory, but this time starting for scratch.She joined Old Dominick Distillery in 2015 and begins the process of building a distillery from the ground up, starting with one of the bottles that inspired the rebirth, the pre-prohibition style Memphis Toddy.Old Dominick released its first bottle of its own whiskey in 2019, Huling Station Whiskey. Throughout 2020 it has expanded the lineup with a wheated, blended and single barrel whiskey.Meanwhile, Alex continues to experiment with new ideas (including a oatmeal raisin cookie bourbon) through an R&D batch only available at the distillery.

Alex Castle is senior vice president and master distiller at Old Dominick Distillery in Memphis, Tennessee. She was the state's first female head distiller, and last year she was elected as president of the Tennessee Distillers Guild. She also serves on the Craft Advisory Council for the Distilled Spirits Council of the United States and is on the board for The Spirit Hub Independent Distillery Preservation Fund.
